32 nest | AT HOME

As you come up the walk to Bobbi Gaukel’s front step, a pail filled with small birch logs and a planter overflowing

with fresh evergreens and some added sparkle provide a wintery holiday welcome.

Gaukel has lived in this 1950s ranch-style house for the past four years. She tends to go for homes with a little age and character, having previously lived in a 1930s-era bungalow.

“I wanted to get into a central neighborhood in the city,” she says. “I lived in an older home before, so I thought I’d give a mid-century house a try.”

When you see the eclectic and colorful interior, it’s not a surprise to find out that Gaukel is a graphic designer. She works from a home office, and says she’s been doing some updates to the décor little by little since she moved in.

She added wood flooring on the main level, painted the brick white around the fireplace and, with the help of her dad, created

sprigs of evergreen from her own trees, candles and snowflakes she made from old wooden clothespins.

Most of the art hanging on the walls is out year-round, although it might move from hanging on a wall to sitting on the mantel or on a table leaned against the wall. Gaukel just looks for pieces that catch her eye, either in color or design and has a particular love of folk art.

It’s that artist’s eye that allows her to arrange a room creatively, balancing sizes, colors and shapes.

“I’m a visual person, obviously,” she says. “So, I can just be sitting here in the living room and looking around, and if something bothers me or seems out of place, I get up and move it.”

The time period of the home means there are great features like built-in bookshelves and cupboards. One narrow built-in

I really like cheese. I’m serious about cheese; not just the kind of guy who orders a cheeseburger instead of hamburger; I mean I

always have a variety of cheese in the fridge. Cheddar and gouda, Havarti and parmesan, I’ve got some of each on hand. But as the Christmas season gets closer, I’ll add some goat cheese for appetizers and blue cheese for salads and burgers. We’ll get trays of assorted meats and cheeses at the office during the holidays

and I’ll often stop what I’m doing to dive into the platter. As I said, I really like cheese!

If you’re looking to put together a cheese tray for a holiday party (or just for yourself) here are a few tips. Your cheese monger can put an assortment together but I think you should do it yourself. If you’re going solo, you could start with a theme, like country of origin (all French, Italian or local stuff from South Dakota) or by

type of milk (goat, cow or sheep). But I like variety. Variety is great, but don’t go too crazy. I suggest starting with

something mild and soft; brie or a young goat cheese are common choices and not too challenging for any guests who might be timid about trying new things. But my favorite mild cheese is Havarti. Havarti is traditionally Danish, creamy and nutty. And if you’re looking for the star of a great grilled cheese sandwich, you can’t go wrong with it.

Then I’d recommend a cheese with some age, like cheddar or gouda. One of my favorites is Prairie Breeze from Milton Creamery in Milton, Iowa. Not Wisconsin, California or France, it’s from Iowa. It’s an aged white cheddar that’s just a little crumbly and really full of flavor. If you’re pairing with wine or charcuterie, it’s got the flavor to hold up to just about anything. If you think cheddar is a bland yellow block, Prairie Breeze will change your life. Seriously, if you’re only going to buy one cheese this Christmas, this might be the one.

I’m a fan of blue cheeses like Roquefort, gorgonzola, or Stilton, but you’ve got to be a little careful with the so called “stinky cheeses.” My dear mother, for example, won’t touch the blue stuff.

“Variety is great, but don’t go too crazy.”

Page 44: 2015 12 etcmagazine volume15 issue01

And since the blue cheeses can be pungent, you might want to put them on a separate tray so the smell doesn’t over-power your Havarti. Again, if you’re looking for an example that’s not too far from home, try Maytag Blue from Newton, Iowa. It’s made by the same family that started the Maytag appliance company and it’s a great example of the style.

Finally, you’ll want to add a firm cheese to your tray, and there is nothing finer than Parmigiano-Reggiano. I know when some people think of parmesan they think of the flaky, off-white stuff that comes in the green can or a little packet with your carry-out pizza. That is not the same thing. Parmigiano-Reggiano is a firm, dry crumbly cheese that is both salty and savory. If I’m asked about what I always have in my fridge, Parmigiano-Reggiano is always on the list. In my opinion, it’s the king of all cheese!

If you’re looking to add some home-grown flavor, Valley Side Farm in Crooks produces some darned good cheeses, as does the Dimock Dairy and South Dakota State University. Many are available at area markets like the Food Co-op at 18th and Minnesota. Any variety of them would be a good addition to your cheese tray and local cheese makes a nice gift to show off the great foods that South Dakota has to offer.

