In honor of Breast Cancer Awarenessmonth, I’ve recently set a goal to bettermy health and well-being. And on a

mission to get there, I’m trying my best towork out in a way that I enjoy, and embracefoods that are nutritious and delicious.While spending some time doing

research on healthy foods, I stumbledacross a statement made by the Journal ofthe National Cancer Institute which pleas-antly surprised me, while in fact awaken-ing my appetite — miso soup consump-tion is linked with up to a 50 percentreduced risk of breast cancer, while alsoaiding in the prevention and treatment ofheart disease, hypertension and more.Now, I’m not sure if these studies are

totally accurate, but one thing I canguarantee is that my taste buds adoremiso — it’s an absolute must-have! Misois a traditional Japanese seasoning pro-duced by fermenting rice, barley and/orsoy beans, with salt and the fungusknown as kojikin. Combining these ingre-dients results in a thick paste used forsauces and spreads, and mixing withdashi soup stock to serve as miso soup.

This week, without further ado,me, myself and I went on a misomarathon at a few premier Ono,You Know, establishments knownfor their miso creations.

Stage RestaurantLocated on the second floor of

Honolulu Design Center, StageRestaurant offers a chic and mod-

ern atmosphere that is pleasing to thesenses, as it’s embellished in stylish hues,statement lighting, vivid artwork, and awide array of eclectic furnishings fromacross the globe.Executive chef Ron de Guzman raises

the bar as he showcases exquisite culi-nary fusion, specializing in contemporaryAsian-American cuisine. Chef de Guzmanand the rest of his kitchen staff trulyemphasize the importance of utilizinglocally grown fresh ingredients.Upon my most recent visit to Stage, I

met with sous chef Tim Petersen, whopresented me with Stage Restaurant’s topmiso creations, including the ever-famous “Wafu Style” Beef Carpaccio ($12)and Misoyaki Butterfish ($27).The succulent beef carpaccio is served

as an appetizer during dinner hours andfeatures the most tender New York striploin adorned with crystals of salt, daikonoroshi, chives, negi oil and a flavorfulMisoyaki drizzle, topped with crispy gar-lic chips. According to Petersen, somediners are skeptical of carpaccio at first,however, he says, it’s nice to step out ofyour culinary comfort zone every once ina while and treat your palate to some-thing new.

“Because our style of cooking has agreat Asian influence to it, the miso is themost pronounced flavor of this dish,” heexplains. “We use a red miso that has amuch stronger flavor than white miso —and the drizzle also consists of sesameand other secret ingredients.”Lastly, to enhance the dish, a spicy

ponzu sauce is served tableside for yourdining pleasure.When it comes to selecting a main

course, the miso lover in me goes straightfor the Misoyaki Butterfish ($27). Believeme, there’s no second-guessing this dish,as it’s a signature item at StageRestaurant. The fish itself is melt-in-your-mouth delicious, dressed in a savoryMisoyaki sauce and paired ever so per-fectly with sake-braised spinach, Kahukucorn, green onion coulis, a soy reductionand crispy garlic chips that distinctly addto the texture and flavor of this magnifi-cent entree.Also taking center stage here is an

impressive wine list with more than 500labels to choose from.Stage Restaurant is open for lunch

Monday through Friday from 11:30 a.m.to 1:30 p.m., and Monday throughSaturday from 6 to 8:30 p.m. for dinner.Closed Sundays.

Waimalu Chop Suey ChineseRestaurant is Chinese in theory,with an abundance of local flair

and a bit of American accents surround-ing this iconic establishment. Call it his-toric, but in its almost 50 years of busi-ness in Waimalu Shopping Center, thisreputable landmark, also known as the“House of Gau Gee,” is often beset bycustomers feasting on tasty NorthernChinese cuisine that over the years hasbecome a local favorite. At times theTravel Channel will spark your interestbetween bites, as it plays on the tworecently purchased flat-screen TVsmounted in the restaurant, and friendlystaff will often catch up on a story ortwo with a loyal customer.And while times have changed,

