Buttermilk Mashed Potatoes
Ingredients
8 cups water1 ½ cups warm buttermilk3 ½ lb. Yukon gold potatoes1 ¼ tsp. salt¾ tsp. pepper cup butter, melted3 garlic cloves1 tbsp. olive oil2 cups chicken broth
Sauté garlic in hot oil over medium heat 3 minutes.
Add water, chicken broth, potatoes & ¼ tsp. salt.
Cover, reduce heat and cook 15 – 20 minutes or until potatoes are tender.
Add buttermilk, butter, pepper and 1 tsp. salt.
Mash potatoes with large fork or potato masher.
