Next April, Genki Sushi willcelebrate 20 years of sushiexcellence, and JosephBozzelli, chief administrativeofficer for Genki Sushi USAInc., recently shared withDining Out just how GenkiSushi is able to contribute tothe world through thespreading of Japan’s sushiculture — which also hasbecome a local entity all itsown. In addition, we caught aglimpse of just what it takesto build a sushi empire unlikeany other, and according toBozzelli, it takes a lot morethan just tasty sushi.
DO: When did Genki Sushifirst open? And who foundedthis renowned eatery?
Bozzelli: Genki Sushi
was founded by GenrokuSushi (the first company tocome out with the kaitenbelt), a Japanese company.Genki Sushi headquarters isactually in Japan, where wehave about 200 stores. Wehave 280 stores in Asiaalone, and we’re growinglike crazy. However, GenkiSushi opened its first storein 1992 in Kapahulu. It wasactually located across thestreet from where GenkiKapahulu stands today.Then, a few years after thelease ran out, we movedacross the street to our cur-rent Kapahulu location.
DO: How many Genki Sushilocations stand today in the U.S.?
Bozzelli: Currently we have14 locations in the Islands —nine on Oahu, two on Maui,one on Kauai and one on theBig Island. We also have fourlocations in Seattle, and we’llbe opening up our first store inthe Los Angeles market comeFebruary. Fortunately for us,we’ve been doing really well.
DO: Most locals are veryfamiliar with Genki Sushi, butfor those who have yet to par-take in the Genki experience,what can they expect?
Bozzelli: Genki Sushi is afamily-oriented restaurantwhere they can expect quickfood, immediate service andultimate satisfaction (dine-inor takeout). As soon as you’reseated in the restaurant, thereare sushi items that you canimmediately pull from the con-veyor belt. All of our plates arecolored with a ring aroundthem and priced accordingly,ranging from $1.50 per plate to$4.80 per plate.As I said, Genki Sushi is
based on kaiten sushi (kaitenmeans sushi served on arevolving conveyor belt),which started in Japan. It wasinitially an idea that was pro-moted to create a “fast-foodsushi.” However, once the sys-tem took place in Japan, itended up becoming highlycompetitive and it turned from
this fast-food concept to thisreally inexpensive sushi thatcustomers enjoyed.
DO: How many sushi chefsdoes Genki Sushi employ? Dothe chefs go through a rigor-ous training process?
Bozzelli: Each of our storeshas anywhere from four to sixsushi chefs. Waikele is ourbiggest store, where we mayhave as many as eight chefs.Kaiten sushi differs from thetraditional art of sushi in thatthe traditional way of makingsushi is seen as more of anartistic form, withyour sushi chef cre-ating really niceproducts at anexpensive cost. Hereat Genki, we createreally basic sushi inaddition to somespecialty rolls — butit’s conceived to bemore of your “stan-dard sushi.”As for our sushi
chefs, training couldlast anywhere fromsix months to a year,until they couldwork on their own asa sushi chef.
DO: There aretimes when cus-tomers have stacksof plates piled to the
ceiling, but how many platesof sushi do you folks sell onaverage here?
Bozzelli: On average, youcould say that our guest checkequates to $12 per person,translating to four or fiveplates. Yet, we have a lot ofpeople who come in here whocan easily have 10 plates (perperson) piled up — that hap-pens all the time.
DO: How many sushioptions are available hereat Genki?
Bozzelli: Well, we have five

the Spicy Tuna Roll ($2.80), aswell as anything with yourstandard ahi/salmon. Overthe past couple of years, ourseared ahi and seared salmonhave been very popular.However, the Spicy Tuna Rollis our No. 1 selling item andit’s made from a Genki specialrecipe that we won’t reveal.Other customer favorites
include Stuffed Mushroom($4.80), Garlic Chicken($3.80), Onion Salmon Roll($2.80), Ikura ($4.80), SpicyTempura Roll ($4.80) and theUltimate Trio ($4.80) featuringsalmon, ahi and hamachi.
DO: Does Genki use a spe-cial rice for its sushi?
Bozzelli: Yes, we do. We usea special crop of Californiarice, and we have a special,highly guarded recipe thatcomes from Japan. Thisrecipe is very importantbecause the rice really is whatmakes the sushi. Of course,you can expect sushi vinegarand some other ingredients toseason the rice as well.
DO: Will there be any spe-cials that customers can lookforward to this month, espe-cially during the holidays?
Bozzelli: Yes, we do have aspecial that we just created.It’s called the Holiday Roll($4.80) and it features a tastycombination of spicy tuna, ahiand avocado drizzled with anunagi sauce and spicy sauce,and topped with fried onionsand green onions. It will beavailable during the entiremonth of December.
DO: Who comes up withthese wonderful and uniquesushi creations?
Bozzelli: Well, credit goesto our district managersDustin Hara, Ryan Shimizuand Amado Garlitos, whocome up with the ideas. Theseguys, along with the directorof purchasing, David Moon,work to come up with ourmenu and our differentmonthly specials. They arereally the key components forkeeping Genki local, and reallyhelp to keep Genki evolving.Dustin Hara is one of our
district managers and hasbeen with the company formore than 10 years. He man-ages the Waikele, Ala Moana,Ewa and Aina Haina locations,and has been very influentialin the direction that we’regoing — he has very brilliant
ideas. RyanShimizu has beenwith the companyfor about 10 yearsas well. He man-ages the Waiau,Ward, Kaneoheand Kapahulu loca-tions. Ryan alsohas been influen-tial, however, moreso with our pro-duction policies.Amado Garlitosmanages theKapolei and outerisland locations.He has been with
the company for eight yearsand has really helped to formand shape the company.Lastly, David Moon is ourdirector of purchasing, and hehas been key in making surewe get all the raw materialsthat we need at the rightprices. All of our raw materi-als predominantly come fromJapan, but the ahi that we useis always local. We have ship-ments coming in at least threetimes a week, if not daily.
