OF ROVATO
The Beef of Rovato is a famous
dish of Franciacorta tradition. A
recipe that is rooted XVI century.
At that time, the town of Rovato,
which used to be ruled by the
Venetian Republic of Saint Mark,
was geographically located on
the exchange route between
Venice and Milan where goods
coming from the seas, such as anchovies, used to be traded.
This may be the reason why
anchovies became a primary
ingredient of this traditional
recipe. The lesson will also focus
on possible matches between
food and each kind of
Franciacorta wine.

FISHING TRADITION : DEHYDRATED SARDINE OF THE ISEO LAKE
A unique experience exploring
the areas where the Traditional
Dehydrated Sardine of the Iseo
Lake is produced. This pelagic
non-migratory fish, is presided
over by Slow Food, which
preserves the ancient technique
through which it is stored on a
long-term basis. Local fishermen
leave at sunset with their small
and tapered boats, traditionally
called “naec”. They lower the
nets (locally called
“saredenere”) at approximately
200 meters from the shores. By
this tour you will discover all the
secrets of this amazing
Franciacorta fishing tradition.
