The owner of New Ubin Seafood Restaurant, Mr Pang, is the sort of man who greets

and converses with his guests while they dine in rustic, Ubin Island-style comfort. He is also very passionate and inventive in terms of the food served at the restaurant.

The menu and selection available in New Ubin Seafood Restaurant reflects his belief that Singapore cuisine is a combination of different cuisines and influences, with local twists added along the way. In his restaurant, he breaks with zi char tradition by adding Western fare and influences into his authentic zi char offerings.

With a menu spanning over 13 pages (not including the wine list) of East and West dishes, it’s no wonder that they are a favourite among large groups of diners looking for good food and good wine. Indeed, it is notable that the restaurant does not charge its customers corkage, so BYO [Bring Your Own booze] is encouraged.

Here are just a few of the most popular signature dishes.

HeARTy WesTeRn FAvOuRiTesGerman Pork Knuckles ($26/piece) is a dish worthy of a Kaiser. Served on the bone or cut for easy pickings, the pork knuckle was perfectly prepared. The crispy and light golden brown rind matched the soft and succulent white meat, exciting the palate with its mixed textures.

With or without their special dipping sauce, made from a mix of butter and red wine, the pork knuckle is both tender and flavourful.

Diners will also find other Western favourites such as the signature rib-eye steak, BBQ back ribs, Boston lobster, and over 60 wines, served

harmoniously with garlic-baked crab, shovel-nose stingray, and Hokkien mee.

Zi CHAR signATuResDeep Fried Roe ($19) with Sambal Chinchalok Sauce & Petai is another popular dish. Whole sacs of roe are deep fried, leaving the outer surface crispy, and then sliced to present the cooked roe.

The frying removes the moisture from the roe, leaving it white and fairly dry. Eaten by itself, the taste may be a little bland. However, it makes the perfect carriage for the rich sambal chinchalok sauce. The sauce gives it the spicy zing that the roe needs, and the petai beans add plenty of flavour to the mix.

HK Kailan Special ($12/$18) is New Ubin Seafood Restaurant’s twist on a generic dish. Chopping the leafy parts of the kailan into thin narrow ribbons and frying it with tiny ikan bilis separately gives the traditional dish an innovative twist.

The taste was delicate and light, as veggies should be, while the crispiness of the leafy parts added additional and unexpected texture

to an otherwise conventional staple.

Salted Eggs with Squid ($14/$18/$20) comprises stir-fried fresh squid coated with salted egg yolk. It is a simple yet delicious dish for those who like salted egg. The granular texture of the salted egg yolk was expected, yet the sotong was exceptionally tender.

The secret, apparently, is to soak the squid in a milk bath to ensure a soft, tender texture. The combination of salty graininess coupled with the firmness of the tender, white squid was delightful.

Brinjal Delight ($12/$18) is a nice side dish. New Ubin Seafood’s unique creation features slices of sweet, caramelised brinjal fried with dried chilli. It was a nicely-balanced dish with the sweet caramelised coating complemented by a mild kick from the dried chilli. The texture of the eggplant was delightful.

This is just a small selection of signature dishes that New Ubin Seafood Restaurant offers. Many of their other specialities, from smoked duck breast and baby back ribs to tequila chicken in claypot and hei chor, remain an uncharted and anticipated discovery for me.

All these and more are definitely worth your trip to discover too.

Dine COmFORTAbly; AvOiD THe CROWDPersonally, I’m too impatient to queue. And, since New Ubin Seafood Restaurant has a strong regular following, it’s practically impossible to get seats on weekends without a reservation (which, as Mr Pang shared with me, should be made at least three days in advance).

I strongly recommend going on one of the days from Monday to Thursday to avoid the crowd. Or, you can simply contact the restaurant to place a reservation.

The restaurant offers both indoor and air-conditioned seating. Although, if you want a table in the air-conditioned areas, you are advised to book in advance.

Locate it on a map first to familiarise yourself with the location, then head down for some truly great food. W

If you’re not too familiar with Eliza Doolittle, allow me to fill you in on who she is.

Showbiz runs in her blood; her father is an accomplished theatre Director and her mother is a Tony Award-winning actress and singer.

On top of that, Eliza’s grandmother is the legendary Sylvia Young, who started a famed theatre school whose alumni includes Amy Winehouse, Emma Bunton and actor Nicholas Hoult.

