Another thing to keep in mind when plan-

ning your vacation is that you should be flex-ible. If you spend more money at a five-starhotel then you should visit less expensiverestaurants or if you wish to rent a car thenyou should limit your shopping. Also, it is im-portant to do your research on packages anddeals before you make any purchase. Some-times, tour companies offer great all-inclu-sive deals. If you don’t plan on eating at thehotel and you just want a place to rest yourhead while you explore the country then youmay not need an all-inclusive package andyou may find a better deal online.

Whatever you do remember to plan, thinkof your safety, walk with credit cards andsmall amounts of cash and enjoy your vaca-tion to the max!

The creative minds that are hostingthe first ever Ice Cream Festival inTrinidad and Tobago, treated the chil-dren of the St. Mary’s Children’s Homein Tacarigua to a sweet taste of whatis to come at Sundae Fest on July21st.

The collaborative effort of My TeamEvents and the Cayenne Company heldthe Official Launch of the deliciously de-lightful event concept at the St. Mary’sChildren’s Home on Wednesday 12thJune. The children had fun to theirhearts delight as they were treated toB’s Homemade Ice Cream and fun activ-ities including a bungee trampoline.Mar-ble Slab Creamery, Mama’s HomemadeIce Cream and B&M Homemade IceCream also donated ice cream to thehome.

“The launch was also an outlet for usto unveil our ‘Lick for Charity’ initiativewhere we’ll be treating 30 kids from theSt. Mary’sto an all-inclusive day of fungames, activities and of course icecream at Sundae Fest!” explainedKenyon Champion Event Manager ofMy Team Events. Sundae Fest has alsopledged to make a monetary donationof part of the proceeds from the eventto assist in the running of the activitiesof the home. “We don’t want it to stopthere” Kenyon added “We are encourag-ing corporate T&T to get involved andsponsor a Children’s Home like we have.This is one of those unique and rare ex-periences that every child should beable to enjoy.”

The presentation was made by the Ja-maica Tourist Board's Deputy Director ofTourism Donnie Dawson during the jointCaribbean Tourism Organisation/JamaicaTourist Board Allied Members luncheon inNew York, Friday, held as part of CaribbeanWeek in New York activities.

Established in 2004, the Marcella MartinezAward is presented annually for unparalleledachievement in the design and implementa-tion of successful programs to strengthenand support Caribbean tourism. The awardis named in honour of Jamaican

Marcella Martinez who dedi-cated her extraordinary ca-reer as a public relationsprofessional to the promo-tion of tourism to theCaribbean.

Neysha Soodeen has beenshowcasing the Caribbean to an interna-tional readership for 15 years throughMACO Caribbean Living as well as MACODestinations, a magazine which shelaunched in 2003 to feature the Caribbeanfrom a holistic perspective.

Last year, Soodeen launched a Caribbeantravel portal promoting the best of the bestof Caribbean destinations.

Dawson described Soodeen as an embodi-ment "of the spirit behind this award. Andthose who know her, know that her passionfor the region is consummate, resulting inher business venture which showcases thesophisticated side of the Caribbean."

Her latest endeavour is a Caribbean APPcompany, using her 15 years of content inthe Caribbean to place on interactive por-tals, and downloadable on all smartphones.

Accepting the award, the Caribbean pub-lisher said after living away from theCaribbean for many years, she realised theCaribbean was known simply as a tourismdestination, and those away from the regionlacked the appreciation of how "we lived,what we ate and how we played."

She added "the sophisticated side of theCaribbean was a well hidden secret and Iwanted to expose that and launched MACOin 1999. After that, in 2003, I launched mysecond magazine Destinations, in Jamaica,and thus I feel an affinity to the island andits people. I am honoured to be the recipientof this prestigious award."

Simply Runway Enterprises Ltd opened its doors to its Second lo-cation, Simply Runway Accents at Grand Bazaar Mall on June 5th2013. The Exclusive Media Launch was sponsored by AMCO, Mar-keting and Distribution, NLCB and Café Le Bistro.

Specially invited guests were greeted with cocktails and a wide se-lection of wines upon entry into the newly designed and exquisitelypresented Simply Runway Accents. Many proclaimed of its Interna-tional look and feel and vibrant décor brought to life by Mr KhaleelAckbarali.

