Talking up

What’s your ethnicity? I’m askedthat on a regular basis, and I’vefound it quite entertaining to

keep people guessing. You’ll be surprisedto hear that more often than not, peoplefollow the first question with “Are youMexican?” The answer is no, but I can seewhy many would think that. First off, I loveMexican cuisine — no exaggeration here!You name it, I adore it, everything fromburritos, to ceviche, enchiladas, guacamoleand more. Tacos, however, are my ultimateweakness. I’ve been known to eat 10 tacosin one sitting — no lie! There’s justsomething about the varied flavors, colorfuldecoration, and variety of spices andingredients of this dish that has me drool-

ing.Therefore, this

week’s assignmentwas a breeze. Nothingbeats being able toeat tacos to yourheart’s content andgetting paid to do it,right?! So, I gladly

ventured around town, scopingout some of the best “Ono, You Know”taco spots. I welcome Mexican cuisinewith open arms and will happily devourkalua pork, fish, beef and chicken tacosanytime of the day or night!

Edge of WaikikiThis week, I ventured back to the

Sheraton Waikiki, this time to its new sig-nature pool bar, the Edge of Waikiki.Adjacent to the hotel’s Infinity edge pool,this bar pays homage to the old Hollywooddays of Waikiki from the 1920s to 1960s.Now frequented by locals and visitorsfrom around the globe, Edge of Waikikioffers a lively, adult-only atmosphere, deli-cious cocktails and unbeatable cuisineprepared by chef Colin Hazama.The menu features a wide array of irre-

sistible items, including artisan sandwiches,hot island favorites and pupus, salads,

seafood appetizers, brick oven pizzas, anddesserts to tempt every sweet tooth.What is my food of choice, you ask?

Well, for starters, the Brick Oven Pizzatopped with Italian herb sausage, pepperoni,local ham and bacon ($15) is a sure bet,but I can't pay a visit here without overlyindulging in the Fish Tacos — Pier 38($17), of course!These magnificent tacos are made to

perfection, as soft flour tortillas are filledto the brim with freshly caught Pier 38mahi mahi marinated in a zesty chimichurisauce and grilled with sweet Kahuku cornrelish on a bed of housemade guacamoleand shredded head cabbage. A side ofHamakua tomato salsa and a refreshinglime wedge completes the dish.The mahi mahi is so tender in itself, and

every ingredient that follows plays anintegral part in the overall result. As atried and true lover of guacamole andsalsa, I couldn’t think of anything I wouldrather satisfy my appetite with after a dipin the pool.The Edge of Waikiki is open from 10 a.m.

to 9 p.m. daily, with happy hour set from 5to 6 p.m. Also, take in the sweet sounds ofsome of Hawaii's famed musicians from6:30 to 8:30 p.m. nightly.

Dining Out recently visited this award-winning establishment, where we hadthe opportunity to sit down with diningroom manager Peter Dietrich, who, overspectacular cuisine, revealed just whatmakes Ocean House the restaurant ofchoice for locals and visitors alike.

DO: What is the concept behind OceanHouse and what can diners expect?

Dietrich: When it comes to OceanHouse, we really want to make peoplefeel at home. The atmosphere is very

homey and welcoming, and we treat youas if you’re a guest of our house. Weoffer upscale, casual dining here —everything from prime rib, to steak, toseafood, to wonderful salads — islandfare. In addition to dinner, we also havea great breakfast that caters to thehealthy lifestyle.

DO: Executive chef Craig Yasaka hasdone a fantastic job with the food here.What are some must-have signatureitems on the menu?

Dietrich: Yes, our chef is very consis-tent. My favorite dish of the moment isthe Parmesan Crusted Opah ($33.50),served with a lemon caper wine buttercream sauce and jasmine rice. TheMacadamia Nut Crusted Mahi ($31.50) isoutstanding, with a coconut gingercream sauce, sweet chili, and paired withjasmine rice as well. And it’s safe to saythat a good quarter of our businesscomes from our prime rib entrees, suchas The Ocean House Cut ($32.50), ahearty portion of juicy tender beef. Allprime rib entrees are served with tradi-tional English peas, creamy horseradishand Maui onion mashed potatoes. TheSeafood Lau Lau ($31.50) is another high-ly requested item on the menu ($31.50),featuring an assortment of mahi mahi,shrimp, scallops, luau leaf and sweet

potato sauteed with garlic soy sake,wrapped in ti leaf and served with jas-mine rice.

DO: OK, now that mouths are watering,give us a glimpse of some of the delicioussalads and desserts we can expect.

