Singaporean Mixed Martial Arts (MMA) fighter Sherilyn Lim.

Sherilyn has trained at Fight G since 2007, in their Muay Thai programme. She will represent Singapore on a global scale at the One FC tournament on Oct 18, at the Singapore Indoor Stadium.

She shares with Weekender her thoughts on being a female fighter.

what would You saY to enCourage women to take part in mma?Whenever you start doing something new, you must always remember what your purpose in doing it is and keep your end-goal in mind. Whatever the reason is, be it for general fitness or to pick up a skill, societal stereotypes such as gender shouldn't stand in the way of what you ultimately want to achieve.

It's the same for most things – you have to constantly push yourself to your limits. Then, push your limits even further.

We also like the fresh and tart beef Carpaccio of Mayura Station Wagyu ($26) that is topped with different garnishes. The chef also created a pretty dessert entitled

“The Ginger Garden” with ginger flower sherbet, ginger crumble and edible garden.

The halia raffles hoTelThe atmosphere at Raffles Hotel is a little more regal but yet casual with the absence of the pristine tablecloths that adorn the outlet at Botanic Gardens.

They have recently launched a High Tea Set ($35 per person), that includes an assortment of nibbles served on a two tiered stand. The nibbles range from the savoury such as Grilled Haloumi with smoked avocado and cherry tomato to the sweet such as Lemon Meringue Tart and Freshly-Baked Scones.

Ku De Ta has kept things fresh in celebrating its third year, with a new executive chef and an upcoming brand new menu.

From the award-winning Restaurant Nobu, a Japanese restaurant in Cape Town, South Africa, Executive Chef Frederic Faucheux brings his expertise in Japanese sensibilities to create a new menu for Ku De Ta that will launch towards the end of the year.

The BesT of easT & WesTChef Faucheux trained under Chef Nobuyuki Matsuhisa for four years and played an integral role in launching Restaurant Nobu in Cape Town.

Prior to his training, Chef Faucheux practiced French cooking when he was at Langham Hilton in 1998 and London’s Savoy Hotel in 2004 to cook under the leadership of Chef Georg Fuchs. This is his first time in Asia.

CeleBraTory sTarTChef Faucheux has already begun to exert his influence in the kitchen in his new home at Ku De Ta, creating the menu for the third anniversary. The menu comprised dishes such as US Prime “Brandt Beef” Ribeye with wasabi salsa, spinach and a goma dressing,

and a Yutaka Roll filled with foie gras, salmon skin and cucumber, showing off both his French and Japanese influences.

Chef Faucheux also put a twist on the desserts, such as with the Tumeric Hazelnut Cake with Hennessy white chocolate cream and blood orange.

fuTure MenuGuests can look forward to a menu of Modern Asian dishes with emphasis on Japanese produce worked with unique twists – promising to be easy on the palate and the eyes.

The chef also believes that a calm state of mind is a key ingredient to effective kitchen management and measures his success by impressing his customers with a dish that they cannot replicate personally at home.

Ku De Ta celebrated its third anniversary on Sep 12 with a red and Asian themed party, complete with fire-wielding dancers. It was a lively affair and the new chef and new head of entertainment, Joshua Pillai, were introduced.

The newly-opened restaurant bearing her name brings that question to mind. Located above Timbre at the Arts House and behind the Sir Stamford Raffles’ statue, the restaurant is named after Raffles’ first wife.

sCandalous originsWhen Olivia first met Raffles, she was a mature mourning widow and he, a lowly young clerk. They got together amidst vicious rumours but she died before he received his knighthood and his new wife erased all records of her existence.

Now Olivia lives on in this new restaurant, Olivia Cassivelaun Fancourt (OCF), a new initiative by A Thousand Tales and the Timbre Group. Like the Timbre outlets, OCF also features live performances from local artistes.

luxurious lunChThose who are working in the area, take note. This establishment is a great setting for business meetings, with a three-

course set lunch at $38, and with three to four choices per course.

When we were there, we loved their starter of Smoked Herring, with summer crudités in Chateau Estoublon olive oil. The savoury morsel was a good beginning to the meal.

We also liked the Cargill Farm Striploin with salt-baked onions, pommes soufflé and garlic jus. The meat was a little too well done for us, but it remained tender and juicy.

sWeeTs for The sWeeTIf you like a nice dessert tart, you could go for the Greek Yoghurt Royale with pink guava and ginger genoise. Chocolate fiends would love the Intense Chocolate Tart with fleur de sel and sorbet. Both will get you excited.

The Longan Beancurd dessert was incredibly smooth and tasty as well.

On the whole, it was a perfect meal with unbelievable taste and quality for a home-delivered one.

More than 300 participants turned up for a fun day of engaging challenges.

Donation to Further roaD SaFetyIn conjunction with this event AIG donated $15,000, which comprised partly of the registration fees collected, to the Singapore Road Safety Council in support of its mission to improve safety on Singapore roads.

Bernard Tay, Chairman of the Singapore Road Safety Council said, “The turnout for today’s event was fantastic and I was impressed by the enthusiasm demonstrated by all teams.”

“AIG’s generous donation will be an essential investment in our on-going effort to make the roads safer for drivers, motorcyclists, cyclists and pedestrians,” he added.
