Since I began writing this col-
umn five months ago, I’ve
been asked questions that
fall at both ends of the spectrum,
with most inquiries ranging from
food recommendations to
whether this job comes with a
gym membership.
As I’ve previously told inquir-
ing minds, this assignment,
unfortunately, does not come
with a gym pass. So, the question
then becomes, “Well, how do you
stay so slim?”
Some of you may know that I
was into working out in the past,
but I’ve since admittedly fell off
that bandwagon months ago. So
now when people ask me how I
stay in shape, my simple
response is, “I eat ... and I eat
lots!”
Sound crazy? Sure, but let me
explain how eating has led, in my
case, to a slender look.
First off, food makes me happy,
and being happy gives me loads
of energy. So even though the
workouts are almost nonexistant
these days, I believe that I still
live an active, energetic, care-
free life. (OK, maybe genetics
has something to do with my
figure, too.)
But what’s not care-free, how-
ever, are my cravings, which
accompanied me this week as I
successfully discovered and
devoured some of the best
“Ono, You Know” burgers this
island has to offer.
Thankfully, those cravings
have since subsided and,
hopefully, they can now be
passed on to you! So enjoy
these burger selections, fel-
low foodies, and remember:
When it comes to cravings, it’s
easiest to just give in!
Don Ho’s Island GrillA replica of the Barefoot Bar
ambiance of old Waikiki, this
“shack by the sea” cannot go
unnoticed. Having opened its
doors in 1999, Don Ho’s Island
Grill brings island flair to an
American classic. The restaurant
offers award-winning island cui-
sine, while paying homage to the
late, legendary performer him-
self.
The Pipikaula Burger ($14) is
the restaurant’s specialty, and I
fell in love with the very first bite.
Manager Bo Perez was kind
enough to even reveal the hidden
secret to this ultimate goodness.
“We use pastrami in the six-
ounce burger and it’s mixed in
with the ground beef,” Perez
explains. “If you wish, it also can
be served with bacon and
cheese.”
To top it all off, I like to add a
substantial amount of Don Ho’s
barbecue sauerkraut and
Cheddar cheese to the mix to
give it that superlative zing.
Besides the onolicious patty and
sauerkraut, the burger is filled
with lettuce, tomato and onion,
and comes with your choice of
seasoned fries or onion rings —
as do all burgers here.
In the mood for a classic? The
Cheeseburger ($11) has your
name written all over it. It’s your
typical old-fashioned cheese-
burger made with a hefty portion
of beef paired with Swiss or
Cheddar cheese. And to call it
“healthy,” it’s also served with
onion, lettuce and tomato. You
know, sometimes you’ve just
gotta trick yourself into thinking
it’s good for you, right?
Healthy food aside, I was all
about transforming my cheese-
burger into a Loco Moco Burger.

As soon as Niel Koep touchedground on Maui more than 20years ago, he knew he’d found theplace he was meant to be. “I knowit sounds weird,” says the soft-
spoken chef, “but as soon as the planelanded, I knew this was it.”
He spent more than 18 years on Lanai,opening the Lodge at Koele and thenManele Bay, all the while building astrong pastry, bread and dessert follow-ing. But it was a boyhood dream of own-ing his own place that kept nagging athim to move on.
“When you work in a resort, it’s verycomfortable,” he says. “I got sidetrackedfor a while, but the voice was alwaysthere telling me I had to do it, I had toopen my own bakery.”
He took the plunge 18 months ago andopened Fendu Boulangerie in ManoaMarketplace. Rave reviews quietly fol-lowed, and word started to spread of hisdivine sandwiches, exquisite chocolatecroissants and huge selection of hand-
made breads. Walk into the sunny little boulangerie
today and you can almost smell thelove coming out of the kitchen, as thearoma of yeast, chocolate and freshlybaked pizza give off their heavenlyscent. I’ve always thought there wassomething irresistible about bakingbread, and Koep agrees.
“Bread is something that everyoneunderstands,” says the New Jersey-born baker, with a smile. “You don’tneed formal training in food, you don’thave to be an expert to understand it.Other foods may be complicated orhard to understand, but bread isflour, water yeast andsalt. It’s a simplething, and if it’smade right, it cantouch the heart.”

