In Greek mythology, Eos is the “Goddess ofthe Dawn.” Today at EOS Winery in PasoRobles, a new dawn is rising, and it is the

second time in the last 25 years that thewinery has experienced a rebirth.

Originally founded in 1983 by the Arcierobrothers – two hardworking Italian immi-grants who made their fortune in Los Angelesconstruction – the winery changed namesfrom Arciero Winery to EOS in 1996. Thename change at that time was both symbolicof a new day, and reflective of the wide rangeof changes made at the winery in order tomake it successful.

“In the vineyards, in the cellar, in theequipment, in the pumps, the presses, every-thing – we changed everything,” recalls LeslieMelendez, who started at the winery in 1993as a lab technician, and who is now headwinemaker.

Leading the sweeping changes at the timewas Kerry Vix, general manager at the winerysince 1992. And as a result of those changes,EOS developed into a well-known, widelydistributed brand that has grown in terms of

production and quality ever since. Today Vix is observing another “rebirth”

brought on by the sale of the operation fromthe Arciero family to Sapphire Brands, acompany owned by entrepreneur JeffHopmayer. Hopmayer first gained fame asthe soul source of all the bakery goods sold inStarbucks stores worldwide. He establishedSapphire Brands to focus on wines andspirits, and EOS is his first winery. Althoughthe sale didn’t include the 600-acre vineyardstill controlled by the Arcieros, the 25-year-old vineyard remains the main source of fruitfor EOS wines.

But it is what’s happening at the winerythat is a new dawn – a metaphor that’s espe-cially appropriate because it involves the sun.The winery’s newest and most significantproject is a 2-1/2 acre solar field that willprovide the winery and visitor’s center with100% of their energy needs.

“This was one of the very first things hewanted to do,” Vix says of Hopmayer’s earlydays of ownership. “He said, ‘We’re going todo everything we can to mitigate waste andconsumption of natural resources.’”

The entire system will represent a $3.5

million investment for the new owner, with a20-year payback. But return on investmentwas not driving the decision to go forward.Vix explains, “We want to be the most effi-cient winery and the most proactive wineryin energy conservation.” He hopes theirexample will inspire other Central Coastwineries to follow in their footsteps.

The new solar panels will be in place byharvest time this year, and in the meantime,the winery is upgrading all of its productionand lab equipment, along with adding staff toincrease its annual production from about180,000 cases to over 350,000 cases over thenext four years. At that level, it will rank asthe third largest winery in Paso Robles.

The winery currently produces more thana dozen different varietals, many of whichhave garnered wide acclaim. Their PetiteSyrah – a small niche in the premium varietalcategory which is most often used in blends –is the flagship for the winery. In fact, the EOSCupa Grande Petite Syrah has been recog-nized three of the past five years as one of theTop 100 wines of the World by Wine Enthu-siast Magazine. The winery’s Moscato is also afavorite, earning a score of 95 last year, and

also making the Top 100 list.Their two most popular wines

are a Chardonnay and CabernetSauvignon, but other favoritesinclude a crisp Viognier, a spicyZinfandel and several varietalsunder their value-priced “Novella”label.

Winemaker Melendez is one ofjust a handful of women wine-makers in the area, and her 15-year road from lab technician todirector of winemaking involvedworking virtually every positionin the winery. “I learned by theschool of hard knocks,” Melendezsays, “but from the moment Iwalked in the door, I just loved it.”

The wines can be sampled atthe EOS Visitor’s Center onHighway 46 East in Paso Robles.The large tasting room feels like a candy store for wine and food enthusiasts. Hand-paintedpottery, elegant glassware, cook-books, gourmet foods, and picnicitems are abundantly displayedthroughout the 6,000-square-footspace. The complimentary tastingincludes up to four choices fromthe list of up to 14 different wines,ranging from dry whites to lushreds, to sweet dessert wines.

For those interested in abehind-the-scenes look at thewinery, there is a self-guided tourthat leads visitors through theproduction area, with educationalsigns explaining the winemakingprocess. Once the upgrading iscomplete later in the year, it willrepresent the state-of-the-art inmodern winemaking.

The EOS tasting room islocated about five miles east ofHighway 101 on Highway 46East. It’s open from 10 a.m. to 5 p.m. daily.

