Lois Ellen Frank received a James Beard Award for her cookbook, Foods of the Southwest Indian

Nations. We are so proud to have one of our resident chefs win this prestigious award.

James Campbell Caruso has a cookbook coming out in the spring of 2004. It will be filled with

all of the wonderful Spanish appetizers from his restaurant, El Farol.

Daniel Hoyer is busy traveling and researching foods of Mexico for his upcoming cookbook on

Mexican cuisine.

The retail staff has been very busy expanding and rearranging the floor. It looks great and is so

easy to shop. Stop in, visit us and see the improvements.

The most exciting news of all is the arrival of the newest member of the

Santa Fe School of Cooking team. Haley Parker Ammerman was born

on June 19th. Nicole and daughter are doing well. Both can be found

at the School in the new office/nursery on many days of the week.

Toasting Spice TipTo dry toast whole spices, heat a small skillet over medium-highheat for 1 minute. Add the whole seeds and stir constantlyuntil fragrant and their color has begun to deepen, taking carenot to burn the seeds. Pour the toasted seeds onto another plateto cool. Place cooled seeds in a coffee grinder or spice grinderand finely grind the toasted seeds. A suribachi is great forgrinding. Store in a tightly sealed container away from directsunlight.
