Vegan Greek Pita

Ingredients1. 1 tablespoon olive oil

2. 1 onion, chopped3. 1 red bell pepper, chopped4. 1 1/2 tablespoon oregano5. 3 cloves garlic, minced6. 3 whole wheat pitas7. 1/2 cup hummus8. 2/3 cups Fresh Express Hearts of Romaine packaged salad9. 1/4 cup tomatoes, chopped
10. 1/4 cup Kalamata olives, pitted, chopped
Directions1. Heat oil in large skillet on medium heat. Add onion, pepper, oregano
and garlic. Cook 5 minutes or until onions are translucent.2. Warm pitas (optional) in microwave or stovetop.3. Slice each pita in half, making six pockets. Spread hummus on inside
of pitas. Fill evenly with pepper mixture, Romaine, tomatoes and olives.
