summer is only days away — and sum-mer just happens to be one of myfavorite seasons. For me, summerequates to beautiful, glowing complex-ions and days that just seem all thebrighter. And it doesn’t hurt that mybirthday (August, if anyone should ask)also happens to be celebrated during thewarmest time of the year.Of course, the advent of summer also

treating its guests like kin because,as it turns out, therestaurant is run byextended family.

While Million has beenserving up popularKorean dishes along withits yakiniku menu sinceits inception in 1989, therestaurant recentlyexpanded its kitchen areaand, as of June 7, now fea-tures a new breakfastmenu chock full of classicitems infused with Koreantastes and accents. Thebreakfast operation is ledby the husband-and-wifeteam of Paula and ErikGray, while Paula’s mother,Diana Park (one of the original familymembers who got Million up and run-ning), lends her assistance and knowledgeof the business to the next generation of

restaurateurs.“We want all our customers to leave

with a smile on their face,” says Erik Gray,who runs the back of the house whilePaula manages the operation on the floor.“I was a traveling musician for 15 years inNew York and often cooked at night. Ithought I’d try (some of what I learned)

here. It’s a working man’sbreakfast food; affordable, but still classy.”

While Paula and Erik both currentlystudy psychology at the University ofHawaii, they’ve taken on the vast chal-

lenge of launching the new menu fromscratch. Dining Out stopped by Millionsoon after its breakfast items hit theplate to see what’s cooking.

DO: What was behind the decision tooffer breakfast items at Million?

Paula: My uncle, Chang Hyun Park,had the restaurant since it opened,and after renovating the kitchen, heoffered the breakfast side to my hus-band and I — and we took it.

Erik: I didn’t want to cook anymoreafter coming to Hawaii, but this oppor-tunity was presented to us. We want todevelop a following, and it’s been get-ting busier every day.

DO: Which dishes have proven mostpopular among guests?

Paula: The Korean Chadol BegiOmelet ($7.50) is very popular. It’s athree-egg omelet with Korean beefbrisket, mushrooms, tomatoes, bell pep-pers and American cheese. Lots of cus-tomers have ordered it, as well as theMillion Breakfast Special ($2.99), whichincludes one scoop of fried rice, one eggprepared just how you like it and twoslices of bacon.

Erik: Breakfast hoagies were really bigin New York, so I thought I’d try themhere. The Korean Chadol Begi Hoagie($7) contains the same ingredients as

the omelet only it’s served as a sand-wich in a warm hoagie bun.

DO: What keeps Million’s loyal cus-tomers coming back for more?

Paula: We already have regulars thatreally like the food, and we hope morecome to enjoy it. Million

Restaurant itself has a lot of regulars, sowe’re trying to build on that. A lot ofpeople think we’re just a Korean restau-rant. But the breakfast menu is verydiverse, and gets better every day. Wetry to give big portions at reasonableprices. We also offer a 20 percent dis-count for seniors.

DO: How important is the concept of

family when it comes to running therestaurant?

Paula: It’s all about family. Eventhough the breakfast operation is sepa-rate from the Korean side, we always gettogether with my uncle and have meet-ings to stay on the same page. My hus-band and I planned everything, but mymother is always there to help us.

Erik: Our family is right here atwork — my wife and my mom.

DO: Is it difficult to work togetheras husband and wife in such ademanding and stressful job?

Paula: Right before we opened,things got very stressful. Therewere some arguments, but oncewe opened, the pressure wasrelieved quite a bit. He controlsthe back while I run the front, sowe’re able to stay out of eachother’s way.

DO: While the operation is still inits infancy, do you foresee themenu expanding in the future?

Paula: Right now, we only havethree people to run the operation,but as we grow, we’re going to addspecials and eventually expand themenu. We already have someideas, but we’re sticking to thebasics for now.

C amaraderie. A comfort-able atmosphere. Goodfood. Ron Ige, owner of

Ige’s Restaurant & 19th Puka,vividly remembers the inspira-tion for starting the eatery.

