Happy Sunday, Ono readers!Recently, I’ve been eating likethere’s no tomorrow. Oh, who am

I kidding? We all know I always eat likethere’s no tomorrow! Yes, I have no disci-pline. Well, guess what, folks? The battleof the bulge has crept up on me — myclothes aren’t fitting! So therefore, I mustreactivate my gym membership and cutdown on my portion sizes. And while youmay tempt me with onolicious cui-sine, I am being smart with mydecisions. So, while I may cravewith all my might the greasiest piz-zas or cartons full of ice cream, Imust go with my gut and pick thehealthier — albeit delicious —options.

This week, it’s all about hum-mus. For those of you who don’tknow, hummus is a Middle Easternand Arabic dip or spread usuallymade from cooked, mashed chick-peas blended with tahini, olive oil,lemon juice, salt and garlic. Servedwith crackers, pita bread or veg-gies, hummus makes for a simple,low-fat meal that will leave yourtaste buds happy.

Therefore, if you’re a health nutor not, it doesn’t matter, comealong with me and let’s get “thin-spired” by hummus at the follow-ing Ono, You Know establishments!

Kissaten Coffee BarFeeling sluggish and need a jolt

back to life? Kissaten is the answer atall hours of the day and night. Withmorning, afternoon, evening andlate-night menus to appease yourhunger, this Piikoi Street coffee bar

welcomes early risers and night owls with acup of joe, and the office crowd with an out-of-this-world grilled cheese sandwich andbowl of tomato bisque soup. But that’s justskimming the surface. Kissaten was found-ed in December 2010 by distant cousinsNeysa Taba, Jon Ishimi and Sean Ishizaki.All three now serve as senior partners of theestablishment, which centers around com-fort food with a gourmet twist, featuring

Japanese, French andItalian culinary influences.

“A Mediterraneanfavorite would have to beour Roasted Red PepperHummus Platter ($7),”Taba says.

A great choice forthose who are health con-scious, this dish is found

on the salad portion of the menuand features fresh pita bread andhomemade red pepper hummus.

“The hummus is zesty andtangy; comprised of garbanzobeans, garlic, roasted red bell pep-pers, lemon juice, chickpeas andolive oil,” Taba explains, addingthat sliced cucumbers, olives, redonions and feta cheese also adornthe plate and pair well with thehummus.

Recently, hummus has beengrowing in popularity, and it’s per-fect to eat on your own as a meal initself or share with a group offriends as an appetizer. No matterhow you choose to polish off thisdish, there will be no regrets.

“We feature a smallrestaurant with an openkitchen. Here, we’re verypersonable, you can talk tothe guy grilling your meat,”says Comer with a smile.

DO: Over the years,Good to Grill has accumu-lated a multitude of loyalfollowers. For those whohave yet to take part in theGood to Grill experience,what can they expect?

Comer: We’re an excep-tional and unique casualrestaurant with fine diningquality without the fine din-ing prices. Customers saywe’re a bargain. We featurea 100 percent kiawe woodgrill, which all of our meatsand fish are grilled on, andwe don’t use any fillers oradditives. We only use thehighest-quality products,our fish is always fresh andour beef is top grade. Ourfocus here is on the product.

DO: What separates thisrestaurant from other estab-lishments on Hawaii’s din-ing scene?

Comer: What makes usunique is the fact that we’vedeveloped a fast, casual

environment, and with thatcomes great cooks, greatmanagers and a great prod-uct. We don’t have waitersor busboys, so we’re able totake those costs and removethat from the pricing, andthat’s a big benefit to thecustomer.

DO: What type of cui-sine does Good to Grillspecialize in?

Comer: For lunch anddinner we offer pizzas, pas-tas, salads, sandwiches andplates. Our best-sellingsandwich at the moment isPulled Pork Sandwich($8.99) with your choice ofside, be it white rice, brownrice, garlic mashed potatoes,mixed greens salad or potatosalad. As our standout sand-wich, we slow roast the porkin a traditional braisingstyle, but it’s our house-made barbecue sauce that’sincredible. We have a tastyhouse cole slaw as well.

