11/3 cups all-purpose flour 1/4 teaspoon baking soda 1/4 teaspoon salt 3/4 cup quick-cooking rolled
oats 1/3 cup packed brown sugar 1 teaspoon finely shredded
lemon peel (see page 102) 2 3-ounce packages cream
cheese, softened 1/4 cup butter, softened 3/4 cup seedless blackberry or
red or black raspberry jam 1 teaspoon lemon juice
1. Preheat oven to 350°F. Grease a 9×9×2-inch baking pan (if desired, line pan with foil before greasing, see photos, page 21); set aside. In a medium bowl stir together flour, baking soda, and salt. Stir in oats, brown sugar, and lemon peel; set flour mixture aside.2. In a large mixing bowl combine cream cheese and butter. Beat with an electric mixer on medium to high speed for 30 seconds. Add flour mixture; beat on low speed until mixture is crumbly. Remove 1 cup of the crumb mixture for topping; set aside.3. Press the remaining crumb mixture onto the bottom of the prepared baking pan. Bake for 20 minutes.4. Meanwhile, in a small bowl combine jam and lemon juice. Carefully spread jam mixture over hot crust. Sprinkle with the reserved 1 cup crumb mixture. Bake about 15 minutes more or until top is golden. Cool in pan on a wire rack. Cut into bars.
To Store: Layer bars between sheets of waxed paper in an airtight container; cover. Store in the refrigerator for up to 3 days or freeze up to 1 month.

1. Spoon the crumb mixture over the bottom of the pan, then use your hand to press into an even layer.
2. After prebaking the crust, top with the jam mixture.
3. Use the back of the spoon to spread the jam mixture in an even layer over the crust.
4. Sprinkle the reserved crumb mixture evenly over the jam layer.

1 Preheat oven to 425°F. In a small bowl combine rosemary,
1⁄4 teaspoon of the salt, and the pepper. Trim fat from meat. Place meat on a rack in a shallow roasting pan. Sprinkle all over with the rosemary mixture. Roast for 25 to 35 minutes or until an instant-read thermometer inserted in center registers 150°F. Remove from oven. Cover with foil; let stand for 10 minutes. Temperature of meat after standing should be 155°F.
2 Meanwhile, in a covered large nonstick skillet cook potatoes
in a small amount of boiling lightly salted water about 15 minutes or just until potatoes are tender, stirring occasionally. Drain water from skillet.
3 Add 1 tablespoon of the oil and the garlic to potatoes in
skillet. Cook over medium-high heat for 5 to 10 minutes or until potatoes are browned, stirring occasionally. Sprinkle with lemon peel, the remaining 1⁄4 teaspoon salt, and the paprika. Toss to coat. Transfer potatoes to a bowl. Cover and keep warm.

8 cups arugula, tough stems removed, or fresh baby spinach (about 6 ounces)

Fresh Tomato SauceIn a large saucepan heat 1 tablespoon vegetable oil over medium heat. Stir in 3 cups peeled, seeded, and chopped roma tomatoes or one 28-ounce can whole peeled roma tomatoes, drained and chopped. Stir in 1⁄2 cup red wine, 1 to 2 teaspoons balsamic vinegar, 1⁄2 teaspoon salt, and 1⁄2 teaspoon ground black pepper. Bring to boiling; reduce heat. Simmer, uncovered, for 20 to 25 minutes or until sauce is slightly thickened, stirring occasionally.
3 Add baked meatballs to warm Fresh Tomato Sauce;
heat through. Serve over hot cooked lasagna noodles.

1 Preheat oven to 350°F. Lightly coat a 15×10×1-inch baking pan
with cooking spray; set aside. In a large bowl combine chili sauce, bread crumbs, onion, cheese, pepperoncini pepper, and fennel seeds. Add ground pork. Mix well. Shape into 36 meatballs. Place in prepared pan.
2 Bake, uncovered, for 20 to 25 minutes or until browned
and cooked through. Remove from oven; drain off fat.

1 cup sugar 1/4 cup cornstarch 1 cup all-purpose flour 1/4 cup finely ground almonds 1 teaspoon sugar 1/2 teaspoon salt 1/2 cup butter, cut up 3 to 4 tablespoons ice water 1 8-ounce package cream
cheese 2 eggs 1/2 cup sugar 1/2 teaspoon vanilla 1/4 teaspoon almond extract
1. Drain cherries, reserving 1 cup of the liquid. In a medium saucepan stir together the 1 cup sugar and the cornstarch. Add cherries and the reserved liquid. Bring to boiling, stirring to dissolve sugar; reduce heat. Boil gently, uncovered, for 1 minute; cool. Cover and chill until needed. 2. For pastry, in a medium bowl stir together flour, ground almonds, the 1 teaspoon sugar, and the salt. Using a pastry blender, cut in butter until pieces are pea-size. Sprinkle 1 tablespoon of the water over part of the flour mixture; toss gently with a fork. Push moistened pastry to one side of bowl. Repeat moistening flour mixture, using 1 tablespoon of the water at a time, until all of the flour mixture is moistened. Gather flour mixture into a ball, kneading gently until it holds together. Cover and chill for 1 hour. 3. Meanwhile, allow cream cheese and eggs to stand at room temperature for 30 minutes. Preheat oven to 425°F. On a lightly floured surface, roll pastry into an 11-inch circle. Ease pastry circle into a 9-inch pie plate without stretching it. Trim pastry
to 1/2 inch beyond edge of pie plate. Fold under extra pastry; crimp edge as desired. Bake for 8 minutes. Spoon half of the cherry mixture into pastry-lined pie plate. Bake for 15 minutes.4. In a large mixing bowl beat cream cheese with an electric mixer on medium to high speed for 30 seconds. Add the 1/2 cup sugar, the vanilla, and almond extract; beat until combined. Using a fork, lightly beat eggs. Add eggs to cream cheese mixture; beat just until combined.5. Reduce oven temperature to 350°F. Spread cream cheese mixture evenly over cherry layer in pie plate. Bake about 25 minutes more or until cream cheese layer is set. Cool on a wire rack.6. Spread the remaining cherry mixture over pie. Cover and chill for at least 4 hours or overnight.
To Store: Loosely cover pie with foil or place in a covered container. Store in the refrigerator for up to 24 hours.
