Lemon Tarts

PREPARATION TIME: 30 minutes COOKING TIME: 20 minutes (4hrs setting time) SERVINGS: 12

• 2tbspcoconutoil

• 2tspNatvia

Lemon curd• 4eggs

• Juiceof2lemons

• 1tbsplemonzest

• ¾cupcoconutoil

• ½cupNatvia• 12cherries

M E T H O D

1 Preheat the oven to 160°C.

2 Prepare the pastry by combine almond meal and coconut in a bowl.

3 Stir through remaining ingredients for the pastry until a wet dough forms.

4 Push the dough into the tart shells to about 3mm thick. (NOTE: This recipe also works well for a large tart, opposed to mini ones).

5 Place in the oven for 15-20mins or until golden brown. Meanwhile prepare the lemon filling.

6 Placetheeggs,lemonjuiceandzestandNatviaintoaheatproof bowl over a saucepan of simmering water.

7 Whisk the mixture continuously until it thickens to a custard like consistency (this should take about 10mins).

8 Remove from heat and stir through the coconut oil.

9 Spoon mixture in to the cooled tart shells and then refrigerate for at least 4hrs (overnight is best, if you have the time).

10 Decorate with cherries.

Chocolate Strawberry Celebration Cake

I N G R E D I E N T S

For the cake• 200galmondmeal

• 100goatflour

• 50gcocoapowder

• 165gNatvia• 2½tspbakingpowder

• 125mlcoconutoilorbutter,melted

• 4largeeggs

• 125mlmilk(anykindweusedalmond)

• 1½tspvanillaextract

For the chocolate mousse icing• 3smallor2largeavocados

• 35gcocoaorcacaopowder

• 1tspvanillaextract

• 65gNatvia Icing Mix• 40mlmilk(anykind,weusedalmond)

To assemble• 300-400gstrawberries

• pomegranateseeds,cherriesoranyfruit you like to decorate.

M E T H O D

1 Preheat oven to 180°C.

2 Combinealmondmeal,oatflour,cocoapowder,Natviaandbaking powder in a large bowl.

3 Crack eggs into a small bowl and beat lightly. Add eggs, oil, milk and vanilla into the bowl with the dry ingredients. Mix until well combined (but don’t over beat).

4 Line the base of a 20cm round cake tin with baking paper and spray side with cooking oil spray. Pour the mix into the tin and bake for around 40 minutes or until just cooked through.

5 When cool enough to handle, remove cake from cake tin and allow to cool on a wire rack.

6 Meanwhiletomakethechocmousseicing,scoopthefleshoutofthe avocados and place into the bowl of a small processor or high powered blender. Add cocoa, vanilla, Natvia and milk and process until smooth. Refrigerate until required.

7 Toassemble:Whencakeiscooled,cutinhalfhorizontallyandspread the bottom half with a layer of mousse. Top with a layer of sliced strawberries. Spread the cut side of the cake top with more mousse then place on top of strawberries. Spread the top with remaining mousse and decorate with remaining strawberries, cherries and pomegranate.

TIPSTo make this cake dairy free, choose a plant-based milk to make the cake and icing. To make this recipe coeliac friendly you can replace the oat flour with a gluten free flour (may need to adjust amount depending on type used) or replace with another cup of almond meal. To add an extra Christmas touch, replace the vanilla in the mousse icing with a few teaspoons of brandy or to taste.

1 Combine all ingredients, except the orange juice, Natvia and coconut oil, in a food processor and blend until it forms a crumb-like consistency.

2 Remove mixture from the processor and place into a large mixing bowl.

3 Stir in Natvia into orange juice.

4 Add the sweetened orange juice and coconut oil to the mixture and knead the mixture until it comes into a ball.

5 Pack the mixture into a cling filmed pudding mold or a small deep bowl and refrigerate overnight or until solid.

6 ServewithfreshberriesandasimpleglazeofNatviaIcingMix, almond milk and vanilla extract.

Chocolate Gingerbread Cookies

• 400ggluten-freeflourmix

• 1½tspbakingsoda

• ½tspbakingpowder

• 120mlmaplesyrup (or any other liquid sweetener)

• ½cup(125g)coconutoil,melted

• 45gDu Chocolat powder

• 60mlalmondmilk

M E T H O D

1 Preheat the oven to 180°C. Line 4 baking trays with greaseproof paper.

2 Sift together all the dry ingredients into a large mixing bowl.

3 In a separate bowl, whisk together the melted coconut oil, maple syrup, and milk.

4 Using a wooden spoon, stir the wet ingredients into the dry until combined. Flatten the dough into a disk and refrigerate, wrapped in cling-firm for 1 hour.

5 Roll the dough between two sheets of greaseproof paper until about 0.6cm thick. Cut out desired shapes and place on prepared trays, leaving about 3cm between each cookie.

