In an era where most adults are overweight for at least part of their life, there’s no shortage of people offering
quick-fix miracle weight loss diets, potions and gadgets. Some of them – not all – might actually help you lose some weight, but the vast majority of the time, that

Q: What’s the opposite of a yo-yo dieter? A: Sam Ince. She lost 48 kilos in less than a year – and 15 years later she hasn’t slipped back into old habits. “The road was never straight and narrow,” she says. “But the one thing that kept me going was a picture of the ‘old’ me and the knowing I could NEVER go back to that lifestyle again.”
Meet Sam Ince, the emotional eater.
That’s her on the left, next to Sam Ince,
the calisthenics teacher, cyclist and avid
hiker. Yes, you read correctly. Fifteen
years after starting her UltraLite
program, the new Sam is more than fifty
kilograms lighter than the old Sam – and
she lost that first 48 in under a year.
We’ve all heard stories of people losing
phenomenal amounts of weight in short
periods before. But as we soon find out,
… AND STAYING DOWN!

most of these weight loss stories hide
the postscript: where our hero finds their
new diet or exercise regime impossible
to maintain, and they soon return to
their original weight – or higher. This is
what sets Sam’s story apart from so
many others. Using the UltraLite
program, Sam has kept that weight off
by using a ketogenic diet that changed
the way she approached food for good.
“For me, getting on this program was
exciting because it was educating me on
portion size, what was good for my
body, and how it was going to change
the way I looked at food,” Sam says.
“And it has.”
So what is a ketogenic diet? Ketogenic
diets are low-carbohydrate, high-fat
diets that, unlike other low-carb
regimens such as Atkins, rely on a
moderate intake of protein. For a long
time ketogenic diets were used mainly
for treating epilepsy in children, but
more recently it’s been used as a way to
lose weight and improve overall health
outcomes.
Diets with the term “high-fat” in them
might sound antithetical to weight loss,
but there’s sound science behind it.
When the body has few carbohydrates
to break down into glucose, it turns fat
into fatty acids and ‘ketone bodies’ –
which can replace glucose as an energy
source. Though not all fat is ideal for
achieving this ‘ketonic’ state; medium
chain triglycerides (made from fatty acids
with short carbon chains) are the best
fats for this diet. You’ll find plenty of these
‘MCTs’ in foods like coconut oils.
For Sam, the change to her weight was
immediate, and after some initial lethargy,
her body quickly adapted to the new
program and she found her energy levels
rising as the weight came off. Importantly,
the regime also trained her brain to beat
the cravings for the high-carb fast food
that she used to use for comfort. Very
quickly Sam went from an emotional
eater who felt her life was “falling apart”,
to an energetic, more confident and much
healthier woman.
So should we ditch the old food pyramid,
embrace all fat and crack out the fried
chicken? Not exactly. Consuming the
wrong fats won’t help you lose weight,
and if you produce too many ketones
(ketoacidosis) you’ll put your health at
risk. What you should do is find a
qualified consultant to guide you through
the process – like Sam did – because that
can make the difference between trying
out a diet and embracing a lifestyle
genuine change.
“Now that I can control what I eat, there’s
no problem,” Sam says. “You don’t feel
restricted in any way.”

LOW CARB RASPBERRY & COCONUT MUFFINS
2½ cups almond flour1 teaspoon cinnamon
1 teaspoon GF baking powder4 free range eggs, beaten
¼ cup coconut oil ¼ cup Natvia
1 cup raspberries ¼ cup coconut flakes
Preheat oven to 180°C.
Combine flour, cinnamon and baking powder in a large bowl.
Add the eggs, oil and Natvia and mix thoroughly.
Carefully fold in the berries and coconut. If the mixture is very thick, add ½ cup of water and mix thoroughly.
Spoon mixture into lightly greased muffin tins (10-12).
Bake for approximately 30 minutes or until a skewer inserted comes out clean.
Preparation: 10 minutes, Cooking: 30 minutes

