Happy Mother’s Day, moms! ThisMother’s Day, I’m going out on alimb and treating my fabulous

mother to everything and anything ribs!First of all, my mom adores ribs and sec-ondly, what’s not to love about “America’sfavorite barbecue dish”? It’s a comfortmeal that never ceases to put a smile onher face.

So, with this said, this week, I venturedout to three Ono, You Know establish-ments best known for their tender, juicy,and oh, so delicious ribs. Hopefully thesemorsels of meat will tickle her fancy. It’sforbidden for all mothers to lift a finger onMother’s Day, so leave the grill as is andlet these following rockin’ restaurants dothe dirty work.

town Honolulu, you’ll find The Mandalay.Conveniently located on Alakea Street,this popular Chinese restaurant offers upmagnificent Cantonese fare that is worth

sampling, if youhaven’t already.

“We have manyCantonese dishes onour menu, but wealso feature Chinesedishes with a touch

of local flair to it,” says owner LindaChan.

Honey Garlic Ribs ($9.95) is a goodexample of that. Doesn’t the name alonemake your mouth water? Yum! This ono-licious dish features eight pieces of ribstenderized, deep-fried and then tossed in aspecial sweet and sour sauce. I have oneword for you: amazing.

“The taste is a bit tangy,” Chandescribes. “The sauce really is good. Weadd a hint of oyster sauce to the sweet andsour sauce. This dish does very, very well— our customers love it!”

Husband-and-wife duo Kenand Cindy Wong havebrought the exotic flavors

and vast culinary atmospherefrom the thriving metropolis ofHong Kong to our majestic para-dise here in the Islands. In 2010,the Wongs opened the doors toAnytime Cafe, an eclectic diningestablishment that has it all.Conveniently located in MarketCity Shopping Center, AnytimeCafe caters to a diverse array ofpalates, presenting diners with amenu filled with more than 100remarkable items to choose from,ranging from traditional HongKong favorites such as milk teato some of the best pasta you’veever tasted.

Dining Out took the time tocatch up with Ken and Cindy,who recently returned from anannual trip to their homeland ofHong Kong. They eagerly sharedabout their elaborate food jour-neys and gave us an inside scoopas to what will be hittingAnytime Cafe’s menu startingtoday, in addition to a specialtreat in store for Mom thisMother’s Day.

DO: You recently traveled toHong Kong in hope of returningwith new culinary concepts forAnytime Cafe? Any luck?

Cindy: Yes, we were in HongKong for two weeks in Marchand we were inspired by so manydishes. We visited many differentrestaurants and cafes while wewere in Hong Kong, and I want-ed to bring much of what I tastedand experienced back home toHawaii.

DO: What’s on trend in HongKong’s dining scene?

Cindy: I noticed that trufflepaste (black and white trufflepaste) is utilized a lot in HongKong, so I brought that backhome with me to incorporate intoour cuisine here at Anytime Cafe.

You’ll find that in Hong Kongthey can put it (truffle paste) onalmost every dish. I wanted tocreate specials that showcase thispaste, including Trio ShrimpSpaghettini and Cheese Ravioli. Ithink here in Hawaii there are notmany restaurants that featuremany dishes with truffle paste.

Street food also is extremelypopular (in Hong Kong). You’llfind street vendors selling sweetsnacks such as Hong Kong-stylewaffles and mini egg pops, andwe hope to have that available inour restaurant this June.

DO: Can you explain howAnytime Cafe is reflective ofcafes found in Hong Kong?

Ken: Hong Kong’s cafe-styleof dining is similar to AnytimeCafe because there’s a widespread of choices no matter whatyou’re craving. And just likeHong Kong cafes, our restaurantis open very long hours. TheHong Kong-style is East meetsWest, and we do offer HongKong-style cuisine, such as won-ton noodles, which is very tradi-tional, but we serve authenticpastas as well.

Mother’s Day today, what canpeople expect from AnytimeCafe?