I was thinking about sharing a few recipes with cheese, but then I thought this is really a celebration of cheese, all by itself. It’s about the miracle that happens when milk meets rennet and the whole mess goes from liquid to solid. It’s about the flavors that develop with different aging, molds and bacteria. That’s when cheese becomes something more than just a dairy product and it turns into edible art. So no recipes today, nothing but cheese. And maybe a little wine. Do yourself a favor and eat something good today.

When he’s not in the kitchen, Jim runs ADwërks, an advertising agency in downtown Sioux Falls.

For those of you reading this and not comprehending the meaning, I apologize. My teenager was giving me a hard time

as I tried to involve him in coming up with a title for this article. I came up with (what I thought was funny and creative) Rudolph the Red-Nosed Reinbeer or I Saw Mommy Drinking with Santa Claus or Jingle Bell on the Rocks, but my children (who are growing up way too fast) thought that I should be a little “trendier” (is that even a word?) So, hopefully Drake, if you’re reading this, “I know when that hot wine bling, that can only mean one thing.”

In honor of being “trendy,” here is my Top 10 List of trendy wine-related gifts for this holiday season:

10. WINE CHARMS – These neat little charms hook on to the bottom of your stemmed glassware, making it easier to keep track of that pesky wine glass at a get-together. If you know someone who likes to throw parties with wine, this is a great, useful gift.

9. WINE T-SHIRTS – For the fun, t-shirt wearing person in your life (who happens to enjoy wine,) there are lots of great quality t-shirts with sayings like “This Wine is Making Me Awesome” or “I Do Yoga to Relieve Stress, Just Kidding I Drink Wine in Yoga Pants” or “In Wine There Is Wisdom, In Beer There Is Freedom, In Water There Is Bacteria – Benjamin Franklin.” After all, t-shirts are the gifts that keep on giving.

What do Alex Morgan, Megan Rapinoe, Brandi Chastain, Ali Krieger, Heather Mitts and Molly

Doetzel have in common? They are all talented women soccer players who tore an ACL. And all, except Molly, played for the U.S. National Team.

Molly is still in high school and hasn’t achieved recognition on a national stage. But here, in Sioux Falls, she’s a star.

Molly anchored the defense for the O’Gorman’s Lady Knights soccer team that was so dominating that this year they gave up just six goals the entire season. And, no surprise, they won the state championship.

Molly was a big reason for the championship. Need

proof? Had Molly not been injured, it’s entirely possible O’Gorman could have won last year, too. It was in the state semi-finals that she tore her ACL, aka anterior cruciate ligament, and the Lady Knights fell short of the state championship.

Molly wanted to get back into action as quickly as possible. She and her parents wondered who to call. “Tons of people told us Dr. Looby was the best,” Molly said, referring to Peter A. Looby, an orthopedic surgeon with Orthopedic Institute.

And with good reason. Dr. Looby completed his Fellowship in Sports Medicine at Harvard and, while there, was team orthopedic surgeon for the Bruins (hockey), the Revolution (soccer) and for the New England Patriots. Looby knows how to help athletes get back in the game.

“One thing striking about NFL quality athletes is their ability to heal,” said Dr. Looby. “They are incredibly motivated. They get injured Sunday, you treat them Monday, they play next Sunday.”

The athlete’s motivation and Dr. Looby’s

care got them ready. It was this level of care Dr. Looby provided to Molly. “I was trained to handle elite athletes,” said Dr. Looby. “I apply this training to all athletes whether they are training for the pros or they are weekend warriors.”

And so it was with Molly. “Dr. Looby repaired my ACL and helped me quickly regain strength and flexibility,” Molly said. “Everyone told me—and from my own experience—that Dr. Looby is the best of the best.” Something she echoes regarding her experience at Orthopedic Institute, particularly the rehabilitation process, which was led by Brad Pfeifle, VP of Sports Medicine & Rehab Services. According to her coach, Ryan Beier, “We didn’t know if she would be able to come back this season as strong as she had been in the past. She was able to play at full strength, if not even better than before and she didn’t need to wear a brace because of the hard work she did in therapy at Orthopedic Institute and with Brad.”

