Happy Sunday, Ono readers! So,being that your Thanksgivingfeast probably lulled you to

sleep for days, I would guess that ifyou’re anything like me, then you’re onlynow regaining full consciousness, slowlyemerging from that zombie-like state,thanks to the intense kanak attack. It’sbeen said that the turkey itself is the cul-prit in after-lunch/dinner lethargy, buttruth be told, turkey or no turkey, it’scommon to feel the effects of the feast.

Therefore, while I still have mounds ofThanksgiving leftovers waiting to bedevoured in the refrigerator, this week Ihad to keep it somewhat simple for thesake of my stomach — fresh fruit cre-ations were what I was after. Berries,apples, lychee and more — you name it— the following Ono, You Know establish-

ments had it all. Some master-pieces were more decadentthan others, but the commonthread equated to a sympho-ny of refreshing fruits that Isimply couldn’t resist!

And, I must reveal that while theapples and strawberries give a vibrantcolor to this already remarkable dish, it’sthat subtle sweetness that it also pro-vides that makes this salad stand in aclass all its own. with Chef Matt, who gave us asneak peek into what to expectcome Christmas. One thing’s forsure — it’ll be a very merry sea-son for your appetite.

DO: What is the concept ofBali Steak & Seafood? Whatcan patrons expect when theydine here?

Alleshouse: The concept ofour restaurant is steak house-driven, but it’s a steak housewith an island flair. What we tryto do here at Bali is blend thebest of both worlds. Obviously,we’re here on this amazingisland, and we have all thesewonderful sources of fresh andlocal fish, so we incorporatethat into our menu, just asmuch as we incorporate ourfine steaks as well.

DO: Are the holidays a greattime for business here at Bali?You folks are always doing yourbest to give back to the commu-nity, correct?

Alleshouse: Yes, the holi-days are huge, not only justfor Bali Steak & Seafood, but

for the Hilton aswell. We’ll berunning three tofour differentholiday parties.And this year forThanksgiving wewent down to ahomeless shel-ter and present-ed 500 to 600meals there aswell. I would saywe served about2,400 meals for

Thanksgiving alone.In terms of giving back to the

community, it’s a huge thing forme. I don’t just want to be achef at a restaurant or a chef ata hotel, I want to be a part ofthe community. For me, gettinginvolved with different things,such as helping to feed thehomeless and also workingwith the local vendors andfarmers, gives me that sense ofcommunity and gets me rooteda little quicker.

DO: As a chef, what kind ofimpact do you hope to bring toBali Steak & Seafood?

Alleshouse: My philosophy issimple elegance — don’t over-work the great local ingredientsthat you have. It’s really a farm-to-table philosophy that comestruly from the heart. I hope tosoon be digging in the dirt alongwith the farmers on a Saturdaymorning and then coming backto work here Saturday night.Here at Bali, and with our

style of cuisine, if we’re going touse these elevated ingredients,then we’re going to use our cre-ativeness and the techniquesthat we’ve learned along theway to enhance the ingredients,not mask them. You shouldn’thave to use additives or createflavors when it’s all right therenaturally for you. I would sayclose to 75 to 80 percent of ouringredients are local products,but it’s my hope to get it towhere we’re using 90 to 95 per-cent of local ingredients —hopefully one day 100 percent.We always go to our local farm-ers first, they’re our No. 1source, including Nalo Farms,Hibara Farms and MA‘O Farms.

DO: Christmas is just aroundthe corner. What is Bali doing tocelebrate the holiday season?

Alleshouse: Well, here at Bali,for Christmas we’re focusing ona four-course prix-fixe menuthat will be available for dinneron Christmas Eve and Day ($75per person). We also have athree-course tasting menu

worlds. The adult menu begins witha choice between Kona LobsterBisque with Lobster Fritters, andHamakua Mushroom Boullion. Thesalad is either a Waimea babyromaine salad or Hirabara Farmsmixed greens. For their entrée, din-ers can choose one from amongseven choices: Filet Mignon withBéarnaise Sauce, Prime New YorkSteak with peppercorn sauce, PrimeRib of beef with au jus, MolokaiHoney and Balsamic Pheasant,Lemon Grass and Butter SearedIsland Snapper Filet, Baked SeafoodPot Pie with Scallops, Fish and KonaLobster Cognac Cream Sauce, orHauula Tomato Risotto with wintervegetables (for our vegetarians).The prime-aged New York steak isseasoned with our own special spicemix, Kona sea salt and marinated ina garlic oil. Finally we top it off witha Gorgonzola and smoked Kona SeaSalt butter that's melted right overthe top and served with a pepper-corn demi glace. As for dessert,we’re serving the ever-famousChocolate Hazelnut Yule Log withegg nog panna cotta and raspberrycoulis. It’s a traditional Christmasdessert that we slice down. It's veryfresh and delicious.

