Happy Sunday, Ono readers! Whatif I told you I was craving grass?You would think I’m crazy, right?

Well, don’t be too quick to judge. Yes, I’mcraving grass, but not just any type ofgrass. Enter lemongrass, also known ascymbopogon. Whole lemongrass is noteasily chewable, so if you choose to con-sume raw lemongrass, it’s highly recom-mended to remove the stalk first. Yet, wedon’t have to worry about that because wewon’t be eating it raw this time around.

Instead, this week, I ventured to a fewof my favorite Ono, You Know establish-ments known for some irresistible dishes,which center around this edible grass.Perfect for the summer months, lemon-grass enhances any dish by adding astrong citrus flavor, and it’s commonly

used in the preparationof poultry, seafood, beefand fish in many Asiancuisines — yum!

So, without furtherado, let's explore thisrealm of lemongrass andsee if the grass reallydoes grow greener on theother side.

Chai’s Island BistroCelebrity chef Chai Chaowasaree capti-

vates the appetites of diners with his allur-ing and contemporary Pacific Rim cui-sine. As an award-winning chef,Chaowasaree draws in the dinner crowdfrom 4 to 10 p.m. with decadent offeringsfrom his menu, in addition to live enter-tainment nightly.

“Mangoes are such a great sum-mer fruit. We really wanted to doan event on property that featuredsomething seasonal,” saysBeachhouse at the Moana chef decuisine William Chen. “Mangoesare summery, bright and tropical,and the name pairs well with theMoana Surfrider.

“Mangoes also have great nutri-tional value. The Westin brand isreally all about promoting superfoods and wellness. Mango has abunch of nutritional complementsto it that pairs well with what theWestin brand stands for,” he adds.

Indulge in a mango mecca andexperience a variety of activitiesdevoted to mango, including amango food demonstration featur-ing guest speaker Hector Wong,who will showcase a ChocolateMango Oblivion Cake and instructyou on how to decorate a cake withmango. Mango seminars also are

scheduled, and contests such asBest Mango Contest and MangoRecipe Contest will dish up somefriendly competition.

“As part of the Best MangoContest, people can bring theirown mango fruit to be judged tosee who raised the best mango,”Chen states. “The Mango Recipecontest is always fun because peo-ple from the community submittheir favorite mango recipes, andwe’re still accepting applicationsfor submissions. Some of the sub-missions we’ve received havebeen pretty wild — the contestantsmix different ingredients andspices into their creations.”

“This is one of our traditionalevents where we invite local celebritychefs to come and make their ownmango-inspired dish. Then we inviteour guests who come to the propertyto taste the dishes, and then they actu-ally get to vote and participate inselecting who’s the winner,” Chenexplains, adding that sampling ispriced at $75 for adults (includes twodrinks at the Southern Wine & Spiritsbooth); $45 for children (ages 5-12);$6 per script for one plate at eachbooth; pre-sale tickets cost $65 foradults and $35 for children, and areavailable for purchase through July20. (A portion of the proceeds willbenefit Leeward CommunityCollege’s Culinary Arts Program.)

Mangoes at the Moana has becomea staple at the resort, and the event isgrowing in popularity each year.Passionate about mango, the Moana isadding a new component to its mangorepertoire this time around as it intro-duces its Mango Cocktail Mixdown.This fun-spirited competition willbring together local mixologists whowill utilize mango and Kettle OneVodka as main ingredients in a mixeddrink. Guests will be able to taste theentries of the three finalists compet-ing for the top prize along with otherselections at the Southern Wine &Spirits booth.