Although it might seem strange, tearing

her ACL turned out to be a great, even life changing, experience for Molly. Consider: where does Molly go from here? Does she want to play at the next level? Qualify for the national team?

No, Molly wants to hit the books. So inspired was she by her experience with Dr. Looby and Orthopedic Institute that she’s now thinking about a career in sports medicine—something that touched Dr. Looby’s heart.

“It’s hard to imagine there could be any higher accolade,” Dr. Looby said.

‘Tis the Season, Send Some Cheer

Reducing StressOne of the top drawbacks of the holiday season is stress. From

buying gifts to making lefse, the to-do list never seems to get shorter.

“Oftentimes, grandparents don’t know what to give grandkids,” said Cindy Senger, Vice President of Patient Care for Avera@Home. “If you know what your child wants or needs, pick it up while you’re out Christmas shopping. You can also spend quality time wrapping gifts with them, too.”

Sending Christmas cards is a treasured tradition for older adults. When you’re at the photo center ordering your family’s Christmas card, help your parents or grandparents out by ordering their cards as well. If they wrote a letter to accompany their photo, get it printed on festive paper.

Preparing for Christmas Day is also hectic. If an older relative typically hosts the annual gathering, take a chance and have the celebration at your house. Or, offer to go early and help get things

ready. To make it easier, divvy out the side dishes, relishes and desserts to relatives who will be attending.

Improving SafetyWhen the cold and ice sets in, it’s easy to be concerned about

mom and dad’s safety both inside and outside of the home. A bad fall, for example, could result in the loss of independence.

To avoid such injuries, help with decorations that require heavy lifting or ladder use. This may include hanging lights outdoors or setting up the Christmas tree. If you aren’t available to shovel the sidewalk after each snow, hire a neighbor for the task.

When roads are particularly snowy, offer to take older adults to their appointments or the grocery store. Senger encourages adults to get involved in their parents’ health care. Two heads are better than one when a physician is discussing medication routines and follow-up care.

“For older adults, it’s hard to lose control over the things that

Parties, school concerts, church services and last-minute deadlines — is there any time busier than the holidays? Despite the hustle and bustle, the holidays are a great time to think about members of older generations in your family and how you can make their

holiday a little easier, safer and jollier. It just may be the perfect gift.

come so easily for them,” said Senger. “The key is to find the balance

between what you can do for them and allowing

used to come so easily for them,” said Senger. “The key is to find the balance between what you can do for them and allowing them to still hold their independence.”

Increasing JoyThough it’s the season of joy, it’s easy for older adults to become

isolated and lonely. Even from afar, we want to make sure loved ones have a happy holiday.

“If they live hours away, parents and grandparents can still be part of Christmas activities by using technology and services to keep in touch,” said Senger.

Not only does a regular phone call keep them in the loop, tech-savvy adults may enjoy using FaceTime or Skype to watch

grandkids decorate the tree, open gifts or read a bedtime story. They get to be a part of the experience.

Senger also points out that there are professional services as well as church groups that can visit older adults regularly for coffee, games, lunch, Bible studies or caroling. Check to see if their community has a senior center or if Parks and Recreation offers events catered to older adults. Give movie tickets or restaurant gift cards — something they can truly enjoy and use.

“As you get older, you realize how precious your parents and grandparents truly are,” said Senger. “It’s a great time to give back, and show your love and appreciation.”

Add a little dance value to your

Christmas list!

As the year starts to wind down, the temperatures begin to fall. Soon there will be snow on the ground and ice on your

windshield. It’s time to pull out the mittens, hats and winter coats. But if you have a little one still in need of a car seat, bundling him or her up before buckling up might not be a good idea.

Car seats are designed to fit snuggly around your child’s body to protect him or her in case of an accident. If there is a bulky winter coat getting in the way of the straps and your child, the car seat will not fit properly, leaving your child vulnerable and at risk of injury in the event of a crash.

This doesn’t mean your child can’t wear a coat in the car, it just means he or she needs to wear the right one.

There are a few simple steps you can do to check to see if your child’s coat is too big to wear.

1) Put the coat on your child, sit your child in the car seat and fasten the harness.

2) Tighten the harness until you can no longer pinch any of the harness webbing with your thumb and forefinger at the shoulder position.

3) Without loosening the harness, remove your child from the car seat.

4) Take the coat off, put your child back in the seat and buckle the harness straps.

5) Pinch the webbing between your thumb and forefinger again.