LAOS BEEF SALAD200g lean beef mince
¼ teaspoon salt 1 teaspoon fish sauce
½ teaspoonbeef stock powder ½ teaspoon Natvia
½ - 1 teaspoon chilli flakes 1 clove of garlic, chopped
2 spring onions, green part only, finely sliced 1 stalk of lemon grass, white section only, thinly sliced
1 tablespoon grated ginger 1 tablespoon lime juice 1 teaspoon corn flour
6 green beans, thinly sliced 1 cup bean sprouts, washed ¼ cup chopped mint leaves
¼ cup chopped fresh coriander leaves and stem ¼ cup basil (preferably Thai)
¼ cup Vietnamese mint
TO SERVE4-6 iceberg lettuce leaves
8-10 slices of cucumber Extra fresh herbs
Heat a wok or fry pan over high heat, spray with oil and saute mince with salt, fish sauce, beef stock powder, Natvia, chilli flakes and garlic for a few minutes until just cooked (Don’t overcook; in fact, the dish is often eaten with the meat almost raw). Remove from heat and toss through remaining ingredients.
To serve, divide lettuce between two plates, spoon mince into lettuce cups, top with cucumber and herbs, then roll up and eat with your fingers.

In October of 2011, beautician and mum
of three Lorena Muzzin started a diet for
the last time. After trying “everything
that you could think of”, Lorena had
even considered drastic lapband
surgery, but she knew that wasn’t going
to be the solution.
“Being from an Italian background, food
is a very big part of our culture and our
traditions, and I wanted to be a good
role model to my kids,” explains Lorena.
“You can have food, but eat the right
food and it’s going to make you feel
good and make your body function
better.”
Determined to make a positive change
to her life and show her kids that food
didn’t have to be the enemy of health,
Lorena tried UltraLite, and by June of
2012 – just nine months after starting –
she had lost an incredible 23kg and
almost a metre in measurements to
achieve her goal weight.

and easy” carbs, with plenty of bread,
coffee, chocolate and a habit of “not
even thinking” about what she was
eating were over. While it was
challenging to begin with, Lorena saw
the results straight away, and found the

After
TANGY SWEET MUSTARD GINGER TROUT
3-4 teaspoon Natvia3-4 teaspoons olive oil + 1-2 teaspoon hot water, as required
3 teaspoons Dijon or mild English mustard*1-2 teaspoons grated fresh ginger (about 5g)
450-500g ocean trout fillet
Preheat oven to 175˚C (conventional)
Blend all seasonings together in a small bowl.**
Place in a greased medium baking dish.
Bake for 15-20 min until the fish just begins to flake or less/more according to taste.

Preparation: 15 minutes, Cooking: 20 minutes makes 4
Dijon or mild English mustard*: check that it’s sugar free.
**Adding the extra hot water if too dry to “brush”. It should be about the consistency of yoghurt. Brush
evenly over the trout.
OPTIONAL COOKING METHOD: Try it wrapped in foil and steam baked in oven or cooked under the grill. This method gives a juicier fleshed fish and tastes more like the fish has been marinated in the flavours. It doesn’t result in a semi-crispy tangy crust as the unwrapped
method described above.

Sometimes in our lives we reach a point
where enough is enough. For Vicki
Salisbury, that point came at 59, when
she decided to make turning 60
something she wanted to get excited
about. At her 60th, Vicki determined,
she would celebrate not just her
birthday but also the occasion of having
achieved her goal weight.
Having tried various diets since the age
of 13, Vicki was aware that losing the
weight was not a simple task. But when
she heard of UltraLite from friends, Vicki
was determined to make a lasting
change – and a change she could get
excited about. As you can see, the
changes were made!

what I had achieved and felt so proud
because I looked better, felt younger
and became fitter than I had in 20
years,” Vicki says.
Both Vicki and her husband David
enrolled in the five-week challenge, and
initially found the weightlifting difficult
and the food re-education daunting. But
after the first few weeks the regime
became easier and felt more natural,
and Vicki and her husband stayed on the
challenge for 11 months. Amazingly, Vicki
lost 33.4kgs during this time, and was
even able to travel overseas for a month
of holidaying without gaining a gram!

enjoyed cooking our own meals, versus
package food, and learning about eating
clean and following the food plan is easy
and healthy,” says Vicki.
“I am a major advocate for this way of
eating because it makes sense!”
Just as she told herself that she would,
by her 60th birthday Vicki was thrilled
about what she had achieved, and felt
“so proud because I looked better, felt
younger and became fitter than I had in
20 years”.
Vicki’s present to herself included a life
with more energy, a better immune
system, better moods and much less
aches and pains.
“My legs used to ache so badly I would
just go to sleep, but that has all
disappeared,” she says. “I run rings
around most of the women younger than
me and everyone can’t believe the change
in me. I look and feel great.”
Not only has she lost the weight, Vicki has
gained a new career: she has now
completed her yoga teaching
certification, which along with her own
daily yoga practice, walking and gym
sessions, has helped her to keep moving
and physically active to maintain her
weight and fitness.
If you’ve got a birthday you want to look
forward to, Vicki suggests giving UltraLite
a go: “Do it, nothing tastes as good as
thin feels!”

