lies are stuffed with holiday

fixings galore, and in five

days we’ll be wrapping up 2010

and ringing in the new year!

The year 2011 offers new possi-

bilities, dreams, goals and, most

certainly, new resolutions. And

while the most commonly made

resolution may be to drop those

stubborn holiday pounds, being

the proud foodies you are, why

not make your resolution one to

submerge yourselves into a whole

new world of culinary delight? Go

ahead and sample foods that are

unique and different, and expose

your taste buds to foods you’ve

never before tasted.

However, having feasted on

rich and decadent foods for the

past few weeks, my tummy need-

ed a little break — all I wanted

was comfort food — and for me,

that “comfort food” is none other

than noodles.

And with the new year fast

approach-

ing, I couldn’t think of a better

time to feature my comfort food

at some of my favorite “Ono, You

Know” spots.

For as far back as I can remem-

ber, my family has always associat-

ed noodles with good luck and

longevity. On any birthday, for

instance, it was mandatory for the

entire family to eat noodles to help

make certain that a long and pros-

perous year (and life) was in store.

So, I figure, why not do the

same for New Year’s? It really

can’t hurt, and if anything, noo-

dles are nothing but delicious.

With that, slurp up what’s left of

2010 and be ready to fully indulge

in the year to come!

Max’s of ManilaI simply love Filipino food, and

Max’s of Manila is my one-stop-

shop for everything in Filipino

cuisine. Also known as Max’s

Restaurant, this Philippine-based

eatery takes pride in its renowned

fried chicken and Filipino dishes.

With more than 120

branches in the

Philippines and other

locations nationwide,

Elizabeth Joven, operations man-

ager of the Dillingham location,

says Max’s offers a bit of every-

thing.

“Pinakbet is the Ilocanos contri-

bution to Filipino cuisine and

other items like the Kare-Kare

originated from other parts of the

Philippines,” she states.

And while the Pinakbet and

Kare-Kare are divine, it’s the

Pancit, or noodles, that I find

myself craving on a regular basis.

Joven served me the Canton

Pancit ($7.95), and with the first

bite I felt as if I was whisked away

right to the heart of Manila. It

was that good!

As a form of Filipino comfort

food, the Canton Pancit, which

can serve up to three people,

consists of a wide variety of veg-

etables, including carrots, cel-

ery, onions and cabbage. Then a

bit of pork, chicken or shrimp is

added for additional flavor. The

secret, however, is the special

sauce, exclusive to Max’s, that

the chefs add to all sauteed

items. Be ready to chow down

because this special sauce is

just too good to resist.

“We make our pancit at the

request of the customer,” Joven

says. “Some don’t want pork

with it, some just want shrimp,

or the egg and rice noodles

without any meat.”

The chicken pancit is grow-

ing in popularity as it serves as a

healthier alternative for many,

and while I am a fan of pancit in

general, you foodies have to

know that I can’t have my pancit

without pork!

You can expect to seelots of holiday coloron the menu at Kani

Ka Pila Grille as the yearcomes to an end.

“There’s a seasonal theme to our dishes,” sayschef Harold Beltran, who’s hoping dishes likeseared ahi and fresh poke will be a hit alongsideberry and asparagus salad and rack of lamb.

It’s part of the mission of Outrigger Reef on TheBeach to keep local music and local food alive inWaikiki. “It’s very important to us that we keepthe theme of Kani Ka Pila Grille close to our menu,so dishes are always about local produce andabout the kind of things that people have told usthey want to eat when they come here,” he says.

Beltran and the culinary staff have been work-ing hard on the menu at the popular Waikiki hotspot of local music and entertainment for almost

two years, and they’re startingto see their catering and restau-rant business boom.

“While we have differentmenus for both catering and therestaurant,” says Beltran, “bothsides have really started to takeoff.”

The change is due in part to awide range of new menu itemsaimed at guests of all levels, andwith varying budgets.

“We’ve really stepped up our menu,” says Bel-tran, who says that one of the casual dining spot’smost popular dishes is a nori-crusted ahi toppedwith macadamia nuts and served on a bed ofsalad greens with house dressing. He makes agreat loco moco, too, with a made-from-scratchground beef patty and house-made gravy overrice, topped with an egg and fried Maui onions.

“The Maui onions really take it over the top,”says Beltran with a grin.

And you’ll also find some kicked-up entrees onthe menu this week, that Beltran says make KaniKa Pila Grille a competitive dining spot in Waikiki.