unlike the chemically enhanced, preservative-filledsupermarket version you may have just had forbreakfast.
“There are no additives or chemicals in ourbreads,” says Koep, “and there’s no hydrogenatedshortening either. We just use olive oil, vegetableoil or butter, along with flour and salt. A lot of cus-tomers looking for natural foods, better ingredi-ents, are happy when they find that our food isbaked fresh every day and in a natural way.” Andat Fendu (the name comes from a traditional, halfmoon-shaped French loaf), fresh really meansfresh. Anything left over on the shelves at day’send is never resold. Koep and his small team begina new batch of breads, pastries, desserts and heav-enly cookies every day. The Manoa bakery is filledwith baskets of bread and two glass cabinets thathouse a gorgeous selection of pastries anddesserts. Koep knows almost all his customers byname, and as the doors open and close continu-ously throughout the day, there’s evidence of com-munity spirit in small, everyday exchanges.
“We do know many of our customers,” Koepsays. “We see lots of them every day. And we’regrateful to the community in Manoa for supportingus during this first year or so.”
Manoa residents are surely spoiled for choice asthey peruse the menu of daily bread that includesHearth Baked Whole Wheat Bread ($4.50), FrenchSourdough ($5), Multigrain with Flax Seed ($4.50),American Harvest ($5.50), Sweet Onion Naan ($5),a selection of baguettes and the popular fendu loaf.In addition, there are daily specials that include
offerings of Calamata Olive Bread, Walnut RaisinCheese Bread or one made with Hamakua Farm’smushrooms, in which rustic, crunchy crusts giveway to light, airy, pillowy interiors. Each one ofKoep’s breads is a testament to perfection.
As the holidays appear, expect to see fresh, fruit-filled traditional breads and pastries appear on theshelves, like Christmas stolen — and expect themto disappear just as quickly.
“Last year we sold everything we made,” saysKoep, “so this year we’re starting early.”
I’d call and order ahead if I were you. There’s nodoubt that Koep will make a stolen that’s as goodas any you’ve tasted.
If he does run out, take comfort in a miniaturecheesecake, chocolate cake or flaky, buttery crois-sants that are heavenly when dipped in fresh, hotcoffee. Or make the trip to Manoa to try the pearmascarpone Danish or a chocolate mousse cupmade with Valhrona chocolate and topped with apassion fruit sauce.
And you can trust this talented baker to makeone of the crispest, freshest pizza bases in town. Inone corner of the bakery, a pizza oven, importedand rebuilt in Manoa, ensures a perfect crust.
For anyone who seeks Parisian perfection whenit comes to dough, then a pilgrimage to this trulydelightful bakery is a must.
“Bread and pizza go hand in hand,” says Koep.“We want people to be able to enjoy breakfast pas-tries, sandwiches for lunch and pizza for dinner, ifthey like. There’s a lot more to us than just a bak-ery.”

Still a place to enjoy cocktails atsunset and fish fresh from Hawaiiwaters, the restaurant at the Out-rigger Reef on The Beach nowboasts lamb, more steaks,chicken and chops. And there’s anew Grilled Double Cut Pork Chopthat’s proving to be one of themost popular new entrees.
We caught up with David Na-gaishi, the restaurant’s generalmanager, recently to find outwhat’s new for dinner at the popu-lar dining destination.
JM: I’m guessing you haven’tremoved the prime rib from themenu to make way for new
dishes, right?
DN: (Laughs) No, never. It’s al-ways safe here. Our slow-roastedprime rib is cooked for 10 to 12hours; that’s what makes it sogood. We have a number of differ-ent preparations at dinner, includ-ing the Ocean House Cut ($28.50),and the Alii Cut ($34.50) for thosewith heavier appetites. A newpreparation of the prime rib is ourBlackened Prime Rib. We servethe slow-roasted rib meatwrapped in Cajun spices, sautéedin an iron skillet to seal in the fla-vor and then finished with asweet Creole sauce. It’s proving tobe a big hit with customers.
JM: Obviously when peoplecome to a restaurant like OceanHouse, they’re expecting to findfish on the menu. Have youchanged any of the fish dishes?
DN: A lot of our fish selections
have stayed the same, but wehave added a Lilikoi Misoyaki But-terfish that is beautifully tenderand melts in the mouth. ChefCraig Yasaka does a great job andhis dishes are really getting a lotof great comments. We also havea new Fire Roasted Monchong,which is the Hawaiian pomfret,served with yuzu and an oystercream sauce with ginger, cilantroand jasmine rice.
One of our other new and verypopular dishes is the MacadamiaNut Crusted Mahimahi, which isserved with a coconut gingercream sauce and drizzled withsweet chili.
Our fish is always going to bepopular — but we’re very proudof the new meat entrees, too.
JM: Am I seeing lamb on themenu, and double-cut pork chopsas well?