Waimalu Chop Suey continues toplease patrons with the same culinaryexperience they’ve known and loved,as the menu and some familiar facesremain the same. However, mostrecently, one may have noticed a par-ticular change that has taken place: aswitch in ownership.At the start of this month, Jacky Wang

has taken on the role of president andowner of Waimalu Chop Suey after previ-ous owners Randy Yim, his older broth-er Dennis and their mother Violet retired

after a 49-year run. In fact, Randy’s latefather Mun Cho Yim is the mastermindbehind the eatery’s famous “bambucha”gau gee.“It’s remarkable that one owner was

able to stay in business for so long, espe-cially with the downturn of the econo-my. I hope I can stay here for 50 years aswell,” says Wang, who has been in therestaurant industry for the past 15years, and also currently runs Kin SingChinese Fast Food in Waipahu.Wang, who’s originally from China,

set roots in the islands in 1993 with thehope of pursuing a career in sales, butinstead quickly obtained a part-timejob at a restaurant. With much persist-ence and dedication, Wang was able towork his way through the ranks frombusboy, to server, manager and mostrecently owner.“I really enjoy talking to customers, so

even though the sales route didn’t workout, I’m still able to do what I love in therestaurant business,” he says.“I took on the challenge of taking over

this restaurant, and this is an exciting,new experience. It’s really importantthat we respect the previous owner andour customers, and maintain the tradi-tion that has gone on for so long.”Continuity is key. Glance at the menu

and you’ll be overwhelmed with the vast possi-bilities, but if you’re a longtime customer, you’llalso notice that your favorites are still readilyavailable. Today, head chef Yung Hoy Lee, whohas worked in the kitchen for 25 years, is proudto continue to offer the restaurant’s most-requested item.“Everyone loves the Crispy Gau Gee ($9.25

for eight pieces) and I make 1,000 pieces of gaugee per day,” Lee says with a smile.The gau gee offered here is quite possibly

one of the largest on the island as the crispyouter pi (skin/wrap) is filled with ground porkand hints of vegetables, including cabbage andmushrooms. Customers also can request hotmustard sauce and sweet-sour sauce to pairwith this restaurant specialty — and Wang’sfavorite indulgence.“I taste it every day to make sure it's

absolute perfection. I have to make sure it's atits highest quality — I'm the taste tester,” hesays with a laugh.In addition to the original Crispy Gau Gee,

Waimalu Chop Suey also offers Crispy Gau GeeMein with Vegetables, Crispy Gau Gee withVegetables, Steamed Gau Gee, Gau Gee Soupand more.According to Wang, this renowned eatery is

now offering an irresistible special in whichcustomers receive a free live Maine lobsterwith dine-in orders of $50 or more (must pres-ent ad found on Page 19). The live Maine lob-

ster can be prepared in various ways — withginger and green onion, black bean sauce orwith salt and pepper.“The main thing is that we keep the original

menu because that’s what customers keep com-ing back for,” Wang states. “We’ll never takedishes off the menu, but we soon hope to addnew items to bring in even more customers.We’re taking things one step at a time.“Customers rave about our Honey Glazed

Walnut Shrimp ($11.25), saying the flavor isreally tasty.” Being that there’s something for every palate

here, fans of Waimalu Chop Suey are givinggreat praise to the Live Dungeness Crab (mar-ket price), Seafood with Vegetables ($10.75),Steamed Fish Filet with Ginger and Onion Sauce($11.50), Salt and Pepper Pork Chops ($9.25)and Combo Fried Rice ($8.50), as well — andthat’s simply skimming the tip of the iceberg.For those on the go, ordering takeout is con-

venient. Planning a party? Waimalu Chop Sueyalso caters and delivers (delivery is free ofcharge for orders of $220 and above).Looking ahead, Wang is optimistic and hopes

to preserve the longevity of the restaurant.“My primary goal is to keep serving high-

quality products with great customer serv-ice,” he says. “I won't give up. I'm only look-ing forward.”