Our prime rib is made withAngus beef and it’s marinated for30 days, marked and smoked onthe grill, then slow roasted so it’ssucculent and tender. We alsoseason it with a proprietaryblend. As for our Garlic Ahi($10.99), this dish features freshahi marinated in our garlic sauceand then grilled on the kiawegrill to give it a nice flavor. It’sserved with your choice of twosides as well. If you want morethan one entree, our combos arethe way to go. For example, wehave our Kalbi Ribs andMisoyaki Chicken ($13.99), andHibachi Chicken and Garlic Ahi($13.99). All combos come witha choice of two sides.

DO: Wonderful! Does Good toGrill have any breakfast optionsfor the early birds?

Comer: Yes, however, break-fast is served Saturday andSunday only from 8 to 11:30 a.m.Diners can choose from omelets,local favorites, pancakes, waf-fles, French toast, eggs andBenedicts. Our Salmon Benedictis a highlight of the menu. Pricedat $11.99, this Benedict features

French baguettes toppedwith freshly grilledsalmon and a poachedegg drizzled withhomemade hol-landaise sauce. Thismeal is served withyour choice ofwhite/brown rice,white/wheat toast or hashpotatoes. Fried rice also isavailable for $1 more.

DO: What would our DiningOut readers especially like toknow about the restaurant, otherthan the fact that you servegourmet food at exceptionallylow prices?

Comer: The menu staysthe same, but we have a spe-cials menu that changesalmost daily. We do a garlicchicken special andmochiko chicken specialfrom time to time, whichwe’ve received rave reviewsfor. Usually we have fourspecials running — a dessertspecial and a special soup,and two main courses. Youcan come down to therestaurant, call or log on toFacebook and Twitter(@goodtogrill) to keepupdated on the specials. An

appetizing special is New YorkSteak and Shrimp ($9.99), inwhich you’re presented with 8ounce Angus beef New Yorksteak and three pieces of shrimpthat we marinate in garlic andolive oil, and then grill. Twosides also accompany the dish.

Kim: Also, if you have a spe-cial need or request, we don’thave a problem accommodatingyou. We can do a mushroompasta for vegetarians.

DO: Now, Good to Grill spe-cializes in catering, and best ofall you really customize cateringpackages to fit any budget.Correct?

Comer: Yes. We can doeverything from grilling onsite

to setting up something spe-cial for a fine-dining

experience, a buffetor something simplelike a picnic. We’revery good aboutworking withinyour budget. Yougive us yourbudget and we’llgive you the best

things you can get.We’re very affordable.

DO: Good to Grill has

an irresistible Prime Rib Platterpriced at $99. Tell us about it. Itseems perfect for the holidayseason.

Comer: The plater feeds up to10 people and features signatureaged Angus beef prime rib withau jus and creamed horseradish.Also, select from brown/whiterice or garlic mashed potatoes andveggies or potato salad. We needat least 24-hour advanced notice,and this special can’t be com-bined with any discounts or otherpromotional offers. It’s perfect fora big family dinner or gatheringand is available year round.

DO: What does the future holdfor the establishment?

Kim: We would like to openmore locations, but it’s all aboutfinding the right place. We wanteveryone to come check us out tosee what the food is like, and Ithink everyone will be pleasedwith the result.

It’s been a tough road. Weopened right before the economycrashed, so we’ve had our chal-lenges, but we’ve overcome a lotof them because we have goodportion sizes at attractive pricesand we have a lot of regulars —some even come in every day —and we’re grateful for that.

The Windward town ofKaneohe is known for itspopular Chinese restaurants

as well as its many places to grab aplate lunch. But we all know thatthe typical plate lunch consists ofmeat, rice, mac or potato salad andmaybe a green salad, which leavesmuch to be desired for those whochoose not to eat meat or fish. Andeven if they have an offering thatappears vegetarian, it often is pre-pared with oyster sauce or chickenbroth.

But you can just cruise past therest and make a stop atAdon Plaza, whereDean’s Drive Inn is cook-ing up a variety of vege-tarian specialties.

“We have a whole lineof vegetarian itemshere,” says chef andowner Dean Mishima.“It’s all vegetarian —burgers, grillers — nofish sauce, no shrimp,no chicken base orstock.”

That’s becauseMishima and his fami-ly are Seventh-dayAdventists, who keepa vegetarian diet.

“Church memberscome for lunch,” hesays, “so we have tohave vegetarian foodfor them.”