JM: Why the change, when
themenuwas
obviously very strong already?
DN: Well, all these years wehave been seafood strong, andwe wanted to round off themenu a little. By adding moresteaks, lamb, pork chops, we’vebeen able to add a more com-plete menu and still keep ourprices very reasonable.
JM: In Waikiki terms, you are
one of the most reasonablypriced restaurants of all.
DN: Yes, we always keep inmind that a lot of local peopleenjoy coming to Ocean House.It’s important to us to keep theprices affordable. With our viewand our menu, we’re really un-beatable.
JM: I know you get a stronglocal turnout on weekends. Howare weeknights? A good time tocome for a quieter sunset din-ner?
DN: We are very busy Fridaythrough Sunday night, and forsome reason on Wednesdays alot of locals come out for dinner.We’d love to see more local peo-ple come during the early week-nights. People are always sopleasantly surprised when theyfinally come for dinner. Andwhen they see the view …
JM: Do you ever get used toit?
DN: Never. It’s a different newmovie every day.
JM: You have some tastynew pupu items on the menu,too, I noticed. Perfect if peo-ple want to come have a glassof wine, take in the ocean, en-
joy a pupu or two.
DN: Oh, our Island-StyleSashimi ($13.50) is wonderful,and our new Sizzling AhiCarpaccio ($14.50) comestopped with Hawaiian salt, toga-rashi, Maui onions, radishsprouts and topped with siz-zling sesame and peanut oil. It’sso good.
JM: All good reasons to comeand try Ocean House if youhaven’t been in a while, right?
DN: Yes, and then there’s ourservice. The aloha spirit lives onvery strong in the Ocean House!As long as people come andhave a good time, that’s whatwe want.

When Billy Rattanasamayopened a central Oahu ver-sion of Paesano RistoranteItaliano two years ago, every-one was surprised — and
perhaps no one more so thanRattanasamay himself.
Retail pioneer Glenn Kaya, the ownerof Waimalu Plaza Shopping Center, hadbeen a regular customer at Paesano’spopular Manoa location for some time.One day, recalls Rattanasamay, Kaya toldhim about a vacancy at the shoppingcenter, urging him to open a new locationthere. “I said, ‘I’m tired! All these years, Inever have a day off on the holidays,’”Rattanasamay says.
But Kaya persuaded him that a secondPaesano location was a good idea, and
now Rattanasamay spends much of histime there, enjoying a much shorter com-mute from his Waikele home.Rattanasamay’s wife, Nila, helps runs theshow in Manoa with their partner andlongtime friend and chef Gerry Quach.
As many of his regulars might attest,Rattanasamay has earned a break. Bornin Laos, he came to Hawaii with his fami-ly in 1973 and began working even before
he graduated from McKinley HighSchool. “My first real job, I worked as adishwasher at Bobby McGee’sConglomeration,” he says. “Then I hadthe chance to work at Michel’s at theColony Surf Hotel. I was there for 15years as a busboy and waiter.”
The experience would help shapeRattanasamay’s career. At Michel’s, hegot to know George “Cass” Castagnola,
an Italian restaurateur from New Jerseywho had decided to expand to Hawaii;Rattanasamay helped the man launch hisManoa restaurant. By 1991, Castagnolahad moved on. With wife Nila and oldfriend Quach, Rattanasamay took overwith a new name: Paesano RistoranteItaliano.
But he never forgot Castagnola’s les-sons. “He was a master of cooking, but healso knew to use good ingredients,” saysRattanasamay. “He would choose thebest-quality tomato sauce, pasta, ham …

