nd, that’s a wrap! I cannot believe we are wrapping up another year of school, an-other birthday and another year of giving back to our community.I have so many people to thank for such a successful year, but there’s not enough space. So in a blanket statement, thank

you to every single person who paid their dues, sponsored a provisional, fulfilled their placement hours, worked their MSM shift, chaired a community project, etc.

Thank you to my entire Board. I could not have asked for a bet-ter group of ladies and appreciate the time each and every one of you gave to serve the league and our community this year.

A special thank you to Michele Smith, my Sustaining Advisor and Past JL President, for giving your time so graciously. You are an inspiration.

The success of the Junior League depends on the collective ef-forts of EVERYONE.

Give your students a field trip to remember at the best chil-dren's museum in the area. Explore interactive fun at your own pace or let us help you customize an immersive, standards-based experience. From archaeological digs to guided, engaging science experiments, there is so much for your group to see and do here.

Designed for children pre-school through fifth grade, youth ex-plore hands-on science, technology, engineering, and math con-cepts through experimenting and play. Our groups trips are for 10 or more children, with a child to adult ratio of 8 children to one adult. 75 child maximum.

On Tuesday, April 12, members enjoyed mini meetings doing Yoga, learning about home decorating, party planning, tasting unique wines and beer, and lots of other fun activities. Mini meetings are great team building opportunities and give League members a chance to spend time together outside of regular committee place-ments and business meetings.

yoga classIf you're like most League members, most of your day is spent taking care of others,

from work and family to League commitment, "Me Time" is always, always in short sup-ply. The Yoga Mini Meeting at the League house lead by Leia Kolhler was an hour and a half of relaxation. Such a treat!

What do you get when you put a group of JLB ladies together, twirl them around and add a little passé, plié and relevé? A group of ladies who had a fantastic work-out! Bonnie Cokinos School of Dance gra-ciously hosted a Barre Class Mini Meeting and left us wanting more. If you’re interest-ed in participating in a barre class, please contact Morgan or Emma at Bonnie Coki-nos. Thanks JLB and Bonnie’s for the op-portunity to get our ballet on!

We had such a fun time at our Beer Tasting Mini Meeting, held at the home of Gillian Jenkins. Bobby Beaver picked out a nice selection of beers that paired very well with dishes prepared from our Dining without Reser-vations cookbook. The weather was so pleasant, that we en-joyed our evening outside on the front porch.

A wonderful time was had by all at the recent Wine Tasting Mini Meeting. Good food, good wine and great company. Love JLB Mini Meetings.

By Emily WheelerThe Junior League of Beaumont’s incred-

ible and motivated leader, Dana Babineaux, gave me an inside look at how being a real life “Super Woman” is possible. Dana has been a mother for 9 years. Her first child, a 135 pound Great Dane named Hogan, or “my Sweet Hogan” as she endearingly re-fers to him, was Dana’s main sidekick for many years before she had her twin boys, Max and Knox, who are now 5 years old.

“Hogan is one of those ‘once in a lifetime’ dogs. He is so amazing. His life changed as much as Slate and mine when the twins came along. He was accustomed to going EVERYWHERE with me and after they ar-rived, he handled his second place position with grace,” Dana said.

Dana’s twins, born at 38 weeks, were easy as infants. They took to a schedule like champions and made Dana’s life easier than she expected. Now, they are two very different individuals and bring daily chal-lenges, humor, perfection and chaos. Some days are crazy and some go just as planned. “Parenthood is scary and anyone who says it isn’t is either a Patron Saint or lying. Some days my kids cross over to the dark side and I go to bed feeling defeated, but the fun and wonderful days outnumber all the rest.”

Juggling the twins, her sweet and toler-ant pup, super supportive husband, Slate, a demanding career and busy volunteer obligations isn’t easy but it isn’t difficult either. Dana has found a balance and a

rhythm that works for her and her fam-ily. She went back to work when the boys were 2 years old and had already accepted her job as President of the Junior League prior to jumping back into the work scene, therefore inadvertently filling her plate to the brim. Dana says, “There is no magic formula on how to do it all and make it look easy. I just figure it out along the way.”

Life at the Babineaux house gets started before 7:00am. There are lunches to be made, two 5 years old boys to get dressed and fed and out the door by 7:30am for PreK at St. Anne. Slate takes the boys to school where they stay for the extended day program until Dana can pick them up. On any given evening there is a Tee Ball game or practice, dinner, volunteer meet-ings, baths, and all before 8:00pm bedtime. Dana does laundry every night of the week and never goes to sleep with a single dish in her sink...the kitchen is spotless when the lights go out. The thought of doing laundry all weekend drives her crazy and a clean kitchen in the morning helps her jumpstart her day. “When I wake up every morning, I like to start my day with a plan and it doesn’t include cleaning up messes from the day before.”

