Diana’s Arepas Rellenas: Flat Corn Bread Tapas Arepas are a simple staple food for most of Latin America. The Mexican recipe is similar to tortilla wraps, and much thinner. El Salvador, Honduras, Colombia, Venezuela and many other countries have thicker versions, called different names too. It’s easy to make these lovely gluten-free arepas! Makes 8 arepas. Ingredients 1¼ cups lukewarm water 1 cup cornflour (P.A.N. brand is recommended as the trick is in the way the flour has been ground, and not all types will work. It can be found at the Casa Iberica shop in Johnston St, Fitzroy, usually sold in a 1kg pack, either white corn or yellow. My favourite is the yellow, but the flavour doesn't change much.) 30g melted butter, or your preferred oil salt to taste tasty cheese, optional but delicious Method Add 1¼ cups of lukewarm water to a mixing bowl. Add 1 cup of cornflour to bowl. Let it rest for at least 1 minute. Add melted butter, salt, and optional cheese. With clean hands take the dough and mix it very well. Texture should be soft and dough like. Start making 8 little balls of dough, flatten them to about 9cm and fix the edges, so they don’t have cracks. Don’t make the discs too thick, but also not too thin, as they could burn easily. Turn the grill onto a low setting. Place flattened balls on the grill, turning until they are golden. Do not over cook. Arepas are delicious on their own, or topped with refried beans, guacamole, bocconcini and basil, pulled pork, grilled chicken - the possibilities are endless! Withcleanhandstakethedoughandmixitverywell.Textureshouldbesoftanddoughlike.

Startmaking8littleballsofdough,flattenthemtoabout9cmandfixtheedges,sotheydon’thavecracks.Don’tmakethediscstoothick,butalsonottoothin,astheycouldburneasily.

Turnthegrillontoalowsetting.Placeflattenedballsonthegrill,turninguntiltheyaregolden.Donotovercook.

Arepasaredeliciousontheirown,ortoppedwithrefriedbeans,guacamole,bocconciniandbasil,pulledpork,grilledchicken-thepossibilitiesareendless!
