It could be because I was born in theYear of the Ox, but I just can’t getenough of oxtail — oxtail soup, oxtail
stew, oxtail saimin, you name it, I’m allover it.
As a local culinary standby, oxtail isadored by generations. Usually served in asoup or stew, oxtail is the perfectpick-me-up when you’re feelingunder the weather or ready to wel-come the cooler nights that comewith the fall and winter seasons.
Oxtail soup, stew, etc., are madewith beef tails, and actually the useof the word “ox” in this context isconsidered to be a legacy ofnomenclature. To dispel the belief,no specialized stock of beef ani-mals is used.
A beloved dish in many cultures,oxtail is a must-have ingredientfound in many dishes, and warmsthe heart and soul no matter whereyou are.

Akiko Kimuraserves as head chef atPatisserie La PalmeD’or, and with morethan 14 years of expe-rience, Kimura hasperfected the art ofbaking, oftentimes uti-lizing her own person-al recipes to createexquisite master-pieces, which are afeast for the eyes andthe palate.
“I’m always think-ing of new ideas allthe time, and I aminspired by so manythings. It’s fun to cre-ate new flavors andplay up the presenta-tion,” she says.
For Kimura, the premiseof her creations is based onquality as she only bringsthe best ingredients to theforefront. In fact, sheimports green tea and flourdirectly from Japan to
maintain continuity in herdesserts, which live up tothe highest of standards.
“I choose not to use a lotof butter, cream and sugar.My desserts are on thelighter side,” Kimura says,
noting that she likes toincorporate fresh fruit(local when possible),a healthy alternativethat brings a naturallysweet flavor and popof color to her edibleworks of art.
With more than 30sweet treats to temptyou, Kimura says sig-nature items includeStrawberry Shortcake,Framboise Fromage,Jelly Au Lait,Plantation Tea JellyDrink and BakedCheesecake, to name afew.

Owner Hiromi Tanaka brought this Japanese pastry con-cept from Mie, Japan, to Ala Moana Center six years ago,and since then has been ushering in droves of patrons whohave a soft spot for cakes, pastries, croissants, sandwichesand drinks, all of which emphasize a decadent blend ofFrench flavor and Japanese craftsmanship.

Pumpkin Cheesecake($30 whole cake, $4.80 perslice) is captivating inevery sense of the word, asLa Palme’s famous cheese-cake is kicked up a notchand blended with the mostextravagant pumpkin puree
and spices paired with analmond and hazelnut cook-ie crust. Lastly, it’sadorned with a cinnamonhoney creme to accentuatethe flavor. Now, if you’re in pursuitof yet another of Kimura’sholiday specialties,Pumpkin Pudding ($3.70)is the perfect choice. Getready to devour spoonfulsof pumpkin custard pud-ding, topped with originalwhipped cream, a hint ofcaramel and pumpkinseeds.
And nothing says
autumn more than chest-nuts, thus making MontBlanc ($5) a most-desireddelight. It consists ofsmooth, rich chestnutcream with a hint of rumpiped over a dollop offresh whipped cream andalmond cake, baked withchunks of chestnuts andtart cassis (gooseberry).
Patisserie La Palme D’oralso hosts an array ofdesserts that are either lowin gluten or gluten-free.Low-gluten creations arePalme Chocolat andCheese D’or, while gluten-free desserts include PaveChocolate and RockyChocolate.
“Rocky Chocolate($4.60) is popular at themoment,” Kimura says of
this chocolate lover’s fan-tasy complete with choco-late sponge cake doublelayered with milk choco-late cream, and finallytopped with hazelnutchocolate-coated hazelnuts and macadamia nuts.
According to Tanaka, agreat product, not to men-tion unbeatable customerservice and an undeniablepassion for the craft, arethe prime ingredients forsuccess. And here atPatisserie La Palme D’or,nothing is sweeter thanthis!