lists 19 items that run the gamut fromfresh salads and Crispy Fried Quail($11.75) to oysters, foie gras and the kingof all pupu items, Crispy Fried Calamari,which can be ordered alone ($10.50) oras part of the 3660 Sampler Platter($18.95). If you’re with a group, this is theway to go. Chef de cuisine Lydell Leongsays their two sampler platters — theother is the Cold Seafood Plate — is cre-ated to serve two diners but they are bigenough for three or four to enjoy.The sampler platter features Rock

Shrimp Tempura, an Avocado MauiOnion Puree, the Crispy Fried Calamari,Short Rib and Foie Gras Tortellinitopped with a Truffle Mushroom Jus,

Shichimi Seared Ahi and an Asian Slaw.Everything can be dipped in the ToastedGarlic-Roasted Tomato Aioli that takesLeong and his talented staff two to threehours to make. This is one crazy gooddipping sauce.“If you take the time and effort, people

can taste the difference,” he says.Everything on the platter is how it

should be. The Calamari and RockShrimp Tempura are light and crispy, andthe Tortellini, forget about it! Good leftan hour ago, these things are great! Theavocado, ahi and slaw provide perfecttaste and texture complements.For those who prefer their samplers

with a bit of a chill, the Cold SeafoodPlate ($26) is a good choice. The heap offresh seafood includes Ahi Shashimi witha Wasabi Soy Sauce, Oysters on the HalfShell with a Ginger Vinaigrette andTobiko, Citrus Cured Wild Salmon, aChive Crème Fraiche, and a Crab Meatand Cucumber and Wakame Salad. NeedI say more?

On the lighter side, the VegetarianAppetizer of the Evening ($10.50) isworth checking out. The dish changesalmost daily, and includes a chef-inspiredcombination of nearly everything thatcan be grown in Hawaii, whether it isgreens from Nalo Farms or vine-ripenedtomatoes from the Big Island. The prepa-ration can be just as varied. “It can be steamed, fried, baked or

even raw,” says Leong with his trade-mark smile.No appetizer offering would be com-

plete without some pork, and 3660 payshomage to the glory that is the OtherWhite Meat. The Braised Kurobuta PorkBelly ($11.75) is seared for color andthen slowly braised for five to six hoursin sherry, pork stock, shoyu, tangerinepeel, garlic, ginger and star anise. It isthen chilled, sliced and fried crispy toorder and served with Maui onions,grilled flatbread and topped with a lightJus. Hungry yet?

Alocal favorite since 1985, Camellia Buffet inMcCully has proven to be a valued Korean-style yakiniku restaurant.

The eatery offers an irresistible all-you-can-eat buf-fet ($15.95 lunch, $23.95 dinner), in which diners pileon a variety of meats and vegetables to grill individu-ally at each table. Assorted banchan, as well assoups, add variety and flavor to every meal. Fordessert, red bean porridge or soft-serve ice cream arecustomer favorites.With so many options to choose from, the estab-

lishment is an ideal spot for the whole family, whereeven picky eaters will find something they like. WillieChang and his family recently took the time to gatherfor dinner and enjoyed the all-you-can-eat buffet.

Willie Chang:"We're eating BBQChicken, KoreanShort Rib, BBQ Beef,Hot Spicy Pork andlots of sides. I like theBBQ Chicken. A lot ofplaces, they don’tmarinate. Here, it’swell-marinated andyou get to cook it theway you want."

Since its opening a little over ayear ago, El Charro MexicanoAiea Restaurant has been

serving a full menu of flavorfulMexican dishes. But now, it alsooffers a full bar and dancing.In response to many customer

requests, the restaurant recentlygot its liquor license and offershappy hour from 3 to 6 p.m.Monday through Friday featuringdiscounted drinks and pupus,such as a Mini Sampler of appe-tizers (mini quesadilla, flauta,and taquito with sour cream andguacamole) for $8. Margaritasare $3.50 or you can get a pitcherfor $15.On Spanish Saturdays from

