sacrifices on taste and has the highest ofstandards when it comes to presentingcustomers with the epitome of comfortfood. President and owner Lane Muraokatook the opportunity to open the originalBig City Diner in Kaimuki nearly 13
years ago, and fourlocations later, BCD,as I affectionatelycall it, has risen tothe top in the worldof diners.
On my mostrecent visit to thePearlridge eatery
this past week, it was raining cats anddogs, keeping to the rhythm of boomingthunder. Cold and soaking wet (silly me,forgot my umbrella), all I wanted at thispoint was warm and gooey apple delights.While in the midst of this cold and grayweather, my adoration for a good old fash-ioned apple pie surmounted everythingelse in sight. Thank goodness, BCD’sRustic Apple Pie a la Mode ($6.99) cameto my rescue. This tried and true favoriteof mine can best be described as a decon-structed apple pie, complete with pieces
of puff pastry, a sinfully sweet apple fill-ing, morsels of raisins and last but notleast, a scoop of Bubbie’s vanilla bean icecream and whipped cream! Can we sayamazing?!
Now, if that doesn’t win you over,Chef Dennis Franks knows what will.How about BCD’s Murphy’s ApplePancakes ($9.99) and Apple French Toast($7.99)? Trust me, no matter how bad thestorm, these breakfast favorites arebound to sprinkle a little bit of sunshineinto your life.
Murphy’s Apple Pancakes featuresthree gigantic, fluffy pancakes adornedwith a homemade apple topping, whippedcream and a dash of cinnamon zest. AppleFrench Toast wows early risers with itswarm and savory apple filling as well, andas a new special on the menu, it’s definite-ly worth trying. Although it's supposedlyonly available on certain days, ChefDennis let me in on a little secret.
“Guests can request Apple French Toastas an off-the-menu option and we’ll glad-ly prepare it for them,” he says with asmile. “The homemade apple filling iswhat makes the dish — it’s comprised ofGranny Smith apples, cinnamon and ahint of lemon zest. Here at Big City Dinerwe like to use Granny Smith applesbecause of the tartness and crunch that’sassociated with it.”

Fendu BoulangerieContinuing on my wet and dreary jour-
ney, the skies may have been gloomy,but my spirits weren’t dampened as Iheaded into my hometown of ManoaValley where the temperature is alwaysnoticeably cooler. Fendu Boulangeriein Manoa Marketplace never ceases toput a smile on my face with its array offresh breads, pizzas, sandwiches, pas-tries and more, and owner and chef NielKoep whips up quite a few “appleli-cious” favorites.
My top pick? Most definitelyFendu’s Fuji Apple Danish ($2.25each), filled to the brim with Koep’sremarkable apple filling and toppedwith sweet powdered sugar.

Your traditional all-you-can-eat buffet concept soaredto elite status when Five StarInternational Buffet was firstconceived in Hokkaido,Japan, in 2003. Today, you’llfind three additional loca-tions in Hokkaido and onetucked away on the thirdlevel of Building C at RoyalHawaiian Center in Waikiki.As the first location outsideof Japan, the company’sfounder Noriyuki Katocouldn’t imagine a betterplace to share his revolution-ary buffet concept. Without adoubt it was the perfect fit:Take Kato’s devout love forthe islands, Hawaii’s diversemelting pot of cultures, andadd to that Kato’s five-starcuisine and you get the pin-nacle of perfection.
Dining Out recently paid avisit to Hawaii’s own FiveStar International Buffet,where we met with managerTina Giessman and sous chefLock Beth Eguchi amid an
inviting atmosphere, brilliantdécor and an impressive buf-fet line complete with lavishworks of edible art — a fullbar and Happy Hour are justicing on the cake. So withthat, take in and savor every-thing that is Five StarInternational Buffet.
DO: Five StarInternational Buffet recentlyopened its doors to Hawaii’sdining scene this pastDecember, and has alreadygained a dynamic followingof both locals and tourists.What is it exactly that hasbeen drawing in packs ofhungry diners?
Giessman: We’re not yourtypical, standard buffet.Sometimes with buffets, peo-ple tend to assume that youget mediocre food and neg-lected service, but we wantedto be way above that andstand out on our own. Thebig focus for us is quality offood, and with that several ofour products are locallygrown or locally raised.Also, with our front-of-the-house service, we wanted itto be as if our guests wereeating at a full-servicerestaurant, so as soon asthey’re seated we want tomake sure we’re conversingwith them — whether ourguests are locals or tourists,we want them to feel as ifthey are at home.
Eguchi: Presentation iswhat definitely sets us apartfrom other buffets. We’reconstantly putting out freshnew dishes.
DO: The buffet line issuperb and offers 40 to 50dishes on a regular basis.What can guests expect fromthis one-of-a-kind interna-tional buffet?
Giessman: When dinerswalk in to the buffet line,it’s not your typical setup