Dietrich: When it comes to salads, ourGoat Cheese Salad ($11.50) is awesome.It consists of Mesclun greens, mango,candied walnuts and sun-dried cherries,topped with a champagne vinaigrette. Asfor desserts, Uncle Moki’s ChocolateLava Flow Cake ($9.95) is a must-have —it’s a triple chocolate semi-sweet choco-late fudge cake served with a scoop ofvanilla bean ice cream.

DO: For the early risers, what aresome remarkable breakfast items thatwill help ensure a great start to any day?

Dietrich: We have many great sunrisespecialties, including the Eggs Benedict($14), Granola and Fresh Fruit ($11),Outrigger Omelet ($13) and BelgianWaffle topped with bananas or wildberries ($14), to name a few.

DO: Ocean House recently has beenincorporating new trends into the culi-nary experience. What can patrons lookforward to?

Dietrich: The menu itself is designedto have a little something for everyone,and it really does. We’re offering various

portion sizes to accommodate differentstyles of eating — a lot of people wantto sample many different dishes and fla-vors. We also feature nightly specials,which are fantastic, showcasing a niceamount of seafood.

DO: Does the restaurant obtain anyof its products locally?

Dietrich: Yes, we use a lot of local,line-caught seafood, and a lot of ourvegetables and garnishes consist ofmicro-greens, sprouts and salads thatare all grown here in the islands.

DO: Do you offer wine pairings toaccompany specific dishes?

Dietrich: Yes, our servers are veryknowledgeable about wines. Rightnow we’re pairing up our famousprime rib with the Robert MondaviPrivate Selection Chardonnay, whichis a seasonal wine. Our servers also

attend wine tastings, and most of ourservers have been here anywherefrom five to 10 years, so they’re veryknowledgeable about the product.

DO: Share with us something specialabout Ocean House that most peoplewouldn’t be familiar with.

Dietrich: Originally Ocean Housewas part of the Shorebird restaurant.It’s said the bar was where we aretoday. Then the hotel and the clienteleof the area demanded a more upscalerestaurant. The best thing that wehave here that most people don’t real-ize until they dine here, is that we’reright on the beach, and our view andour ambiance are unmatched. Dinneris quite our forte here at Ocean House,and we serve more than 200 meals anight.

DO: Who are the majority of your

clientele here?Dietrich: Mostly tourists, I would

say. But we are getting more and morelocals dining here all the time despitethe fact that a lot of locals aren’t trav-eling into Waikiki because of parkingand the cost and such, but we have alot of good deals on the menu. Ourprices are very reasonable and belowthe real high-end, gourmet restau-rants, but we still offer that sameimpeccable service and dining experi-ence.

DO: Is there any advice you wouldgive to first-time diners?

Dietrich: We do have a small diningroom, so reservations are highly rec-ommended. We do have tables rightalong the ocean that are even more indemand, so we also take requests foroceanfront seating.

The restaurant,which first opened inSingapore in 1994,moved to Maui in2004. Since then, therestaurant hasmoved again, open-ing its current loca-tion on McCullyStreet just four months ago.

Even though 123 Wok recentlyopened, manager Wendy Li has wastedno time in creating a diverse menu forher customers … a factor that con-tributed to choosing the eatery’s name.

“We serve Chinese food, Hawaiianlocal flavor and a hot pot option — 1, 2,3,” Li explains. “(We also chose this

name because) our first restaurant wasin Singapore, the second one was onMaui and the third one is here onOahu.”

Li also emphasizes that 123 Wokserves healthy cuisine, using only freshingredients in their products.

“We are known for our Chinesehealthy cuisine,” she says proudly.

“There is no MSG in our products.”When it comes to appetizers, a popu-

lar choice is the Crab Rangoon ($6.25),six pieces of deep-friend won ton filledwith crab meat and cream cheese. Interms of entrees, some of the most pop-ular include General Tso’s Chicken($8.95), Hong Kong Steak ($12.95),Shrimp and Asparagus ($11) and

Orange Chicken($8.95).

“General Tso’sChicken is our sig-nature item,” Lisays. “It’s bonelesschicken withchunks of broccoli,sautéed in a specialsauce. Our OrangeChicken is alsopopular — tender,sliced, white meatchicken with broc-coli served in our

special orange sauce.”When it comes to the ever-popular

Char Siu Gon Lo Mein ($6.99) — one ofthe restaurant’s chow mein dishes —customers have a choice of noodles:Hong Kong noodles or Shanghai noo-dles, according to Li.

and softer,” Li explains. “Wenoticed more people here [onOahu] like the Shanghai noodles;on Maui, people liked their Gon LoMein with Hong Kong noodles.”