6 Bake for 8 minutes or until the edges are slightly browning. Cool completely before icing and decorating.

Classic Chocolate Coconut Ice Cream

1 Place all the ingredients in a blender and blend until combined. Refrigerate for 2 hours or until cold.

2 Once cold, pour into an ice-cream maker and churn according to manufacturer’s instructions.

Dark Chocolate & Orange Truffles

M E T H O D

1 Placethealmondsinafoodprocessorandblitzuntilitresembles almond meal- it should be quite fine.

2 Add the cacao powder, Du Chocolat, dates, maple syrup, coconut oilandorangezestandblitzuntilthemixturecomestogether. Add up to 1 tbsp of still water if the mixture isn’t coming together.

3 Transfer the mixture to a bowl and refrigerate for 10 minutes.

4 Meanwhile prepare to prepare the chocolate, mixt together all the ingredients in a bowl. Set aside.

5 Roll a tablespoonful of the mixture into a ball and coat with the prepared chocolate icing. Place on a cooling rack for the excess chocolatetodripanddecoratewithorangezest.Repeatwith remaining mixture and serve chilled.

Double Chocolate Layer Cake

M E T H O D

For the frosting:1 Beat together the prepared coconut whipped cream, cocoa powder, Du Chocolat powder and maple syrup.

2 Refrigerate until needed.

For the cake: 1 Preheat the oven to 180°C. Grease and line the base of 3x 20cm round cake tins. Set aside.

2 Inalargebowl,combinetheflours,cocoapowder,Natvia, Du Chocolat, baking soda and baking powder, whisking well to combine.

3 In a separate bowl, whisk together the melted coconut oil, lemon juice, vanilla extract and hot water.

4 Whisk the wet ingredients into the dry until just combined. Divide the batter evenly between the prepared tins.

5 Bake for 20 minutes or until the cake springs back to the touch. Cool completely in the tins before icing.

For the base:1 Combine. Press the mixture into a lined baking tin. Refrigerate. until needed.

Christmas Fruit Mince Tarts

M E T H O D

For the filling:1 Combine all filling ingredients in a food processor until mostly mince. Refrigerate. You may add “real” rum if you wish. Taste to your liking.

2 Preheat oven to 180°C. Spray 9 tart cases with cooking spray.

For the pastry:1 Meltbutter.Whiskegg.Combinepastryingredients&addsiftedflour.Mix.

2 Presspastrydoughfirmlytogether&placeonaflouredboard.Separate firstlyinto¾forthebasesofthetartsand¼forthestarsontop (ensure you have a star cookie cutter).

3 Separatethe¾into3equalportions(youwillmake3basesfromeach). Separatethe¼ofthepastryinto3equalportions.

4 Rollouteachsectionofpastryonaboardcoveredwithflouredbaking paper. Fold over the paper & roll with a rolling pin.

5 Use a coffee mug to cut out each of the 9 tart bases. Press pastry into each case, pressing against the sides of the tart case.

6 Gently roll out pastry to cut out 9 stars for the tops of the tarts. Note:useadditionalflouronyourhands&useaspatulatoliftthe 3mm thin pastry.

7 Place tarts on a baking tray & spoon in approx. 1 tbsp of fruit mixture into each tart. Bake for 20 minutes.

8 Remove from tart cases & place on baking tray to cool.

M E T H O D

1 Rinse strawberries and cut around the top of each strawberry. Remove the top, (enough for a hat). Clean out the whole strawberry with a paring knife, if necessary (some of them are hollow already. Prepare all of the strawberries and set aside.

2 In a mixing bowl, beat cream cheese, powdered Natvia, and vanilla extractuntilcreamy.AddcreamcheesemixtoapipingbagorZiploc with the corner snipped off. Fill the strawberries with cheesecake mixture.

3 Once strawberries are filled, top with the ‘hats.’ Decorate according to photo with black sesame seeds.

4 If not serving immediately, refrigerate until serving.

Mini Christmas Pudding Cupcakes

M E T H O D

For the cupcakes:1 Preheatovento175°C.

2 Line a muffin tin with 9 silicone cupcake liners.

3 Inamediumbowl,sifttogethercoconutflour,almondflour,cacaopowder, protein powder, Natvia, baking powder, salt and espresso powder.

4 In a small bowl, whisk together eggs, vanilla extract, apple sauce and almond milk.

5 Add wet ingredients to dry ingredients and stir until just incorporated.

6 Divide batter evenly into cupcake liners.

7 Bake for 15 minutes, or until a toothpick inserted comes out clean.

8 Allow cupcakes to cool completely on a wire rack before decorating.

For the glaze and decorating:1 Sift icing mix into a bowl.