9:30 p.m. to 2 a.m., the tables andchairs are moved outside tomake room for a DJ and dancefloor. The kitchen is closed, butthe bar remains openand a pupu menu isavailable. Customersalso will be happy tohear that the air condi-tioner has been fixed.“We wanted to do this

for the community,”

says John Ramirez, who owns therestaurant with wife Sofia. “Theycan come to eat and dance.”A breakfast menu also was

recently added and is offered allday. Menu items are served mild,however, customers can requestfor hot sauce. Some of the popu-lar dishes include the DeluxeSalad ($9.49) served with grilledchicken fajitas, onions, pico degallo, bell peppers, guacamole,sour cream and cheese; and theChile Rojo or Verde ($12.49) withslowly roasted pork in a red chilisauce or verde sauce made withgreen tomatoes, served with rice,sour cream, beans and a choice ofcorn or flour tortillas.“These are family recipes of

chef Gloria Orias,” adds Sofia.“And it’s all dishes we like to eat.”

“We are the only food service thatdoes things for bakery, dessert andfood, so that stands out — our style andthe quality (of our food),” says Yeung,who co-owns the business with her sis-ter, Alice. “We first opened as a bakeryin 1997 at the McCully Shopping Center.This (Ala Moana location) is the firstfull-service restaurant location that wehave with a full-service bar. You canenjoy home-cooking type comfort foodon an international basis.”Panya has menus for the bistro and

bar, catering, bakery, desserts andcakes. The restaurant’s signature dishis the Laksa ($13.95), known as “PanyaHouse Noodles,” according to opera-tions manager Kiana Huang.“The Laksa is a Malaysian-Singapore

style noodle dish,” she explains. “Wehave our own recipe and it’s like a spicyseafood noodle.”Other restaurant favorites include

Japan, and this is something only Panyahas,” Huang says. “Our JapaneseCheesecake is more fluffy, very light anddoesn’t have much sugar.” “Our shortbread cookies ($4.25) are

always very popular,” adds Yeung.When it comes to drinks and its bar

menu, Panya emphasizes fresh mixtures. “We serve a wide range of fresh juices

and we use the fresh juice to make marti-nis. We make the Green Apple Martini($5) and Lychee Martini ($5) from realfruit juice.” Desserts at Panya are creative delica-

cies, as Yeung promotes the importanceof presentation. “Other than our sliced cakes, we make

tiny cakes for dessert platters,” she says.“We also have mini desserts in a cup —it’s fancier and brings our desserts to thenext level.”In addition to its dine-in services,

Panya also provides its customers withcatering menus, available on its website. “We have a set menu and (offer) full-

service catering on-site,” says Yeung.“We start from $10-$18 per person.”“From there, we expand our catering

menu to a more customized service,”adds Huang. “If customers provide uswith a head count, budget and what kindof food they’re looking for, we can cus-tomize the menu to fit (their needs).”

produced are anything butsimple. The authentic Italiancuisine at Paesano RistoranteItaliano is no exception, con-sisting of deeply flavorful andrich classics. The eatery hasbeen a Manoa staple fordecades, and since opening asecond location in Aiea in 2008,the restaurant has gained loyalpatrons all over the Island. The combination of old-school

recipes and thoughtful prepara-tions gives Paesano’s dishes thatextra burst of deliciousness. TheNew York Steak ($27.90) forexample, features black pan-grilled strip loin lightly seasonedto perfection and seared in a castiron-skillet to create an especial-

ly crispy crust. Succulent on its own, this

steak is taken to the next levelwith the restaurant's homemadered wine sauce, as old as theestablishment itself. "What makes it special is that

Bob Suzukawa, we learned thatthey’re quite accommodating atthe South King Street eatery.Suzukawa assured us thatalthough the Xiao Long Baoaren’t available vegetarian-style,Jin Din Rou will prepare somedishes to order for you, omittingthe meat or fish. (Although, if wenudge the cooks a bit, maybethey’ll come up with a vegetari-an soup dumpling, maybe sub-stituting mushrooms for meat —hint, hint.)Looking beyond the

dumplings (for now), Ma PoTofu ($9.50), always a favoriteChinese restaurant staple, isjust as spicy-good without thepork, and the cooks are morethan happy to leave it out.