DO: You had mentioned a keikimenu. What can the kids look for-ward to?

Alleshouse: The kids are definitelynot shorted by any chance. Thisyear, the meal begins with HamakuaMushroom Bisque and HirabaraFarms mixed greens salad. Keiki canchoose among three entrées, includ-ing Petit Filet Mignon with BéarnaiseSauce, Grilled Chicken Breast withHerb and Garlic Roasted Potatoes,

and Campanelle Pasta with slow-sim-mered marinara sauce. The dessertis a Chocolate Hazelnut Yule Logwith egg nog panna cotta.

DO: Is this Christmas meal some-thing that’s done every year here atBali Steak & Seafood?

Alleshouse: TheHilton’s always doneholiday celebrations.The holidays are alwaysa huge event here,because the hotelalways attracts so manypeople this time of year,and it would seem likealmost a waste not tocapture it. We definitelygear toward bothtourists and locals —the more locals we seein here the better. Forthe locals, we do offerfree validation when youdine here.

DO: Wonderful! Sounds like youlove what you do. What are therewarding aspects of your job?

Alleshouse: I would definitely saythat I get to do something that I’mvery passionate about, and I get totake that to a professional level anda global stage, so to speak. Cookingis something I’ve been doing sincethe age of 6, and I haven't lookedback since. I’m very fortunate to beable to do something that I'm verymuch in love with.

Waimalu Chop Suey, better knownas the ‘House of Gau Gee’ toloyal patrons, has been feeding

hungry tummies with Northern Chinesecuisine for nearly 50 years. New ownerJacky Wang assures that allthe same local favoritesremain and would like toencourage new patrons to trythe eatery as well.

“We just want to thank all ofour customers and let themknow how much we appreci-ate them,” Wang says.

For more than 20 years, din-ers from all over Oahu, evenouter Islands have flocked tothe restaurant to try their sig-nature Roast Pork. Wang describes thewonderfully indulgent pork belly, com-plete with crackling skin, as “crunchy,tasty, moist … yummy, yummy!”

Big City Diner goes big with its fabu-lous entrees that satisfy all yourcravings. Whether it be juicy burg-

ers that you’re after or refreshingly zestysalads, this award-winning establish-ment has it all. But don’t think you’vetried everything just yet. Big City Dinersenior executive chef Dennis Franks hascreated quite a few irresistible off-the-menu entrees.

“The Kalua Pig Benedict ($11.99), ChiliCheese Omelette ($7.99) and GuinnessShake ($7.50) are just a few things thatwe’ve created here that are only servedupon customer’s request,” Franks says.

Franks himself is the mastermindbehind all of these off-the-menu cre-ations, always wanting to offer some-thing different and unique to hisloyal patrons.

The Kalua Pig Omelette (available atPearlridge, Waipio and Kailua locations)consists of a toasted English muffin

topped with a heaping portion of kaluapig and a poached egg doused in aHollandaise sauce, and finally garnishedwith lomi salmon. The meal also comescomplete with a side of fruit and yourchoice of a breakfast starch. As for theChili Cheese Omelette, Franks says, it’sone of their simplest dishes. This irre-sistible omelette is filled to the brimwith savory chili and melted Cheddarand Jack cheese.

“Customers usually hear about thesedishes through word of mouth, and thenthey come in and request it,” Frankstates. “And the Guinness Shake is reallypopular as well, but it’s only available atour Pearlridge and Waipio locations.”

has served as one of Oahu’smost popular okazuyas(Japanese delicatessen) since1939. It’s this traditionalokazuya style that makesFukuya a regular favoriteamong locals, according toowner Arrison Iwahiro.“It’s more of a family-style

okazuya where you can pickand choose the items you want

in your bento,” he explains.“Instead of having a set bento,you can choose whatever youwant; that’s where we differ(from other businesses).” Customer favorites tend to be

the shrimp tempura ($1.45),shoyu pork ($1.80) and assortedsushi, including nori maki($4.60) and inari (75 cents forsmall, $1.15 for large). The spe-cialty rolls — teri beef ($4.60),chicken ($4.60) and hot dog($4.35) — and musubis, especial-

ly the shiso musubi($1.15), are alsoextremely popular.“I hear a lot of peo-

ple say, ‘I like thatpurple musubi,’”Iwahiro says, refer-ring to the shisomusubi, which is ricesprinkled with shisored powder. “Ourmixed sushi also arealways popular.”

Iwahiro statesthat many of the chick-en dishes are popularduring football season,as fans often ordertrays of mochiko andgarlic chicken.“Chicken sells real-

ly well, as does theshrimp, because theyare easy to eat,” he

says. “Popular chicken dishesinclude the fried chicken,mochiko chicken, furikakechicken and nori chicken. Thenori chicken is fairly new.”