“We have some of the best restaurants inHawaii around us,” he says, pointing to suchrestaurants as Ruth’s Chris Steak House, locatedwithin a short walk of Outrigger Reef on theBeach. “The standard for food in this part ofWaikiki is very high, and we think it’s up to us tooffer competitive dishes that are reasonablypriced. It’s challenging to be in such awesomecompany, but it’s good for our menu.”

That’s why you’ll find dishes such as Fire-Grilled Rack of Lamb , Rib Eye and New York steakon the menu next to salads, burgers and sand-wiches. This week, guests can try dishes created

It’s impossible to talk about Kani Ka Pila Grillewithout mentioning the award-winning musicians who playevery night at the poolside bar.

Cyril Pahinui, Sean Naauao,Weldon Kekauoha, KawikaKahiapo and Martin Pahinuiand Manoa DNA are just someof the talented musicianswho’ve made the Waikiki pool-side restaurant and bar theirhome. Much of the success ofKani Ka Pila Grille is due to thewarm welcome guests receivefrom ‘ambassador of aloha’ Lu-ana Maitland. By day, Luana

helps hotel guests understand the rich history ofHawaii through Outrigger’s cultural programs.By night, she flawlessly manages the music sceneas if it were happening at her own home.

“There was always kanikapila when I was grow-ing up,” she says with a smile. “It’s wonderful tobe able to share this music every night.”

And while the restaurant won’t be open untilmidnight on New Year’s Eve, it will be home tosome of the best Hawaiian music on the islandearlier in theevening.

The music and the warmth of island-style hos-pitality are what drives Beltran and his staff, andencourages them to keep their menu affordable.“We don’t want someone to come here for themusic and not be able to eat, so we made surethere are a variety of choices where people caneat well and not spend a fortune,” he says. “Wewant everyone to come eat, hear great music andhave a good meal. That’s what Kani Ka Pila is allabout.”

A Taste of MexicoA Taste of Mexico

It takes awhile to getFrancisco

Dominguez, thechef at 11th Av-enue MexitlanGrill inKaimuki, toopen up abouthis food. Oncehe does, how-ever, it’s clearthat he’s pas-sionate aboutintroducing thetaste of originalMexican dishesto Hawaii.

Without the memory oftaste, Dominguez says, it’shard to re-create authenticfood. So that’s what he’strying to do at Mexitlan.

“I’m cooking the kind offood I learned to cook as achild,” he says, “and I’msharing it with the peoplewho come.”

For the most part, you’llrecognize most dishes onthe Mexitlan menu. There’sGuacamole (made to or-der), Nachos, Chili Relleno,Tamales and a selection ofburritos that start at $9.95.But there’s also a lot to getexcited about if you enjoyventuring out of a comfortzone of Tex Mex blandness.

I sat down to chat withthe chef about his fabulouschile rellenos, colorfulplates, and the flavors thatremind him of home.

Jo McGarry: Did yougrow up cooking in Mexico?

Francisco Dominguez:Yes, pretty much. I am fromMexico City, and I left to liveand work in Baja and livedthere for a while before Icame here. I was persuadedto come to Hawaii to helpopen a restaurant sevenyears ago.

JM: So Americans havetheir own idea of Mexicanfood, and it’s not reallywhat they’d be eating inMexico. Is it harder to makeAmerican-Mexican food?

FD: Not harder, but it’strue that a lot of things, ofcourse, are different. Youwouldn’t see soft tacoseverywhere in Mexico, forexample, or burritos andquesadillas mixed with

other foods. The food ofMexico is much more re-gional. The Mexican foodhere is more of a mixtureof Mexican and Tex-Mexkind of dishes — and re-ally more the kind offood you might see in thestreets, not really in finerestaurants. But that’sOK. We do what peoplewant and then add insome interesting dishes,too.

JM: Your salads are re-ally interesting. They’recolorful and seasonedwell, and offer somethinga little different from thenorm. I love the Fish Or-ange Salad.

FD: When we werekids, we would take anorange, peel it and thensprinkle on a kind of saltyseasoning. I wanted to re-member that taste andso I made it in the salad.And did you know thatthe Caesar salad was cre-ated for the first time inMexico? I have one onthe menu to rememberthat.

JM: What I like aboutyour food is that it seems

to be infused with flavor.None of the flavors over-whelm the others, butthere’s a gentle heat anda well-balanced blend ofspices that linger on thepalate well after you’vefinished eating.