Cindy: We’re featuring a spe-cial Mother’s Day menu today.It’s priced at $23.95 per personand includes an appetizer ofShrimp Risotto Croquette, ClamChowder Soup, an entree choiceof Osso Buco (braised vealshank Lombardy style simmeredin red wine tomato sauce servedover pasta) or Trio ShrimpSpaghettini (tiger shrimp andbay shrimp in a white trufflecream sauce topped with stuffedshrimp), and last but not least,

Chocolate Mousse for dessert.

DO: Delicious! Anytime Cafeis a great place to bring the fam-ily, correct?

Ken: Yes, we definitely havesomething on our menu thateveryone will enjoy. We alwaysaim to please, and our customersappreciate that they can findsomething that they love to eat,and don’t have to worry abouttheir kids not enjoying the meal.For example, a mother mightenjoy Wonton Noodle Soup anda child will be happy with pizza.

DO: Anytime Cafe has beenopen for more than two years,and over time you’ve gainedquite a loyal following. What isthe secret to your success?

Cindy: Yes, we have quite alot of loyal patrons, so we wantto add more items to our menuso that they don’t get bored.Currently, we have more than100 items on our menu.

DO: Very impressive. Whathave been the best-selling itemshere?

Cindy: Most definitely ourBaked Pork Chop with FriedRice ($12.95) is our No. 1entree, consisting of pork chopand onions with our own home-made tomato sauce over friedrice. Locals also really raveabout Wonton Noodle ($7.95)featuring six pieces of shrimpwonton in a special broth. Thebroth is very delicious and thenoodles really absorb the flavor.When it comes to appetizers, ourThai Style Pork Cheek ($6.95) isa hit.

Ken: Our pastas are popular,too. Credit goes to our chefSonny Laforteza.

DO: There’s much for dinersto look forward to. In fact,Anytime Cafe is releasing a cou-ple of new dishes today! Whatcan people expect?

Cindy: We’re unveilingCheese Ravioli ($12.95) in acreamy black truffle sauce, andShrimp Spaghettini with ThaiCurry Sauce ($12.95), which fea-tures tiger shrimp and fresh veg-etables in a Thai red curry sauceserved over spaghettini. It’s nottoo spicy. We have quite a lot ofregular customers who give usideas for new menu items.

DO: Lastly, Anytime Cafeoffers a fusion of flavors, fromChinese, Italian, local to every-thing in between. What makesyour restaurant stand out above

the rest?Ken: We put emphasis on the

highest-quality cuisine for anaffordable price — we evenimport the pasta from Italy. I’veowned so many different restau-rants over the years, and I try toput all my experiences into onecafe. If you like to eat local food,Italian food, Asian food, we haveit all here. We’re open till late, soyou can always come and haveyour fill. Everything on themenu can be ordered at any timeof the day or night.

According to The KahalaHotel & Resort’s generalmanager Roseann Grippo,

when it comes to Plumeria BeachHouse — the hotel’s oceansiderestaurant — there’s one questionon resort executive chef WayneHirabayashi’s mind: How do youinfuse Maui lavender into a dishfrom Spain? This makes sense,actually, as Hirabayashi recentlyreturned from another yearly,hotel-sponsored trip, whichallowed the culinarian to pursueexotic flavors, then bring themhome to meld gorgeously withlocal ingredients.

This year’s inspiring destina-tions were Spain and Morocco,making it easy for Hirabayashi toanswer the question. “We’ve doneit,” explains Grippo, “We’ve donean amazing paella with an infusionof beautiful, beautiful lavender.”

Such an innovative culinaryfeat is just one of many that havebeen previously featured inPlumeria’s new Bounty of theSeven Seas buffet ($55 Adults;$27.50 Children 4-12), availableevery Friday and Saturday from5:30 to 9:30 p.m.

Why previously featured, youmay ask? In addition to a consis-tent array of family-friendlyentrees, seafood and desserts, aspecial portion of the truly uniqueseafood buffet is reserved forexclusive dishes created byHirabayashi and his team of chefs.This exciting collection of eats isbased on a different port of callfrom around the world each week.