For customers who preferHawaiian-style favorites, 123 Wokalso includes local entrees on itsmenu. Popular choices include theBBQ Mixed Plate ($7.25) — BBQshort ribs, BBQ chicken and teristeak — and the Seafood Combo($7.75), which contains mahi, deep-fried shrimp and a choice of BBQshort ribs, teri steak and BBQchicken.

A variety of combination optionsand Hot Pot dishes are available tothe customer as well. Each individ-ual hot pot ($8.99) is served withnoodles, rice and healthy soup.

“Our two most popular hot potdishes are ‘Wendy’s Seafood HotPot,’ which includes squid, shrimp,Chinese crab, fishcake tofu, mus-sels, mushrooms, Chinese cabbageand spinach,” shares Li, “and the‘Lamb Hot Pot’ — sour cabbagewith lamb, tofu, egg and dried beancurry.”

Li explains that the restaurant isthe busiest during lunch hoursbecause of the eatery’s lunch spe-cials. For the Lunch Special ($6.99),customers choose any three of 30entrees — including dishes likeMochiko Chicken — and receivesteamed rice or lo mein, the soupof the day and a free Boba Milk Tea.

The “Healthy Lunch” option isalso popular among customers.

“Our ‘Healthy Lunch’ options areserved from 10 a.m. to 4 p.m.,” Lisays. “All our ‘Healthy Lunch’options — including the popularHome Style Tofu ($6.99) — areserved with a spring roll, steamedrice, Chinese salad on the side andfree Boba Milk Tea.”

123 Wok attracts customers notonly because of its diversifiedmenu, but also because the restau-rant offers take-out options. Forlarger parties, customers can orderparty trays (small, medium or largesizes). The Fried Chicken Wingsand Legs party trays remain themost popular, according to Li.

After 4 p.m., customers whoseorders are worth $30 or more aregiven a free promotion, whichvaries by the day.

“When your bill is $30 or up, wegive one promotion of the day,” Lisays. “Sometimes it will be oneorder of Mochiko Chicken; othertimes, it’ll be an order of crispy gaugee or fried rice.”

While the take-out and dine-inmenus are the same, Li notes onedifference during the dinner hours.

“After 4 p.m., during dinner time,we give our customers dessert,” Lisays. “We give our customers ashaved ice dessert. For our take-out menu, there is no dessertoption.”

Waikiki marks the thirdlocation in the chain’s col-lection that also includesstores on Waialae Avenue inKaimuki and a kiosk in AlaMoana Center. It has nowbeen open for more than sixmonths, and offers cus-tomers full-service diningthat takes guests aroundthe world without ever hav-ing to leave the dining table.

“One big thing is thatguests come to us to starttheir vacation, they’ll cometo us first,” says GeorgeStephanos, Provenza’s busi-ness partner and adviser,when discussing the eatery’sburgeoning popularity.“Then, they’ll go somewhereelse (to eat), and will comeback a few more timesbefore they leave becausethey fall in love with it. It’slike home with a touch of theMediterranean.”

The Fresh Fish ($12.95)has become a guest favorite,and upon Dining Out’s recentvisit, included fresh-grilledsalmon topped withMediterranean salsa andserved with basmati rice,Greek salad and pita bread.The Calamari ($6) appetizerand Shrimp House Special($12) also have reeled intheir fair share of diners asthe delicious, plump garlicshrimp are served alongwith a hearty Greek salad.Stephanos credits Waikiki’ssuccess to the restaurant’sability to carry fresh seafoodselections that are used forboth the regular and rotatingspecial menu offerings.

“We bring in fresh fish atleast twice a week from theauction,” Stephanosexplains. “It’s the littletouches like that which real-ly add to the experience.”

The Fat Greek also offers avariety of entrée plattersthat include numerousmenu favorites presented inlarge portions on a family-style dish. The plattersallow diners to build theirown unique plates with their

favorite items, includingthose on the Royal Platter($38) that boasts four lambchops, eight garlic shrimp,Greek salad, Greek fries,hummus, pita bread, bakla-va and two sodas.

“Nobody else makes plat-ters like that,” saysProvenza. “Even when yougo to the Mainland, Greekrestaurants are very simple— nothing like this.”

The Papa Special ($19.95)is another example of howFat Greek earned the honorof “Best Greek Food” in the2011 Honolulu Star-Advertiser’s Hawaii’s BestPeople’s Choice Awards.The dish features a NewZealand rack of lamb mari-nated in a special housesauce, rosemary and garlic,and comes with Greek saladand zesty potato wedges.The Souvlaki ($11.75) isanother Fat Greek favoritethat features a choice ofchicken, fish or lamb mari-nated with lemon, olive oil,garlic pepper and Greekoregano and comes servedwith pita bread, tzatzikisauce and a side salad.