FD: I use ingredientsfrom Mexico, includingthe chili and spices. It’simportant to use the cor-rect chili for each dish.For example, most peo-ple don’t know that thepoblano chile should al-ways be used in rellenos.That’s what makes thedifference. For me, it’simportant to cook thekind of food that I wouldcook if you came to myhome. And then I hopepeople come to share it.

JM: Lobster tacos andpoblano chilies stuffedwith crab are not reallywhat you see on toomany menus aroundtown.

FD: Yes, not too manypeople are serving them,but they are so popular. Imix the lobster with a lit-tle blue crab, sauté withwine and some spices

and the flavor is reallygood.

JM: Tell us about yourpork. It’s tender and hasgreat flavor.

FD: Cochinita is mari-nated pork with orange.It’s a dish of SouthernMexico that’s made withchilies. I slowly roast thepork in the oven and it isso good. We put it intotacos or burritos. Peoplelove it.

JM: So are you goingto be able to succeed inintroducing a differentkind of Mexican food toHawaii?

FD: Well, we’ll try. InJanuary, I will start tomake different specials –maybe once a week onSunday for example –and then we’ll invite peo-ple to come and trythem. The first one I willdo is posole – a cornstew with pork andchicken and beef. It is soso good. I think that peo-ple here like menudo, butthe posole is even better.I think it will be a big hit.

What regulars like

most about Wa-

ialana Coffee

House is the fact that it

not only serves local fa-

vorites like fried rice, kalbi

and teri chicken and a lot

of American-style dishes

like New York steak, but it

serves them 24 hours a

day.

The local-style diner

closes for just a few short

hours each Tuesday night,

and then reopens to serve

its menu of Hawaii home

comfort food.

With specials dictated

by popular events and fes-

tivals (Honolulu Marathon,

Grandparents Day and

Valentine’s to name but

three), Wailana’s regular

menu of staples has re-

mained the same for

decades. On Thursday,

those in the know beat a

path the restaurant’s door

for a sizeable bowl of some

of the best oxtail soup in

the city.

Rich with house-made

broth and topped with

peanuts, cilantro and juicy

shiitake mushrooms, the

oxtail soup is served

steaming hot with rice on

the side.

“It’s definitely one of our

most popular dishes,”

says Wailana Coffee House

owner Kenton Tom. “It’s

one of the dishes that has

stayed the same since we

began.”

We’re not sure regular

diners would be able to

handle a change, though.

“We don’t plan on taking

it off the menu,” says Tom.

“We listen to our cus-

tomers and know what

they want.”

At Camellia Buffet on

McCully Street,

you’ll find the usual

staples of Korean barbe-

cue, chicken, meats,

seafood and a variety of

house-made kim chee. But

recently the staff at

Camellia has added an item

or two with smaller guests

in mind.

“We noticed that people

were asking more and more

if they could have some-

thing for their kids, as not

all kids like spicy food and

vegetables,” says the

restaurant’s longtime man-

ager, Kelly Park.

“So,” she continued, “we

added orange chicken.”

It might seem slightly

incongruous that amid the

kim chee and cucumber,

you find the popular

orange chicken with fried

rice, but it’s proving to be a

huge hit with families.

“We cook it all ready so

the kids don’t have to wait

to eat,” says Park. “As soon

as they come in they can

head straight for the buffet.

They love it!”

And a comforting

favorite like orange chicken

makes young diners slight-

ly more ready to try the dif-

ferent vegetables, sides,

sauces and meats on the

Camellia line. Camellia’s

house specials include a

seaweed soup with gener-

ous amounts of seaweed,

red bean porridge, red

beans and rice, rice

and noodles.

Newer menu items

also include Korean

pancakes. “People

like them because

they are trying to eat

more healthy,” says

Park of the pancake

made with sesame

oil, soy bean paste

and seaweed. “It’s

good for vegetarians,

and it’s a healthy

food.” At Happy Day Chinese

Restaurant in

Kaimuki, Krissy and

Micah Ancheta rave about

the food and the speedy

service. We asked them

what they’d recommend

from the menu.

Krissy: “We like Happy Day

because the food is tasty

and the staff is so quick. And

the dim sum is really good.

“Today we have the baked

char siu ball, the half moon,

pork hash and an eggplant

with fishcake with a black

bean sauce that we just tried

for the first time.”

Micah Ancheta: “I like the portions; they

give you so much. Look at the

rice cake: It’s really huge! So

the portions are good, and

the food is really tasty.