where there’s mass quantities offood sitting under a heat lamp.Instead we have it so it’s likeyou’re walking into your ownkitchen — you have your pots,your pans, and all the portions aresmall and perfect — most of all thepresentation is really nice. Ourbuffet is international, so we have abunch of different cuisines, rang-ing from French, Italian, Japaneseto Hawaiian and more.
Eguchi: We also have an impres-sive dessert selection. BreadPudding has been a hit because eventhough you’re full, you can still eatit without feeling stuffed. Our breadpudding is souffle-like, and manyreally enjoy the guava butter saucethat it’s paired with.
DO: What is the price of the buf-fet? Do you offer any discounts forkamaaina?
Giessman: Our all-you-can-eatlunch buffet costs $19 for adults,
$12 for childrenages 5 to 12 andfree for children4 and under. Ourall-you-can-eatdinner buffet ispriced at $48 foradults, $24 forchildren ages 5 to12 and free forkids 4 and under.As far as dis-counts, we dooffer 15 percentoff during dinneronly forkamaaina, sen-iors 60 and overand military. Justrecently we alsobegan servingour dinner buffetall day on theweekends.
DO: What hasthe response been like from cus-tomers? Does it differ betweenlocals and tourists?
Giessman: No, not at all. Theresponse has been excellent! We’vehad Australian visitors say that weneed to open an establishment inAustralia. Then we have Japaneseclientele who are already familiarwith Five Star and they love it! Thelocals love the food here as well.Our restaurant (which seats 145 peo-ple) can get extremely packed, soit’s good to make reservations.
DO: Five Star InternationalBuffet is open for lunch and dinner.What are some standout items in thebuffet line?
Eguchi: The eclectic dishes thatwe have here definitely stand out —a lighter fare for lunch and heartierdishes for dinner. We have awashoku section to our buffet,which features Japanese dishes that
were created and brought in fromHokkaido, Japan. Then we have anAmerican-International aspect toour buffet, which presents manyother dishes such as mac and cheese,loco moco, Thai curry, Japanesecurry, pastas and more. Top itemsoff our buffet includeChawanmushi, Ribeye Teppan,Bacon-Wrapped Filet Mignon,Kakuni Pork Belly andBouillabaisse.
DO: Fantastic! Please elaborateon some of these dishes.
Eguchi: Yes. Bouillabaisse isserved as part of our dinner buffet. Itis a seafood medley with mussels,clams, fish and sometimes crabdoused in a soup marseille (seafoodstock). Kakuni Pork Belly also isoffered during dinner and showcasestender pork belly dressed with a fla-vorful sauce comprised of soy,honey and brown sugar, and accom-panied by fresh spears of asparagus.However, Bacon-wrapped FiletMignon with a red wine reductionsauce and garnished with red andgreen bell peppers, onions andHamakua Alii mushrooms is one ofour dinner favorites. Chawanmushiis a popular Japanese dish that weserve in our lunch buffet. It’s asavory egg custard and there’salways a special chestnut added tothe dish, which gives a hint ofsweetness and another level of com-plexity. There’s soy in the dish aswell, resulting in a perfect blend ofsweet and salty.
DO: When it comes to Five StarInternational Buffet, what are yourhopes for the future?
Giessman: We hope to offer moredecadent seafood options, such asall-you-can-eat lobster tails and crablegs because that’s what locals havebeen requesting. Besides that, wealso hope to expand in the future.