As the holiday seasonapproaches, customers cantake advantage of Fukuya’scatering menu. Customers canpick from a variety of chicken,salads and fish, some of whichalso are available on theeatery’s deli menu. Highlyrequested selections forcatering include the assortedsushi trays — 43 ($29), 74($47) and 101 ($59) pieces —and assorted mochi trays, cat-egorized in 40 ($26), 50 ($31)and 70 ($43) pieces.

“We can do holiday cater-ing, from home parties to officeparties, any type of catering,”states Iwahiro.

Even though Fukuya closeson Mondays and Tuesdays,Iwahiro says that catering serv-ices are available for large par-ties on those days.

“For walk-ins, we’re openfrom Wednesday to Sunday, butwe have catering available afterhours,” he confirms. “OnMondays and Tuesdays, wedon’t have any walk-ins, but wedo large functions.”

Fukuya Deli & Catering did notbegin as a catering business.Reflecting on the eatery’s history,Iwahiro recalls how Fukuya Deli &Catering — which first started in1939 — originated as a two-personoperation that closed as soon asthe food ran out.

“Two people would come inthe morning, cook, put it (thefood) out and once it sold out,that was it,” he says. “Now, wekeep producing as things go out —we keep making more tempura,chicken and everything. In the1970s, it (Fukuya) already wastransitioning into replenishing, sothat took more manpowerbecause you need people cookingwhile you’re selling.”

Around that time, Fukuya ven-tured into the catering businessand started to expand into what itis today. Although Fukuya is still a

popular choice for catering,Iwahiro notes that the type ofevents requesting their serviceshas changed.

“Back in the day, we did a lot ofweddings,” he says. “Now, they(the weddings) are all at hotels;before, they were usually atchurches. During the weddingmonths, we would be booked;three weddings every Friday orSaturday. That’s how it was, butthen everybody transitioned andtimes changed … that’s why westarted to do funeral catering.(Now) we do a lot of funeral cater-ing for the mortuaries.”

Regardless of the type of event,though, Fukuya still strives to pro-vide its customers with the bestpossible products.“We try to give the customer our

best … we keep the quality thebest we can,” Iwahiro says.

Kim says that one ofthe most popular dish-es right now is theChoon Chun ChickenStir Fry ($29.95 for amedium, feeds 2-4 people). Thisdish includes a boneless chickenthigh, cabbage, zucchini, carrots,sweet potato, sesame seed leaves,onions and Korean mochi, allswimming in a hot sauce.

If it’s chicken you’re after, othercustomer favorites include theHoney BBQ Fried Chicken andFried Chicken Combination

Stuffed from Thanksgiving, I couldn’timagine taking in another piece of pump-kin pie. Albeit delicious, I needed to optfor something reinvigorating and sweet,making Fendu’s Lychee Caramel Flan($4.25) and Buttermilk and Fresh BerryPanna Cotta ($4.50) appear quite tempt-ing indeed.

The Buttermilk and Fresh Berry PannaCotta is my go-to dessert post-Thanksgiving. Topped with fresh mixedberries, including strawberries, kiwi,raspberries, blackberries and blueber-ries drizzled in a light buttermilk creamsauce, this dessert consists of layers of

ladyfinger sponge cake and a savorymixed berry sauce. It’s quite divine, tosay the very least!

Now, if you’re a fan of flan, you’ll lovethe Lychee Caramel Flan. The flan itself ismixed with ground lychee with a pulp-like consistency and cooked to perfec-tion. It’s then topped with a sweetcaramel glaze, made in-house, and lastlydecorated with vibrant pieces of thefreshest watermelon, kiwi and blueberry.It’s truly love at first bite!

The appetizers at the Topof Waikiki are as stunningas the views from its lofty

perch above the Pacific. Theitems, created by executivechef John Neff, are both simpleand complex, and visuallyappealing. It’s not enough, hesays, to simply put good food infront of the diners, he wants toimpress. He’s done it.

The Coconut Shrimp withPineapple Salsa ($15) is coatedwith a coconut and macadamianut crust and served with acold soba noodle salad with asesame-miso vinaigrette. Arestaurant standard fordecades, Neff takes it beyondordinary with a freshness andpresentation that most placescan only hope to achieve.Another standard gone upscaleis the Spicy Ahi Poke Stack($13). Served with a Sambaland Shoyu sauce, crispy wonton skins, avocado crème,papaya slaw and micro greenswith a kiwi-lime vinaigrette, thestacked appetizer is anotherexample of Neff’s desire to wowthe eatery’s healthy mix of vis-iting and local diners. The avo-

cado crème is a natural com-plement to the high-grade ahi,and when eaten with the wonton skins creates a creamy,crispy and slightly spicy flavorprofile that takes poke far pastthe ordinary.