Alongside opening Simply Runway Accents, Directors Mr Isaac Aliand Mrs Candice Baccus conceptualised a plan to help promote ourstruggling local fashion industry by making space in the uniquely de-signed and captivating store available rent free to local designers.Their “Retailing the Local Runway Project” was presented at thisevent to describe what the project will entail. Simultaneously theywill be spearheading an Internship Program, “Design beyond the Run-way”, geared towards offering UTT’s CAFD students the opportunityto acquire the necessary work experience in retail to survive in ourlocal fashion industry.

The project plans were endorsed by Richard Young, President FATTand Creative Director of Tobago Fashion Week and Sandar CarrFashion, Design Coordinator at University of Trinidad and Tobago.Both of which were thrilled about the opportunity and emphasizedthe need for such projects and programs in Trinidad and Tobago. Theevening ended with much chatter about the project presentation anddécor over scrumptious hors d'oeuvres.

When I asked fitness instructor, Adrian Cordner about workoutroutines to lose the bulging tummy, he was sort of confused. Ormaybe he was amused because as he puts it, “there is NO secretexercise, routine, concoction, book, video or seminar to magicallyrid you of the years and care put in to building your gut.”

Various concoctions and gadgets, which claimto help us fight this war on our bellies, con-stantly bombard us and because a lot of thesemethods offer quick fixes without having tochange our lifestyles, we latch on to them. How-ever Cordner says flat bellies and visible sixpacks are directly linked to proper caloric man-agement, a sensible and adequate diet, intenseexercise routines and self-discipline. “No amountof crunches, sit ups, leg lifts or broom sticktwists will give a visible ‘six pack’ or flat tummy,”he says.

“Fat around the waist, in and on the belly con-sists of both Subcutaneous Fat (fat under theskin) and Visceral Fat (fat that surrounds andcushions vital organs. Given the nature of fatwhich is a ubiquitous substance and one that isnot evenly distributed (sadly) but is energystored in a solid form, forcing your body to liber-ate, it must be done from a three pronged ap-proach.”

This approach advised by Cordner includes:1. Limit the consumption of fat inducing

foods

2. Increase caloric expenditure

3. Set realistic goals.

After participating in triathlons for 10years, Maria Shakira Gooding recentlyswitched due to knee injuries and a changein passion to Mountain Biking in 2012. Re-vealing that she had a bike before she couldeven walk, this 23 year old said her decisionwas not a hard transition. She startedmountain biking when she was a triathleteas a form of training and to practice bikehandling skills. One to push the limits, cou-pled with the constant urge to be fasterthan all the guys, Maria says that mountainbiking is easier for her because she enjoys itmore and is content that she can now be fo-cused on one sport as opposed to three.

Although Maria is currently the MTB na-tional champion having competed in Barba-dos and Tortola, Maria says that does not seeherself as a professional just yet. “When I cangive up my jobs, train all day, race internation-ally and eat, dream and sleep MTB then I'dconsider myself that," she says emphasisingthat her real goal is to be the first woman torepresent T&T at Mountain Biking at the2016 Olympic Games in Rio.

Maria became motivated by her brother's(Jason Gooding) successful career as atriathlete participated in the sport only racingfour years competitively around theCaribbean. In competing with her brother onthe Rainbow Warriors Triathlon Club team,Maria shares "there was no real competitionbetween us. We both did different distances,so I'm yet to race against him to see who’sthe real champion. We have raced on sameteams together and that was fantastic, weare so in-sync when it comes to those things.

"Their close bond was evident during atriathlon when Jason was having bike prob-lems and Maria stayed with him the entirecourse.

“I got out of competitive mode when I re-alised the problem and just finished for fun.

According to Maria, If it were not for her in-juries, ( she also got hit by a car on a racecourse) she believes she would continuedoing triathlons since she always wanted tocompete on the international circuit and dothe Hawaiian IRON MAN World Champi-onship- an initiative conceptualised to chal-lenge athletes at endurance swim, runningand biathlon events.

