Currently in ‘en tirage’ Grapes were whole-cluster pressed into stainless, racked to barrel for fermentation to dryness. 60% stainless, 20% new Hungarian oak, 20% neutral French. Aged 9 mos in barrel. Cold stabalized and bottled 6/6/14. pH is 3.14, alc 11.5%. Expected tirage duration 9-12 months. combination of lees aging, oak influence, ML ferm, and the Chenin grape itself lends the wine a distinctly round/supple midpalate. It’s dry state has a very crisp and clean finish. The final style will be dictated by length of tirage and level of dosage but the base elements are in place to craft a true Champagne-style sparkler.
