• 1 can pizza dough, equivalent to 1 large pizza

• 20 cherry or grape tomatoes

• 4 oz. mozzarella, shredded

• 1/2 cup loosely packed fresh basil

leaves, torn into bite-sized pieces

• 2 Tbsp. butter, melted

• 1 Tbsp. dried oregano

Preheat oven to 400 degrees. Grease a pie plate with cooking spray. When using canned pizza dough, use a pizza slicer to cut dough into 24 equal squares. Make each of the bites by slicing a tomato in two lengthwise, and then sandwiching a piece of cheese and a torn piece of basil between the tomato halves. Then gently place the little tomato sandwich in the center of the pizza dough, and wrap the dough around it to make a ball. Pinch the ends together so that they are secure, then place each ball seam-side-down in the greased pie pan. Repeat with remaining ingredients until the pan is full. Brush the tops of the little dough balls with melted butter, then sprinkle with the dried oregano. Bake for about 20 minutes, or until the tops are slightly golden. Remove and serve immediately.

Tip: For an indulgent touch, dip in Alessi’s Balsamic VInegar from Murray’s Market.

Boy are we having fun this month! We are at the peak of the summer season and we’ve only got a month left before the kids head back to

school and things slow down a bit around here. The rain fi nally let up and it seems like everyone has been out enjoying the sunshine.

This past month we ran a lobster photo contest and I was amazed at all the entries we received. There were big ones, funny ones, crazy ones, sexy ones and just plain strange ones! The cover shot and winner of the contest is Tiffany King. She’s defi nitely not afraid of a little lobster! It makes me wonder if that lobster in her mouth didn’t show her who’s boss with a fl ick of his tail! We tried to include as many of the other photos as we could throughout the rest of this issue. Thank you to all who participated!
