LAURANIE NONOTTE, CHOCOLATE SOMMELIER
« My role as a Chocolate Sommelier is to discover, taste and select the best chocolates, from around the world. This allows me to offer them in tastings, along or alongside drinks or even a meal. I apply the same curiosity to the products I will match with chocolate in my tastings, whether they be Champagne, cheese or a meal cooked by a Chef. Beyond the very product, I like going to visit the people and areas associated with them, cocoa plantations or vineyards for example. That’s how in 2013, I met Peruvian cocoa growers and Cognac winemakers in the same month. »
AN AWAKENING OF EMOTIONS « After my tastings, I fill notebooks with comments and charts made of objective criteria. But my job, my passion, is much more than that; I’m here to convey not only my knowledge, but also sensory experience and pleasure. Telling a story about chocolate, plunging my clients into the heart of a cocoa plantation, bringing back the souvenir of a homemade hot chocolate, then surprising them with an unexpected pairing like a buckwheat praliné or salt’n peper chocolate piece…. These are many possibilities to escape that I can offer during a tasting. »

A Cheesemonger and a Chocolate Expert will guide you through the discovery of a « buffet gourmand », that will easily replace a lunch or a dinner. Four to five pairings, based on regional specialties and seasonal cheeses will delight the beginners as the connoisseurs.
