Armagnac: Armagnac is a result of the traditional distillation of white wine made of grapes from a few villages in South West of France. The name dates back to the gallo-roman times of Arminius. The first known distillation was in 1411 and first commercial activity involving Armagnac was registered in 1414 in France.

There is no secret to making great Armagnac, but there is a great art. Armagnac has worldwide renown extending to 130 countries. The qualities and fullness are best enjoyed at the end of a good meal.

Gin: The first confirmed date for the production of gin is the early 17th century in Holland, although claims have been made that it was produced prior to this in Italy. In Holland it was produced as a medicine and sold in chemist shops to treat stomach complains, gout and gallstones. To make it more palatable, the Dutch started to flavor it with juniper, which has medicinal properties of its own.

Junipero Gin: Junípero Gin is made by hand in the classic "distilled dry gin" tradition, utilizing more than a dozen botanicals in their natural state, in a small copper pot still at our little distillery on Potrero Hill in San Francisco.

Brandy and Eau De Vie: In 1512 a Dutch trader, searching for a way in which to transport larger quantities of wine, found that by removing the water from the wine he get more casks of wine onto his ship. He could then add the missing water back to the wine when he reached his destination. This was known as “brandewijn” which meant burnt wine in Dutch and eventually became brandy.

During the XVIIth century, the Cognaçais initiated the process of double distillation, allowing the concentrated alcohol, the 'water of life' known as 'eau-de-vie', to travel in the safest and most economical conditions. This alcohol, stored in oak barrels, was to be diluted upon arrival. It is purely by chance that they realized that the eau-de-vie improved with time and contact with the oak wood.

Calvados: The Spanish galleon El Calvador landed on the shores of Normandy and began a chapter in French history that continues to this day. Not only was the department named after the ship, so was a delicious apple brandy made in the district.

Daron: Calvados Daron is produced exclusively from fruit grown in the Pays d'Auge, a region justifiably famous for the quality of its fruit. Three growers are personally responsible for maintaining the traditional methods of pruning that have been handed down to them through the generations. Only the best varieties cultivated and each year successive harvests are made to ensure ripe, juicy apples that are quickly delivered to the press house.

Cognac: The Cognac Delimited Area extends along the banks of the Charente all the way to the Atlantic coast. This ancient country was once called Aunis, Saintonge and Angoumois. In the heart of the region lies Jarnac, Segonzac and Cognac, which gave its name to the spirit. Cognac lies 465 kilometers southwest of Paris and north of Bordeaux. The entire Cognac vineyard covers around 80.000 hectares and 15,000 plantations that produce white wine for the production of Cognac.

Chateau de La Raillerie: Cognac is the most famous of Brandies and comes only from within a particular region of France. Brandy is usually distilled from wine. In the brandy lexicon, the letter O means Old; S means Superior; V means Very; P means Pale; and X means Extra (VSOP=Very Special Old Pale).

Grappa: Grappa (also called "Marc" in France) is a traditional Italian drink, made from the leftover skins and seeds of grapes used for wine. This is called the "Pommacy" or "Pommace". The Pommace is fermented and distilled in its natural state. The result is around 90 proof and clear in color. Grappa is dry and high in alcohol, with the flavors ranging from floral to earthy. It can have highlights of oak or juniper berries as well. Grappa is typically consumed after dinner as a digestif.

Clear Creek: Clear Creek collects fresh pomace each fall from their favorite Oregon and Washington wineries and bring it to the distillery to ferment and distill.

Fuligni: This beautiful property, surrounding a sixteenth-century Medici villa, was founded in 1923 by a descendant of the Venetian Fulignis. In fact, you can still see the city’s symbol, the lion of St. Marco, emblazoned on the labels. The family, however, has long been thoroughly Tuscan. The present generations are Maria Flora Fuligni and nephew Roberto Guerrini Fuligni, who manage the estate and jointly orchestrate the wines.

Poggio Antico: Poggio Antico is located in Montalcino, a small town in Tuscany about fifty kilometers south of Siena. The earliest written records of the estate date from the beginning of the 19th century, when the present boundaries were marked. Fermentation takes place in state-of-the-art truncated cone-shaped stainless steel tanks allowing for an extremely gentle breaking of the caps during maceration. Ceretto: In Alba in the late 1930s, Riccardo Ceretto founded the Casa Vinicola Ceretto, which formed the nucleus of the present Aziende Agricole Ceretto. In 1974, the Distillery was built-the first in the Langhe region to produce single-variety grappas from property vineyards. In 1985, a new seat became operative at La Morra (in the Brunate district), where four varieties of grappa are distilled: Nebbiolo, Moscato, Dolcetto and more grapes.

Rum: Rum is a product of the tropics, being created from sugar, molasses, or other sugar-industry products. The manufacturers add yeast to this, ferment it, and then distill the results. When rum is made, it is a clear drink. Many manufacturers then age or color the rum, bringing it to a more dark or golden state. Most aging takes place in barrels that once held whiskey or bourbon. Deanston: The distillery buildings date back to 1785, when Deanston was actually operating as a cotton mill. Old Potrero: Old Potrero Single Malt Rye Whiskey is the distillers attempt to re-create the original whiskeys produced from grain in America. Distilled in a small copper pot still from a mash of 100% rye malt, it is aged for one year in new uncharred oak barrels at our small distillery on Potrero Hill in San Francisco.

Ledaig / Tobermory: The Ledaig Single Malt Whisky is distilled from a distillery located on the very scenic Isle of Mull. The distillery was initially named ‘Ledaig’ in 1798 by John Sinclair (who introduced the distillery). This name stuck until the 1970s when it was re-christened Tobermory (since it sits in the harbor village of Tobermory). The town of Tobermory itself used to be called Ledaig, which is Gaelic for ‘Safe Haven’.

Tequila: As North America's first distilled drink, and its first commercially produced alcohol, tequila's history is long and rich. Its roots reach back into pre-Hispanic times when the natives fermented sap from the local maguey plants into a drink called pulque.

Cabo Wabo: Cabo Wabo Tequila was brought to life in 1996 on the back roads of Guadalajara -el centro of the state of Jalisco, Mexico. After what seemed like eons of time searching for tequila of good enough quality to serve at the Cantina and call his own, Sammy Hagar linked with a small Mexican Tequila maker that had been in operation since 1937.

Corralejo: Corralejo was founded in 1755 and was the first commercial producer of tequila in Mexico, with copper pot stills from Spain, wood-fired adobe brick ovens, and French oak barrels for aging. Today, over 200 years later, tequila production continues at Corralejo much as it did in the past.
