“Every day is a differentstory; we know that wewill always have freshfish,” says Chef GeoffreyArakawa of Uncle’s, whichcaptured the 2010 HaleAina Award for “BestSeafood” restaurant. “Butthe catch of the day or thebest-selling item is alwaysunknown.”

In many ways, Uncle’sradiates the atmosphereof a coastal hangout moreso than a formal seafoodrestaurant.

And while the foodspeaks for itself, the décorof Uncle’s takes the diningexperience to an entirelydifferent level. Designedlike a fishing museum, therestaurant sports an aquafishing theme. Framedphotos of old fishingboats line the walls withfish-painted pipes alongthe ceiling. Meanwhile,videos of owner BruceJohnson’s fishing trips areplayed for patrons onlarge TV screens.

Creating a casualrestaurant that conjuresup images of meaningfulfamily relationships wasimportant when it cameto choosing a name forthe establishment.

“It’s a tribute to all the

uncles who have touchedour lives,” explainedArakawa of the inspirationbehind the restaurant’sname.

Although there havebeen changes since itsopening in June 2008, Un-cles has remained a placeto simply unwind and en-joy good food.

“Yes, there are changes,and there will be more tocome,” said floor managerShelley Supnet. “But wetry to keep things to whatour customers are usedto.”

That includes the ab-sence of any waiters, ascustomers are invited towalk in and find a seat.Once they’re ready, pa-trons head for the bar andplace their order.

“We check up on peoplefrom time to time, so weare more like runners than

waiters,” explained Sup-net, adding that althoughvisitors don’t get full serv-ice, they always feel wel-

comed and well-cared for.“The lunch rush is our

most popular time, anyweekday,” Supnet said.

“You’re in and out with asatisfying meal comparedto other diners.”

“People tell us all the

time that they love the

food and the value,” says

Arciaga, the kitchen man-

ager who’s been with

Makino for more than five

years. “For $2.97, you get

Makino chicken, grilled

shrimp, shumai, curried

potato, grilled tomato and

yakisoba noodles. It’s re-

ally good value.”

Such is the popularity of

Makino’s bentos that a

new line has recently been

introduced. “We wanted to

create something for

everyone,” says Arciaga.

“So now we have a crab

salad bento — with real

crab, not imitation — as

well as grilled salmon or

barbecued ribs.”

The mid-priced bento

($3.97) offers Makino’s

chicken katsu or garlic ahi

— with six side dishes —

for $4.97. The largest

bento features butterfish,

grilled salmon or barbe-

cued ribs and up to a

dozen different sides. The

butterfish bento comes

with miso butterfish,

lemon shrimp, shrimp

tempura, seaweed salad,

fried chicken, shrimp shu-

mai, squid cake, fried

noodles and Japanese

baked egg.

group who’s vegetarian?

Even with its low prices,

Makino is accommodating.

Give the kitchen enough

notice, and you’ll be able

to customize your order.

“So many people have

different needs, says

Mitchell, “and we’re happy

to accommodate them if

we know in advance what

they want. Yesterday,

someone ordered 36 but-

terfish bentos and asked

for some of them to be veg-

etarian. And last week,

someone ordered 96 mixed

bentos with the same re-

quest for vegetarian op-

tions. None of that is a

problem.”

Their response to the

budget-priced, value-

packed lunch sets has

been impressive.

“Almost every day we

have multiple orders for

large groups,” Mitchell

says. “Recently in our Aiea

store we had an order for

600 mixed bentos. People

realize that the value is in-

credible, and that this is an

easy way to feed large

groups.

“Once they try the food,

they come back for more.”

Hilton Hawaiian Village’s signa-

ture restaurant, Bali Steak and

Seafood, has long been consid-

ered one of Hawaii’s finest dining es-

tablishments. But even with

perennial AAA, Four-Diamond award

status, an enviable beachside loca-

tion, and dozens of accolades for

both food and service, it came as

something of a surprise earlier this

year when the restaurant changed its

image entirely.

Gone are the aqua-marine décor,

the French-inspired dining room style

and the slightly stuffy menu. In its

place, the steak and seafood restau-

rant now has a contemporary menu,

an earthy, subtle color scheme and a

quiet new confidence that allow pa-

trons to enjoy a stunning ocean view

while feasting on one of the dining

room’s best accessories — local pro-

duce.

I sat down with executive chef Jef-

frey Vigilla to eat and chat about

changing a restaurant culture.

JM: Bali Steak and Seafood Restau-

rant has a nice ring to it. Did you even

think of changing the name?

JV: I tell you, the biggest decision of

all was about the name.

The tradition of Bali by the Sea,

and the pride of the team that’s

brought the dining room to the AAA,

Four-Diamond status is huge. So we

didn’t want to take anything away

from that — including the name. So

we’re staying with Bali. It isn’t about

taking anything away, it’s more about

giving customers what they want.

The top restaurants in America right

now are steak houses and seafood

restaurants.

JM: So where do you start with re-

creating, because it’s really like open-

ing a new restaurant, isn’t it?

JV: Yes, it really is. You have to start

at the center of the plate. Do you

want to be complicated or simple?

Do you want guests to order quickly

and easily, or not ? We started by do-

ing specials and introducing them to

the Bali menu. Then we put in a

grilling station and changed the way

we cooked the steaks. Now, we

have these great cuts of fish

— 8-9 ounces each —

chicken, steaks, all coming off

the grill.