“Every time that you come in,there is a different cultural blend,”says Grippo. “We did the SeychelleIslands a couple weeks ago; we’vedone Japan, St. Maarten, Barbados.

We’ve done some really differentand exciting places.”

heartbreaking that the paella was afleeting bite, the future deliciouspossibilities are endless. May 18and 19, you’ll feel as thoughyou’ve landed in Italy as the buffetcelebrates tastes from the AmalfiCoast. Revel in the way localingredients showcase internationalflavors in Amalfi Seafood Soup,prepared with Hawaiian Seafoodand served with Focaccia andRoasted Garlic Aioli.

Experience a Caprese Saladseasoned with Molokai Sea Saltor Hawaiian Octopus grilled withsun-dried tomatoes, roasted pota-toes and lemon vinaigrette. Thentry the Garlic and Maui OnionBraised Lamb Shanks and PorciniMushroom Potato Stew.

As Grippo describes, “It’s real-ly been a labor of love in thesense that our chefs have becomeinspired to find out about thefoods from different places.Spain, Morocco — wherever it is,they have to adapt and learn thatcooking style.” With so many newdishes to try, she emphasizes theeducational dining experiencethat both the chefs and customerstake part in.

After ending your enticing jour-ney with the buffet’s Amalfitancreamy custard and cherry tart,you’ll want to bring the wholefamily to try the seafood haven’srenowned breakfast as well, whichis the only Hawaii-based menu tohave earned a spot as one of OpenTable’s 2012 Diners Choice Awardwinners for Best 100 Restaurantsfor Brunch in the U.S.

Jan and John Straley didn’ttravel all the way from Sitka,Alaska, to enjoy the butter-

fish at Nuuanu Okazuya, butafter a few bites of the delicatefish, they were sure glad theymade the effort to find the classiceatery.

“We were having sushi lastnight and someone told us wehad to check this place out. It’sdelicious,” said John.

The Straleys aren’t the firstcustomers to marvel at the tastyand cheap treats on the menu.Since its opening more than 30years ago, the restaurant hasserved thousands of diners look-ing for good flavor at a fair price.The seemingly continuous linestretching out of the two-tabledining spot makes it clear thatowner Mark Kitagawa and chefJohnathan Mosely are giving thecustomers what they want.

A good starting point for new-comers is Stuffed Aburage($1.25). That’s right, $1.25.Mosely stuffs the tofu with porkhash to create a moist and tastyway to begin your meal.

Mosely’s current favorite — it

changes constantly — is theBarbecue Spare Ribs ($2.25).Yes, $2.25. The chunky ribs areboiled until tender and then pan-fried with Sweet Baby Ray’sbarbecue sauce. From there itflies out the door nearly as fastas Mosely can cook it up. In fact,a week ago, a customer orderedhalf a pan of ribs. The secondguy in line ordered the otherhalf. Don’t worry, Mosely willmake more.

The most expensive single-person item on the menu is theplate lunch, and that comes in atwhopping $7.85. For those witha smaller appetite, Mosely hascreated a new mini plate optionfor $5, which includes rice, macsalad and a stir-fry mix of veg-etables and either beef, chickenor tofu.

In addition to the apparentlyunending menu, NuuanuOkazuya offers five types of dip-

ping sauces that you can mix,match or pair up with any item.Your choices are light mustardsauce (called The Whale), misoand hot Chinese mustard, wasabeand mayo, lemon and pepper,and a shoyu, Chinese mustardand honey sauce.

“We don’t do one flavor ofanything,” Mosely says with asmile.

In fact, Nuuanu Okazuya does-n’t do one of anything.

The man behind themagic of Shiro’sSaimin restaurants,

owner and founder FranzShiro Matsuo, lived life to thefullest and did not look back.

Matsuo, otherwise knownas “Mistah Saimin,” diedMay 3. He was 93.