“Mango Cocktail Mixdown is per-fect for sunset, pau hana and HappyHour,” Chen says. “All the mangoesthat we currently use are all locallysourced — we work with our localproduce purveyors and source the

mangoes from the islands.”Mango lovers may assume that one

day isn’t enough to relish in theessence of mango. Therefore,Beachhouse at Moana Surfrider isoffering an assortment of mango com-

ponents on its menu.“For the month of July, in honor of

Mangoes at the Moana, we like tobuild the hype throughout the proper-ty,” Chen says, noting, “During eachmeal period we try to utilize the fruit

and highlight it in a certain dish. Sofor breakfast we’ve been featuring ourmango bread, For afternoon tea we’reoffering a mango custard with ourscones, mango tea, sorbet and mousse.We have a refreshing Mango Slush

($6) available during lunchtime andafternoon tea as well. For dinner we’reshowcasing a Kurobuta Pork Chop($46) finished with a chili mango gas-trique — comparable to a sweet andsour sauce — and served with fried

onion rings and dressed watercress.“I personally love pork, I think it’s

just fantastic. The Kurobuta pork chopis something that we used to do, andthe guests have been asking for it back,so we kind of modified it a bit,” headds. “We brine it for about 36 hourswith some spices and citrus. Pork pairswell with the sweetness of mango, soit’s a very nice combination.”

Local crafters and vendors also willbe on hand, and live entertainmentwill be provided throughout the dayby local musicians Puuhonua Trio,Kamaka Fernandez Trio, TaimaneGardner Trio and Olomana. TheMoana Lani Spa Table will have lus-cious and refreshing Sir AubreyWhite Lion mango iced tea with a fra-grance and flavor of fresh whitemango available for purchase.

“Mangoes at the Moana will broad-en your horizons as to what you cando with the fruit. It’s all about cele-brating mango,” Chen says.

Dining Out caught upwith Brant Yamamoto andWayne Tanaka for lunchone day at HinoneMizunone. Both have theirregular dishes that theyorder, but today was dif-ferent — they both triedsomething new.

The lunch menu isserved from 11 a.m. to 5p.m. and features anassortment of teishokumeals served with rice,miso soup, two side dishesand pickles, and udon andcurry dishes.

What’s your most popular dish?For our breakfast buffet it’s a toss-up between our pastries that arebaked fresh daily from our bakery,the fresh fruit, and our hand-carvedturkey and honey ham. For lunch

it has to be our handmade Angusbeef burgers served on a sweetbread bun. I’ve got to say theCheesy Burger is my favorite madewith four types of cheese. TheShrimp and Sausage Kabob andthe Rib Eye Steak are our popularentrees for dinner. For dessert, ithas to be our homemade browniesundae, served warm with a scoopof ice cream.

What is the biggest complimentyou’ve ever received as a chef/man-ager/owner? The biggest compli-ment that I could ever receive is

when my customers come backyear after year. We have beenopen for more than 30 years andsee many returning customers. Itis always great to see people whohave been visiting us for yearsbringing their children, friends andfamily.

Understanding my ownlimitations when itcomes to dissecting the

subtle flavors of Japanese cui-sine, I turn to my not-so-secretin-house expert. To say the least,she was impressed with thepupu options on Yoshi’s menu.

Earning most-flavored statuswas Deluxe Cold Tofu ($9).The creamy cylinders of freshtofu are combined with moun-

tain yam, natto, green onion,sea urchin and salmon roe tocreate a taste pattern that issweet, savory and salty. Notingthe ingredients, the lifeexpectancy of the dish was des-tined to be short. It didn’t standa chance. Within two minutes itwas on to the next dish.

Garlic Toast with Spicy Tuna($8) provided a nice counterbal-ance of flavor and texture. Spicyraw tuna is topped with sesameseeds, and gently placed ontoasted French bread. Garlic,Parmesan cheese and mixedgreens complete the crunchy,spicy stack of goodness. Thetuna is spicy, and if you’re a fanof spicy ahi poke, you’ll be afan of this dish as well.