"I think that everyone feels to quit at somepoint but never for me during competition. Iput my brain into a different mind-set. I grindmy teeth and smile throughout majority ofmy workouts," she said.

As for how long Maria sees herself Moun-tain Biking competitively, she says within thenext decade. She also mentions that if shewas not doing triathlons or mountain biking,she would do Taekwondo. “I did Taekwondoas a kid, just two belts away from black and Iwas quite good. I am sure my Master wouldhave been encouraging me to continue fight-ing. Till this day every time he sees me hesays, "Maria Gooding, good fighter, goodfighter!" she joked. When Maria is not train-

ing, she is busy being doing other things, likecoaching kids including eight under 16 boysfrom the Rainbow Rescue home to dotriathlons and managing summer camps. Sheis also a graphic design artist, event organiserand is currently pursuing her associate de-gree at COSTAATT. In her down time, shemodels and does photography as a hobby. Fornow, Maria plans to spend a month in theUnited States training and racing with a cou-ple pro-mountain bikers. “This will be an ex-perience and an eye opener for me." she said.

Even though today there may many fe-males pursuing a career in mountain bikinglocally than before, Maria is hopeful thatthere would be more interest towards thesport. She also mentions that anyone can getinvolved at any age, once you are willing totry.

Sometimes,life circumstances overshadow andsuppress your desire and motiva-tion to pursue your personal goals.The pressures of everyday life withits ongoing responsibilities: familyobligations, work demands andother commitments. Maybe, youare your own saboteur. You strug-gle with negative self-image, pro-crastination, self-doubt andlingering old fears of failure as wellas success. Internal issues and ex-ternal challenges trip you up andkeep you stuck. However, don't sit

too long with stagnant thoughts ofwhat you did not accomplish, blam-ing others and making excuses foryour inaction or mistakes. Rethinkwhat you want to achieve, refreshthe vision and recommit to thepath you need to take to achieveyour goals.

Whatever your assessment re-veals: progress and achievement orlittle movement and regret, youmust move forward. If your goalsare important and a priority in yourlife, you must marshal your deter-mination and the necessary sup-port and resources you need toaccomplish them.

Periodic assessments are neces-sary to ensure that you are on thebest path to achieve what youwant. Whether you're dealing withNew Year resolutions, long out-standing goals or secret wishes,pause for a while and reassesswhat you've done, if anything, tomove you closer to them and de-cide how you will move forward.Take some time for a mid-year as-sessment.

Your bladder is the hollow muscular organ thatcollects urine, and it can be quite frustrating whenit doesn't function normally. One of the most com-mon bladder problems is a sensitive bladder (orlight adult incontinence), which is generally causedby weakened pelvic floor muscles or disorders inthe nervous system regulating the bladder. As youget older, your pelvic floor muscles weaken. Thiscan also be the case during pregnancy and afterchildbirth.

When you urinate, your pelvic floor muscles play animportant role – this muscle group relaxes at thesame time as the bladder contracts (or tightens) in

order to let the urine out – so when they weaken, youhave less control.

Even with a healthy bladder, a sneeze or laugh cansometimes be enough to trigger an involuntary lossof urine. But there's no need to suffer in silence be-cause there are simple steps you can take to helpprevent such bladder embarrassments. nence, the most common being “stress inconti-nence.” This is usually caused by strain to thepelvic floor during pregnancy and childbirth.Women with stress incontinence feel an un-controlled leaking of small amounts of urinewhen they laugh or sneeze. Pelvic floor exer-cises can help train these muscles and thusprevent light adult incontinence.

Another type of light adult incontinence is“urge incontinence” – so named because of thesudden and immediate urge to go to the toilet.This is when the bladder uncontrollablysqueezes out urine before it's actually full.Such an overactive bladder can contract (orsqueeze) even when you don't want it to.

If you are experiencing similar symptoms, askyour doctor for more information to find thecause and the right therapy.

If you suffer from a sensitive bladder, yourphysician or therapist may advise you to trypelvic floor muscle training.

The pelvic floor is one of the muscle groups inthe body providing support for your bladder, in-testines and uterus. Located between yourlegs, the pelvic floor muscles run in a slingshape from your pubic bone at the front to thebase of your spine at the back.

