BOURBON WHISKY must contain a minimum of51% corn, be produced in the United States, bedistilled at less than 80% ABV (160 proof) andbe aged for a minimum of two years in newcharred barrels, although in practice virtually allstraight whiskies are aged at least four years.Any Bourbon, or any other domestic or importedwhiskey, for that matter, that has been aged lessthan four years must contain an age statementon the label. Small Batch Bourbons are bour-bons that bottled from a small group of speciallyselected barrels that are blended together. Itshould be noted though that each distiller hastheir own interpretation of what constitutes a"small batch." Single Barrel Bourbon is Bourbonfrom one specifically chosen cask.

RYE WHISKYmust contain a minimum of 51% ryegrain, be distilled at less than 80% ABV (160proof) and be aged for a minimum of two yearsin new charred barrels. A small amount ofstraight Rye whiskey is bottled and marketed, butmost of the industry production is blended intoother whiskies to give them additional characterand structure. Canadians frequently refer to theirwhisky as "Rye," though it is in fact made primarilyfrom corn or wheat.

TENNESSEE WHISKY must contain a minimum of51% corn, be produced in Tennessee, be dis-tilled at less than 80% ABV (160 proof), filteredthrough a bed of sugar maple charcoal, and beaged for a minimum of two years in newcharred barrels.

CANADIAN WHISKY is made primarily from cornor wheat, with a supplement of rye, barley, orbarley malt. There are no Canadian govern-ment requirements when it comes to the per-centages of grains used in the mash bill. UnlikeBourbons, they are aged, primarily in used oakbarrels. The minimum age for Canadian Whiskyis three years, with most brands being aged fourto six years. Virtually all Canadian whiskys (ex-cept the pot-distilled malt whiskies of Glenorain Nova Scotia) are blended from different grainwhiskies of different ages. Bulk CanadianWhiskys are usually shipped in barrels to theirdestination country where they are bottled.These bulk whiskies are usually bottled at 40%ABV (80 proof) and are usually no more thanfour years old. "Bottled in Canada" whiskiesgenerally have older components in their blendsand are bottled at 43.4% ABV