Gradually, Paesano became one ofManoa’s best-kept little secrets. Regularsnow include Gov. Neil Abercrombie andHonolulu Star-Advertiser president and pub-lisher Dennis Francis, Rattanasamay saysproudly. For almost 20 years, neighborhoodfoodies have returned for delectably pre-pared dishes like Osso Bucco Alla Romana(small portion, $20.90; large portion,$26.90), the veal shank authentically servedwith a marrow fork; the Shrimp Scampi(small portion, $19.90; large portion,$24.90); Chicken Alla Sorrentino, with egg-plant, cheese and mushrooms (small por-tion, $18.90; large, $21.90); andRattanasamay’s own favorite: SalmonGardiano ($25.90), pan-grilled Atlanticsalmon with garlic, capers, baby Romatomatoes and ginger in a balsamic reduc-tion.
The New York Steak (smaller portion,$20.90; larger portion; $26.90) is a specialty
at Paesano, and one of its bestsellers. “A lotof people don’t know that we don’t cooksteak on the grill the way Americans do; wesauté it in a red wine sauce,” Rattanasamayexplains. “It’s fry-pan steak, so everythingis cooked fresh, including the sauce.”
The Waimalu location’s menu is identicalto that of its sister restaurant, and evenincludes the same deli selections — meat-balls, sausage and three different pastas bythe pound, red sauce by the quart — thatenable diners to enjoy a fresh Italian feastin their own homes. Fresh bread is bakedevery morning, just as at the Manoa site.The larger Waimalu even has rooms for pri-vate parties, but still feels intimate andwarm.
For lunch at both locations, portions arescaled down and priced accordingly.Sandwiches such as Chicken Parmgiana($11.90), Sausage & Pepper ($8.90), andFish ($12.90) are popular in Manoa with theuniversity lunchtime crowd, and are catch-ing on at the Aiea restaurant.
Tantalizing dessert offerings include two
kinds of Tiramisu (classic and green tea),Cannoli Alla Siciliana, and Zabaglione withImported Marsala (all $6).
As word gets out in and around Waimaluabout the fantastic “new” Italian placeacross from Safeway, Rattanasamay isvocal with his gratitude. “I owe my busi-ness to Michel’s; I learned so much frommy boss (maître d’ Bob Clark, now retired)— not only about restaurants, but aboutlife. And I have good employees. Withoutthem, I would never have come this far.Many have worked for me for so long.”
When he opened the Waimalu location,Rattanasamay gave shares in the restaurantto a small group of longtime employees.“It’s made my company stronger becauseeverybody contributes hard work,” he says.“And now they’re so happy.” Though hischildren are at college now and his com-mute is shorter, Rattanasamay hasn’tslowed down much. “I don’t have time forgolfing! We are a small restaurant and wespend almost all day long there, and that’swhat makes it good.”

It is indoubtedly the place to go whendim sum cravings call. A Honolulufavorite, Chinatown’s Golden Palace
opens at 7 a.m. and serves the least expen-sive dim sum in town.
Once you’ve navigated the busy streetsof Chinatown and found parking off NimitzHighway (where a parking lot leads to ahallway that leads to the restaurant), you’llfind yourself in a commodious room thatcould be a movie set version of a HonoluluChinese restaurant. Carts stacked highwith baskets of carefully wrapped dim sumare frequently refilled during peak hours,while hot dishes and carts at the front ofthe restaurant enable customers to walk infrom the street and help themselves to avariety of house specialties.
At $1.69 per portion, Golden Palace’sdim sum is the cheapest in the city. Loadup on a box or two for the office before you
start the day, or come for lunch and enjoya snapshot of busy daily life in Chinatown.
Seafood dishes are a specialty, and therestaurant offers dishes not commonlyfound elsewhere. Jelly Fish withShredded Chicken ( $6.95), Baked, SlicedSquid with Pepper Salt ($7.50) and Saltand Pepper Egg Fish ( $7.95) lead off anextensive menu; salt and pepper shrimp,a variety of crab entrees and steamedlive shrimp are all seasonally priced. There are so many good value offers
at restaurants that it’s always hard to

