D eriving its predominant flavour from juniper berries, gin is one of
the broadest categories of spirit. From its earliest origins in the Middle Ages, the drink has evolved from an herbal medicine to an object of commerce in the spirits industry. Gin was developed based on the older Flemish liquor, jenever, and became popular in Great Britain in the late 1600s.

Vitis vinifera
A spirit produced by distilling wine. Brandy is typically drunk as an after-
dinner digestif and traditionally served at room temperature. Some brandies are aged in wooden casks, others are coloured with caramel colouring to imitate the effect of aging, and some are produced using a combination of both aging and colouring.

styles of wine. These variations result from the complex interactions between the biochemical development of the grape, the reactions involved in fermentation, the terroir—the set of all environmental factors that affect the grapes, and the production process.

O ne of the world’s oldest prepared beverages, beer is brewed from
cereal grains, most commonly from malted barley, though wheat, corn, and rice are also used. Most modern beer is brewed with hops, which add bitterness and other flavours and act as a natural preservative and stabilizing agent.