Although his smilingface and bubbly personali-ty that would always gracethe Waimalu restaurantwill be dearly missed, hislegacy will live on foreverthrough the restaurant’stasty offerings (60 differ-ent saimin noodle combi-nations), his witty poetryand those whose lives hedeeply touched.

“Shiro would come tothe restaurant almost everyday just to sit and chat withcustomers,” says Shiro’sSaimin Haven’s vice presi-dent Aaron Lee. “He was aman who did it all. He waseven driving on his ownuntil this past January.

“Our loyal customershave come by to offer theircondolences, and we’regrateful for their support,”he adds.

Matsuo is survived bydaughter Linda, sonAlan, six grandchildrenand three great-grand-children.

Funeral services are setfor 5:30 p.m. May 30 atMililani Mortuary-Waipio,mauka chapel.

— Wahoo’s Fish Taco brings the flavorsof California-style Mexican cuisine to theIslands. Plus, Wahoo’s utilizes freshingredients, offering a healthy take on itsflavorful fusion food.

“We make all of our sauces, and wemarinate all of our meats,” says NoelPietsch Shaw, who co-owns the Oahulocations with her sister, StephanieGambetta. “It is really a pure, healthyproduct, and that’s kind of what our largefollowing of regulars appreciates.”

Among Wahoo’s most popular items isSeven Layer Salad ($7.75), which includesbrown rice, black or spicy Cajun whitebeans, cheese, guacamole, shredded lettuceand cabbage, salsa, and a choice amongfish, chicken, tofu or pork (add $3) or steakor shrimp (add $5). It also is served with aroasted pepper cilantro sauce.

Another customer favorite is WahooBowl ($10.75), which features flame-grilled fish, blackened or teriyaki. Thebowls can be served with ahee rice orbrown rice, and also include black beansor spicy Cajun white beans.

And if you’re coming to a place withthe words “fish” and “taco” in the name,chances are you’re going to want to try thefish tacos. And when you do, you’re goingto want more than one. You can get twoflame-broiled or blackened Soft Tacoswith fish for $7.30. The tacos are filledwith cheese, lettuce or cabbage and salsa

— all on top of a local corn tortilla.“We make a huge effort to do local,”

Pietsch Shaw says. “Our tortillas are local,our cabbage is local, our tomatoes arelocal, the green onions. So a large portionof what you get in a taco or a salad is actu-ally from Hawaii … That is important tous — to make things as fresh as possible.”

Wahoo’s also is the perfect place to findsome pau hana fun — especially duringits crowd-pleasing Taco Tuesdays, whichtakes place weekly at the Kahala location,starting at 5:30 p.m. On Tuesdays, tacosare just $2, and Primo beer is $2. Livemusic, which features a rotating set ofvarious bands, begins at 6:30.

The same deals also are available duringWahoo’s Wednesdays at Ward, whileWednesdays at the Kahala store are forFamily Night. On Family Night, a child caneat for free per every adult meal purchase.

For a restaurant chain that has more than 50locations spread throughout several statesacross the country, Wahoo’s Fish Taco has

modest beginnings. It was created in Newport, Calif., by

three brothers who had grown uphelping out in their parents’ Chineserestaurants, first in Brazil and later inCalifornia. In their spare time, theyoften travelled to Mexico on surftrips. They were inspired by the typeof cuisine they encountered on theirtrips — simple, light tacos made withfresh grilled fish. The brothers start-ed up just one taco shop, and its pop-ularity quickly spread throughoutSouthern California — and soon,throughout the country.

And although Wahoo’s is now abona fide chain restaurant, it hasstill stayed true to its origins by uti-lizing fresh, healthy ingredients.

“That is originally what got my sister and me interested in bringing therestaurant to Hawaii,” says Noel Pietsch Shaw, who co-owns the island’sthree Wahoo’s locations with her sister, Stephanie Gambetta.

The two were inspired to bring Wahoo’s tasty tacos to the Islands whenthey were living in Los Angeles.

“We got to know the company when we were living in L.A.,” says PietschShaw, “and we thought it would be a good fit for Hawaii.”