How does MozzarellaTomato ($8) salad fit onto aJapanese menu? Quite nicely,thank you. Locally growntomatoes are sliced and alter-nated with portions of freshmozzarella. The cleanly pre-

sented dish is topped with gar-lic, olive oil, soy, vinegar,lemon and a basil pesto. Thekey to such a salad is fresh

ingredients that are simplyadorned. Yoshi does this. Eachbite bursts with a clean flavorthat not only tastes great butcleanses your palette for thenext option.

If you’re dining before sun-set, the Early Bird Special ($9)

should be considered. From5:30 to 6:30 p.m., you can cre-ate your own Two ChoiceTeishoku. Options include

If there’s one food I am outra-geously passionate about, it’spizza. I tend to be a purist in

this regard — give me a goodslice of cheese and I’m a happygirl. But something about thefreshness of summer has mademe crave something new, andlately I can’t stop ordering

ZPizza’s topping-filled delights.The restaurant’s brilliant flavorcombinations, presented on avariety of crusts, are enough tomake me completely rewrite mypizza philosophy.

While the eatery offers acheesy classic slice, this seasonshowcases some festive pies to

really getinto. “It’s abarbecue sum-mer,” says ownerCesar Llarenas, who isexcited to highlight the ZBQZPizza Creation ($12.95, small;$23.95, large; $26.95, extralarge). This pie features an excit-ing barbecue-sauce base toppedwith mozzarella, barbecue chick-en, roasted peppers, red onions,fresh tomato rounds and sweetcorn. “The combination of ingre-dients is fantastic,” says Llarenas.You can enjoy ZBQ by the sliceon Fridays as well.

One thing that makes thispizzeria stand out is the moundof fresh herbs that tops eachslice. ZBQ really comes to lifewith the addition of freshcilantro in every bite.

If barbecue flavors are yourthing, you also can try the ZBQSalad ($8.50, small; $10.95,large), filled with mixed greens,barbecue chicken, roasted pep-pers, red onions, sweet corn andfresh cilantro in a chipotle ranchdressing.

In search of more pizza, Idecided to try something reallyunique. It was a risk that led togreat reward, and I urge everyoneto order Curry Chicken & YamRustica Pizza ($12.95). “Thecurry is really nice — it’s not too

nice andpotent. This is

starting to be one of myfavorites,” says Llarenas. Theintensely fresh and flavorful cur-ried chicken blends so well withthe yams, raisins and mangochutney for a sublime sweet-and-savory combination. Mozzarellaand fresh cilantro round out thetoppings.

And as any pizza-lover knows,only a stellar crust will do. You’lllove ZPizza’s Rustica crustbecause it is the restaurant’sthinnest variety — providing allthe crunch you could want — yetit maintains an air of fluffinessand good chew. “It’s a little bitcrispier and really holds the pizzawell,” adds Llarenas.

It’s mid-afternoon at OpuliciousRestaurant, and a family of three isenjoying their plate lunches when the

owner and chef Kelli Kay Chun walks upand offers to make the little girl a balloonanimal. The girl asks for a butterfly, andChun quickly sets off to twist two longballoons into a large, colorful butterflywhile the family continues to eat.

It’s that kind of family fun that Chunhopes to achieve at Opulicious — a newCoolidge Street restaurant that serveswhat Chun refers to as “local to the max”food. “A lot of eateries are just places toeat,” Chun says. “But my concept is, hey,you know, let’s have fun. Here you cancome to a place that not only has greatfood, but you can have fun, too.”

But, Chun says, the crucial aspect to asuccessful restaurant is, of course, greatfood — and Opulicious has plenty of that.Like, for instance, the Auntie TitaHawaiian Burger ($6.95), which comes

with two homemade hamburger patties,two strips of bacon and a pineapple slice,all drizzled in teriyaki sauce. For just onemore dollar, you can upgrade to a combomeal that includes fries and a drink. Andfor $1 more, you can get Opulicious’delectable sweet potato fries.