If you can pinch extra webbing, then the coat is too bulky to be worn under the harness.

If the coat is too large to be worn, try a thinner coat. A light fleece is thin enough to fit properly but thick enough to keep your child

warm. But if you feel your child still will be cold, put him or her in the seat with the harness fastened. Then take the heavy winter coat and flip it around so his or her arms go in and the back of the jacket lies on top like a blanket. You could also just keep a warm blanket in the car and cover your child with that for car rides.

Reindeer Pot

Materials: Terra-cotta pot, scissors, craft glue, 4 brown pipe cleaners, 2 large googly eyes, 1 red pom pom.

Instructions: Using craft glue, adhere the googly eyes to the terra-cotta pot. Next, glue the red pom pom to the pot to create the reindeer’s red nose below the eyes. Cut one of the brown pipe cleaners in half, then wrap the two short pieces of that pipe cleaner around a long piece of pipe cleaner to form the antlers. Repeat this step to create a second set of antlers, then glue each set to the inside of the pot, one on each side of the reindeer’s face. Fill the pot with holiday treats or even plant something special for the season!

Hand Print Christmas Wreath

Materials: A piece of cardboard big enough to fit your child’s hand, green and red cardstock, scissors, adhesive, ribbon, small round bowl, large round plate, small circle punch, and a pen.

Instructions: Trace your child’s hand print onto a piece of cardboard, creating a template for the wreath. Cut the handprint out and set it aside. Using green colored cardstock, trace a circle for your wreath using a large round plate turned upside down. Next, place a small round bowl in the center of your larger traced circle, and trace around that to create the middle of the wreath. The thickness of your wreath will depend on the size of your child’s hands. Carefully cut out your circles. Using the hand template, trace and cut out enough hands from the remaining green cardstock to fill the wreath. Adhere the green hands onto the wreath using glue or your preferred method of adhesive, having each hand face the same direction. Add a few small red circles punched out from red cardstock, creating berries on your Christmas wreath for a finishing touch. Tie a ribbon around the wreath so that you can hang it up, and be sure to write your child’s name and date of when it was made so you can keep it forever as a keepsake.

Cupcake Liner Tree Ornament

Materials: Adhesive, scissors, ribbon or string, cupcake liners in various sizes, your choice of decorations to add.

Instructions: Fold a cupcake liner in half, then fold it in half again. Do this with each liner, creating as many layers as you’d like for your tree in the sizes you would like, with larger on the bottom and smaller on the top. Either glue them together or use tape, creating a layered pine tree effect. Decorate your tree with whatever embellishments you would like to use, for example, sequin star confetti and pom poms. Use ribbon or string to turn these into ornaments and hang on your Christmas tree. You can also turn several of these into a garland to hand around your Christmas tree or somewhere else in your home!

Dear Santa...

Christmas Tree Art

Materials: White yardstick, 2 small paper plates, green acrylic paint, gold glitter, craft beads and pom poms, 2 pipe cleaners, scissors, table salt, liquid blue and purple watercolors, and glue.

Instructions: Paint a sheet of white cardstock with blue and purple watercolors, adding sprinkles of table salt while painting and at the end over all of the wet spots. Let this dry completely while you paint the bottom of the two small paper plates green. Let them dry completely as well. Cut a pipe cleaner in half and put beads on each half, leaving a little empty space on each end. Make two of these for each tree you are creating. These will be the garland for your trees. Rub off the salt from the dried watercolor paper, then create the background for your trees however you’d like to. One option is creating snowy hills by cutting them out from white cardstock and gluing them on top of the painted blue and purple sky. When the green paper plates are dried, cut them into thirds like a pie. Then, glue each piece together with the point facing up, creating a layered pine tree effect. Lay the beaded garland across the tree, then bend the ends behind the tree to hold them in place, then glue your trees onto the backdrop paper however you’d like. Use glitter, pom poms, and other cut out shapes to decorate your Christmas tree art and make it your own.

Page 86: 2015 12 etcmagazine volume15 issue01

It rolls in like the bone-chilling cold while snow dances across the sky. It’s finally Christmas time. With the sights, the sounds

and the smells you cannot help but be engulfed in its magic. From the pine wreaths that decorate the front of most stores to the seasonal flavors that call on us to relive the moments within our childhood, when we truly believed in the magic of Christmas. Those memories tug on our heartstrings as this year’s holiday draws close.

