Green Eggs-travaganza!

Serves 4

Prep time: 15 minutes

Cook time: 10 minutes

4 eggs

3 teaspoons

mayon-

naise

1 teaspoon mustard

¼ teaspoon salt

¼ teaspoon pepper

2 drops green food coloring

Place the eggs in a saucepan and cover with coldwater. With an adult’s help, cook over high heatuntil the water starts to boil. Then turn the heat to

low and simmer (low boil) for 10 minutes.Place the cooked eggs in cold water. When

they are cool enough to touch, crack the eggshells allover by rolling them on a hard surface. Peel away theshells carefully and cut the eggs in half widthwise.

Remove the yolks from the eggs and placethem in a mixing bowl. Add the mayonnaise,

salt, pepper, and mustard.Stir the egg mixture with a spatula until it is

creamy. Add green food coloring until you reach thedesired shade.

Scoop the egg mixture back into the egg whites.Place the eggs on top of individual ham rounds (orslices of deli ham rolled up on toothpicks) and servewith toast points if desired.

and creamy.Line an 8-inch round cake pan

with a piece of aluminum foil, allowing theedges to overlap the pan. Lightly grease the foil

with the remaining butter and pour in the batter,spreading it evenly across the top with a spatula.

Bake until it has puffed and a woodentoothpick inserted in the middle comes outclean, 20–25 minutes.

Remove to a cake rack and let cool. Whencool, lift the cake out using the edges of the foil.Peel off the foil and place the cake on a cakestand or cake plate.

FOR THE BUTTERCREAM FROSTING:

Put the butter in a large bowl. Using anelectric mixer, beat until creamy and fluffy, about1 minute. Add the sugar a little at a time.

Add the salt and vanilla and beat until creamy.Add the food coloring if desired, then the

cream, a little bit at a time. Stop when the frostingis easy to spread.

Using a spatula, carefully spread the frostingall along the sides of the cake in a nice, thick layer.

FOR THE WHITE ICING:

Put the egg white, cream of tartar, cold water,sugar, and corn syrup in the top of a double boilerover boiling water for about 7 minutes.

Using an electric hand mixer, beat until theicing is stiff enough to stand in soft peaks. Removefrom the heat and stir in the vanilla.

Immediately spread the top of the cake withthe icing, using a spatula and creating thick swirls.Swirl some of the icing down over the buttercreamfrosting to make a true Katroo cake.

For this cake shown, the recipe was doubled andthe buttercream frosting recipe was quadrupledto get a higher, two-layer cake.

Katroo “HappyBirthday to You” CakeServes 10

Prep time: 30 minutes

Cook time: 20-25 minutes

FOR THE CAKE:

4 ounces plus ½ teaspoon butter

at room temperature

1 cup sugar

2 eggs, beaten

1 teaspoon vanilla

¾ cup all-purpose flour1⁄8 teaspoon salt

4 ounces semisweet baking

chocolate, at least 62 percent cacao

FOR THE BUTTERCREAM FROSTING:

1 ounce butter at room temperature

1 cup tightly packed confectioners’ sugar1⁄8 teaspoon salt

½ teaspoon vanilla

1 drop yellow food coloring (optional)

1 tablespoon heavy cream

FOR THE WHITE ICING:

1 egg white1⁄8 teaspoon cream of tartar

3 tablespoons cold water

¾ cup sugar

1 teaspoon corn syrup

½ teaspoon vanilla

FOR THE CAKE:

Preaheat the oven to 350°F.Put the 4 ounces of butter in a large mixing

bowl. Using an electric mixer, beat it until it iscreamy and fluffy, about 1 minute.

Add the sugar and beat until well blended,about 1 minute. Add the eggs and vanilla andbeat again until well blended, about 1 minute.

Add ¼ cup of flour with the salt and beatwell. Add the remaining flour in two batches,beating well after each one.

Break or cut the chocolate into pieces and putthem in the top of a double boiler over boilingwater. Cook, stirring, until the chocolate has melted,

Party Fun!

Pin the Clover on HortonPrint out a large picture of Horton, from Horton Hears a Who!, andtape it to the wall. Use fuzzy, sparkly pink pom-poms as the clovers(which you can purchase at a craft store) and put a sticky-backadhesive on them. At the party, blindfold the kids, spin them 3times, and have them take turns turns trying to pin the clover onHorton’s trunk. Whoever is the closest wins! We gave them starsfor their bellies, just like the Star-Bellied Sneetches have, as prizes.

Gather ’Round to Read A Dr. Seuss party wouldn’t be com-plete without storytime. We decoratedthe living room with the Lorax’s faceand a Horton plush to set the stage fora cozy reading area. We had the kidsget into pairs and read a book together.From The Sneetches and Other Storiesand Dr. Seuss’s ABC to Yertle the Turtleand Fox in Socks, the kids had a greattime reading. It really got everyone inthe mood and excited to play theparty games.

Horton’s Pink Clover Relay Race Set a bowl of pink clovers (we used the same clovers from “Pin the Cloveron Horton”) on one side of the room and a few empty jars on the other.Divide the kids into two teams (they don’t have to have the same numberof players). Have each team member put a clover on a spoon, run across theroom one at a time without dropping it, and place it into the jar—usingonly one hand the entire time. At the end of 3 minutes, whichever team hasthe most clovers in their jar wins.