“We (my brothers and I)played golf all the time and wealways went to the 19th Pukawhenever we got done,” he says.“It was a place we could hang

out, reflect on the day andenjoy different pupus. Ithought it’d be great if wecould build our own 19thPuka … that was my dream.”

Eight years ago, Ige’sdream became a realitywhen he opened Ige’sRestaurant & 19th Puka,located in Aiea. The busi-ness, though, was in thefamily for many years prior,according to Ige.

“My mom started ourbusiness in 1969 — Ige’sLunchwagon, whichexpanded into Ige’sCatering Service,” he says.“We (my brothers and I) tookover after she retired and madeour own kitchens.”

Today, Ige’s Catering Servicehas several locations operatedby the brothers, includingkitchens in Mapunapuna,Halawa Valley and Aiea. Ronruns the Ige’s Lunchwagon &Catering location in Aiea, aswell as the restaurant.

Ige’s Restaurant & 19thPuka is well known for its local

flavor. “We came from a lunch-wagon background,” Igeexplains. “That’s what we usedto run — a lunchwagon or take-out window — so that’s why ourmenu features lunchwagon-style,local food.”

The eatery’s most populardishes include Joal’s TeriyakiFlap Meat ($14.99) and ShoyuPork ($13.99), the restaurant’ssignature dish. Recently, the var-ious salad entrees also have

been popular among customers,Ige notes. Favorites include theGrilled Salmon Salad ($11.99) —romaine, iceberg and red lettucetopped with grilled Atlanticsalmon, carrots, cucumber,cilantro and tossed with a HouseOriental Vinaigrette and a lemonbutter sauce — and the Ahi TofuSalad ($11.99), featuringromaine, iceberg and red lettucetossed with a House OrientalVinaigrette and covered with

“People like to eat healthi-er now, so we made a bunchof salads (for our menu),” Igesays. “We just added a saladbar, too; we started that sixto eight weeks ago.”

The mixed plate entrees atIge’s Restaurant & 19th Pukacontinue to be popular aswell. For these entrees, cus-tomers can choose any two

items — including porkchops, flap meat and babyback ribs — which comewith a choice of starchand a bowl of soup or thesalad bar. The mixed plateentrees are also popularbecause of the discounts,according to Ige.

“Every Mondaythrough Thursday, every-thing is 15 percent off —15 percent off all ourmixed plates and also thedaily dinner specials,” he

says. “The prices are 15 per-cent lower than on Fridaysand Saturdays … we did itthat way to get people to goout and eat. The averageprice per customer is $15.”

Besides its flavorful menuitems, Ige’s Restaurant &19th Puka is a popular desti-nation for parties andfundraisers because of itslarge venue.

“We have a stage; we do

live music,” Ige says. “Wecan accommodate up to 500or 600 (people) for parties.”

With its variety of menuentrees and casual atmos-phere, Ige’s Restaurant con-tinues to be the true “19thPuka” filled with fun, goodfood and camaraderie thatRon envisioned.

“On Friday nights, we dosomething called‘Flashback Friday’ that(features) all the bandsfrom the ’60s, ’70s and’80s, and we have danc-ing,” Ige says, smiling. “Wehave an in-house magician(perform) every Tuesday,and every Monday, wehave a free karaoke night.It really is a gatheringplace.”

realized his plans were a bitambitious. So he adjusted,opting for only six perma-nent dishes on the menueach day and ever-changinga la carte items. As a result,less has become more at thecafe that not only offersgreat fare for walk-inpatrons, but a catering serv-ice perfect for businessmeetings, seminars and par-ties.

“Our menu wastoo complicated

before. People only have 30-minute lunch breaks down-town and they want some-thing already prepared, sowe simplified the menu,”says Kruger, who launchedhis first location inside theformer First Hawaiian BankBuilding on Bishop Streetback in 2006. “We now tellthem, ‘Pick your meat, pickyour vegetable, pick yourstarch.’ We made it easy forthem.”Indeed. Though it was already acouple of hours pastlunchtime on a stateholiday, Canton HouseRestaurant, locateddeep in the heart ofChinatown, was surpris-

ingly busy. At the next table, a half-dozen mid-

dle-aged men speaking a seamlessblend of Cantonese and English servedthemselves from bowls of steamingjook in the center of the table. They atethe rice soup with obvious gusto, agood sign of the good things to come.