Usually I order the char siu

ball and the pork hash.

Everything is tasty.”

or Takeshi Urushido,who first discoveredKorean cuisine while on

a business trip more than 20years ago, much of the cui-sine’s appeal lies in its leg-endary health benefits.

“He says his body felt happy after eating it!” says AyakoHanzawa, Urushido’s niece, translating for her uncle. Inspired byhis culinary experience in 2006, Urushido found a talented Koreanchef to partner with, and they rapidly launched four Koreanrestaurants in Urushido’s native Japan.

This year, Urushido opened Richo Korean Cuisine on WaialaeAvenue. It’s been a tremendous challenge for this seasoned restau-rateur and businessman. “My uncle loves what he’s doing, eventhough it’s tough,” translates Hanzawa. “He wants people to lovethis restaurant, and he’s trying so hard to give them reasons tolove it.”

Richo’s Waialae Avenue location opened its doors this pastAugust in the building that once housed Momomo Izakaya. Thefirst thing you see upon entering is an eight-seat sumiyaki bar. Ifyou’re a fan of charcoal-grilled morsels of meat, seafood and veg-etables, you’ll want to belly right up to this bar.

Selections at the sumiyaki bar may be prepared with salt orhomemade sweet shoyu sauce. Yakitori include chicken thigh cut-lets ($3), chicken meatballs ($2) and wings $3); other items includeskewers of regular or premium beef tongue ($6/$6.99), beef tripe($4), ahi ($4), onions ($2) and Tokyo nage onions ($2.50).

Urushido and his crew are especially proud of their kimchee,which is homemade. “Twice a week, we spend hours cutting upNapa cabbage … me, my boss and the kitchen staff. It has eight ornine secret ingredients!”

Chijimi, the savory Korean pancakes, are available with seafood,squid and chive, leeks, beef and yams, or mozzarella and kimchee,at $7-$8 for half-portions, $10-$12 for whole portions.Traditionalists will love beef or seafood chapgae ($10.96), with cel-lophane noodles and vegetables; samghetang ($28/whole,$18/half), chicken stuffed with rice, nutmeg, carrots, garlic and gin-seng; or the teockpokki ($11.80), a stir-fry of spicy rice cake,seafood and vegetables. For $9, the hot stone bowl bibimbap(which some Koreans insist is a great diet food) is popular, as is thespicy pork cochujang stir-fry ($10).

“And everybody loves the L.A. Kalbi!” Hanzawa says of the dish,which is garnished with green onions and sesame seeds, andserved on a big ceramic plank, for $13.50.

offering a Saturday breakfast menu sixweeks ago per the suggestion of newowner Phil Johnson. So far, so good, ac-cording to Don Ho’s general managerMike Maielua.

“It’s been steadily picking up sincewe started,” Maielua reports.

No wonder, as the selection on the“Tiny Bubbles” Mimosa Brunch menuhas something for every taste.

For those with a sweet tooth, there’sthe Banana Foster French Toast ($9):slices of Island sweet bread dipped inan egg batter then cooked to goldenbrown perfection and topped with a Ba-nana’s Foster sauce. The meal is madecomplete with a side serving of Por-tuguese sausage.

vory can try the Steak and Eggs($14), a ribeye steak served withtwo eggs and steamed rice, or theSmoked Salmon Florentine ($15),which places a smoked salmon fil-let atop a bed of sauteed spinachand English muffin, all toppedwith poached eggs and a creamyhollandaise sauce.

A lighter option for those re-solving to eat healthier is the Landand Sea Breakfast ($12). Pan-seared fresh fish comes fresh fromthe kitchen flakey and moist,

served with two eggs and steamed rice.But if you’re appetite’s a bit bigger,

the Don Ho’s Island Grill Stack ($10) —three fluffy pancakes served with thetraditional breakfast stand-bys baconand eggs — and the Chicken & Waffles($11) — a salty-sweet marriage of DonHo’s famous chicken wings and minimalted waffles accompanied by lilikoibutter and maple syrup — can satisfyany craving.

When you’reworking ata restau-

rant named afterone of Hawaii’s most-famous entertain-ers, running into a celebrity is just partof the job.

Mike Maielua has been with DonHo’s Island Grill since it first opened in1998. Over the years, the general man-ager has seen many a famous face fre-quent the Aloha Tower Marketplaceeatery, including notable names suchas Bobby Womack, Shaquille O’Neal,Arnel Pineda (lead singer of Journey)and even the Hoff, as in David Hassell-hoff.