DO: The local influence isquite apparent in GenkiSushi’s creations. Wouldn’tyou agree?
Bozzelli: Yes, at first thelocal influence at Genki washard for Japan to concede to,but in time, I think they under-stood that it isn’t primarily theJapanese who are eating thesushi here, it’s the locals — 80percent of our stores are locat-ed within local communities.
Local tastes, local ideas haveall influenced our menu. Wealso have many local workershere, so over time it’s no sur-prise that Genki has reallyinvolved into a local company.
DO: Genki Sushi will cele-brate its 20th anniversarynext April. In what ways hasGenki grown since its incep-tion in 1992?
Bozzelli: Well, from our firststore to our fourth store therewas a wide gap of timebetween each opening, butfrom our fifth store on, wewere opening up stores everyyear. We saw the most expo-nential growth between 2008and now.
DO: What’s the secretbehind Genki's success?
Bozzelli: The secret behindour success is definitely theproduct, and the concept, ofcourse, adds to it. But the
support we get from the localcommunity really makes ithappen, along with our greatemployees. We have about500 employees nationwide.
DO: What does the futurehold for Genki Sushi?
Bozzelli: Of course, we’llalways be creating new andunique sushi. Right now, we’rein the process of experiment-ing more with our dessertitems and also evolving ourcatering department thatshould be up and going some-time next year.

At Sushi Izakaya Shinn, it’s allabout ambiance, unique dishesand wholehearted customer
service. The eatery, which openedlast December, features a Japanesetapas-style menu with many optionsfor customers to try.
“We have a sushi counter and arobata (grill) counter,” says generalmanager Yuki Yamamoto. “Customerscan watch while we make the sushiand while we grill items. We have(both) regular tables and wabi-style— Japanese tea room-style — tables.”
Yamamoto explains that the restau-rant’s name emphasizes genuine cus-tomer service.
“Shinn is the Japanese word for hos-pitality,” he says. “It’s the soul, theheart. We serve our customers withour hearts. Izakaya is a general termfor Japanese tapas-style.”
Sushi Izakaya Shinn’s menu has var-ious categories of dishes, such asstarters, cold dishes, salads, hot dish-es, deep-fried dishes, seafood, robata(grilled dishes), sushi nigiri/sashimi,roll sushi/chirashi sushi, oden, potdishes and dessert. When it comes toSushi Izakaya Shinn’s signature dish-es, Yamamoto points out the unique
Genkijirushi ($11) and the HamachiYuzukoshou ($14).
“Inside the Genkijirushi is an assort-ment of sticky items, includingchopped tuna, okra, natto and somesquid,” he says. “It’s a sticky dish, butit has very healthy items. Local peo-ple love the natto. (We serveGenkijirushi) with some wasabi, soysauce and seaweed on the side, andyou can make a handroll. TheHamachi is sashimi with wasabi andyuzukoshou (a citrus and vinegarblend) on top.”
Customer favorites among hot dish-es include Grilled Lamb Chop ($12),Simmered Rock Fish ($10) andKurobuta Kakuni ($7.50), or glazedpork belly. In terms of salads, theWatercress & Hijiki Salad ($6) is fre-quently requested.
“The Watercress & Hijiki Salad isvery popular,” Yamamoto says. “Hijikiseaweed (black seaweed) is the mostpopular Japanese seaweed. Also pop-ular is the Beef Tataki Salad ($12),which is seared beef served withmixed greens.”
Other popular dishes at the eateryinclude Black Cod ($12), or butterfish,and grilled items such as Grilled Beef
Tongue ($3.25), Chicken Wings($2.75), Chicken Meat Balls($2.50) and Grilled Rice Balls($2.50).
“Locals like the black cod, orbutterfish,” Yamamoto adds.
While the eatery does not fea-ture monthly specials, Yamamotosays that daily specials are avail-able. These specials include dish-es such as Japanese Golden RedEye Snapper ($18), GrilledOctopus Balls ($5.75) and GrilledKing Crab ($22).
“Every day, it (the special)changes,” he says. “(These dishes)are not on the regular menu …especially popular are the ColdTofu with Fried Fish Flakes & SpicySauce ($6) and the Simmered PorkIntestine & Mixed Vegetables withKimchee ($8.50), which is like acasserole dish.”
While the majority of cus-tomers dine in the restaurant,Yamamoto says that takeoutoptions are available.
“The takeout menu is the same(as the dine-in menu),” he says. “Ifthe customer requests, we canmake takeout orders.”
Sushi Izakaya Shinn is mostcrowded from 7 to 9 p.m. on week-ends, Yamamoto notes. For theupcoming new year, the restaurantis featuring a special known asShinnenkai, or “new year gather-ing.” This celebration marks theJapanese tradition of welcoming thenew year, and starting this month,customers can make reservationsfor parties of six adults or more fornext month (January) and receive a15 percent discount on their entirecheck. However, reservations for theJanuary parties must be madebefore Dec. 30.
“Shinnenkai is our ‘Welcome tothe New Year’ party,” confirmsYamamoto. “You need to make yourreservation in December to qualifyfor the new promotion.”