STEAMED PRAWN AND EGG CUSTARDS
4 eggs 2 tablespoons cold water
2 teaspoons unsweetened soy sauce 1½ teaspoons Natvia
160g small cooked peeled prawns 2 (25g) fresh or pre-soaked dried shiitake mushrooms, thinly sliced
1 green shallot, ends trimmed, thinly sliced lengthways
Use a fork to whisk the eggs, water, Natvia and soy sauce together in a jug. Set aside until required.
Divide the prawns evenly among four 250ml (1cup) capacity heatproof bowls.
Pour over the egg mixture.
Sprinkle with the mushrooms and shallots.
Cover each bowl tightly with foil. Place the bowls in a large steamer over a saucepan of boiling water and steam for 10-12 minutes or until just set. Serve immediately.

What did you want to change about your diet and lifestyle before you lost the weight? 已Nikki: I wanted to go back to the weight
I had 10 years ago. I noticed that I was
putting on too much weight around my
waistline; that it was hard bending over;
that my trousers & skirts were becoming
a little bit tight; and that I suffered
regularly from indigestion. I was also
aware that my dress size had increased,
all of which was not healthy, necessary
or pleasant to look at my profile in the
mirror every day! This meant I had to
lose 10kg, which was a target that at the
time seemed pretty hard to achieve.
Had you tried any diets or special exercise regimes before UltraLite? Nikki: Yes several but rather half-
heartedly. I also bought several books
but again found them difficult to follow
for any length of time. I knew that if I
was serious about losing weight, then I
would have to go to someone who
would advise and monitor me. I also
realised that everyone’s metabolisms are
different, and until I knew quite how

mine worked and what foods I should or
should not be eating, then I was not
going to lose weight in any meaningful
way.
How did you hear about UltraLite? Nikki: By visiting my Naturopath in
Adelaide, SA.
Did you find adjusting to the UltraLite nutrition plan difficult? Nikki: To begin with it needed some
adjusting to, but that was because I had
to weigh all my food portions at first.
When one is overweight, one has a
much larger appetite. So by weighing
out the food and following the daily
food manual and eating from the
UltraLite recipe book, I would say a week
into the programme and I was beginning
to adjust to it quite comfortably.
Do you feel that the UltraLite plan is hard to stick to? Nikki: No as it makes a lot of sense and
there certainly is a feeling of well-being
after one has been on the plan for 3 to 4
weeks.
REAPING THE REWARDS!
After
Do you have more energy since taking up the UltraLite nutrition plan? Nikki: Yes because of the gradual weight loss.
How else has your life changed since your weight loss? Nikki: I am much happier with my health and body weight and have gone down 2
dress sizes. I no longer have to worry about the profile in the mirror. It is also nice to
have a great many compliments from friends who have noticed my weight loss.
What advice would you give to somebody who’s thinking about trying UltraLite? Nikki: I have already recommended it to several friends. Take your time in losing
weight and if you do it gradually and slowly get into the habit of changing your food
habits, then you will reap a great many rewards for the future.

HOME MADE BBQ SAUCE1 can organic sugar free tomato sauce
Half a can organic tomato paste2 tablespoons Natvia
1 teaspoon paprika1 teaspoon ground garlic powder
Herbs as you desire1 brown onion
Caramelize onion with Natvia, honey and spices. Then add tomato paste.
Cook for 10 minutes.
Add tomato sauce.
Cool until thick.
Store in a jar in the fridge.
Preparation: 5 minutes, Cooking: 10-15 minutes Makes ¼ cup

LEMON MERINGUE PROTEIN SMOOTHIE
200ml Lite coconut milk (or any milk you prefer)100g plain Greek yogurt
1 Scoop of MRM Vanilla Protein Powder (any brand of vanilla or non-flavoured protein would work)
1 teaspoon guar gum2 teaspoons Natvia
1-2 tablespoon lemon juice4-5 ice cubes
Zest of half a lemon
Chuck everything in a blender and pulse until smooth.
Pour into a jar or glass and add a slice of lemon to the rim
Preparation: 3 minutes, Cooking: 5 minutes Serves 1