But you don’t have to join thechurch to enjoy Dean’s Drive Inn’shealthy fare with flair. Whetheryou’re in the mood for a sandwichor a full plate lunch, Dean’s does itveggie style.

For many would-be diners,the thought of venturinginto Waikiki for appetizers

or a full menu of carefully pre-pared dishes conjures up imagesof traffic difficulties and parkingnightmares. I’m not sure this wasever the truth because it surelyisn’t now. Fresco ItalianRestaurant, for instance, is a two-minute walk from the easy-to-navigate Hilton Hawaiian Villageparking garage, and with freefour-hour validation, it costs you

nothing.The Italian fusion

restaurant overlooks theRainbow Bazaar andthe lobby/pool area ofthe Kalia Road resort.Large windows let inample fragrant breezesthat makes the fine din-ing restaurant seemmore like a country cot-tage than the typicaldark, windowless eateries thatmake up still too many diningspots. And with a menu loadedwith bright, colorful dishes, it

would be an injustice to hidethem behind false lighting andelectronic air fresheners.

Bruschetta ($11.95) is just oneexample. Executive chef RodhelIbay begins with house-bakedthree slices of Foccacia breadthat is presented with three quitedifferent, but well-balanced top-pings. One is piled with freshHamakua, Shimeji and Aliimushrooms that are marinated inkalamansi and garlic, and thenoven roasted. The second offer-

ing consists of vine-ripenedMaui and Nalo tomatoes that aretossed with olive oil, basil, garlicand Hawaiian salt. Last but not

least is the macadamia nut-crust-ed avacado that is deep-fried andserved with Gorgonzola cheeseand a garlic aioli. The entire dishis topped with an aged balsamicbasil oil and garnished withdehydrated basil oil that reconsti-tutes while chewing. Each focca-cia is exceptional in its ownright. The mushrooms are earthy,the tomatoes are light with a hintof citrus, and the avocado iscrunchy and very creamy.

Carpaccio Di Tonno ($15.95)is great for the fish lover.Sashimi-grade ahi is sliced thinand topped with zucchini, greenbeans, sea asparagus, asparagus,baby carrots, yellow bell pep-pers, feta cheese cubes, garlic,Nalo greens, and topped withkukui nut and olive oil. Perhapswhat sets this already deliciousdish apart is the black and pinkMolokai salt. The salt does morethan add a smoky and ocean-likeflavor to the dish, it also adds anecessary texture change thatgoes wonderfully with the but-tery ahi.

One final must-try isCapesante in Padella ($15.95).After all, what’s dinner without afew scallops to get things start-

ed? The large Alaskan scallopsare lightly seared and then ovenroasted to remain sweet and ten-der. The scallops are then servedwith hearts of palm, roasted bellpeppers and a squid ink saucethat has been sauteed with leeks,fennel, anchovies, pomodorosauce and then deglazed withwhite wine. Don’t let the inkscare you. By itself the ink istasteless, but combined with theanchovies, tomato and otheringredients, the thick dark liquidtakes on a slight ocean flavor thatis counterbalanced by the acidityfrom the tomato.

If you can’t make it for lunch orif a full dinner is not what youdesire, try happy hour from 5 to 7p.m. and 9 to 11 p.m. The $8 spe-cials include Bacon-wrappedShrimp, Foie Gras Truffle Friesand Calamari Pepperoncino.Drinks include $5 glasses of wineand $6 cocktails including Smore-Tini, Hawaii Three-O andRaspberry Lemondrop. Emerson Ribao, Blue HawaiiSushi’s co-owner along with Waldenand Jasmin Butay, helped craft whatthe “face” of the restaurant wouldlook like since the restaurant openedin May 2011, and also designed themenu, from sushi bar selections to awide range of other menu items.

Ribao brings a host of experienceto Blue Hawaii Sushi after serving asgeneral manager for 26 years at KobeSteak House and Sushi Bar, andowning a restaurant in Japan. In theheart of the house, executive chefAlbert Geronimo and sushi chefRaymond Dizor bring to life Ribao’sculinary concept of Pacific Rim cui-sine with Japanese flair.