She’s very task oriented and has lots of “to do” lists on paper. As someone who loves physically checking things off the list, you won’t see this leader using an iPhone calendar, as the digital calendar world fails her every time.

The key to success is simply being orga-nized. Dana prioritizes, stays up late, and works hard ensure what she is juggling is meaningful and important. She does not fill her plate with anything that does not feel right or that she cannot give her full attention to. When Dana was asked to give advice to young women in the league, she responded with an emphatic “Supporting Husband!” Dana has been in the league for 13 years and her husband has never complained about her involvement...if anything, he has done quite the opposite and can often be found volunteering on JLB projects himself. “Having a partner that is on your side makes all the difference in the world.”

A super mom, volunteer, and career woman can be found in Dana Babineaux and she has led our league with dignity and grace this year. We can all learn from women like Dana who work hard to make it all happen without blinking an eye, but know there is a lot of organization and planning behind the scenes.

The year has come to an end and the gavel will be passed from Dana Babineaux to Diana Miles at the May Dinner. Diana has been an integral part of the Junior League of Beaumont and will do great things in her presidency, as did all those before her. Al-though Diana has the entire summer to strategize for the coming year, she is already working on her plan. Following are some fun facts about the new President!

According to Diana:I’m from Texarkana, TEXAS (twin city with Arkansas and there

is huge rivalry). My husband Rodney and I met when I was in 9th grade and we were highschool sweethearts. We’ve been to-gether for over half of our lives. We married in June 1995 and are proud parents of a beautiful daughter Morgan Elizabeth who is 12. My 89 y/o mother also lives with us. I finished nursing school in Texarkana. My husband changed his major and still needed to finish college so we moved to Beaumont to join my sister and her husband. I’m a certified infection control nurse and I’m the Infec-tion Control Director for Christus Continuing Care. I oversee the infection control programs at our long-term acute care hospitals in Texas, Arkansas, Georgia, Iowa and Louisiana.

I got involved in Junior League because My friend Donna Swain is a sustainer, and she would always talk about things she was doing in Junior League. I asked her about the League one day and the rest

is history. She was my sponsor and asked Cathy Spidle to sponsor with her. I’ve crossed paths with so many people I may have never known if I wasn’t in the League. It’s so rewarding to give back to the community while shaping the community for your children.

I really love JLB because it’s an organization of so many women who are truly selfless, giving, and caring. All of us have a million things to do as mothers, career women, wives, etc., but we find time to make sure other people and organizations in the commu-nity are supported. Those are characteristics of a nurse, so I guess I was meant to do this for a living as well as in my spare time.

I’m proud to be the next president and I have so many goals. I do hope to increase our membership and retain members that we currently have. I’d love for the League to get our name back in the community and let everyone know what we do and why we exist.

My advice for new members and first year actives... the provi-sional year can be overwhelming and you may still feel lost your first year. That’s normal and hang in there! So many of our mem-bers are willing to help, so please ask if you are confused about something or just want clarification about a placement or project. Try to stay engaged during the meetings, pay attention and mingle.

And something you should know about me... my daughter and many of my friends will tell you I’m a germ-a-phobe. I am and I’m proud of it. I’m just very cautious and clean!

By Meg Baertl BrownOn Saturday, April 9th, the Junior League of Beaumont’s Go Girl

Go! committee put on its Go Girl Go! program of empowerment for young girls in the Southeast Texas community. Brittney Teakell, the chair of the Go Girl Go! and her committee worked hard to find the most influential members in our community to speak to the girls at Girl’s Haven. Speakers included Get Wright, city coun-cil member of Beaumont and Erica Reeves, co-owner of Crossfit Beaumont, who both talked about the importance of being true to yourself and focused on being confident and responsible of one’s own actions. Nutrition and exercise were also talked about throughout the day. The girls focused on two scenarios where female athletes struggled with body confidence but, prevailed through their struggles and became national champions. Fitness

and exercise tips were also discussed and even exhibited through an early morning Zumba class and an afternoon mini-cheer camp put on by two Lamar University cheerleaders.

The girls were very responsive and had tons of fun with the Go Girl Go! guests. The Go Girl Go! is happy to share this opportunity with the girls and hope to further impact our community in the upcoming future!

