What is Ayurveda? Ayurveda is a holistic approach to health. Through Ayurvedic principles people can prevent and treat most illnesses, and maintain a balanced body and mind. One needs to know and follow the diet and lifestyle that is uniquely suitable to their dominant energetic or doshic type (vata, pita, kapha) and choose foods that help correct specific symptoms associated with significant disturbance of any of the doshas. Led by Gacheke Simons the Oct 2012 course will train domestic staff on: 1 Principles of healthy low fat cooking, importance of variety in daily cooking, safe

management of food, the fridge and freezer and new knowledge about using more natural foods that are available locally.

. 2. How to prepare a wide variety of delicious meals using only natural and mostly tri-

doshic food items available in Maputo. Tri-doshic means foods that do not cause any imbalances in the doshas and therefore do not cause disease or excess weight or energy depletion.