Among the ever growing number ofwineries in Santa Barbara County,Carina Cellars sets itself apart through

One of Carina Cellars original ideas was tosource fruit from numerous vineyards on theCentral Coast to achieve a diversity of flavorwithin their wines. They have stuck to thisand continue to find great fruit to make greatwine. They are currently producing five toseven Syrahs, sourced from vineyards such asStolpman, Tierra Alta and Westerly. Beyondthis, they also produce small quantities ofGrenache and Mourvedre, and even did somePetite Sirah for 2005.

Keeping with the Rhône varietal theme,Carina Cellars has attracted a distinctfollowing for its Rhône blends. The mostpopular is the “7 Percent” which has been abackbone of Carina Cellars’ wines since thebeginning. This blend is styled after the Cote-Rotie region in the northern Rhône valley andconsists of 7% Viognier and 93% Syrah. Itsrich, velvety texture and subtle floral notesproduce a wine that is lovely and distinct andpairs well with steak or lamb. The “Sibylline”and “Clairvoyant” make up Carina Cellarsprophetic duo and are modeled after thesouthern region of Chateauneuf du Pape.

With varying percentages of Syrah, Grenacheand Mourvedre, these wines offer a lighteralternative to the “7 Percent” with a softer,silkier mouthfeel and less tannins. TheSibylline and Clairvoyant are better suited topork and duck dishes as well as a spicy mari-nara sauce or cheesy ravioli.

The nonconformist of Carina Cellars’blends is the “Iconoclast.” This is the onewine where Carina Cellars bends the rulesand blends 67% Cabernet Sauvignon fromNapa Valley with 33% Syrah from the localColson Canyon Vineyard. This wine is trulyunique in that it combines two regions intoone and two varietals that aren’t typically seentogether. Winemaker Coby Parker-Garcia was athird-grader in San Luis Obispowhen Claiborne “Clay” Thompson

and Fredericka Churchill produced their firstoffering, 565 cases of Dry Gewurztraminerand Dry Riesling, modeled on the fruity butdry dinner wines of the French province ofAlsace.

The son and grandson of farmers, he knewhe wanted to attend nearby Cal Poly, but itwasn’t until his junior year as an agriculturemajor that he noticed the local wine industrytaking off. “I always assumed I’d have toleave the area to get a good job,” he said.

Parker-Garcia was delighted when hisinternship at Claiborne & Churchill revealeda new career path, one that not onlyresonated with his soul but would allow himto remain on the Central Coast.

Although he took viticulture (grapegrowing) classes at Cal Poly, and later didadditional study in enology (winemaking) atUC Davis, it was his apprenticeship in tradi-tional European winemaking techniques atC&C where he honed his approach to wine-making.

“What I learned from Clay and NathanCarlson – our former winemaker – was to not

manipulate the juice or the wine very much,even in years when conditions are more chal-lenging and it’s harder to maintain qualityand consistency,” he said. “You always let thewine speak for itself.”

How hard is it for a winery that doesn’tgrow its own grapes to maintain that qualityand consistency? “It would be hard for a newwinery just starting out,” Parker-Garciaexplained. “But this is the 25th anniversaryyear for Claiborne & Churchill, so our long-term contracts put us at the front of the lineand allow us to get the best grapes from ourgrowers,” he said.

Temperature control isn’t a problem forthe winery either, not with 16-inch wallsmade of straw bales that naturally maintain aconstant cellar temperature.

The greatest challenge for the winery camein the marketing arena. People still remem-bered the old sweet Rieslings from the 60sthat had large amounts of residual sugar.“That’s why we have ‘dry’ before the ‘Riesling’and ‘Gewurztraminer’ in our wine names,” hesaid. “It helps convince people they aren’tsweet.”

A number of wine experts are now toutingRiesling as the finest of the white grapes, atrue unsung hero. “Clay was definitely aheadof his time,” he said. “He and Fredericka

were language professors who frequentlytraveled and lived in Europe, particularlyGermany. Across the river in France theywere exposed to the dry style Gewurz-traminers and Rieslings of the Alsace regionand realized how great they could be.”

With the sticky sixties wines only amemory now, wine consumers are coming tothe same conclusion. Claiborne & Churchillsells every one of the 10,000 cases itproduces annually. Their offerings alsoinclude a dry Muscat that is great as an aper-itif and with cheese, quite a bit of Pinot Gris,Pinot Noir and Chardonnay, Cabernet Sauvi-gnon, Syrah, some interesting blendedwines, a Sparkling Brut Rosé made everyother year, and a number of sweet dessertwines, including the port-style PortObispo.

To celebrate its 25 years of growth andsuccess, the winery is planning two anniver-sary releases this year – a red and a white.The red blend will be chosen from thosecreated at a special blending party they planto host for wine club members and specialguests.

