Beach Bar Takes a FreshApproach to Dining

As you roam the property,you’ll come across hints ofHawaii’s history steeped in con-temporary settings. Take BeachBar for instance. Founded in theearly 1950s and situated on thepremier oceanfront stretch ofWaikiki Beach, this courtyard baris nestled beneath the historicbanyan tree with panoramic viewsof the Pacific Ocean. As the origi-nal beachside bar in Waikiki,Beach Bar encourages guests tosit back and relax while indulgingin refreshing tropical drinks andcasual, local-inspired cuisine.

Norman Soderberg serves asexecutive chef at Beach Bar andconfirms the notion that his culi-nary creations go way beyond therealm of your typical “bar food.”

“What inspires me most is justwanting to serve great food to ourpatrons, not just deep-fried barfood that everyone thinks of,”says Soderberg, who has beenwith Moana Surfrider for the pastfive years. “Here at Beach Barwe’re really emphasizing healthyand fresh. We’re trying to incor-porate a lot of superfoods, such asavocado, into our dishes.”

A new-and-improved menudebuted recently, which according

to Soderberg, means a plethora oflocal ingredients and the freshestof fish.

“We’re trying to go green, andit’s important that we take advan-tage of what we have here athome. We rely on local farms,such as Nalo Farms and HoFarms, among others, for ourfresh ingredients. We even sourceour watercress from Kunia,” hestates, noting that the new menuhas been a work in progress.

Stellar items off the menu areeasy to come by. Whether you’rein the mood for a mouth-wateringGrilled Chicken, Pesto AioliFlatbread Pizza ($16) topped withNalo arugula, or Island Fish Tacos($16), featuring a fresh islandcatch, cabbage, cilantro and achipotle citrus yogurt wrapped ina grilled flour tortilla, Beach Barpresents you with some of the bestin local fare.

“No question about it, our sig-nature, top-selling dish is AhiPoke Nachos ($19),” Soderbergsays. “I've sold thousands ofthese.”

fresh island ahi, morsels of avo-cado, Maui onion, bonito flakesand sprinkles of nori drizzledwith sriracha aioli and sweetkabayaki.

“This is a definite crowd pleas-er and the bonito flakes give wayto a smoky fish taste, which peo-ple love,” he exclaims.

Beach Bar’s Thai Cobb Salad($18) is ideal for the health con-scious as it boasts grilled marinat-ed chicken, apple-wood-smokedbacon, local cucumbers, sweetand spicy peanuts, and rice noo-dles atop a bed of fresh Nalogreens splashed with a zestfulThai dressing.

“One of our newer dishes isLoco Moco ($18). It’s been doingwell considering it’s new,”Soderberg says of this heartyfeast, which consists of an 8-ounce beef patty decked out withloco moco must-haves, includingsweet onion, poached egg androasted garlic infused with a redwine demi.

“We plan to change up themenu seasonally and add newitems as we see fit,” he adds.“You have to stay inspired. As achef, you have to keep on creat-ing or else you’ll be left behind.”

Open daily for lunch and din-ner, Beach Bar certainly draws inthe crowds, and while breakfastisn’t available here, Soderbergalso has created a mesmerizingbreakfast spread across the way atthe snack bar, where early risersare treated to a continental break-fast showcasing hot sandwiches,parfaits, acai bowls, fresh-pressedjuices and more.

“Beach Bar is the perfect placefor the family after a swim in theocean or the pool. Despite the factthat this is a ‘bar,’ we’re very kid-friendly and have menus espe-cially for them,” Soderberg says.

“During the day, Beach Bargives off a laid-back, local con-temporary feel, and then at nightit’s more sophisticated with anupbeat jazz vibe. There’s alwayslive entertainment going on.”

Pupus don’t have to be dain-ty delicacies, and SeafoodVillage’s Ocean Seafood

Mountain ($39) surely provesthat point. Piled high with crabclaws, clams, mussels and oys-ters on the half shell, the appetiz-er-to-share platter is not just tastybut an eye-grabbing attentiongetter that won’t be missed byyour fellow patrons. It definitelycaught the attention of Glenn andCandice LeMarchiant. TheSydney residents took notice asthe mound of seafood and icewere placed in their vicinity.Proper dining decorum may haveprevented them from pulling up achair, or it could have been theDim Sum Sampler ($15) they

were enjoying. The sampler includes siu mai,

shrimp, spinach and a half-moondumpling, and was part of anoverall dim sum meal, Glenndescribed as “beautiful.” It’s nowonder the LeMarchiant’senjoyed their lunch. The dim sumat Seafood Village is fresh, lightand always juicy. And if the four-dumpling sampler isn’t enough,no worries, the restaurant offers36 types of dim sum, and 13 sep-arate appetizers ranging from potstickers to Chilled Julienned JellyFish ($10.95), so you’ll be hardpressed to find a flavor profile therestaurant can’t meet. Even ifyou’re looking for something youdon’t think they have.