Suzukawa says the sauce is a bitspicier and thicker than whatyou’ll find in typical Chineserestaurants, not very sweet andfull of flavor. To accompanyyour ma po tofu, if you just ask,they will stir up a meatless veg-etable fried rice. The noodledishes, such as Noodles withVegetables ($9.99), althoughmade with chicken broth, canbe adjusted to your taste aswell. Just ask, and they will sub-stitute a vegetable-based broth.After all, as the saying goes,

Japanese Nabe Restaurant,the mission statement issimple, according toowner Issei Kazama.

“Our mission statement is just twoJapanese words,” he says. “One is ‘kan-dou’ and the other is ‘kansha.’ ‘Kandou’means to make people happy to thepoint where they’re moved emotionally.‘Kansha’ is gratitude. I don’t know ifthere are a lot of restaurants that reallytry to make people happy, and that isone thing that we push — customershave to be happy.”

With an assortment of Japanese nabe— a term referring to many varieties ofJapanese steamboat or one-pot dishes —as well as sukiyaki and shabu shabuoptions, customers are sure to be happyat Ichiriki. The restaurant first opened inHawaii in 2006 on Piikoi Street — whichKazama refers to as the Ala Moana branch— and opened its second location thispast June in Westridge, Aiea. The two loca-

tions are equally popular and crowded.“The Aiea branch has more capacity, so

there’s not that long of a wait,” he says.“Noon is the most crowded time forlunch; for dinner, it’s 6:30-8 p.m.”

Ichiriki’s lunch and dinner menus arecentered around the eatery’s nabe special-ties. For dinner, the nabe come in singleand kami portions, made for one person ormore than one person, respectively.

“We specialize in nabe hot pot so that’sall we have (on our menu), aside from afew appetizers (Pipikaula Horensou$6.95),” Kazama says. “Our lunch menu isbasically our dinner menu, including ourbiggest selling dinner items made a littlebit smaller and at half the price.”

Customer favorites include theMushroom Nabe ($24.95 dinner single,$51.95 dinner kami), which features awide assortment of seasonal mushroomsalong with bok choy, tofu, kuzukiri, aburaage, chives, gobo, chicken, pork, sausage,tsukune meatballs and won bok cabbageserved with ramen noodles and rice. Alsopopular is the Seafood Nabe ($28.95 din-ner single, $59.95 dinner kami), a shoyu-based nabe that comes with Madagascarshrimp, calamari, scallops, Chinese cab-

bage, bok choy, enoki, shiitake mush-rooms, tofu, kuzukiri, abura age, chives,gobo, sausage, homemade tsukune meat-balls and snow crab. The Ichiriki Nabe($11.95 lunch; $21.95 dinner single, $45.95dinner kami), however — made fromShoyu-flavored soup stock and servedwith 16 different ingredients — still reignsas the eatery’s signature dish.

“The Ichiriki Nabe is very clean tast-ing,” explains Kazama. “It has 16 differ-ent items — it’s got a little bit of every-thing, some seafood, some meat, lots ofvegetables. It’s very healthy; nothing iscooked in grease. The Mushroom Nabeis great; mushrooms are expensive out-side of the supermarket and in this one(nabe), you get four different types ofmushrooms. It’s a good alternative tomeat. Our Seafood Nabe is all seafoodwith a bunch of vegetables.”

Ichiriki’s newest additions to the nabespecialties include the Tomato Nabe($21.95 dinner single, $45.95 dinner kami)and the Paitan Nabe ($21.95 dinnersingle, $45.95 dinner kami). Whilethe Tomato Nabe features atomato-based soup stockserved with 16 different ingre-

dients, the Paitan Nabe is made with apork broth soup.

“The Tomato Nabe is popular, but thePaitan Nabe is more popular,” confirmsKazama. “It’s (the Paitan) a pork broth;we usually use fish-based broths in oursoups but this one is pork-based.”

Nabe entrées start at $11.95 for lunchand $22 for dinner. Kazama encouragescustomers to utilize the eatery’s seniordiscount, offered from Monday throughFriday.

“Our senior discount is a 25 percentoff for seniors 55 and older,” he says.“We’ve been doing that since 2007 at thePiikoi location. That’s really popularwith the seniors.”