Decanting, the process of pouring red wine from its bottle into a newvessel for the purpose of aeration or separation from sediment hastensthe mixing of air and wine and is usually a good idea when servingfiner wines. Besides the occasions when you observe sediment in thebottle, the time to decant is when you have an aromatic red wine thatwill get more expressive when it is finally aerated.

Have you ever felt that in the course of going through a bottle ofred wine, or even in the course of finishing just one glass, that thewine improves over a brief amount of time? That’s because it is gettingan opportunity to “open up,” or mix with air.

Some people believe that it is best to decant every red wine,regardless of age or quality. This approach certainly does no harm andin most cases will bring the best out in the wine sooner. But mostwines today are made to be consumed immediately, particularly in theprice range up to $15 a bottle. For these wines, aeration will probablynot make a noticeable difference. For finer red wines, with layers ofcomplexity from fruit and extended oak aging, decanting is a smallextra step that will add not only to the ceremony of wine enjoymentbut will most likely bring out all that the wine has to offer.

Many red wines of significant age, and some young ones, will havea small amount of sediment at the bottom of the bottle, or clinging toits side. This is usually a sign of an unfiltered wine. The sediment issimply the natural residue from tannin molecules combining withcolor pigments in the wine over time and settling at the base of thebottle. There is no harm in drinking this residue, but it is not at allpleasant. The objective of decanting is to enjoy the wine withouttasting the harsh bitterness of the sediment.

To separate red wine from its sediment, just pour the wine slowlyinto a decanter that has an extra wide, round bottom and a longnarrow neck, and stop pouring as soon as you see the sedimententering the neck of the bottle. You should end up with a few ouncesof wine still in the bottle. The unique shape of the container willexpose a large surface area of wine to air and start the release of itsfragrant aromas. Let it stand for at least ten minutes before pouringinto glasses.

Another way to aerate red wine before consuming it is to fill thewine glass, or glasses, with wine in advance of drinking it. Thismethod works well when preparing to serve guests. If you’re setting adinner table about 30 minutes to an hour in advance of serving thefood, just remember to fill the glasses with wine at the same time.

The fun and information-rich day will include a“Rhone Essentials” Seminar, Vintners’ Lunch andWalk-around Tasting of more than 150 Rhonewines produced in Paso Robles.

The “Rhone Essentials” Seminar offers theopportunity to taste examples of the most impor-tant single-varietal Rhone wines, including Viog-nier, Roussanne, Syrah, Grenache and Mourvedre,as well as an exploration of Rhone blends. At eachstage, participants will hear from the winemakersand principals who have chosen the Rhone Rangerroute and helped give Paso Robles its new identityas the “Rhone Zone.”

the Rhone Rangers principals and winemakers at aninformal Vintners’ Lunch prepared by ExecutiveChef Jeffrey Scott. Producers will freely pass theirRhone wines around the tables, offering anextended opportunity to interact and explore therange of Rhones produced in Paso Robles.

Wild Heart Winery is in pursuit ofperfection. Suzanne Burens, whoowns the winery along with

husband Jim, puts it succinctly in her poem,Un Coeur Sauvage, “A wild heart is restless,for it can only rest with perfection.” And intheir Los Olivos tasting room, Jim andSuzanne pursue that artistic perfection whilepouring beautifully crafted boutique wines.

Located on Grand Avenue, a walk intoWild Heart is a walk into aesthetics andbeauty. Tapestries adorn walls and Suzanne’shand-made jewelry occupies glass-toppedcases that also serve as the wine bar. Itsunique blend of art, craft and wine seem anhonest and obvious metaphor for the Burens’dream of Wild Heart itself. Focusing onblends that add up to outstanding flavorprofiles, Jim Burens has made it his job to besure that it’s flavor that moves the wine. “I’mless concerned with the alcohol level orwhatever as long as the flavor is there,” hehas said in the past.

Quality grapes from vineyards all over thestate have allowed the Burens the opportu-nity to produce flavorful, fruit-forward

wines, including a 100% Napa Cab, that aredrinkable now and distinct enough to “laydown for a while.” Since Wild Heart winesare made from grapes all over California, theflavor profiles are not limited to one terroir.Reviews have been coming in from bothcustomers and critics and awards, too. WildHeart wines, like the name suggests, arebold, flavorful and intense.