Beginning this month, SeafoodVillage introduced its BistroMenu that offers enough big, redbeef to make any carnivore happy.Featured on this new menu isMongolian Garlic Steak, CenterCut Filet Mignon and a 22-ounce

Tucked away in thecoziest of nooks with-in First Hawaiian

Bank’s lobby is the best keptsecret in downtownHonolulu — Cafe Central.In an age when mom-and-pop cafes are overshadowedby monotonous chain coffeeshops, the unique feel andsuperb products presentedby husband-and-wife duoMax and Mary Suiter aredownright refreshing.

“We really focus on thequality of whatever we’reselling — whether it’s coffee,pastries or sandwiches, we dopride ourselves on the qualityof our work,” says Mary.

Visitors get a taste of thatdedication before they evensip the coffee, as the shop’sbeautiful Red Eucalyptuswood work is impossible to

skim over. Max, whoalso is a general con-tractor, constructedthe cafe’s facade andtables entirely from afallen tree purchasedin Manoa 12 yearsago. He brought thewood together withcustom-made North

Shore stained glass to createa Frank Lloyd Wright-inspired look.

The same attention to detailgoes into everything offered atCafe Central, including one ofits most popular specialtydrinks, Espresso Affogato($3.75). This Italian classicpresents locally made gelato— choose from Kona Coffee,Fior di latte (sweet cream),dark chocolate macadamianut, milk chocolate or saltedcaramel — topped with cas-cading hot espresso for anunimaginably divine spoonful.

The Affogato’s luxuriousflavor stands out because ofthe ingredients it is madewith. Like the shop’s KonaBlend coffee, its EspressoBlend is roasted exclusivelyby Max’s brother, RaymondSuiter, who owns KonaCoffee Purveyors in SandIsland. Who or what inspires you as achef/manager/owner? As the own-ers of an “authentic” Japaneserestaurant in Waikiki, what drives usevery day is to serve quality dishesand provide sincere hospitality thatwould make even Japanese touristswho arrived that morning say, “thisplace is just like Japan,” which isactually something that we hear, andappreciate hearing, every day. But itis a fact that Waikiki, and also ourrestaurant, enjoys guests from allover the world. To these friends, wefeel it is our responsibility to ensurethat they take away an experiencethat is as genuine as possible.

What is your favorite dish on themenu? Why? There are two dishesthat we are exceptionally proud of.First is “Hawaii-San Sampler” orthe “Local Sampler,” which consists

of three types of local sashimi deli-cacies — Hawaiian tuna, Hawaiiankampachi and sweet shrimp fromMolokai. The other dish is BigIsland Awabi or abalone. Awabi isdelivered to us three times a weekand kept alive in our tank so that ourcustomers can enjoy it as fresh aspossible. These dishes are ourfavorite because we believe it exem-plifies the essence of what we striveto do here: Take pride in and show-case locally-grown products, whilepreparing, presenting and serving it

in a manner that stays true to ourJapanese culinary and hospitalitystyle. After all, when our touristfriends enter our restaurant, theywant to enjoy not just what is thebest of Japanese cuisine, but alsoHawaii.

What is your favorite ingredientto work with? Why? Our favoriteingredients are very simple ones:konbu seaweed and kezuriboshi(dried bonito). The reason also isvery simple: It is the basic compo-nent or stock of all of our saucesand soups that we serve here. Ithink you will find it very commonto hear that almost all soups/saucesused in Japanese cuisine start withthese ingredients. From there, youwould add spices or flavors tomake it unique and your own. Iguess you could say it’s a favoriteby necessity.

What are your culinary goals?What do you hope to improve on?The goal of Odoriko is to preservethe foundations of what makes usan authentic, izakaya style,Japanese restaurant — great foodand service, and a positive,vibrant, and energetic ambiance.We are always mindful, and evenscrutinizing of taste and service. “3660 on the Rise is upscaleand local — and in Kaimuki ofall places. Chef Russell Siu and Iwent to school together at SaintLouis,” says Paulo of this hiddengem.

Considered to be one of themost versatile and cosmopolitansaxophonists in pop, soul andcontemporary jazz for nearly 20years, Paulo just wrapped upconcerts with acclaimed jazzmusician David Benoit inPhilippines and Indonesia.