One way to get inthe holiday spirit is tovisit Auntie Pasto’sKunia for its specialholiday menu launch-ing Nov. 1 and avail-able through the endof the year.
On the menu is aWinter Caprese Salad($6.95), a perfectstarter to enjoy your-self or to share, con-sisting of roastedtomatoes, fresh basiland fresh mozzarellawith a savory pesto sauce.
“The reason it’s called a wintercaprese is because tomatoes areout of season during the winter,so it’s tomatoes that have beenslow-roasted to bring out naturalsugars and concentrated deli-cious flavors,” explains assistantmanager David Kauka.
There also is a Crab Piccata($25) featuring steamed crabmade with Auntie Pasto’s tastylemon piccata sauce along with
pan-sauteed tomatoes, onionsand capers, and served with aside Caesar Salad. And fordessert, Pumpkin Tiramisu($7.50) has become a holidayfavorite. There’s a graham crack-er crust on the bottom, a thicklayer of pumpkin filling andLady Fingers on top.
“People ask for it throughoutthe year,” says Kauka. “We’vebeen offering it for the past fiveyears. It’s not your traditional
tiramisu, and
with just enough pumpkin flavorto bring out the holidays.”
Of course, Auntie Pasto’s regu-lar menu will still be offered,including its signature seafoodpasta, shrimp scampi and agedribeye steaks.
Auntie Pasto’s Kunia openedsix years ago by local restaura-teur Ed Wary, who is the originalowner of Auntie Pasto’s onBeretania Street but no longerowns that location. However, henotes that the Kunia eatery servesthe original recipes from whenthe original restaurant firstopened, is built on the original
concept and continues to carry itsreputation of good food, gener-ous portions, great prices andfriendly service.
Wary also owns Dixie Grill inAiea, and coming soon isWhiskey Dix, an environmental-ly-friendly bar to be locatedupstairs of Dixie Grill.
The Auntie Pasto’s Kunialunch menu ends at 4 p.m., andthe dinner menu is available allday. There also are weekly pro-motions: Monday is MilitaryMozzarella (purchase twoentrees and present a military ID,and receive a free mozzarellamarinara appetizer), Tuesdaysand Wednesdays are Kids EatFree (children age 12 and undereat free with the purchase of anadult entree, one kid’s meal peradult meal), and Thursday is HalfOff Wine. Weekly promotionsare available after 4 p.m., andcannot be combined with otheroffers, such as coupons.

Who or what inspires you as achef/manager/owner? I have astrong background in customerservice because I grew up withmy parents and relatives owningbusinesses that centered aroundcustomer service in general. Iwould help out whenever I hadfree time. This in turn helped mebuild and strengthen my socialand communication skills. At therestaurant, I meet a lot of newpeople and even learn new thingsfrom them. Friendships are devel-
oped along the way, and there’sno better feeling than to see cus-tomers leave happy with theirdining experience and satisfiedwith their food.
What’s your most populardish? We don’t have just onemost popular dish, but a few ofour all-time favorites are our DimSum, Chinese Chicken Saladwith Jelly Fish, Minute ChickenCake Noodle, and Steamed SeaBass with Ginger and Onion.
Is there a dish that you createthat’s not on your menu, butavailable upon request? Mosttimes we are able to make justabout any dish that the cus-tomers request even though it’snot on our menu. Even if we’renot able to make exactly whatthey are looking for, we will doour best to make it as close aspossible and fulfill their needs.
What is the biggest compli-ment you’ve ever received as achef/manager/owner? Besidesthe food here, your smile andpersonality keep us comingback.
What is an invaluable lessonyou’ve learned while in therestaurant industry? Fromwhat I’ve learned over the years,
the choice of what dish to orderdepends on several things. I usu-ally talk to the customers and tryto understand them, and also geta feel for what they are thinkingand looking for. Then, I willmake some suggestions based onmy observations to help themchoose a dish that they will becompletely satisfied with.

The story of theircheery eatery beginsdecades earlier, though,when Chan opened aChinatown dining spotcalled Sea Fortune in 1979.After successfully runningit for 22 years, the ownerrelocated his restaurant —
with help from longtimeemployee Lum — toKaimuki in 2001.
While the newer locationsports an updated name,the same great eats thatforged a base of loyal cus-tomers in Chinatown canstill be gobbled up atHappy Day. According toLum, Honey WalnutShrimp ($13.95) hasalways been a favoriteamong regulars. The tradi-tional recipe features bat-tered shrimp coated in acreamy sauce and sprin-kled with candied walnuts.

If you are looking forsomething a little lighter,try Choy Sum with SeaBass ($11.95), which pres-ents the tenderest of filetsserved with a heap of veg-etables such as carrots,green onion and a generousportion of choy sum. “Thesea bass is very soft and it’sa healthy option,” saysLum. “We stir fry it in agarlic ginger sauce.”
Perhaps the main type ofcuisine Happy Day isknown for is its classic dimsum ($2.68 per plate)
selection. Every day from8 a.m. to 3 p.m., a slew ofregulars fill the establish-ment’s spacious diningroom, gathering aroundlarge round tables soon tobe filled with steamingdumpling delights thathave been served freshfrom dim sum carts. Askany of the eatery’s smilingservers and they willadvise you to try smallplates of Shu Mai and HalfMoons, as well as SpinachGao or a crispy bite ofFried Taro. Lum also sug-gests biting into golden