Christmas magic doesn’t just live in the eyes of small children grasping their parents hands tightly, but in all who feel their hearts soften. Shoulders feel lighter and hopes seem brighter, now that it is Christmas time. It has a magic affect that puts the wonders of joy front and center, all the while making us aware of the needs that surround us. Never is there another time throughout the year that the world slows down enough for us to collectively embrace the beauty that is. It is truly the most magical time of year.

Christmas magic started for me as a child visiting my grandparents’ meticulously decorated home. Every decorator piece now either was adorned with a bow, a red stocking or a scarf. Sounds of Frank Sinatra, Bing Crosby and Dean Martin swirled around the petit-fours and there was no shortage of candy canes. My love for Christmas was born whilst sitting in front of the fireplace daydreaming of the mysterious magic it beholds. Every year since then, I’ve watched the magic of Christmas materialize in front of me.

Christmas movies are an epicenter of memories. Each generation wants to share their favorites from White Christmas, Miracle on 34th Street, The Christmas Story, Home Alone to National Lampoon. They make us laugh, cry, and get the warm fuzzies on the inside. Nothing is better than curling up with an oldie that makes us feel really alive and gets us in the spirit. The same spirit that gets us excited about going out and doing a bit more, taking a bit less and believing that the true spirit of Christmas is alive and well.

The lights of the season dazzle all. With the latest and greatest to a simple string of soft white lights. It’s like the world is on holiday and our joy shines from the inside out. Celebrating life, love and family.

Christmas MagicBY AMITY SHAY

Page 87: 2015 12 etcmagazine volume15 issue01

etc. for her | December 2015 87

The captivating sights of tiny dancers pirouetting on a large stage to the wondrous sounds of the Nutcracker Suite always gets me in the Christmas spirit, especially when all three of my daughters are performing in it.

Seriously, nothing gets better than this. Then you have the smells. There as so many amazing smells

and since smell is closely associated to memory, no wonder grandmother’s cookies bring back so many memories. Once you get past the enticing aromas, you get to the tasting — the best part.

Honey glazed hams, succulent sides, sugar dazzled spritz, aromatic pizzelles, and bold red wines. Yes please!

Christmas magic is ever present in the wind that whips past the tip of your nose, just enough to nip a sprinkle of magic before you without your agreement. It’s been sung that it’s the time when the world falls in love. It’s been foretold that it is a time of great peace. Many stories have been written of a time when those with a cold center thaw into warmth; if that’s not magic I don’t know what is.

Yet, the greatest magic is the love we share with one another no matter how far apart we are. It’s about the love we carry in our hearts.

In the words of my six-year-old son, “Christmastime is when you spread what’s kind and happy, then it spreads what’s kind and happy to you. It’s about loving and kindness that falls down like a snowflake and then you wake up and see presents under the tree.”

From my family to yours, we wish you and yours a holiday filled with magic, peace and above all else, love.

Getting kids to put down their electronics and play outside is a no-brainer when your backyard contains a slackline!

Since the days of the ancient Egyptians and throughout history cats have earned their reputation as affectionate, intelligent, clean, easily trainable, playful and fun family pets. As a cat owner, you probably agree.

The American Association of Feline Practitioners and American Animal Hospital Association recommend a minimum of one annual wellness exam for cats, with more frequent exams for senior and geriatric patients, or those cats with medical or behavioral conditions.

Philander Prescott

Various explorers may have visited the Falls of the Big Sioux River in the 17th and 18th centuries, but there is no definite proof. An early State

Historian, Doane Robinson, believed that Charles Le Sueur had visited the falls as early as 1683.

The first Euramerican who recorded his visit to the falls was Philander Prescott in December 1832. An American Fur Company trader, he came west from the Minnesota River with two French trappers and a party of Sioux Indians. The men set up a trading post on the Big Sioux River near present-day Flandreau. Seeking food for the winter, the Sioux Indians found little game and left for a village of Omaha Indians located on the Missouri River.

Prescott, with two men and a two-wheeled horse cart, followed the Sioux and camped overnight near this spot. The next day they continued south for another 40 miles before deciding that further pursuit of the Sioux was useless. Turning back, they camped here a second night before returning to their Flandreau trading post.

Prescott was killed at the Minnesota Lower Sioux Agency during the 1862 Dakota Conflict.