“I crafted the menu as somethingthat I thought would be good for thecommunity in this area,” says Ribaoof the eatery, which is situated inPearl City Gateway shopping center.“It was safe to say that I was wel-comed by the community and thesurrounding neighborhood. Theyoften say that ‘we need a restaurantlike this in Pearl City, somethingunique.’ We have traditionalJapanese items, but also feature con-tinental items such as steak and

shrimp, and some touches of Italianas well.”

“It melts in your mouth; if youbraise the meat slowly, it becomesvery soft,” Ribao says of the succu-lent meat.

Ribao explains that all entrees areaccompanied by miso soup, housesalad, rice, hot tea, edamame andstir-fried vegetables.

Staying true to its name, BlueHawaii Sushi offers a wide variety oftasty rolls as well, including the pop-ular Spider Roll ($13). This dish fea-tures soft-shell crab that is deep-friedtempura style and enveloped in asushi roll.

Ribao mentions that customerscan look forward to a host of newmenu items, including a sushi rollthat incorporates spicy tuna andshrimp tempura, and a tangy teriyakisauce, that are scheduled to berevealed “in time for the holidays.”He says that input from customersplays a big role in determining andshaping the menu.

“Given the chance, I’ll go aroundto the tables and ask what they wouldlike to see on the menu,” Ribao says.

“They let me know, and I do my bestto see if I can incorporate what thecustomers really want.”

The clean, family-friendly estab-lishment also offers early bird spe-cials from 4 to 6 p.m., includingGarlic Shrimp ($9.95, $12.95 regu-lar price), Steak and Teriyaki

Sheraton Waikiki’s most-coveted restau-rants, RumFire. Executive chef BrettVillarmia describes the restaurant’sexceptional fare as “social comfort food,”which goes hand-in-hand with the pictur-esque setting overlooking Diamond Headcrater.

Locals and tourists alike frequent theestablishment to grab a quick bite to eat orto spend an entire afternoon taking in thetempting flavors of RumFire’s YukonFrench Fries, Sticky Chicken Wings andMarket Fresh Fish Tacos, to name a few.

While everything on the menu is divine,this time I opted for the healthy alterna-tive, Crisps and Dip. Available onRumFire’s lunch menu. Crisps and Dipfeatures garlic and kalamata olive crispyflatbread paired with Villarmia’s ownedamame hummus. I was excited to sam-ple this new take on hummus, and boy, ohboy, was I pleased.

“Edamame hummus is my local-styleversion of the traditional garbanzo beanhummus. It features fresh edamame,cumin, garlic, lemon juice and olive oil,”Villarmia says.

Although it seems like a no-brainer, Iwould have never thought of substitutinggarbanzo beans for edamame, whichmakes Villarmia a true genius.

“I grew up eating a lot of edamame as akid, so I thought it would be a nice toincorporate it into the hummus for every-one to enjoy,” he adds.

Crisps and Dip is a very light andrefreshing lunch option, and fortunatelywon’t give you that kanak attack if youhave to get back to work. Better yet, theedamame hummus is low in fat and per-fect for vegans.

years have passed since it opened itsdoors, the restaurant’s popularity hasnot wavered. Paesano serves up tradi-tional Italian fare, while adding a localflair by utilizing local ingredients.

customers.“Paesano has been here so long that we have seen kids grow

up and get married, and then they bring the kids in,” says NilaRattanasamay, who co-owns the restaurant with husband Billy.

The couple had long been involved in the restaurant industry— Nila had grown up in the business, and Billy previously workedat Michel’s. Ten years ago, they finally got their chance to set outon their own when the former owner sold Paesano’s Manoa loca-tion. Then, a few years ago, the Rattanasamays opened a secondlocation in Waimalu.

Although the restaurant’s menu is already vast, don’t expectthe chefs to stop there. Paesano regularly features a nightly spe-cial — the most popular of which may be added to the menu.

“The chef is constantly updating himself on Italian cuisine, try-ing to find out what is the next thing, the newest thing,” Nila says.“We will keep trying to add more and more dishes.”

To top it all off, Tiramisu ($6) isa must-eat and is a customer favorite.“It is made in-house daily, and itsells pretty fast,” Nila says.