The tasting room, though, goes beyondjust a taste of Wild Heart’s varietals andblends. Gourmet chocolates are also avail-able and nothing compares to the combina-tion of tastes from a great glass of Cabernet orZinfandel with the right chocolate pairing.The Burens also create a feast for the senseswith great art hanging up and warm colorson the walls. During a typical day, Jim Burenswill “monitor” the wines he is pouring andhe has been known to replace bottles if theyhave been out too long and it affects theirflavors. The pursuit of perfection is indeed ademanding business.

With an eye toward much more, WildHeart produces about 3500 cases annually.But one gets the impression that it is not thequantity that is important for the Burens.Quality wines demand attention, craftsman-ship and preparation. D’Anbino Vineyards and Cellars, a winemaking operation in exis-tence since 1996, has opened a tasting room at the historic trainstation in downtown Paso Robles.

With just under 2,000 square feet of floor space, the D’Anbinotasting room has easily become the largest in the downtown area. Theatmosphere is modern and relaxing. The room’s décor features memo-rabilia depicting the family’s history of producing award-winningmusic, as well as award-winning wine. With a couch and comfortablechairs, a stage for live performances by the family band (illustrated ontheir wine labels) and other notable artists, and always a friendly andcolorful group of family members on hand, the room seems to inviteguests to stay for a while and enjoy good wine, good music and goodcompany.

Tasting room manager Mike Rubino commented, “After genera-tions of making music for television and movies, and years of makingpremium hand-crafted wine, our family is so excited to be able toshowcase our two greatest loves through our new tasting room.”

D’Anbino Vineyards and Cellars is an entirely family-owned andoperated producer of premium hand-crafted wines. D’Anbino co-founder and winemaker Carmine Rubino refers to his family as “a fun-loving group with a heritage of wine, music and togetherness.”

“Our mission,” states Rubino, “is to produce small lots of site-specific, hand-crafted, premium-quality wines. We strive to blendwine with music, food and family…and to have fun doing it!”

The D’Anbino tasting room is located at 710 Pine Street – thehistoric train station – in downtown Paso Robles. Tasting room hoursare Friday through Sunday, 11 a.m. to 6 p.m.

When you stop by, you’re guaranteed to enjoy great wine, a relaxingatmosphere and friendly people…and if you’re lucky you might justcatch the family band rehearsing for their next gig.

Paul Hoover might describe himself firstand foremost as a farmer, but it is when hetakes his love for growing things and appliesit to the crafting of his award-winning winesfor Still Waters Vineyards that his true geniusis apparent. “I consider myself first a winegrower because I’m passionate about agricul-ture, but with winemaking I get to enjoy theentire process, from growing the finest fruit toseeing it to the end with the production ofgreat wine. I want to stay small because I feelthe hands-on approach allows you work withthe wine during the whole process and really put my signature andtouch on the wines. For example, it’s unusual for winery of my size tomake twelve different types of wine including five whites.”

As a graduate of nearby Cal Poly, Paul initially took his degree inagriculture and entered the resort and restaurant business. The call ofthe fields was strong, though and after a number of successful years inthat business, Paul and his wife Patricia followed their hearts andbought a vineyard. The vineyard is located in an area with soils andclimate perfect for growing premium wine grapes. The ranch sits highatop hills that slope gently from the north to the south, giving thevines the perfect exposure to the summer sun as it rises and sets overthe El Pomar area. Light afternoon winds blow through the vinesproviding good airflow through the canopy for proper ripening. As thesun sets, the onshore winds flow from the Pacific Ocean cooling thevineyard to night temperatures in the 50°s. The 40°-50° daily temper-ature swings allow the fruit to cool at night, lengthening the ripeningprocess to intensify the flavor and allowing the seeds to mature,providing proper tannin and flavors. All of these influences fromMother Nature help create the perfect balance of Still Waters Vine-yards estate wines. The setting is also perfect for people. If it’s a

It’s that time of year again! Mama Pat’s Inner Light CommunityGospel Choir is celebrating Black History Month with a rousing work-shop and concert. Featured this year is the music of the King ofGospel, Rev. James Cleveland. Anybody can participate in the work-shop and learn to sing Gospel songs. It will be held Thursday andFriday, February 7 and 8, at 7 p.m. at Unity Church, 227 E. ArrellagaStreet in Santa Barbara. The cost for the workshop is $35, whichincludes concert participation. This Steven Roberts Gospel Music Workshop is for anyone whohas ever wanted to sing! There is no experience required and no audi-tions – just come with a desire to let loose and sing!