Fat Greek’s Waikiki estab-lishment also offers a full winelist, and allows diners to bringtheir favorite vino for a mini-mal corkage fee. Stephanossays that he hopes the perkswill help “add more to ourloyal regulars. You’re thinking of trying aveggie diet, but youalready feel hunger

pangs as you can’t kick thevision of a scrawny rabbitnibbling on lettuce. Whatare you going to eat?Carrots, celery? Luckily, youcan calm that rumbly tummybecause these days there aremeatless versions of just aboutany dish that comes to mind, andthey often involve that ubiquitousvegetarian item: tofu.

Being that it’s the Year of theRabbit, let’s head to a Chineserestaurant, home to another little

critter, of the feathery kind: GoldenDuck. Walking in the door of theKahala location, you’re greeted bythe customary good luck WelcomeCat, actually two of them, and otherauthentic oriental paraphernalia,which makes the brick accents onthe walls of the two-room eateryconspicuous, but in a homey sort ofway. Add to that, the spaciousnessof the place and you’re in for a com-fortable dining experience.

“We do a lot of parties — birth-days, baby showers, weddings,graduations, retirements — everyweekend we fill up,” saidowner/manager Darlene Fong.

Fong scurries to seat diners andretrieve orders from the kitchen.Out comes a steaming, plumparrangement of tofu and veggies.It’s the Black Mushroom with Tofuand Choy Sum ($7.95), covered in agarlic sauce.

“If you’re a strict vegetarian,”said Fong, “we don’t put any chick-en broth base, no fish, no oystersauce. We can accommodate anyspecial requests for our cus-tomers.”

Fong adds that the dish is popu-lar among both vegetarians andthose who prefer their duck on aplate. Also included in her top-rateditems under the Vegetarian listingare the Chinese Broccoli with Garlic($7.95), Spinach with Garlic ($8.95)and Ong Choy with Garlic ($7.25).You’ll hop in hungry, but all thosegarden-fresh goodies with somehearty chunks of tofu might findyou waddling out, fully satisfied —no meager lettuce chomping hap-pening here.

Apparently rabbit people are abit sheepish, but no matter yourzodiac sign, Chinese dining alwaysspells family and group fun. Thesefurry, floppy bunnies are especiallycompatible with sheep, pigs anddogs. doing really well. We sellclose to 1,000 Xiao LongBao a day,” he states.With 10 varieties of Xiao

Long Bao to satisfy allappetites, includingSteamed Dumpling withSeafood Broth andSteamed Dumpling withSpicy Chili Flavor, the orig-

inal Pork Xiao Long Baoand Oolong Xiao LongBao, Jin Din Rou has quick-ly become a fave spot forall dumpling lovers. “The dumpling

Raiten sushi joints might be pop-ping up everywhere you look, butas soon as you walk into SushiSan,

you’ll know you’re in for something a lit-tle bit different. The venue has anupscale feel to it — chic, modern, ele-gant.

And according to restaurant owner JayKim, the food is different, too. “We wantto keep developing our new menuand bring up the quality of the foodwith freshness,” he said. “We makeour food from professional chefs… and SushiSan is looking to be asushi bar with quality food.”

SushiSan opened its doors inMarch and already has exciting,innovative dishes under way. Lastweek, SushiSan launched its “AirFreight Menu,” which includesfresh seafood imported fromKorea and Japan. Kim explains theeatery is bringing in sea squirt,sea cucumber, abalone, Hotateand white fishes such as Hirame, Aka Tai,Suzuki and Bora. “I believe this seafoodmakes a food quality difference betweenus and other kaiten sushi restaurants,”Kim says.

The restaurant also offers a number ofcreative sushi dishes that other placesmight not have, such as White ButtonMushroom ($3.20), King Oyster

Mushroom ($3.20), Kapa Spicy Tuna($2.20) and Unagi and Egg ($3.20). Kimsays that other popular menu itemsinclude Spicy Ebi Roll ($4.80), Beef Steak($3.20), Garlic Awabi ($5.20) and GarlicSalmon ($3.20). The menu also includeshot donburi items, and all customersreceive free miso soup that may berefilled as often as they desire.

Although still new, SushiSan already isproving to be a worthy competitor toother sushi restaurants in Hawaii. Kimstresses that good customer service,food quality and reasonable prices areSushiSan’s goals. “Myself and our staffmembers will make these three thingsbalance and make our customershappy,” he says.