by: lower prices. Right now the popu-lar Asian eatery is offering some of itsmost-requested pupu items at a dis-count. Chinese Chicken Salad (andwho doesn’t like Chinese ChickenSalad?) was a bargain before at $8.25.Now that it’s been reduced to $5.99,there’s even more reasons to get yourchopsticks ready. AHong Kong-style cafeconcept is one that hasgenerated much suc-
cess for husband-and-wifeteam Ken and Cindy Wong.As owners of Anytime Cafein Market City ShoppingCenter, this dynamic duo hascultivated the impeccabletastes of Eurasian cuisine,melding an enticing blend ofEast meets West.
Having opened its doors inFebruary 2010, this well-established eatery has gainedquite a following in a shortspan of two years.
“There are so many popularthings on our menu,” Cindysays, “but Shrimp Risotto and
Chicken Parmesan are two thatreally stand out.”
Shrimp Risotto is priced at$12.95 and presents seafoodenthusiasts with morsels ofshrimp and bay shrimp sim-mered in a pink tomato brothatop a bed of creamy risotto,and finished off with a hint offresh basil and garlic.
“What’s special about ourrisotto is that it’s importeddirectly from Italy, and a lot ofcustomers notice a differencein taste,” she adds. Cindy andher husband previously ownedBanana Leaf Italian Bistro andHong Kong Orchid Cafe.
The same goes for therestaurant’s fresh spaghettini,
which also finds its origins inItaly and is featured inAnytime Cafe’s ChickenParmesan ($10.50). This high-ly requested dish wins overdiners every time with itslightly breaded bonelesschicken breast doused withtomato sauce, and topped withmelted mozzarella andParmesan cheese served over ahelping of homemadespaghettini.
“It’s surprising, but a lot ofkids really like this dish too,”Cindy states. “It’s even myson’s favorite.”
Besides crafting their skill inItalian cuisine, Anytime Cafe’stalented chefs knows a thing ortwo about Hong Know-stylefavorites and local dishes as
well. And although thewide assortment of dish-
es here can be a bitmind-boggling tosome, Cindy says,patrons can be on thelookout for newitems in the nearfuture.
“I’m planning atrip to Hong Kong
soon, and I hope toreturn with some new
ideas and concepts.”

to see rainbowson a regular basisin Hawaii. Thisdelight especiallycomes in handyon St. Patrick’sDay, when the lit-tle leprechauns atWailana CoffeeHouse can be foundcooking up a pot ofgolden cuisine at theend of their rainbow.
What’s even bet-ter is that you canfind this treasure ofIrish-inspired foodat the Ala MoanaBoulevard restau-rant on March 17,from 11 a.m. to mid-night. One classicthat would leave St.Patrick chasing rain-bows himself isCorned Beef andCabbage, Killarney($13.50). Moist andtender slices of corned beef aredraped over caraway-flavoredcabbage wedges and served withboiled potatoes, carrots, mustardand creamed horseradish sauce.The dish’s authentic flavor willcatapult you right into the Irishcountryside.
Your taste buds continue on ajourney over the rolling hills ofÉire with Roast Chicken O’Shannon ($12.50), which includesmacadamia nut stuffing and richpan gravy, as well as Fillet of
Salmon Florentine($13.25) poached ina court bouillon,served on a bed ofspinach andcrowned with househollandaise sauce.
The luck of theIrish seems to havelanded on the specialmenu’s sides, as eachentree includes theall-you-can-eat saladbar and a choice ofbaked or mashedpotatoes, french friesor rice, as well ascorn on the cob,chocolate mint cake,coffee and tea or a
soft drink. Festive beverages suchas wine or Irish Coffee withWhiskey and Whipped Cream ($4)also are offered.
If you plan to celebrate all day,kick off your feast with the 24-hour restaurant’s St. Patty’s DayBreakfast Special ($9.25), com-plete with corned beef hash, twolarge eggs (any style), hashbrown potatoes, toast and coffee.You’re in for a menu that’s asheartily delicious as a four leafclover is lucky.

Fortunately, Hawaii doesn’texperience Mainland-stylewinters, and local weather
patterns aren’t usually as dramat-ic as they were this past week.But when giant blessings do fall,there is nothing like cozying upwith a cup of soup and a sand-wich as the water continues totrickle down.
To take shelter from the rain,Dining Out stopped by KissatenCoffee Bar, where a deliciousmenu of upscale comfort foodboasts wonderfully warm soupand sandwich combos.Raindrop-covered windows letevening blue light into the cozycafe while bluesy soundsstreamed from the radio. Thiswas the perfect corner of theIsland to escape stormy weatherand indulge in a Grilled Cheese
and Tomato Bisque SoupCombo ($9).
Perhaps the most comfortingsandwich of all time, the 24-houreatery’s version is made withsmoked Gouda, Cheddar, baconand refreshing slices of freshapple nestled between crispypieces of white bread.
“The grilled cheese pairs real-ly well with the Tomato Bisque,”says senior partner Neysa Taba,who loves the creamy and subtlysweet soup drizzled with house-made basil oil and sprinkledwith Parmesan.
Another velvety combination isTurkey Pesto Melt and PotatoLeek Soup ($10). When it comesto the traditionally French soup,“We add a poached egg inside forrichness,” explains Taba. Chivesand bacon lardons (bits) not only
garnish the rustic blend, but alsotie into the flavors of the melt,filled with homemade pesto aioli,turkey, bacon and fresh mozzarel-
la on focaccia.And every rainy day calls for
the satisfaction that Boston-style Clam Chowder ($6)brings. While the soup is mag-nificently rich and filling on itsown, you owe it to yourself toinclude the bread bowl ($2extra) for a crispy, baked-to-order shell. Feel free to add themarvelous East Coast classic toeach sandwich for $1, or mixand match Kissaten’s soup andsandwich duos.
Take comfort in the fact thatwhen the sun comes out again,the delicious combinationswill still be there, scrumptiousas ever.