The Junior League of Beaumont participates in many projects that enhance our community. The Community Assistance Fund is a valuable avenue that helps the league support other non-profit organizations who are working daily to make our communities better, stronger and healthier. The fund was established to meet the critical, emergency and short-term needs of our community by providing funds to eligible, non-profit, tax exempt organiza-

tions in Beaumont. Twice a year the CAF committee distributes money to deserving 501 (C3) organizations. The money is awarded based on specific criteria which include the use of funds, headquarters of the organization must be in Beaumont and they must have a local board. The funds must also be used within the Beaumont community. Our mis-sion and values statements help guide the committee in their selection. Those who have received a CAF grant in the last 12 months as well as our current projects are ineligible to receive a CAF grant.

NuTriTioN ServiceS for SeNiorSAwarded $800.00The grant will go toward purchasing materials and sup-plies to build a wheelchair accessible gardening bed for the physically challenged gardeners. They will provide signage on the bed indicating the Junior League of Beau-mont sponsored the project.

GoldeN TriaNGle reGioN 10 Girl ScouTSAwarded $1,000.00The grant will go towards hosting a S.T.E.M. based work-shop for middle school and High School girl scouts.

Jack aNd Jill BeaumoNT chapTerAwarded $1,000.00They will use the funds to purchase books and assemble library boxes to drop off in low performing BISD schools.

STaBle SpiriTAwarded $1,200.00The funds will go toward building a fence to enclose a large area of grass for the horses. This will allow the horses to graze on fresh grass and not just hay to ensure happy and healthy horses.

Princess Alana Quinn ChristopherMiss Alana Quinn Christopher, daughter of Monty and Holly Christopher (sustainer),

is a talented athlete and great student. A West Brook High School senior, she is on the A/B honor roll and has been a member of the National Honor Society since 2014. Alana has been a West Brook cheerleader for the past 4 years. She was Captain of the Junior Varsity cheer team her junior year and has been a UCA All American Cheerleader both her junior and senior year.

Her involvement with the City of Beaumont includes being a member of the Symphony League of Beaumont Youth Guild and she was presented as a Symphony League Debu-tante in November 2015. Alana has been involved in Student Council, Young Life, Gift of Life, West Brook Fish Camp and camp counselor for the Beaumont Heritage Society. She has also been employed with Market Basket for the past year.

Alana’s future plans are to attend Texas A&M University in the fall to study Urban and Regional Planning. She is honored to be sponsored by the Junior League of Beaumont during her participation in the Neches River Festival 2016

Princess Mollie Ann NelsonMiss Mollie Ann Nelson, daughter of Ms. Barbara Mazoch Nelson (Sustainer) and Mr.

John Henry Nelson, proudly represented the Sustainers of the Junior League of Beau-mont in the 2016 Neches River Festival. Mollie accepted the honor of being elected Third Lady in Waiting at this year’s festival. She is a member of the Symphony League of Beau-mont Youth Guild and participated in the 2012 Symphony Belle program as well as the 2015 Symphony Debutante program.

Mollie attends Monsignor Kelly Catholic High School where she has participated in the Pink Club, Anchor Club and Latin Club. She played Varsity Volleyball for four years. Mollie was selected by the faculty to attend the Mattingly Leadership Program and to be a Stu-dent Recruiter. She was elected by the senior class to be a 2015 Homecoming Princess. Mollie attended Camp Ozark in Arkansas for seven years where she was honored with the Order of the Arrow Award three years. She has volunteered in the community at the Julie Rogers Gift of Life Color Run, All Saints Summer Explorers , Humane Society of Southeast Texas, St. Mark’s and St. Anne’s Vacation Bible School.

Mollie will be attending Louisiana State University in the Fall.

Lights. I loved growing up there since we lived on the lake and could drive the jet ski to my

friends houses at 13 years old!Education: I attended Baylor University for undergrad and decided to go to Texas Wom-en's University in Dallas for my Masters in Occupational TherapyOccupation: I absolutely love being an occupational therapist and helping others. Most of the time I don't even feel like I am working because I enjoy my job so much! The best feeling is running into my patients in the community and seeing that they are doing great!Hobbies: Well I love to wa-ter ski, scuba dive, travel and spend time with friends and family. Right now I guess you could say my hobby is cam-paigning for my husband, Bay-lor, who is running for Judge of the 136th district court. Family: Baylor and I have been married for 10 years and have 2 children, Baylor II who is 4 and Elizabeth who is almost a year.Pets: I have a 9 year old Wes-tie named Snuggles who is the sweetest dog. My husband did not want to get a Westie and wanted a “manly” dog so he only agreed to let me get her if he could name the dog. He decided on the most wussy name – Snuggles. Right now I only have time for the Symphony League and Jef-ferson County Bar Auxiliary Association but have been in-volved with the Julie Rogers Gift of Life in the past.What did you aspire to be as a child? Well, I thought I wanted to be an astronaut, teacher or nurse growing up but I ultimately knew I would end up doing something in the medical field. If all else failed I knew I could take over the family furniture