“Everything is delicious,”Paulo says with a smile. “First ofall, with the Masago ArareCrusted Salmon, the flavor of thecrust is really good, and thesalmon is moist, but firm. Ittastes good! And I love searedahi. The way chef Lydell made itis perfect; it’s not dry and notovercooked.

“I think I’m in heaven,” headds, while taking a bite of MileHigh Waialae Pie. “I have asweet tooth. I love desserts, and Ihave to say, macadamia nut ice

cream is my favorite ice cream inthe world. This dessert has bigchunks of macadamia nut, icecream and chocolate.”

With an ear for music and apalate for superlative eats,Paulo’s gearing up for the thirdannual Pacific Rim Jazz Festival,Nov. 3 from 4 to 10 p.m. atHawaii Convention Center’s

Kalakaua Ballroom. As the pro-ducer of this much-anticipatedevent, Paulo says attendees canexpect a spectacular eveningcomplete with a lineup of inter-national artists along withnational and local stars, includ-ing guitarist Russ Freeman andThe Rippingtons, Grammyaward-winner Deniece Williams,saxophonist Kaori Kobayashi,

Paulo has been playing thesaxophone for the past fourdecades, and stumbled upon theinstrument at age 15 while in hishigh school band.

“When I started playing saxo-phone, I found a passion for itand I loved it. I began playing inshows in Waikiki, and then I gotmy big break locally withKalapana to be their saxophonist.The first gig I did with them wasat Waikiki Shell in front of11,000 people,” he recalls. “Itraveled all over the Mainlandand Asia with them, but after awhile I began to feel like I need-ed to branch out on my own.

“I moved to Los Angeles andgot my second big break as thesaxophonist for Al Jarreau, whois considered legendary. For me,that was such a validation. Thatput me on a world stage. It wastotally awesome and launchedme into my career today.”

For 32 years, Restaurant Suntory has treated visitors to traditional Japanese cuisine — fromshabu shabu and sushi to teppanyaki — featuring Hawaiian touches and ingredients.

But, for a limited time, thepopular eatery in RoyalHawaiian Center is bringing thedynamic flavors of Kyushu —one of Japan’s islands — toHawaii in what the restaurantcalls its “Kyushu Festival.”

Restaurant Suntory’s generalmanager Nobuyuki Aoyamaexplains that Kyushu is locatedat the southwest end of theJapanese archipelago, and isknown for an abundance of natu-ral resources and ingredientsused for cooking, thanks to fer-tile soil and thriving ocean life inthe area. The island is surround-ed by waters featuring both hotand cold currents, which com-bine to enhance the growth ofplankton, that in turn bolsters theaquatic life. The fish from thearea are the centerpiece of the“Kyushu Festival,” which willallow diners to taste the flavorsof the region through November.

“Our goal on a daily basis is tointroduce visitors from Japan tothe tastes and flavors of Hawaii,whether it’s seafood or any tradi-tional Japanese cuisine that wecan incorporate local ingredientsinto,” Aoyama says. “We like toserve as the bridge to introducesome of the cuisine of Japan toboth local diners and visitorsfrom the Mainland as well. We’dlike to use this Kyushu Festivalto thank our local customers forbeing loyal to us for 32 yearsbecause without them, we could-n’t make it this far.”

For dinner, Aoyama recom-mends Kyushu Gourmet Roll($8) featuring squid, spicy fisheggs, fresh wasabi and freshpickles. Iwashi Mentaiko ($10)is another dinner option includedin the “Kyushu Festival” menu,and features sardine marinated ina rich mushroom sauce.

Kyushu Sushi Course Dinner($52) has a host of seafoodselections from the region inboth sashimi and sushi form aswell as MatsutakeChawanmushi (savory custardwith mushrooms). The set alsoincludes a savory dessert,Kumamoto Ikinari Dango(available a la carte for $6),

which is composed of Japanesesweet potato and vanilla icecream topped with Kaposu jamfrom Kyushu.

“Their seafood is knownaround the world,” says Aoyamaof the featured fish from Kyushu.“The festival is focusing on theone island in Japan, but Kyushucontains seven different prefec-tures that each have their owningredients and flavors that weincorporate in the menu.”

Diners also are reminded thatthey will receive 20 percent offthe dinner menu when they bringin the current coupon in DiningOut. Additionally, those visitingthe shopping center may still

take advantage of the ongoingparking deal: free for the firsthour and just $1 per hour there-after for up to four hours withvalidation.

Sakura Restaurant, which just openedits doors a few weeks ago, is bloominginto a popular, successful eatery.