At Seafood Village, thetitles of the dishes on itsextensive menu are inEnglish, but the descrip-tions are all in Chinesecharacters. But whetheror not you can readChinese, the friendly, pro-fessional staff is morethan happy to help youseek out a meal that meetsyour dietary preferences.
Steve Matsuno, execu-tive general manager ofthe enterprise located inHyatt Regency Waikiki,knows that the stars shineon everyone, not just car-nivores.
“I don’t seewhy we wouldstop trying toplease vegetari-ans,” he says.
Yes, despite itsname, Seafood Village does havemeat- and fish-free dishes, andmanager Johnson Ma assuresVeg’n Out readers that they arehappy to adjust a dish (but, ofcourse, please be reasonable).
Ma’s first recommendationdoesn’t need any adjustment,though. Its name says it all.Crispy Vegetarian Spring Rolls($4.95 for two) live up to theirname. Even after sitting awhile,the rolls, filled with carrots,cabbage and cellophane noo-dles, are quite crispy outsideand tender moist within, andthey’re served with a sweet andsour sauce for dipping.
There’s a Chinese belief thatlong noodles are the key to a
long life. So, live long and pros-per with Pan-fried LongevityNoodles with ShiitakeMushrooms ($14.95). It’s a dishtraditionally served on birth-days, to celebrate the new yearand on other special occasions.The long, flat noodles are com-plemented by crisp-tendermung bean sprouts and earthyshiitakes stir-fried in a verylight shoyu sauce, which leavesthe noodles pleasingly al dente.This is a dry-fried, not saucydish, allowing the individualflavors to shine through.

Iris Yafuso, vice presi-dent of Larry’s Bakery,and her family carry on thewholesome baking tradi-tion in the name of theirfather, Larry. After Larry’spassing, the retail side ofthe bakery, which was
located inWaimalu, closed,but it wasn’t longbefore daughter Irisand brother LanceYafuso took it uponthemselves to startthat side of thefamily businessonce again.
“We were closedas far as retail foralmost 14 years,but have been ableto reconnect withall our old cus-tomers and friends
recently. They come inwith their kids now, withstories about seeing theLarry’s box on the kitchentable in the morning when
they were children,”says Iris.
Through the windowof Larry’s Bakery’squaint walk-up store-front, dozens of break-fast options are dis-played. Two in particu-lar are Pineapple BranMuffins and three dif-ferent types of Manju(steamed cakes), pricedat $1.20 apiece.
“The muffin has acaramel addition, so it ishealthy, but not toohealthy,” says Iris with alaugh. With all this cold,stormy weatherwe’ve been having,
nothing sounds better thanwarming up with a hot bowlof ramen. After opening lastmonth, Nagoya Ramenin Mililani is just in timeto provide some much-needed warmth on thesecold days.
“Everybody says thefood is good,” NagoyaRamen secretary SueChen says. “We have somany regular customersright now. After theycome eat, they keepcoming back.”
It’s easy to see whatkeeps customers return-ing. Nagoya Ramenoffers a wide selection ofudon, fried noodles,fried rice, curry and ofcourse, ramen.
Chen says that one of
the most popular dishes is thehouse special, NagoyaRamen ($8.75).
“It has everything,” Chenexplains. “It has chickenkatsu, char siu, egg, fishcake

explains, many customers already seem tobe making Nagoya Ramen their new secondhome.
Chen attributes much of NagoyaRamen’s success to the creativity thatowner and head chef Steven Lin puts intohis cuisine. One thing that sets the restau-rant apart is its broth, which is Lin’s origi-nal creation. Lin explains that he has con-cocted a special Paitan-based sauce thathe includes in the ramen broth.
The Paitan sauce is the one thatNagoya uses in most of its ramen dishes,but diners also can opt to substitute thebroth for other flavors, including miso,shoyu or shio.
Lin has been cooking ramen for morethan 10 years. He says that during that timehe cultivated a knowledge of customer tastesand preferences.
“We know what the customers like, and wewanted to open a (restaurant) for the cus-
tomers that has food that is good and pricesthat are reasonable,” Lin says.
If customers want to share Nagoya Ramen’s tasty cuisine with their family andfriends, the restaurant also offers party platters available for takeout. PartyPlatters cost $19.99 per order, and Chen says that each can feed about eight to10 people. Party platter dishes include an Appetizer Combination, MochikoChicken, Pork or Chicken Fried Noodle and Char Siu or Chicken Fried Rice.