Most recently, Willie K celebratedthe release of his Christmas CD, WillieWonderland, with a party and perform-ance at Don Ho’s.

Diners can see more famous names on therestaurant’s celebrity wall, which features canoepaddles signed by the actors, singers, athletesand dignitaries who have walked through theiconic dining room.

And true to its namesake, Don Ho’s has be-come a bit of a celebrity in its own right.

“They’ve shot a few Hawaii 5-0 episodes in thetowe. We are featured in the montage section inthe new film The Descendants, and other foodshows have filmed here as well,” Maielua says.

As for who he’d like to see come in for a bite,Maielua says without hesitation: “The PittsburghSteelers. We’ve had a few of the older players,but I’d love to see the newer ones — Troy Pola-malu, Ben Roethlisberger — come in too.”

He may just get his wish when the Pro Bowlcomes to town next month.

newly opened Sik Do Rak,

to realize that he’s some-

thing of an expert when it

comes to making noodles.

Moving quickly around

the restaurant’s tiny, effi-

ciently laid-out kitchen,

Choi puts starchy, fresh

buckwheat dough into a

huge noodle machine

above a metal pot of boil-

ing water. As the fresh

strings of noodles squeeze

through the pre-formed

mold, they drop into the

water for no more than 20

seconds before they’re

collected by Choi and

thrown into a bowl of cold

running water to remove

any excess starch.

Next, he whips around,

deftly ladles soup broth

into a bowl and tops the

noodles and soup with

garnish from a stack of

already prepared top-

pings.

The entire process takes

less than a minute.

“The ordering time is fast

— and everything, as you

can see, is freshly made,”

says a smiling Choi, who

opened Sik Do Rak just

two months ago.

With nothing on the

menu over $20, there’s

already a large following of

guests who come for the

lunch specials — the buck-

wheat cold noodles are

just $3.95 and barbecue

short ribs are just $4.95 —

and then come back for

the wide variety of dinner

and late night specials.

“We open at 11 a.m. and

close at 4 a.m., so people

have lots of choices about

when to come and eat,”

Choi says.

call Max’s Chicken

And it’s certainly popu-

lar at Max’s of Manila’s two

Oahu locations. “To those

who are familiar with our

restaurants in the

Philippines, we’re known

for our chicken!” says Maly

San Juan, general manager.

Cooked according to a

secret recipe that was cre-

ated more than 60 years

ago, the crisp, juicy chick-

en is available in half-por-

tions ($7.95) whole por-

tions ($13.50), and in six

different Combo Meals

($5.75-$9.50) designed to

satisfy any appetite.

The cuisine at Max’s,

developed in the Central

region of the Philippines, is

slightly different from

Filipino food at most Oahu

restaurants, San Juan says.

“In Honolulu, many

Filipinos are from the

Northern province, so the

restaurants here mostly

serve (Ilocano) food.”

There are little variations,

she explains: For example,

when making pinakbet, the

beloved traditional stew,

Northerners use anchovy

bagoong (fermented fish

paste); the Central region

uses shrimp bagoong.

Several dishes are big

favorites at Max’s Hawaii

locations. For starters,

many enjoy Lumpia Ubod

($5.95), stuffed with shred-

ded heart of palm, Chinese

celery, and a bit of pork and

crab meat. They may be

ordered fried with a side of

vinegar, or fresh, with

peanut soy sauce for dip-

ping.

One of the most popular

entrées is Crispy Pata

($12.95/small-$16.95/large).

“The pork knuckles are

braised till tender inside

and then deep-fried, so

they’re real crispy outside,”

says San Juan. “We serve

them with a soy-vinegar

sauce and homemade

papaya relish on the side.”

Kare-Kare ($11.95/small;

$18.95/large), oxtail-peanut

stew, is also a favorite

among regulars, as is the

Sinigang ($8.50-$15.95), the

tangy-sour Filipino soup

with a tamarind base; din-

ers may choose among

pork ribs, deboned milk-

fish, shrimp or miso and

mahimahi for their soup.

Max’s is known for its

Halo Halo ($5.50), the

dessert that blends shave

ice, evaporated milk,

beans, fruits and other

sweets. “Ours has about a

dozen ingredients, includ-

ing palm seeds, macapuno

(coconut), azuki and white

beans, various fruits and

gelatins, flan, and ube

(yam) ice cream imported

from the Philippines,” says

San Juan. Buko Pandan

($3.95), a Max’s original, is

made from pandan-fla-

vored gelatin, coconut and

tapioca pearls, flavored

with cream and topped

with macapuno (a variety

of coconut) ice cream.