New to the menu are the DayBoat Scallops ($17) and theCamembert En Croute ($15).Both are simply outstanding.The pan-seared scallops areserved with an Ewa sweet cornpudding, braised pancetta, anda Kamuela tomato and Mauionion relish. The slightly saltypancetta adds a nice counter-balance to the naturally sweetscallops, with each ingredientcoming together perfectlywhen swiped through the cornpudding. Trust me, you’ll belooking for other things to sopup the remaining pudding. It’sthat good.

Picking one item out of the12 appetizer options as afavorite is not an easy thingto do, but there was some-thing special about theCamembert En Croute thatkept me going back for more.Full disclosure requires me to

mention that I devouredeverything put in front of me.It’s a hazard of the job.

The Camembert is wrappedin a puff pastry and served witha side of candied Cajun wal-nuts, Granny Smith apples,greens and grapes tossed in apomegranate balsamic reduc-tion. Each piece can be enjoyedby itself, but on Neff’s advice Isliced theCamembert andadded a sampling ofeach ingredient. Hewas right. Each bitewas a combinationof creamy, sour,salty and sweet.

The pupus don’t end on theregular menu. Each night Top ofWaikiki has two Happy Hoursthat feature $4 cocktails, wineand beer and $7 appetizers,which include BBQ PorkSliders, Calamari, Braised KalbiRibs with bok choy and Mauionion kim chee and more.Saturday night is live entertain-ment from 10 p.m. to midnight.

Oh, well, that’s that, I fret. But wait. Kazama pauses, then continues:

“We do get the occasional vegan whocomes in, and for vegans/vegetarians weuse plain water and seaweed, and then give

them ponzu sauce on the side for flavor.”Yes! It’s not on the menu, so we’re happy to

share the secret with Dining Out readers. There’s a healthy dose of vegetables in

the special vegetarian nabe ($19.95) —won bok, bok choy, gobo, chives, carrots— as well as kuzukiri (arrowroot noodles)and tofu and aburage for protein. And,Kazama notes, “lots of mushrooms,”including enoki, shiitake and shimeji. Nooil is used in this preparation, so it’s lightand clean-tasting, allowing the natural fla-vors to shine through.

Restaurant’s Kahala loca-tion on Waialae Avenue. Theeatery — which was origi-nally located on McCullyStreet — prides itself onserving a wide range ofChinese cuisine at reason-able prices and good cus-tomer service, according tomanager Darlene Fong.

“At this location, weserve high-quality food ataffordable prices,” shesays. “The average priceper customer can be as lowas $7. Compared to otherrestaurants, we do a varietyof Chinese cuisine, as wellas local-style food. We treatour customers just like fam-ily members or friends; wetreat them like royalty.”

To commemorate its firstyear anniversary, GoldenDuck Kahala is doing a spe-cial promotion — the ever-popular Chinese ChickenSalad (usually $8.25) andthe Oyster Sauce Chickenwith Cake Noodle (usually$9) are offered to cus-tomers for $5.99 each. Thisspecial is going on for theentire month of Novemberand will continue into theholiday season. Anotherfeatured special is the dis-

counted price for CrispyGau Gee, which is beingoffered at $5.99 for 10pieces (originally $6.50 for10 pieces).

The eatery also offersother specials that are not apart of the restaurant’smenu, such as an aspara-gus dish with a variety ofaccompaniments like scal-lops ($13.95), shrimp($10.95) and beef, pork orchicken ($9.75).

When it comes to GoldenDuck’s signature dishes, theOyster Sauce Chicken($8.25), Boneless MinuteChicken ($9.25) and StuffedDuck ($9.95) are the morepopular entrées. Frequentlyrequested dishes also

“For the Steam Sea Bass,we use the best quality; it’svery tender,” explains Fong.“Likewise, for theTenderloin Beef with TwinMushrooms, we use a high-quality tenderloin beef.Jumbo shrimp are used forthe Honey Walnut Shrimpdish, and the sauce iscooked differently fromother restaurants.”

Customers have the

option of ordering takeout atGolden Duck; currently, theycan order any item off thetakeout menu and receive 15percent off.

“The takeout menu is thesame as the dine-in menu,”says Fong, “and it’s 15 per-cent off the entire menu.”

In addition to its regularmenu, Golden Duck offers dimsum from 10 a.m. to 3 p.m. TheHong Kong Style Custard Tart($2.88) is one of the most pop-ular dessert items.

“The Hong Kong StyleCustard Tart is differentfrom a regular tart,” saysFong. “We use a very thincrust and it’s not too sweet.”

Other popular dim sumitems include the Siu Mai

($3.28), or Pork Hash,Steamed Char Siu Bao($3.28) and SteamedSpinach & ShrimpDumpling ($3.28).