This muscle group helps with the correct po-sition of the urethra, the tube that urine comesout of. So, if your pelvic floor is too weak, it canresult in a sensitive bladder.

The good news is that you can train yourpelvic floor muscles like any other musclegroup in your body. Correct and regular trainingwill strengthen the pelvic muscles and, there-fore, help minimize the symptoms of a sensi-tive bladder.

2. Add a Cornice or Valance. Ifyou do currently have drapery only atyour windows, consider adding a toptreatment. You can get as simple or elab-orate as you want to be. Ensure thatyour new addition works well with yourexisting décor. Very often the more ele-

ments you add to the window, the more‘decorated’ the room feels. It is an oppor-tunity to add style, texture and colourand raise the interest level of the room.And speaking of the feel of your room….

3. Raise the Room. Updating thelook – and more importantly the feel – ofyour home is always a good mood lifterand might be just the change you needright now. The question for you is – justwhere are your curtain rods and valanceshanging? Take your treatment to theceiling! This makes the room feel largerand taller. If your existing drapery is tooshort and will ‘flood’ if raised higher, con-sider adding a border in a contrasting orcoordinating fabric to the hem or head-ing of the drapery. This actually can lookquite trendy; channeling the colour block-ing style.

As a window treatment designer I typi-cally design and install window treat-ments as high as practical over thewindows. It gives the treatment more‘presence’ and increases the decorativeequity of the treatment. Too low – suchas right above the window – simply pullsyour eyes down into the room andmakes the room feel as though the ceil-ing has dropped several feet. Windowtreatments mounted too low can literallymake your room feel smaller and “heav-ier”. If you want to raise your roof – raiseyour treatments!

4. Update the hardware. Do youhave rod pocket curtains and are stillhanging them from electrical conduit?Consider updating your hardware. Getsomething decorative and fun. Or con-vert your rod pocket or tab curtains to

drapery and install on a decorative polewith rings. Rod pockets can look datedand standard.

Traversing drapery will give you the abil-ity to easily draw the drapery away fromthe window and this gives you the op-portunity to layer. Imagine a layer ofsheer, a shade or a blind closer to thewindow, with a layer of pleated panels in-stalled on a decorative pole with rings.You can open the drapery during the dayto let in light and air and change the lookof the space.

5. Simply Add Window Treat-ments. Today, window treatments are just an-other way to express your style. Theycan be formal, casual, modern, classic –you name it, a window treatment can doit. Nothing says “ah, this room is fin-ished!” like a window treatment madejust for you. Are all your windowsdressed? Or do you find window treat-ments too fussy? In Trinbago we areoften forced to cover the window be-cause of privacy issues. But some of uspay little attention to the decorative po-tential of our window coverings. We optfor hard treatments and pay no attentionto integrating it into the décor. I have apersonal dislike for vertical blinds in ahome. That’s just me. Horizontal woodblinds, on the other hand, have lots of po-tential. I am especially partial to 2” hori-zontal wood blinds layered under sidepanels and/or a top treatment. It has itsplace in a non-formal space.

These are just a handful of ideas to help youget your creative juices flowing.

Are your window treatments lookingtired? Or are you tired of your windowtreatments? Here are some easy fixes toinject new life and easily transform yourspace.

1. Add or Remove a Tieback.Many of our homes today have draperythat go all the way to the floor, ofteneven “breaking or puddling” on the floorfor a dramatic look. If your currentdrapes don’t have a tieback and they fallstraight to the floor, add a contrastingtieback for a quick and easy change.

For an interesting conversation point,consider ditching the traditional tasseltiebacks for something novel such asrope, leather belts, vintage collars, etc. Ifyou already use tiebacks, remove themand just let your drapery hang in all theirglory.

Directions:1. Heat coconut in a pan for 1 minute until the coconut is soft.

Let this cool.

2. Beat the Yellow Bird margarine with the powdered sugar andvanilla extract until creamy. Dilute the rum with 1 or 2 table-spoons of water. Quickly dip the biscuits in the rum and coverthe bottom of a glass dish (8”x 8”x 2.5”).