Many local families and

businesses host their cele-

brations at Max’s, which

can accommodate groups

from 20 to 200. “We have a

lot of birthdays, bap-

tismals, graduations and

company parties,” says

San Juan. For groups of 40

or more, Max’s recom-

mends a buffet-style setup

with dishes from the cater-

ing menu. The restaurant

also offers three set menus

priced from $135-$155,

life, I then made my way to

Bangkok Chef in Manoa

Marketplace. Being that it’s close

to home, I frequent this hot spot

often and I can’t think of anything

more exciting to the pallet than

freshly made Thai cuisine.

And the Pad Thai for one flies

off the menu. It’s an authentic

Thai noodle dish that is loved

by practically everyone. Even

those who can’t handle the heat

opt for this these tasty noodles,

because what it lacks in spici-

ness, it makes up for in flavor.

Co-owner Mary Su says the Pad

Thai ($5.70) features rice noodles

fried with egg, chicken and tofu

with bean sprouts, chives and

their in-house Pad Thai sauce. It’s

an additional $2 if you’d like to

include fish to the noodles, and if

shrimp is to your liking, then the

dish is priced at $8.25.

Ingredients:

• 5 pounds beef tenderloin, clean

• 1 large piece puff pastry

• 1 pound sliced button mushrooms

• 2 tablespoons vegetable oil

• 2 tablespoons butter

• 1 tablespoon chopped garlic

• 1.5 tablespoons chopped shallot

• 1 tablespoon chopped black truffle (optional)

• 1/2 cup red wine

• large pinch black pepper

• 1/2 tablespoon fresh herbs (equal partS of thyme, tarragon, chives and parsley)

• 1 egg wash

• 2 cups red merlot demiglace

Preparation:

• To prepare duxelles, in a sauté pan with medium-high heat, add vegetable oil,

butter, shallot and garlic, sauté for a few seconds to sweat the garlic, then add

mushrooms and cook for a minute. Add red wine.

The mushrooms will release more liquid, which is normal. Add truffle and season

with salt and pepper, and keep cooking for about 10-15 minutes, or until all the liq-

uid is gone. Set aside once it cools down, then toss in fresh herbs and mix well.

• In a hot pan with high heat, sear the beef about 1 minute on each side; season with

salt and pepper to taste. Once it’s done, set aside for a few minutes. Then coat evenly

with the mushroom duxelles, wrap and spin several times. Keep in the refrigerator for

half an hour.

• On a lightly floured surface, roll the puff pastry out to about 1/4-inch thickness.

Depending on the size of your sheets, you may have to overlap two sheets and

press them together.

• Remove beef from refrigerator and unwrap the plastic wrap. Set beef in the center of

the pastry and fold over the longer sides, brushing with egg wash to seal. Trim ends if

necessary, then brush with egg wash and fold over to completely seal beef.

• Save ends to use as a decoration on top, if desired. Top with coarse sea salt. Place

beef seam-side down on a baking sheet. Brush top of pastry with egg wash then make

a couple of slits in the top of pastry using the tip of a paring knife. This creates vents

that will allow the steam to escape when cooking. Bake for 40-45 minutes until pastry

is golden brown and beef registers 125 degrees F on an instant-read thermometer.

Remove from oven and rest

before cutting into thick

slices.

Merlot Demiglace

Ingredients:

• 1 cup merlot

• 2 cups veal stock

• 1 tablespoon roasted

garlic (3 cloves)

• 1 tablespoon roasted

shallot (1 large clove)

• 1/4 pound unsalted but-

ter (room temperature)

Preparation:

• In a sauce pot, combine

veal stock, merlot, roasted

garlic and shallot, and

bring to a boil to reduce

the liquid to 1 cup.

• whip in butter and turn

heat off.

Sautéed Brussel Sprouts

with Baby Corn and Bacon

Ingredients:

• 1 pound Brussels

sprouts

• Asparagus

• 1 pound baby corn

• 6 strips bacon cut to 1/2-

inch long

• 1/2 tablespoon chopped

garlic

• 1 cup chicken stock or

hot water

• 1 tablespoon oyster

sauce

• large pinch of ground

black pepper

• In a sauté pan with medi-

um heat, sauté bacon until

light brown and almost

crispy. Add garlic and