business which is 77 years old but that was last resort!Favorite Movie or Book:Steel Magnolias, which was filmed in my home town and Christmas Vacation (I can recite the entire movie in my sleep)Your favorite guilty plea-sure: Rao’s chocolate fudge cake with strawberries with a glass of champagneWho has influenced your life the most? My parents helped guide me to be the per-son I am today. My mom was very involved in community service which influenced me to do the same.The best life lesson you have learned: Treat others as you would want to be treated.People would be surprised to know that you... have jumped off a 4500 foot moun-tain and hang glided around Christ Redeemer in Rio de Ja-neiro.Favorite thing about Texas: Don’t laugh – but I love being able to drive 45 minutes to the beach. Although it may not be the prettiest beach, it is still relaxing to sit on the deck and read a good book with a glass of wine.The three accomplishments you are most proud of: My family, my decision to be a therapist, and graduating from Baylor UniversityWhat are you passionate about? I am passionate about teach-ing my children to the best person they can be and to al-ways achieve their goals. And of course cheering on Baylor University football!What inspired you to join the League?I moved to Beaumont with only knowing my husband’s family. I joined to meet new friends while also being able to make a difference in the community and people’s lives. The league has not only provided me with making lasting friendships but has also taught me the leader-ship skills needed to get more active in the community.

Flan Lagniappe, page 277Serves 12-15

9 tbsp sugar 9 oz. blanched almonds4 cups condensed milk 2 1/4 cups heavy cream9 whole eggs 9 egg yolksslivered, blanched almonds

Heat and stir sugar constantly until it melts and turns a caramelcolor. Pour into a 3 quart, flat casserole. Let cool until caramelhardens. Preheat oven to 325 degrees. Place 9 ounces almonds in food processor bowl and add milk, cream, eggs and yolks. Process for 10 seconds. Pour mixture over caramel glaze. Set casserole in larger dish containing 1/2 inch water. Bake for 45 minutes or until set. Cool. Refrigerate. Unmold the next day. Gar-nish with blanched almonds.

Easy TorTilla soup Dining Without Reservations, page 71Serves 15 to 20

30 oz. chicken broth 1 1/2 tbsp garlic powder2 cups milk 1 cup chopped onion12 flour tortillas, torn 3 lbs. chicken cooked/chopped2 tbsp chili powder 1 cup water46 oz. cream of chicken soup tortilla chipsshredded cheddar cheese chopped tomatoes46 oz. cream of mushroom soup3 10-oz. cans tomatoes with green chiles

Combine the cream of mushroom soup, cream of chicken soup, chicken broth, milk, onion, chicken, tortillas, tomatoes with green chiles, chili powder, garlic powder and water in a large stock pot. Simmer over medium low heat for one hour, stirring occasionally. Ladle into balls over crushed tortilla chips. Top with cheese and chopped tomatoes. For more spice, stir in one additional can of tomatoes with green chiles immediately before serving.

1 tsp salt 1 tsp garlic powder1 10-oz. can tomatoes with green chiles1 14-oz. can diced tomatoes drained2 cans jalapeño chilies or to taste1/4 cup cilantro leaves or to taste

Process the tomatoes with green chiles, tomatoes, jalapeño chil-ies, cilantro, salt and garlic powder in a blender until blended. Chill, covered, until ready to serve. Serve with tortilla chips.

2 pounds flank or skirt steak 1/4 cup oil1/4 cup soy sauce 1/4 cup lime juice2 tbsp pickapeppa sauce chili powdersteak seasoning flour tortillasonion sour creamguacamole salsa

Slice steak into thick 1 inch to 1.5 inch strips. Mix oil, soy sauce,lime juice and Pickapeppa. Pour over meat in a zip lock bag. Sprinkle liberally with chili powder and steak seasoning. Mari-nate overnight. Put meat on skewers and cook on grill about 7 minutes on each side or until done. Serve with grilled onion slices, sour cream, guacamole, salsa or pico de gallo and let everyone roll his own into warm flour tortillas.