Junichiro Tsuchiya, who co-ownsthe restaurant with his brother, headchef Ryojiro, describes the restaurant’scuisine as Japanese-American. Aglance over the menu reveals thatSakura features the best of both typesof food, along with local favorites. The

restaurant’s offerings include a widevariety of food — from spaghetti toudon.

The brothers hail from Japan, andafter years of serving local patrons attheir previous restaurant, they havecultivated a set of fusion dishes thatcombine their diverse influences per-fectly. Dishes with a local influenceinclude Spare Rib ($13.50), which ismarinated in an aromatic shoyu-basedteriyaki sauce. Pescatore Spaghetti($15) features clams, scallops, shrimp

Sakura Restaurant comes to its Waialaelocation from a previous home atOlomana Golf Course, where it had

been for several years. Customers may recog-nize the co-owners, brothers Junichiro andRyojiro Tsuchiya, from their days in Olomana, butthe story started long before that. The Tsuchiyabrothers were raised in the restaurant industry.

“My father owned a restaurant in Japan,”Junichiro says. That also was a Japanese-American-style eatery. Junichiro and Ryojiro hadseparate day jobs, but moonlighted as workersin their father’s restaurant.

Ryojiro, who now servesas Sakura’s head chef,learned to cook from theirfather and also has worked in French and Italianrestaurants. “He likes to try all kinds of food,”Junichiro says.

Several years ago, all three moved to theIslands.

“(The golf course) had been looking for arestaurant, so my father brought me down toHawaii,” Junichiro says.

The brothers honed their culinary craft at thegolf course restaurant, but with their recent

move, their menu has shifted, too.“We have changed the menu. We now

have more Japanese-American style,”Junichiro says, explaining that the previ-ous restaurant focused on local andAmerican dishes. At Sakura, diners canenjoy Japanese influences as well.

Sakura Restaurant has been at its newlocation for about a month now — and sofar, the customers have been enjoyingthe restaurant’s fusion treats.

“We are really excited,” Junichiro says.

sushi and sashimi, and Japanese-style tempura,” Junichirosays.

For a taste of Sakura’s Japanese flavors, try Unagi AvocadoDonburi ($14.50), which is topped with nori and Japaneseyam, and is served with miso soup.

“A lot of our customers might order a steak, but then theyalso order sushi,” he says.

No matter what type of food lures you into Sakura, thedelectable homemade desserts are something that all dinerswill enjoy. These include Okinawa Sweet Potato Pudding,Tiramisu, Chocolate Cake and Cheesecake — all are pricedat $4 each.

“We welcome any kind of customers — those who want tocome for a beer and pupu after work, or those who want toenjoy a nice family dinner,” Junichiro says.

If you’re dining with a large group, Sakura’s menu is per-fect, as it can cater to a range of different tastes and cravings.And for groups, there also is a room in the back of the restau-rant that allows for a quieter, more intimate dining experi-ence and can hold up to 15 people.

For those coming for some pau hana fun, Sakura’s happyhour is a great deal. It runs from 5 to 6 p.m. and from 9:30p.m. to closing each night, and features drink and pupu spe-cials. Beer, including locally made Aloha Beer, is just $2.95,and house wine and sake are available for $3.50. Select pupu,including tasty treats such as Spicy Ahi Hand Rolls andMochiko Chicken and Fries, are just $5.

enerations of Hawaii dinershave flocked to The Willows Restaurant

since the Moiliili eatery opened in 1944,and have continually enjoyed the tranquil set-

ting and robust buffet spreads offered at the iconicestablishment.

While Hawaii’s original and favorite garden restaurantcontinues to serve up traditional Hawaiian food andother favorites at its lunch, dinner and Sunday brunchbuffets, some recent changes at the eatery have led to theinclusion of local comfort food selections that have bothcustomers and staff clamoring for second servings.

Executive chef Craig Yasaka took the helm at TheWillows Sept. 21 when previous executive chef MilesMiyamoto was handed the reins of Karai Crab. Sinceadding his touches to The Willows menu, customershave enjoyed Yasaka’s influences that have led to new buf-fet offerings including Asian Braised Short Ribs withKabocha, Poi Beef Stew and the ever-popular Garlic andHawaiian Salt Herb Crusted Prime Rib with Horseradishand Au Jus.

“He brings a lot of experience to the table,” says TheWillows administrative director Garret Kamei of Yasaka,who has served as executive chef at Ocean House andGyotaku, and also taught at Kapiolani CommunityCollege’s culinary arts program. “For the past three weeks,we’ve already seen a vast improvement in the variety of ourbuffet, and that’s one of things we wanted to change.”

Kamei explains that customers continued to frequentthe buffet for its Hawaiian food, curries, prime rib andseafood items, but the restaurant turned to Yasaka with the
