500g Snowflake Easymix Vanilla Muffin4 Extra large eggs200ml cooking oil250ml milk or waterChocolate syrup750ml (400g) icing sugar, sifted45ml cocoa powder, sifted100ml water45ml butter or margarineAbout 500ml (160g) desiccated coconut for covering
1. Place premix into a mixing bowl. Lightly beat eggs, oil and milk together. Mix with a whisk until just combined. Do not over mix.
2. Spoon mixture into a lined and greased 18 x 27cm rectangular pan. Bake in a preheated oven at 180°C for 25-30 minutes. Leave to cool in pan for a few minutes. Turn out and cut into squares.
3. Syrup: Mix icing sugar, cocoa powder and water together in a medium, heavy-based saucepan. Bring to the boil, stirring constantly until sugar has melted. Remove from the heat and add butter. While still warm, dip cake squares in syrup but do not soak.
4. Roll squares in a thin layer of coconut. Place onto a wire rack to set.
Tip: Use tongs to dip the squares in chocolate syrup and then into coconut.