JM: What’s the reaction so

far?

JV: So refreshing and positive.

Even long-term guests are en-

joying the change. When the

food is this good, people are

going to enjoy the experience.

JM: I like the menu size. It’s

compact and uncomplicated.

JV: Yes, but there’s a lot on it

that’s not typical. We’re intro-

ducing a seafood tower with

Kona abalone, ahi poke,

shrimp, lobster tails, if people

want them … not a traditional

tower. We’ve created a poke-

style Kona abalone, and in-

stead of a usual shrimp

cocktail, we have a grilled,

chilled shrimp. It’s so much

more flavorful. And we have

this incredible, loaded Yukon

gold potato soup. It’s dressed

with aged Cheddar cheese,

homemade fresh bacon, scal-

lions, sour cream. It’s a stun-

ning, simple dish.

JM: When you say homemade

bacon, do you mean you cure

it here?

JV: Yes, cure it, slightly smoke

it and then we slice it and sear

it. It’s beautiful.

JM: Bacon is hot right now.

I’m seeing it everywhere.

JV: Yes, but pork belly is king.

I’ve been playing around with that. It’s

going to be local style and very good.

sometime soon.

JM: What I like about the restaurant is

that you’re not trying to compete

with traditional steak houses. You’re

offering classic steaks, but there’s a Hawaii

influence and an Asian influence to almost

all the dishes.

JV: Exactly. There’s a sense of place here

that’s important. We’re right on the beach,

and the culture — the food culture — is

highly motivating for us. We’re serving ex-

actly the kind of food you’d expect from a

fine-dining restaurant on the beach in

Hawaii. So there’s fresh fish, island-grown

ingredients and Asian influences in the

seasonings, and the simple presentations.

JM: Can you give us some of your recom-

mendations from the menu?

JV: The loaded baked potato soup, for

sure. The Kona abalone poke; the cowboy

bone-in rib-eye is always exceptional. The

sides are interesting, too — local green

beans sautéed with Portuguese sausage,

jasmine rice, roasted Hamakua mush-

rooms, thin, crisp, truffled french fries.

And with the fish, we’re talking to the

fish market every day, so we have what-

ever is freshest and best including opah,

ahi and onaga. Our seafood medley, which

is done with a light coconut curry sauce,

has mahimahi, scallops, lobster tails,

shrimp.

JM: One of the things I liked when I came

to dinner recently was the option to have

a smaller steak. The 6-ounce filet, for ex-

ample, costs $32.

JV: We’re offering people a number of

choices. Not just a smaller size if they

want it, but also different cuts of meat —

the culotte steak, for example. It’s the re-

ally flavorful, top part of the tri-tip of sir-

loin and has great flavor.

JM: So, now that the transition is done and

the new menu debuts this week — how’s it

going?

JV: (smiles) It’s great! The growing pains

are over, the cooks are happy and the

restaurant staff is excited and everything,

right down to the plates and the silver-

ware, has been pretty much taken care of.

Now it’s time to enjoy the fruits of our la-

bor, and welcome new guests to come and

see what we’ve accomplished.

Blackened Fresh Ahi Summer Rolls with Soy GingerSesame Sauce

Preparation:

• Evenly sprinkle Cajun spice on fish.

• In a hot, non-stick pan, quickly sear the fish for about 30 seconds, then put aside.

• Soften each piece of Thai rice paper by spraying it with water or covering it with

a damp cloth. (It will take about 30 seconds to soften) Lay it on a flat surface.

• Divide all the ingredients to be wrapped into four portions. First, put the enoki mush-

room, and radish sprouts on each end of the paper. Next, evenly layer the shredded car-

rots, shredded beets, shredded green mango, four pieces of mint leaves, one piece of fresh

ahi and some baby lettuce.

• Roll the rice paper from one end to the other; roll the rice paper over

to form a tube with all the ingredients wrapped inside.

• Repeat for remaining rice paper and then cut each roll into bite-sized pieces.

Ingredients:

• 4 strips of fresh ahi, about 10 inches long

• 4 pieces 12-inch Thai rice paper

• Cajun spice (to be sprinkled on

the fish before cooking)

• 16 mint leaves

• 1 ounce shredded carrots

• 1 ounce shredded green mango

• 1 ounce shredded beets

• 4 ounces baby lettuce

• radish sprouts and enoki mushrooms

for garnish

Soy Ginger Sesame Sauce (Enough for eight servings)

Ingredients:

• 1/2 cup Aloha Shoyu

(can be reduced, if preferred)

• 1/2 cup cooking mirin

(Japanese sweet rice wine)

• 1 tablespoon sesame oil

• 1 cup water

• 1 ounce sliced fresh ginger

• 1 ounce sliced onions

• 1 ounce sliced celery

• 1 ounce sliced carrot

• 2 bay leaves

• 1/2 tablespoon whole black peppercorns

• 2 tablespoons unsalted butter

Preparation:

• Place all the ingredients except

butter into a pot. Bring to a boil,

then reduce heat and simmer for

about 20-30 minutes.

• Just before serving, strain out

the vegetables. Slowly whip but-

ter into the remaining sauce.

Turn off heat.

Tip:

• Butter should be at room tem-

perature. When adding butter to

the sauce, keep whipping contin-

uously until the butter is incor-

porated into the sauce. Turn off

heat immediately.

• Fresh ahi may be substituted

with cooked meat, seafood or

tofu for vegetarians may be sub-

stituted for ahi.