3. Spread the Yellow Bird mixture over the biscuits and sprinklewith the chocolate sprinkles. Repeat until all biscuits are used.After the last layer of the mixture is spread, add the gratedcoconut over it. Decorate with apricots. Keep stored in fridge.

Variation:Pineapple slices and cherries can also be used instead of apricots.

Ingredients• 1 lb ground beef • 1 jar (24 oz) spaghetti sauce • 1 1/2 cups water • 1 container (15 oz) ricotta or small curd

cottage cheese • 2 cups (8 oz) shredded mozzarella or

Monterey Jack cheese, divided • 1/2 cup grated Parmesan cheese • 2 eggs • 1/4 cup chopped fresh parsley • 1/2 tsp salt • 1/4 tsp ground black pepper • 9 pieces Lasagna, uncooked

Directions:1. Pre-heat oven to 350°F. In 2-quart

saucepan over medium-high heat,brown meat; drain.

2. Add spaghetti sauce and water; sim-mer about 10 minutes.

3. Meanwhile, in medium bowl, stirtogether ricotta cheese, one-half moz-zarella cheese, Parmesan cheese,eggs, parsley, salt and pepper.

4. Pour about 1 cup sauce on bottom of11x7inch baking dish.

5. Arrange 3 uncooked pasta pieceslengthwise over sauce; cover with 1cup sauce.

6.  Spread one-half cheese filling oversauce.

7.  Repeat layers of pasta, sauce andcheese filling.

8.  Top with layer of pasta and remainingsauce; sprinkle with mozzarellacheese.

9. Cover with foil. Bake 45 minutes.Remove foil; bake additional 10 min-utes or until hot and bubbly.

10.Let stand 10 minutes before cutting.

thin strips • 1 cup red bell pepper cut into thin strips• 1 cup mushrooms

• 1 cup onion cut into thin wedges • 2 cups broccoli florets • hot cooked rice

Ingredients• 2 lb. boneless, skinless chicken thighs• 1/2 tsp. salt• 1/2 tsp. pepper• 1 Tbsp. canola oil• 1 cup sliced onion• 1 cup sliced green pepper• 3 cups diced tomatoes• 1 cup Heinz® Tomato Ketchup  • 1/4 cup white wine or chicken broth• 2 garlic cloves minced• 1 1/2 tsp. dried thyme• 1 1/2 tsp. dried oregano leaves• Hot buttered egg noodles or pasta

Preparation:1. Preheat the oven to 350 °F. Trim

the chicken of excess fat or gristle.

2. In a large skillet over medium-highheat, heat oil. Brown chicken inbatches, cooking 2 minutes oneach side.

3. Transfer to a casserole dish.

Spread onionand peppers even-ly over the chicken.

4. In a medium bowl, combine dicedtomatoes, Ketchup, wine (or chick-en broth), garlic, thyme andoregano. Pour over chicken andvegetables.

Preparation:1. In small bowl, combine Ketchup, water,

mustard, and soy sauce; set aside.

2. Heat oil in a large skillet and quicklybrown beef; remove from pan.

3. To skillet, add bell pepper, onion, andbroccoli; cook until crisp-tender (about5 minutes).

4. Return beef to skillet and stir inKetchup mixture. Cook until mixture isheated through, about 10 minutes.

5. Serve with rice.

Honey Dijon Beef and Vegetable Stir-Fry

Crab CakesPREP/COOK TIME: 10-15 minutes

Ingredients• 1 can drained crab meat• 4 tablespoons bread crumbs• 8 fresh basil leaves sliced• ¼ chopped white onion• 2 spring onions finely chopped• 1 egg• 1 tablespoon Heinz® Salad Cream• Olive oil for frying

Preparation:1. Place 2 tablespoons bread crumbs on

a plate. Now place all the remainingingredients in a bowl and mix well.

2. Heat a nonstick pan on a mediumheat. Make small size crab cakes andcoat in the breadcrumbs on the plate.

3. Drizzle some olive oil in the pan andcook for 1-2 minutes each side andserve.

5. Cover and bake for 50-60 minutes or until chick-en is tender and sauce isthickened. Serve with eggnoodles or pasta.