For locals, ramen is one of the ultimate comfortfoods. The warm broth, the tasty meat andvegetables, and the satisfying sluuuuuurrrp of

soft, wiggly noodles is a familiar experience for manywho have grown up in Hawaii.At Ton Ton Ramen, owner Ken Cho has taken the

lovable ramen and paired it with another islandfavorite, oxtail soup. After letting customers taste-test his new recipe over the past month, Cho decidedit was time to put Oxtail Ramen ($10.95) on the regu-lar menu.“We let the customers try it first because we want-

ed to improve it. We listened to the customers, whatthey wanted and needed, and this final Oxtail Ramenis maybe the third (variation) we’ve made,” says Cho.“Everyone knows about oxtail soup, but they’ve

never had anything like this. We’ve changed it up.”The secret to the Oxtail Ramen lies in the soup

base. Cho says he concocted the broth from a specialmix of chicken, pork and beef bone, along with fiveother secret ingredients he cannot divulge.“No other restaurant has done this before,” he says.(BTW: None of those secret ingredients is MSG. In

on your own, one time, two times, three times. You fail many,many times before you get it right,” says Cho, who openedTon Ton Ramen in Waipahu Town Center in 2004. “I’ve failedmany, many times. But now, I know what is good and what isno good.”Cho also relies on his two uncles, who are both chefs, and wife

Yuki for their honest opinions.“She gives me a lot of opinions about my food,” Cho says with a

laugh. “She is Japanese, so she can help me with this.”Customers usually can expect to find some sort of new special in

the works at Ton Ton Ramen, as Cho believes it is important to keepchanging with the times.“In Japan, there are so many ramen restaurants, and if your restau-

rant is not popular, you cannot survive. They have to keep updatingtheir menu to what is popular now,” he explains. “That makes mewant to do that too.”

the oxtail too long and it is toosoft but you cannot taste theoxtail,” Cho says. “The way wedo it, you can really taste theoxtail. The customers try it andthey say they’ve never had thatkind of taste before.”Customers can choose either

white rice or ramen noodleswith the meal, but Cho suggestsgoing with the slurp-factor andordering the noodles.“We use a special noodle. It’s a

little bit thick, so it doesn’t getovercooked,” he says.Another specialty only avail-

able at Ton Ton Ramen is theBlack Sesame Tan Tan Ramen($8.50). The traditionalJapanese dish consists of charsui belly, green onion, freshchoy sum, noodles and istopped with a half-cooked egg.But Cho takes things up a notchby adding black sesame seeds.“There’s a very big difference

between the white sesame and

the black sesame. For one, there isless oil in the black sesame thanin the white sesame,” says Cho.Black sesame seeds also are a

good source of copper, magne-sium and calcium, which eachprovide numerous health bene-fits. For example, copperrelieves rheumatoid arthritis,while magnesium supports vas-cular and respiratory health.Some people even believe that

long-term consumption of theseeds helps keep hair shiny andbeautifies the skin.“It’s good for the hair, good

for the skin, people believe itmakes the whole body healthi-er,” Cho says.As an added treat, customers

“That’s our motto,” says ownerPatrick Chang. “We try to make ourfood as simple as we can. When yougo to other restaurants, they try tomake it sophisticated with garnish-es and everything else. But ours isjust a simple dish — green curryis just green curry, pad thai is justpad thai — without adding any-thing extra.”This commitment to qualityof ingredients, taste and servicehas served the local restaurantwell, helping Bangkok Chef growfrom a small produce store inNuuanu to a popular plate lunch-style eatery with three locationsislandwide.

“Many people don’t know westarted as a produce market,”Chang confesses.In September 2001, Chang andwife Sansane Pornchairattanakun

began selling fresh, local produce in whatwas known as Nuuanu Open Market. Bythe following year, the couple had begunoffering homecooked Thai food to shop-pers, calling their tiny operation BangkokChef.“My wife’s family has a restaurant inBangkok, so that’s what Bangkok Chefrefers to,” Chang explains. “Gradually wechanged the whole operation to a restau-rant. Nuuanu is the original one, and twoyears ago we opened one in Manoa.”When space became available in thedeveloping warehouse building at 900 N.Nimitz Hwy., Chang saw the perfectopportunity to expand business even fur-ther.

“This area is starting to build up, andthere’s a lot of people here, either drivingalong the highway or working in town orat the harbor,” he says. “I think there is aneed for Bangkok Chef here, and whenev-er there’s a need, we go there.”Bangkok Chef’s third location openedjust last month, bringing with it the samemenu of simple, delicious, affordableThai food that has won high praise and a