Any day is a good day forpupus at Anytime Cafe.OK, I admit that’s a
rather cliché opening, but thefact remains that the diversemenu at the Market CityShopping Center restaurantmakes it a great place for justabout anything your taste budsdesire.
On the appetizer side, it’shard to beat Thai Style PorkCheek ($6.95). Tenderpieces of pork cheek aremarinated, fried till crispyand finished in the oven,and served with a spicydipping sauce made with
fresh garlic, lemongrass andchili sauce. The pork is sweet,juicy and a bit smoky, and thedipping sauce gives the tenderpieces of pork an extra bit ofkick that you’ll enjoy.
Somewhat new to the menu isEggplant Parmesan ($6.95).Large slices of eggplant arefried and topped with tomatosauce, fresh mozzarella andParmesan cheeses. The combois outstanding. When that area of Waikiki started renovations a couple of yearsago, Pho My Lien opted to start anew in Aiea rather than tem-porarily close its doors — a decision that the restaurant’s regularcustomers have been very happy about. For many who used to fre-quent the restaurant in Waikiki, no drive is too far.
“We have a very good repeat clientele,” says Pho My Lien finan-cial adviser and marketing planner Walter James. “We try to takecare of our loyal customers and treat them well.”
Pho My Lien features the fantastic home cooking of head chefLien Dang, who co-owns the restaurant with her husband, Tommy.Prior to opening Pho My Lien, Lien had been working as a cookat Shirokiya, and Tommy worked as a server at a variety ofrestaurants.
The restaurant gets its name from one its dishes, pho, and thetwo owner’s names (Tommy’s first name in Vietnamese is My).
“Lien is an excellent Vietnamese cook,” James says. “For manyyears, they wanted to open up a restaurant. They asked me aboutit, and I said it sounded like a good idea because their food isexcellent food.
“They work at the restaurant seven days a week,” James says.“They are in the kitchen all the time.”
Despite those long hours, for Tommy and Lien, opening therestaurant has been a dream come true — and thesame could be said for Pho My Lien’s customers.
“We like to keep a good quality and a good atmos-phere at the restaurant,” James shares. “We havefast and friendly service. If you want to go in therefor a quick lunch, have a bowl of the pho, it’s quickand at a reasonable price. It’s in a convenient loca-tion with plenty of parking.”

Dining Out was fortunate tocatch up with Randall Harakal, DJWatson and Chantal MoeariiWeaver for lunch one afternoon.The group enjoys the restaurant, aswell as the friendly customerservce and welcoming atmosphere.
Randall Harakal: “I’m eatingthe Loco Moco ($10.55) since theyserve breakfast 24 hours here.They also have stuff on their menuthat you can’t find anywhere else,like their fish menu. They have allkinds of fresh fish. And the atmos-phere is really casual.”
Chantal Moearii Weaver: “I’mhaving the Oxtail Soup ($15.75). Ilike the broth, I like the vegtablesand the ginger with the shoyusauce, and the peanuts andcilantro, as well!”

Gyu-Kaku Japanese BBQ provides diners with theultimate eating experience, from the friendly, wel-coming atmosphere to delicious food cooked fresh
at the table, the total package is served up at theWindward Mall eatery.
Regular and first-time patrons routinely flock to theKaneohe location to experience the thrill of yakinikucooking — the process of grilling meat and vegetablesover hot coals or a burner.
“The yakiniku culture is such an innovative, socialway to dine, and bringing something like this to acountry town such as Kaneohe was a great addition,”says general manager Sean Santiago. “We localizedthe menu and made it affordable, and we actuallystructured our pricing so you can come here two orthree times a week rather than saving a huge portion ofyour paycheck every month to take your family out todinner.”
From couples enjoying a relaxing evening out tolarge birthday parties and business gatherings, Gyu-Kaku blends aspects of traditional Japanese cookingand cuisine with local tastes and flavors.
“Our restaurant is nice and comfortable, very spa-cious, so families can come and enjoy the social atmos-
phere,” Santiago says. “All the dishes are portioned sodiners can share everything. You get to cook the itemshow you want them, and enjoy every bite hot off thegrill. When you order a steak somewhere else, you eatit how they prepare it, but here, you control that.”
Gyu-Kaku offers a wide variety of poplar lunch sets,including Toro Beef ($6.95), which features thinlysliced “beef bacon” that comes with a choice of mari-nades. Diners can choose from Shio White Soy, TareSweet Soy, Miso, Yuzu Kosho, Garlic and Basil mari-nades to give their beef that distinctiveflavor and aroma. Pork Lover’s Set($13.95) is a new addition to the lunchmenu, and serves up Smoked PorkBelly, Kurobuta Pork Steak andKurobuta Sausage.
All lunch sets also include misosoup, salad, rice and a soft drink tocomplete the meal.
“We try to take the pain out of order-ing,” says Santiago. “We have somelarger sets such as the Pork Lover’sthat serves as Yakiniku 101: You get toenjoy the best of everything we have in
that genre of food, and it’s the easiest way to go. Wedesigned the menu so you don’t have to think about it.”
Garlic Shrimp Tatsuta-Age ($7.95, $6.95 at happyhour) serves as a popular a la carte item, as the shrimpis battered and flash-fried, and served with lemon and azesty chili mayo. Kobe New York ($13.95) offers dinersKobe Steak with Japanese sea salt, and as Santiagoexplains, the restaurant went through so much of thechoice beef after it was offered on the menu that theexceptional cut is now prepared by the distributor
exclusively for Gyu-Kaku — the onlylocation internationally at which onecan find this specific cut of beef.