Eliza Doolittle, though, has not quite reached the level of fame comparable to those graduates yet.

SongS to Put a Smile on Your Face If you’re looking for a fun, upbeat album with catchy tunes that you’ll soon be singing along to, you should definitely give In Your Hands a listen. Lead single “Big When I Was Little” will remind you of Lily Allen.

I was also pleasantly surprised with the album opener, “Waste of Time”, which is a relatively stripped-down, piano-driven song that really showcases her husky, soulful voice. Sadly, not all tracks reeled me in as much as that one.

cute or controverSial? “Walking on Water” is another memorable track, giving the subject of long-distance love a fresh spin, with her wishing she could walk on water like Jesus to get to her love. Sacrilegious or just a bit of fun? You decide.

It’s a shame that Eliza Doolittle isn’t more of a household name. She’s got a great voice, a spunky personality and a quirky point of view. But it’s tough beating the likes of Adele and Ellie Goulding to the mantle of Britain’s top songbird.

Taking anything in excess has never been beneficial to anyone. The excessive intake of alcohol is no different, as

copious amounts of alcohol could lead to Liver Cirrhosis.

What exactly is this medical condition and how can you protect yourself?

The Leading CauseLiver Cirrhosis is a condition of severe damage to the liver that impairs its ability to function normally. In the United States of America, the most common cause of Liver Cirrhosis is chronic alcoholism, a pathologic condition resulting from the habitual use of alcohol in excessive amounts.

There are other causes of Cirrhosis, such as a chronic viral infection of the liver (Hepatitis types B, C and D), and a number of inherited diseases such as cystic fibrosis and Wilson’s Disease, a recessive gene disorder in which copper accumulates in body tissue.

If severe, Liver Cirrhosis may lead to liver failure and even death. In the Western world, Cirrhosis is the third-leading cause of death in people aged between 45 and 65 years old (after cardiovascular disease and cancer). It may also cause a dangerous brain abnormality called Portal-Systemic Encephalopathy (PSE), which may lead to a coma.

The sympTomsThe scary thing about Liver Cirrhosis is that you may already have it, but the symptoms may have yet to bare its fangs. Most people suffering from this condition have no symptoms for years, while others may experience weakness, loss of appetite, malaise and weight loss.

When the liver is incapable of functioning normally, a blocked bile flow commonly occurs, causing the victims to suffer from jaundice, itching and fatty yellow skin nodules.

In more extreme cases and advanced stages of Liver Cirrhosis, people may also suffer from massive internal bleeding within the throat and brain abnormalities due to the accumulation of ammonia in the blood.

proTeCT yourseLfAlthough the condition of Liver Cirrhosis is

irreversible, early detection and treatment will help to slow down the degeneration of your liver. Holland & Barrett has a few supplements which help in the treatment of those suffering from Liver Cirrhosis.

An extract of milk thistle (Silybum marianum), which is high in a flavonoid compound known as Silymarin, may improve liver function and increase survival in people with Cirrhosis. Clinical trials have shown that Silymarin (420–600mg per day) improves liver function and protects liver cells against oxidative damage in people with alcohol-related liver disease.

In one double-blind trial, a significant increase in survival rate was found in people with Cirrhosis who were given 140mg of Silymarin three times a day for approximately two years. Positive results were also found in a 12-month controlled study of adults with diabetes and alcoholic Liver Cirrhosis taking the same daily amount of Silymarin.

However, another double-blind trial found that 150mg of Silymarin three times a day for two years had no significant effect on the survival rate among alcoholics with Liver Cirrhosis. So, it is quintessential that patients suffering from Liver Cirrhosis adhere to the dosage guidelines strictly in order for the supplement to work its magic.

In addition to protein deficiency, Liver Cirrhosis is characterised by low blood levels of branched-chain amino acids (BCAAs) in relation to other amino acids. This imbalance may contribute to the development of PSE. BCAA supplementation could be a way to correct this problem, as well as to provide a source of needed protein.

BCAAs (isoleucine, leucine, and valine) represent a good protein source for people with Cirrhosis because they are less likely to induce PSE. A controlled study of protein-intolerant people with Cirrhosis showed that BCAA supplementation corrected abnormal protein metabolism about as well as an equivalent amount of dietary protein without

inducing PSE as frequently. In a small double-blind trial, people with

Liver Cirrhosis taking five grams per day of BCAAs had significant improvement in their ability to process protein.