This time of year signals a little more than just the
start of the holiday season. At exactly 5 a.m. next
Sunday, the gun goes off for the 2010 Honolulu
Marathon, filling the streets of downtown Honolulu and
Waikiki with thousands of runners, walkers and their
supporters.
In support of those brave enough to tackle the 26.2-
mile course, Wailana Coffee House has a three-day all-
you-can-eat pasta menu Dec. 9-11.
Owner Joanna Leong says she and brother Kenton
began offering this special about 10 years ago so partic-
ipants could enjoy a reasonably priced carbo-loaded
meal during those crucial days leading up to the
marathon.
“I am not a runner, but years ago I did race walking
and participated in many races or helped at various
events,” says Leong, adding that although she has not
attempted the Honolulu Marathon, she has been at
the finish line to greet friends and family, including
her son, John, and his wife, Julianna.
“The event itself brings in many visitors to our
state, especially participants from Japan, and the run-
ning path goes by our restaurant,” she adds. “This
menu is for marathon participants as well as for
everyone else who wants to carbo-load or just loves
pasta to the max!”

N othing’s better than waking up to
presents on Christmas morning,
and boy, does Wailana Coffee
House have a present for you. The restau-
rant will be open Dec. 25, serving all the flavors of the holidays
to every good little boy and girl — and adults too!
The Holiday Breakfast Special ($9.95) is Eggs Benedict
Royal, toasted English muffin halves topped with smoked ham,
turkey breast and poached eggs and smothered with a creamy,
thick hollandaise sauce. The meal is made complete with the
addition of hash browns, glazed peaches and choice of coffee
or tea.
Or choose from three Christmas Dinner Specials, available
from 11 a.m. to midnight. There is a Prime Rib Roast ($16.95),
which is coated with special seasonings before being slowly
roasted to perfection and served with au jus and creamed
horseradish sauce.
Another holiday favorite is the Holiday Turkey with Smoked
Ham ($12.95), served on a bed of macadamia nut stuffing, old-
fashioned giblet gravy and topped with a grilled pineapple ring
filled with cranberry sauce.
Or go the unconventional route and try the Hibachi Chicken and
Shrimp Kabobs ($13.95), a ginger, shoyu and smoked hickory-
infused chicken breast served with shrimp kabobs skewered with
fresh mushrooms, tomatoes,
onions and bell peppers.
All dinners include choice of
baked potato, mashed potato,
french fries or steamed rice; corn
on the cob; Wailana’s popular
salad bar; bread pudding drizzled
with chocolate sauce and topped
with whipped topping; and coffee,
tea or soft drink.
Make it a true celebration with a
bottle of Wailana’s House Wines,
$3.75 a glass or $7 for half carafe.
Wailana’s regular menu also will
be available Christmas day, as well
as its keiki value meal menus
($2.25 for breakfast, $2.50 lunch

known meat, but one
superbly suited to high
heat and quick grilling

short loin, this inexpen-
sive cut of beef is ideal for

ing. Full of marbled fat and
flavor, flap steak is similar
to skirt or hangar steak.
With the high heat from
yakiniku grills, the meat
grills quickly, yet stays
tender. In fact, it’s best
when cooked over high
heat and to a temperature
of no more than medium
rare. Don’t overcook it —
it goes from perfect to
tough in seconds — and
make sure to cut the meat
on the bias once it’s done
in order to best taste the
texture and flavor.

Ingredients:• 1 pound fresh Kahuku prawns• 1.5 tablespoons cornstarch • vegetable oil, for deep-fryingprawns• 1 tablespoon chopped garlic• 1 tablespoon sliced red jalapeñopepper• 1/2 tablespoon salt and pepperseasoning (use one part garlic pow-der, one part sugar, one part fineground black or white pepper and
two parts fine salt mix together)• 2 tablespoons chopped greenonions
Preparation:• In a pot or deep frying pan, heatoil to 350 degrees.• Toss prawns into cornstarch andremove excess cornstarch. Then,fry prawns until they are cooked,about one or two minutes, depend-ing on heat of stove, or until shell is
crunchy. After the meat is cooked,set aside.• In a sauté pan on medium-highheat, add 1 tablespoon vegetableoil, garlic and red Jalapeno pepper,and cook for 30 seconds. Then addfried prawns. Sprinkle seasoningevenly to cover shrimp, add greenonions and toss for 10 secondsbefore turning heat off.• Perfect with a bowl of rice.