At Panda Cuisine, it’s allabout seafood. Ever sincenew owner John Liang
took over Panda Cuisine this pastyear, the restaurant has beenemphasizing its plethora ofseafood entrées.
The eatery, which first opened in1992, offers customers a variety of itemson its menu, including barbecue special-ties, Cantonese-style dishes, and poultryand meat dishes. However, according tomanager Daniel Kung, many customerscome to the restaurant because of thefresh seafood.
“We try to serve the best seafood (inHawaii),” he says of the eatery, located onKeeaumoku Street across from Walmartand Sam’s Club. “The most popular (dish-es) is seafood … we have fresh lobster,crab, king crab and fresh,live abalone (shellfish).”
Live seafood entrees fea-tured at Panda Cuisineinclude Steamed FreshShrimp (seasonal price),Steamed Fresh Fish (sea-sonal price), BakedLobster withCheese andButter (seasonalprice) and Crabwith Ginger andScallions (sea-sonal price).Currently, PandaCuisine is offer-ing a Live Lobsterspecial ($9.99), whichis specially preparedwith e-mein noodles.The special is available
for dine-in orders only, with the purchaseof another entrée (customers must presentthe coupon found on Page 22, whichexpires March 15).
“It’s a small lobster (featured in thespecial), and we put noodles under it,”Kung says.
Besides the current Live Lobster special,Panda Cuisine features lunch specialsdaily from 11 a.m. to 5 p.m., which con-tribute to large lunch crowds.
“(The eatery’s) most crowded time rightnow is lunchtime,” Kung says. “The lunchspecial is $7.99 for one entrée and it comeswith soup and rice. There’s about 70 itemsto choose from.”
The most popular item on the lunch spe-cial menu is Deep Fried Whole Fish.Customers can opt for a wide-rangingselection of entrées, including Kung PaoBeef, Chinese Broccoli with Oyster Sauce,Mushroom with Ginger and GreenOnions, and House Special Pork Rib.
On the eatery’s regular menu, favoritesvary among locals and Chinese who fre-quent Panda Cuisine, Kung states. Forexample, a favorite among Chinese cus-tomers is Fish Head Casserole Clay Pot in
Zhongshan Style, or Homemade Style($16.80). This dish — along withothers such as House Special RoyalChicken ($14.80 half, $28 whole)and Diced Steak in FukinnawaSauce ($16.80) — is consideredone of the best 10 dishes of the
kitchen. For locals, though —who might not want to try
unfamiliar Hong Kong-style cuisine— a multi-tude of
options are
available. “For locals,
we recommendour PekingDuck ($38 forwhole duck with skin, buns andduck meat; $45 for whole duck,skin, buns, lettuce wraps andminced duck meat),” says Kung. “Ifthey (customers) want half (a duck),we can do half. The most popular(dish) among locals is Prawns withHoney Glazed Walnuts ($16.80). Alot of local people also like SauteedScallops with Macadamia Nuts($16.80) and Salt and PepperAsparagus Prawns ($15).”
Other dishes available for localswho want more “traditional” dishesinclude Stir-Fry Sliced Rib Eye Steakwith Mushrooms ($16.80), Stir-FryChicken with Mushrooms ($13.80),Stuffed Chinese Eggplants ($13),Stir-Fry Diced Rib Eye Steak withPepper Sauce ($16.80) and Sweet &Sour Pork ($12.80). Although theeatery tends to attract more Chinesecustomers than locals, Kung statesthat Panda Cuisine is featuringseafood specials, in hope of attract-ing more local customers.
“We did the ad (on the lobster spe-cial) to encourage local people tocome and try,” he says.
Changes might be on the horizonfor Panda Cuisine, such as the inclu-sion of dim sum on the menu and awebsite for the eatery. However, fornow, customers are encouraged togive the restaurant a try and enjoythe multitude of seafood and otherHong Kong-style delicacies.