“Our jook is very popular,” saidPeggy Li, who manages the small North

Hotel Street eatery owned by her par-ents. “We make our own meatballshere. And my mother and father makethe jook at 5 o’clock every morning, soit’s fresh.”

A bargain at $4.35, jook may beordered with meatballs, preserved eggand pork, beef, chicken, sea bass,seafood, or a mix of beef, meatballs,and pork. The soup is a generoustureen of creamy comfort, with stripsof fresh ginger and rings of greenonion.

According to Li, Canton House’sbestseller is its Look Funn (known tomany Cantonese outside Hawaii ascheong fun). The flat, wide rice noo-dles are made onsite, she adds, and the

dish may be ordered plain, or withSpare Ribs, Shrimp, Scallops, Beef orChar Siu, for $2.88. “All of them aregood, but our beef look funn is the mostpopular,” she said. This version con-sists of a fat rice noodle wrappedaround soft, rich beef, seasoned withparsley, green onions and cilantro.

As Li spooned lightly sweetened andseasoned soy sauce over the noodles,she explained that her father, Yat QuanLee, and her mother, Lu Ya Lin, formerlyowned and operated a restaurant intheir native China. “Back in Canton,they made dim sum for more than 20years,” she said.

Many items that once appeared onthe menu at their Canton restauranthave now become favorites at theirChinatown eatery. One can enjoy adelightful and varied meal with friendshere for just a few dollars apiece. Dimsum at the Canton House is priced at$2.08 per selection, and masterfully pre-pared and presented.

The Baked BBQ Manapua consistedof three warm, yeasty buns, generouslystuffed with pork filling that was sweetand savory in perfect measure. Twokinds of Siu Mai, pork and chicken, wereboth tasty and rich, and the Half Moondumplings were plump with fresh waterchestnuts, cilantro and shrimp.

A trio of cakes was served: Taro,Turnip and Pumpkin. They’d been light-ly sautéed on the griddle at the front of

the restaurant. The tarobrick tasted a bit like five-spice; the turnip cakewas made of soft shred-ded daikon and not muchelse, and both were deli-cious (versions withchestnuts and chives arealso available).

The pumpkin cake, asoft orange bun madewith mushrooms and gar-lic, is an exclusiveCanton House creation.“It’s made with a familyrecipe,” Li commented.“People are trying to eathealthier, so we’re com-ing up with healthieritems.” Lighter offerings includeVegetable Spring Rolls (with cabbage,carrots, garlic, and other vegetables)and Stir-Fried Choy Sum, with oystersauce or garlic.

Décor at Canton House is bright andcheerful, with posters of fantastic land-scapes, plenty of red paper lanterns,and lots of wall hangings and scrolls.The walls are hung with handwrittensigns in English and Chinese, advertis-ing special dim sum such as Zong, madewith red and green beans, pork, andsticky rice wrapped in a lotus leaf, tradi-tionally eaten during the Dragon BoatFestival season.

Like many other Chinatown restau-

rants, Canton House allows patrons tobring their own favorite adult bever-ages. There is no corkage fee. Therestaurant is open daily from 7 a.m. to 4p.m. Catering is available on request,with a couple of days’ notice.

Though they are many years andthousands of miles away from theirCantonese roots, Yat Quan Lee, Lu YaLin, and Peggy Li of Honolulu’s CantonHouse Restaurant are working hard tokeep the art of dim sum alive and well.Their efforts were recognized at theseventh annual Top 100 ChineseRestaurants Awards Show in SanFrancisco this past January, whenCanton House was named a Top 100Specialty Winner.