“I love food, and I love balloons,” saysOpulicious Restaurant owner and chef KelliKay Chun. She has been a balloon artist for

12 years, working birthday parties and at various restaurants. Chunalso has worked as a magician and a clown. It was twisting balloonstableside at another restaurant when she had the idea to start her ownrestaurant — one that combined the two things that she was most pas-sionate about.

“I thought, why not have a restaurant where I can do this every day?”While Chun admits that life in the restaurant industry can be extreme-

ly hectic, she says that it’s all worth it. “It is gratifying because you seethe customer happy, you see kids who are happy. And when you’rehappy, I’m happy.

“Life is good because I found something that I really enjoy doing, andit is wonderful,” Chun says. “Every day, I wake up and it’s exciting becauseI am doing something that I love. Now it’s like every day is a birthday partyfor me because I get to twist balloons and I also get to cook.”

When asked why the restaurant name is“New Violet’s Grill,” Suehisa mentionsthat additions to the menu played a role inthe name change.

“Our family — with my auntie — tookover the restaurant (from the previousowners) in 1998,” Suehisa explains.“When my brother took over the restau-rant around 2001, we changed some ofthe food on the menu. Now there’s moreOkinawan food on the menu than therewas before.”

New Violet’s Grill — which is usuallymost crowded during weekends — isknown for its homey, family-orientedatmosphere.

“The environment is relaxing; it’s aplace where everything is homecooked,”Suehisa states. “Everything is made fromscratch.”

The eatery provides customers withboth Japanese and Okinawan menus,and takeout options are available.Some of the restaurant’s most populardishes come off of the Okinawanmenu, according to Suehisa. Items aresold either a la carte or in completemeals. Complete meals include theentrée; rice and tsukemono; a choice ofmiso soup or tossed green salad; cof-fee, tea (hot or iced), Green River orfruit punch; and dessert.

“The Oxtail Soup ($10.95 a la carte;$14.95 complete meal), Pig Feet Soup($10.95 a la carte; $14.95 complete meal)and the Chanpuru (Stir Fry) dishes arepopular,” she says. “The Oxtail Soup isour signature dish, but we also have localfavorites — Hamburger Steak with FriedOnions and Brown Gravy ($9.95 a lacarte; $14.95 complete meal) and LocoMoco ($9.95 a la carte; $14.95 completemeal) also are really popular.”

A customer favorite at New Violet’sGrill is Violet’s Special ($18.95) — sashi-mi with a choice of two entrées, such asTeriyaki Chicken, Ahi Katsu, Kalbi,Shrimp Tempura and Shoyu Pork.

“We’re going to change Violet’s Specialto have three choices instead of twochoices,” Suehisa adds.

Besides the changeto Violet’s Special,

there will be further changes to the menuthat customers can look forward to.

“We’re going to try to have a daily spe-cial every day,” Suehisa explains.“(Examples of current daily specialsinclude) Ahi Bone ($13.95), SteamedOpaka ($11.95 a la carte; $15.95 com-plete meal), Grilled Opaka ($10.95 a lacarte; $14.95 complete meal) and GarlicAhi ($14.95). We also have BreakfastSpecials, including a Waffle Special withMeat ‘n Egg ($6.85), a Spam Omelet withStarch ($5.75) and a Vegetable Omeletwith Starch ($6.25). We have these spe-cials on an everyday basis. With ournew menu that we’re making, we tooksome things out and we’re going to putin some other things — we are going toput in the dishes we make every dayand make other specials.”

New Violet’s Grill also is looking toexpand its promotions, in an effort to

increase awareness and attract youngergenerations to the restaurant, according toSuehisa.

“(Right now), from Monday thruWednesday, we have a 15 percent off dis-count for senior citizens,” she says. “Thediscount is available all day for seniorsage 60 and older. We’re also going to startgetting a kids’ menu going, and we’regoing to have kids eat free with one adultentrée on Mondays. Currently, individualsfrom the older generation frequent ourrestaurant, but we’re trying to get the

younger ones to come in.”
