1 Preheat oven to 425F. Lightly oil an 8-inch cast-iron pan and heat in oven. Meanwhile,
whisk together cornmeal, four, sugar, baking powder, bak ing soda, and salt in a large
bowl. Combine buttermilk, milk, and egg; add to cornmeal m ixture and whisk to
combine. Add melted butter and jalapeos, whisking to incorporate.
2 Remove pan rom oven and pour in batter (it will sizzle). Bake until dark golden
around the edges and set in center, 25 to 30 minutes. Let cool slightly in pan beore
cutting into squares or wedges. Serve warm or at room temperature.

Grilled Green Beanswith harissaMost oods are improved by proximity to charcoal and smoke, and that includes those that
dangle rom beanstalks. The only trick is not losing hal o your green beans to the fre, a job
made easier with one o those mesh cages or grilling smaller oods. Me, I just do my best to
keep them perpendicular to the grates and have my average losses down to about three beans.
A quick toss in a vinaigrette spiked with spicy North Arican chile paste, aka harissa, really
livens things up; in a pinch, you could use the same amount o Sriracha, or just Tabasco with a
chopped garlic clove. Or, i you preer, skip the heatthese are still really good.
Serves 4
Kosher salt
1 pound green beans, trimmed
2 teaspoons vegetable oil
1 tablespoon red wine vinegar
1 tablespoon olive oil
1 teaspoon harissa
1 Preheat a grill or grill pan to high heat.
2 Prepare a large bowl of ice water; set aside. Fill a
large saucepan halfway with water and bring to a boil
over high heat. Season the water generously with
salt. Add the beans and blanch until just crisp-tender,
2 to 4 minutes. Drain, and plunge the beans into the
ice water for 2 minutes to stop the cooking. Drain the
beans, and pat dry with kitchen towels.3 Put the beans in large bowl and toss with the
vegetable oil. Using tongs, arrange in a single layer
on the grill and cook until lightly charred, 3 to 5
minutes.
4 Whisk together the vinegar, olive oil, harissa, and 1/2
teaspoon of salt in a large bowl. Add the warm beans,
toss, and serve warm or at room temperature.

1 cup all-pupos ou
1 cup fmly packd lightbown suga
12 taspoon coas salt
12 taspoon gound cinnamon

oats (not instant)

1Set the oven rack in the lower third of the oven.Preheat the oven to 375F. Set a 12 by 9-inch or 1
by 10-inch oval baking dish on a baking sheet linwith parchment paper or a nonstick silicone baki
mat.
2To make the topping: In a medium bowl, use a fo
to stir together the our, brown sugar, salt, andcinnamon. Add the butter, and using your nger-
tips, quickly work it into the dry ingredients untipea-size crumbs form. Add the oats and toss gent

3In a medium bowl, toss together the peaches,
raspberries, sugar, cornstarch, lemon juice, and sTransfer to the gratin dish. Sprinkle the topping
mixture evenly over the top.
4Bake, rotating the baking sheet about two-thirds
the way through the baking time, until the juicesbubble up and the topping is golden brown and v
crisp, 45 to 50 minutes. Let cool for 15 minutesbefore serving.

quite the green thumb. But thanks to a
grueling work schedule and nonexistent
outdoor space, having a garden was
out o the question. Even houseplants
were too much o a commitment at thispoint. I wanted her to have the option o
indulging in the citys rampantly available

so I constructed a pseudo-chandelier
above the dining room table with fshing
line and glass bubble vases rom CB2.
When empty, they caught the sunlight
and almost looked like lightbulbs. When
flled with owers, they were simply
stunning. In either case, they helped
ground the bistro dining table, so it had
a sense o permanency. Plus, with such
a small tabletop, there was no suracespace to spare come dinnertime, so this
saves Megan rom ever having to waste
room on a centerpiece againshe now
has a go-to oating one at the ready.