Always looking out for its cus-tomers, Paesano makes sure thatit dishes out only the highest

quality ingredients.“We use a lot of local ingredients,”

Nila explains. These include Hamakuamushrooms, Hamakua tomatoes andKahuku prawns. All of the fish issourced locally as well. “With thelocal products, you can help out thelocal producers,” Nila says. “Andthe quality is there.”

Extreme appetitescan do some seri-ous damage when

it comes to MakinoChaya’s all-you-can-eatbuffet. With more than 100delicious items to indulgein at this Aiea restaurant,it’s hard to imagine any-thing better than this.

President Jo Makinofounded the establishmentin 2005 and says patronscome in droves for theseafood, and Japanese andlocal favorites, among oth-ers. And while the buffetmay be the main draw atthe eatery, that’s not to dis-miss its other attractiveoptions. Take MakinoChaya’s bentos, for exam-ple.

“We prepare between150 and 200 bentos perday, and they always sellout,” Makino says.

Since opening its doors 35years ago, Hy’s SteakHouse in Waikiki has

become an award-winning finedining landmark known for itsUSDA Prime-grade steaksbroiled over native Hawaiiankiawe wood, and enjoyed in anintimate setting of what feelslike an old English mansion.

The restaurant recentlychanged ownership, and alsowelcomed executive chef ErwinManzano to the team. Withthese changes, general managerand vice president Bob Pantersays they are working on someupgrades, adding to the menu,and ultimately taking Hy’s tonew heights.

“We’re working on a newdecor and small private room inour upper dining room (nowcalled the Green Room),” heexplains. “I think it’s going to begreat. Until recently, when Hy’swas sold (to two brothers fromKobe, Japan), Hy’s has had onlytwo owners in 35 years. Thisstability tends to add a certainconsistency to many things,including the food.”

Chef Manzano actuallyworked at Hy’s many years ago,starting as a dishwasher andmoving up to sous chef beforeleaving to work at other diningestablishments, includingFormaggio.

“Hy's menu has always had a

very full, well-rounded,some say even an ambi-tious menu,” saysPanter. “Where previ-ous chefs were contentin putting forth theitems from our writtenmenu, Chef Erwin hasbrought back someexcitement, as well assome previous menufavorites as specials thatover the years wereabandoned. From timeto time he is showcasingsuch palate pleasers asBone-In Rib-Eye Steak,a succulent Kiawe-Broiled Veal Chop witha Hamakua MushroomRagout and a beautiful-ly braised Osso Buccowith a Cabernet DemiGlace with a Gremolade

top (chopped flat leaf parsley,lemon zest and garlic). He alsohas struck a note with many din-ers when he serves hisArugula/Prosciutto salad.

“With his energy, hard work,attention to detail and opennessto change, we are expecting a

bright future,” Panter adds.Arugula/Prosciutto salad is not

listed on the menu, but is avail-able regularly and features babyarugula, prosciutto, teardropcherry tomatoes, Parmesancheese curls and served withwhite wine vinaigrette.

As for its steaks, Hy’s is oneof the few restaurants in Hawaiithat uses USDA Prime beef forall its different cuts. Chefs alsocook all USDA Prime steaksover kiawe wood using a dis-play broiler, and guests in cer-tain rooms even have a view ofthe broiler room.

Among the customer favoritesis Porterhouse T-Bone Steak —King of T-Bones (34 ounces,$79.95), which is served withbrown or white rice, your choiceof potatoes (baked potato, garlicmashed potatoes, french friedpotatoes, or pan-fried O’Brienpotatoes cut in cubes andsauteed with diced onion anddiced bell pepper), and vegeta-bles du jour.

And be sure to save someroom for dessert. Next month,there will be a special MoltenChocolate Souffle that will beoffered during Restaurant WeekHawaii Nov. 12 to 18.

“I’ve been everywhere, and have eaten acai bowls. InBrazil they are extremely popular,” Alves de Moraessays. “This berry is so popular in terms of protein andvitamins, it can’t be beat. There is more protein in theacai berries than in tuna fish.”

After coming to Oahu, the owner of Tropical Tribescoured the island looking for a quality acai bowl, andrealized that recipes he was finding used a low-gradeacai, far inferior to what he was used to enjoying inBrazil. Alves de Morales explains that ancient tribes inthe Amazon discovered the acai and guarana berries, andrelied on their potent properties for energy and strengththroughout everyday life. The acai berry also was cred-