They opened up Wahoo’s at Ward in 2006, and the Kahala locationlaunched in 2010. In addition, there also is a lunch wagon based at SandyBeach Park.

“I think there is a market for people with busy lifestyles — for familieswhere both parents have careers — to get a quick product at a reasonableprice that is healthy for you,” she says. “We really value what we put in ourbodies, and we’d only want to be involved in a business that we can standby completely. And Wahoo’s is definitely that.”

F or a vast array of deliciousKorean cuisine and a fun do-it-yourself yakiniku experience,

look no further than Yakiniku Million.The eatery, which opened in 1989, pro-vides its customers with a variety ofbarbecue (yakiniku), soup, noodle andmixed rice plates.

For the next month, YakinikuMillion is having a special on itsDried Pollack Soup ($7.95 from11 a.m. to 2 p.m.; $10.95 from 2p.m. to midnight). The soup wasfirst introduced April 20 and hasgarnered a positive responseamong customers, according tomanager Diana Paik, and it willbe the eatery’s special until May20.

“Most Korean people knowabout it (our soup),” says Paik.“The soup includes pollack fish,green onions, eggs, a specialsoup base and daikon radish.”

Since it first opened in 1989,Yakiniku Million has been pop-ular among both locals andKoreans alike.

“Our clientele is about 70 per-cent local people and 30 percentKorean,” says manager AngelaPark.

“We’re popular because wegive good (sized) portions andthe price is very good; it’s rea-sonable,” echoes Paik. “Everymeal you order comes withseven side dishes. The averageprice is about $47 for bar-beque/yakiniku for two peopleand regular plates are around$12.”

When it comes to the eatery’smost popular dishes, Paik men-tions the O Jing Eo Chi-ke($14.95) — squid stew — and

Mool Naeng Myun + Bi BimNaeng MyunKal Bi + Kal Bi($28), a combination dish com-prising buckwheat (black) noo-dles in a chilled special soup,buckwheat (black) noodlesmixed with a spicy sauce andbarbecue short ribs. The latterdish is especially popular duringthe hot summer months, accord-ing to Park.

“During summertime, thecombination dish is popular,”she explains, “because it’s hotoutside and the soup is chilledand refreshing.”

Also popular is Kal Bi Tang($10.95 regular, $15.95 large),which is frequently ordered byboth locals and Koreans.

“It’s a short ribs soup, and wehave a regular and large por-tion,” Paik confirms.

During dinner, the managerssay that many customers orderYakiniku, and others order avariety of side dishes and sharethem family-style. Yakiniku SetsA, B and C are available ($46.95for two people) with a variety ofmeats, including beef brisket,seasoned kal-bi, sliced porkbelly, beef tongue and barbecuechicken. Other popular items onthe Yakiniku menu include

Yangnyum Kal-Bi ($24.95) —shoyu-marinated short ribs —Bul Go Gi ($22.95), or marinat-ed sliced beef, and Chicken($22.95).

If customers find YakinikuMillion too crowded at any par-ticular time, takeout is wel-comed — even for barbecueitems.

“Everything (on the menu) isavailable for takeout,” Angelasays. “Takeout prices are thesame as dine-in prices.”

Yakiniku Million also pro-

vides lunch specials from 11a.m. to 2 p.m., with dishes rang-ing from $5 to $10 on its menu.Park points out that locals usual-ly enjoy entrees including Kal-bi, Beef and Chicken Plate($12.95) and Meat-Jun andChicken Plate ($9.95). Koreancustomers frequently order dish-es such as Mool Naeng Myun($7.95) — buckwheat blacknoodles in a special, chilled soup— Oo-e Mool Naeng

Myun ($7.95), buckwheat blacknoodles in a special chilled soupwith cucumbers; and Bi BimNaeng Myun ($7.95), buck-wheat black noodles with aspicy sauce.

For those wondering whereto park at this popular eatery,Paik says that parking is avail-able in the back of the restaurantor on the street in front of therestaurant.