Off Nimitz Highway,you can slip into aninviting, elegant

oasis to get away from thehustle of downtown andenjoy a tasty Thai meal.Started in 2001 by the

husband-and-wife team ofPatrick Chang and ThaiSansane Pornchairattanakun,Bangkok Chef combinesauthentic know-how with freshingredients fromlocal farmers. But what is now a

successful restau-rant chain — theLaotian couple alsohas venues inNuuanu and Manoa— didn't begin as arestaurant at all.“We started out as aproduce market,”says Chang. “Andthere, we also car-ried some ingredi-ents for Thai food.” It wasn’t long before the

two realized they couldexpand their market to offerdelicious cooked meals.“We had all of the producethere, and the Thai staplesthat we were selling,” Changsays. “And the most impor-tant thing was that my wifeis a good cook.“We started from two

tables, and then addedanother, and then anoth-er.”And now, the three

restaurants have lots oftables — and lots of cus-tomers to fill them. Evenon a recent weekday, a fewpatrons still lingered atthe restaurant, leisurelyenjoying a late lunch, andmany more shuffled in andout to pick up to-goorders.“For one thing, cus-

tomers like that our foodis very simple and consis-tent,” Chang says. “Andour prices are very rea-sonable.”A customer favorite is

Pad Thai ($6.25), he says.The green curry keepspeople coming back, too.The curry features anarray of thinly sliced veg-etables including eggplant,bamboo shoots, pepperand garlic, all swimming in

the tasty sauce withjust a touch of spice.“We add just a littlespice that really bringsout the true taste ofthe food,” Chang says.And for special occa-

sions, Bangkok Chefhas concocted a spe-cial dessert: mango icecream over coconut-flavored mochi rice,bathed in a fragrantpandanus leaf. This

treat isn’t always on themenu, but it’s offered oncertain occasions, includ-ing Father’s Day.After all these years, the

restaurant hasn’t strayedtoo far from its producemarket origins, asBangkok Chef still servesup fresh, local vegetablesfrom Oahu farms. “We typ-ically try to use fresh,local ingredients for ourdishes. The tomato, egg-plant, shallot, mango,lemongrass, ginger andbasil are all from localfarmers,” Chang says.Now that it’s mango

season, you can stop infor fresh fruit in theMango Salad ($7.80). Thedish, which is one ofChang’s favorites, ismixed with parsley,cashews and red onionsand is accented with atangy, sweet sauce.

Ingredients:• 8 pieces Day Boat Scallops(largest size)• 1 tablespoon vegetable oil• 2 tablespoons butter• 1 large zucchini cut into strips,linguini shape • pinch of chopped garlic andshallot• 1 tablespoon truffle oil• 8 tablespoons lobster reduction• 1/4 cup micro greens (for garnish)• salt and pepper, to taste

Preparation:• In a hot pan, sear scal-lops with oil and butter onboth sides until cooked.Set aside.• In another hot pan,sauté zucchini with 1

tablespoon butter, garlic andshallot for a minute or two, thenseason with salt and pepper. Setaside.• Spin the zucchini linguini noo-dles into small ball, repeat eighttimes and plate scallop on top.Drizzle with some truffle oil andgarnish top with micro greens.Serve with lobster reductionaround the scallop.

Lobster ReductionIngredients:• 1 pound lobster shells orshrimp shells• 2 quarts chicken stock• 1/2 cup chopped onion• 1/2 cup chopped celery• 1/2 cup chopped carrots• 1 medium-size ripe tomato,diced• 3 cloves garlic• 3 bay leaves• 2 stems fresh thyme• 1 stem parsley• 1 tablespoon minced shallot• 2 tablespoons minced whiteonions• 1 cup butter • 1/2 cup flour• 1/2 cup dry sherry

• 1 teaspoon paprika• 3 cups heavy cream• salt, white pepper

Preparation:• In a soup pot, add chickenstock, lobster shell, onions, cel-ery, tomato, carrot, garlic, freshthyme and bay leaves. Bring to aboil, remove all scum and simmerbetween 45 and 60 minutes. Ifstock is not rich enough, add lob-ster base to make sauce richer.

Strain and remove all shell andvegetables; keep only the broth.• In another soup pot, melt but-ter, then add flour and keep cook-ing until flour is nice and toasted.• Add in stock, paprika andheavy cream, and let simmer for10-15 minutes on slow heat (notboiling). Taste and season withsalt and pepper, if needed.• Lobster may be substitutedwith crab or shrimp in order tomake crab or shrimp bisque.