Therapeutic effects of oral BCAAs have also been shown in children with liver failure and in adults with Cirrhosis of the liver without PSE. Overall, it appears that BCAA supplementation does not always help in Cirrhosis, but some people with and without PSE may benefit.

A qualified doctor must closely supervise such BCAA supplementation.

prevenTion is beTTer Than CureAt the end of the day, prevention of Liver Cirrhosis is the best form of treatment, as a cure has yet to be discovered. Do remember to take all things in moderation. Should you be suffering from alcoholism, do seek professional help and remember that a healthy liver means a healthier and longer life for you.

In the 7th Century, the Pantheon, which was a temple to all Roman gods [hence its name], had been converted into a church. Today, it is known as the Roman Catholic Church dedicated to St Mary and the Martyrs.

Few know that the tombs of two Italian kings are here, as well as that of the Renaissance painter Raphael. The massive dome of the Pantheon is also the largest unreinforced dome in the world.

reD sQuare, mosCowIn the historic capital of Russia, The Red Square separates the Kremlin from the residential estate of the President, known as Kitai-Gorod. Most of the roads that lead to the highways originate from the Red Square.

The Kremlin and the Red Square were recognised as UNESCO World Heritage sites in 1990. The spectacular and famous St Basil’s Cathedral is also located here. Do go prepared for the cold.

mount fuji, honshu islanDThe highest mountain in Japan, the famous Mount Fuji, stands at 3,776.24m. The mountain has inspired many artists and poets over the centuries.

Mount Fuji is also a pilgrimage site, being regarded as one of the three holiest mountains in Japan. It is also popular with hikers from July to August.

Visit Mount Fuji for breath-taking scenery that is like nowhere else. Bring a good camera so you don’t waste the photo opportunities.

the louvre, paris Majestic Renaissance paintings, the iconic Mona Lisa and countless other treasures rest in the Musee du Louvre, in Paris. There are various impressive collections from across different ages.

The Louvre museum has free entry every first Sunday of each month. Also, on Fridays, from 6pm to 9.45pm, admission to the permanent collection is free for youths under the age of 26, regardless of nationality. Visitors under 18 years old enter free at any time with the appropriate identification.

Payoh Sports Hall once again, teams from Papua New Guinea, the Republic of Ireland, Sri Lanka and debutants Uganda and the United States of America (USA) will contest the six-day competition and battle it out to become Nations Cup 2013 Champions. EuropEan grEEnhorns & ExpEriEncEd ocEania islandErs Representing Oceania, Pacific islanders Papua New Guinea will come into the competition as the highest ranked team at 17th in the world, so expectations will be high. They last played in the 2011 edition, when they finished sixth. They took the trophy in 2008 and were runners-up to Singapore in the inaugural event back in 2006.

The Republic of Ireland made their debut just last year, and will be looking to improve, having finished last.

NeTball NaTiONS CuP a global battle

asian, african & amErican advancE The well-known Asian rivalry will come from Sri Lanka this year, as they make their fifth appearance in the competition and are ranked just two places behind Singapore at 23rd. They finished fourth in four previous outings and will be eager to improve as well, as they prepare for the Asian Championships in 2014.

The African nation of Uganda, currently unranked due to their lack of international exposure, will come into the competition as an unknown entity but will be expected to be strong and eager to win, like previous visitors from the continent, Namibia and Tanzania.

The USA is currently 19th, just behind Papua New Guinea. Tough matches with strong support from US expatriates are to be expected.

homE advantagE Host Singapore is aiming to be back among the top finishers this year after finishing 5th in 2012. They finished 2nd to world number

seven Fiji in 2011 and reclaimed the Asian Championship in Sri Lanka in 2012. They still hold the position of the highest ranking team in Asia (21).

The national squad is busy training hard under the guidance of new National Coach and Technical Director for Netball Singapore, Ruth Aitken.

Says Aitken, “It is an exciting time to step into the role of National Coach with the 8th Nations Cup fast approaching and the Asian Championships just over a year away.”

“The level of competition that will be in display in Singapore in December is set to be fantastic and we will face a tough tournament against a variety of playing styles and some rapidly improving countries,” she says.

The national team is ranked 21st in the world following their success at the 2012 Asian Championships, where they were crowned champions for the second time in their history. Singapore is also set to host the Asian Netball Championships 2014. W
