AlAskA’s most terrifying serial predator was a respected family man.

thE “unchaInEd” MElOdYMy personal favourite off Halcyon Days is the heart-breaking piano-ballad, “Hearts Without Chains”. Giving the album the soul that it needs, it helps us look deeper, past the other trippy tunes, into an enclave that’s brought to life by her emotive yet airy voice.

Goulding has certainly delivered more than what one would usually expect of an album re-release. Thankfully for us, it’s Go(u)ld! W

RadIO-FRIEndlY hItS It’s easy to see why “Burn” was such a hit on the charts – with a radio-friendly beat that you can effortlessly sway to, and a chorus that really sticks. It’s a clear winner.

With her unique ethereal voice, she’s taken that track from Leona Lewis (who had initially recorded it for her third album but later excluded it), given it an indie spin, and made it her own.

A feel-good track to look out for is “Stay Awake”, featuring Madeon. The electronic beats are a little on the heavy side, inter-woven with the synthesizer; just the way I like it.

That said, though, I think it’ll take more than “Burn” and “Stay Awake” to replace her previous

trAining mArginAlised and disadvantaged local youths with a passion and love for culinary wizardry is what Chefs with Heart aims to do in each episode by providing them with the hands-on skills required in the business.

In Webisode 3, the main mentor, Chef Benny Se Teo of Eighteen Chefs, trains them in further culinary arts.

This time, the trainees are taught and challenged to make a pan-grilled salmon with poached vegetables, in a delicious lemon butter sauce.

When an attempt to infiltrate a Mexican drug cartel goes wrong, they both suddenly find themselves “burnt” by their superiors. To make matters worse, everyone seems to either want them dead or in jail, and the only person they can count on is each other.

Unfortunately for their pursuers, they’ve picked up a few tricks along the way.

a VERY dIFFEREnt PaRtnERShIPProducer Marc Platt discusses his interest in the source material.

“I always love stories where there are two characters that are

seemingly very different, and the journey of the story is the way in which those two characters find their way to each other,” says Platt.

“Here were two guys who don’t want to be in the same general vicinity of each other, but who are forced to work together and learn something about each other and themselves in the process,” he says.

a unIquE & Fun ROlEAfter portraying a series of intense characters in recent years, for which he had become famous for, Denzel was searching for some humour in his next role.

“When I read this script, it really made me laugh,” he says.

“Bobby does whatever is necessary to get the job done. I think he is an honest cop but he doesn’t live by the honour codes,” he adds.

a gREat PaRtnERShIPMark Wahlberg, recently seen as a muscle-bound doofus in Pain & Gain, was equally excited to be working with Washington.

“We have great chemistry. People will be surprised to see how playful Denzel can be,” he says.

Platt summarises the premise of the film, saying that 2 Guns is about “the nature of male friendship and the notion of two guys doing the job they believe in”.

This description doesn’t quite do the passion and action justice.

“When it kena the meat already, when cook already not nice,” he declares simply.

Chef Se Teo also teaches them the proper way of blanching vegetables.

cOOkIng ERRORSThe contestants then get to work on preparing their dishes. Some of them make mistakes along the way, such as over-cooking the salmon. There are also plating errors.

Look out for some of the amusing names they come up with for the dishes. They raise an eyebrow, even with Chef Se Teo.

Denzel Washington and Mark Wahlberg make a dynamic duo on the run

You might recognise the attractive Pamelyn Chee from her role in the titillating Peranakan drama, The Little Nonya, on Channel 8, as well as from Channel 5’s cop drama, Point of Entry.

Born in Singapore and raised in New York City, Pamelyn now stars in HBO Asia’s original series Serangoon Road, with the likes of Joan Chen.

She shares with us some of her thoughts and experiences on and off the set.

How did you prepare for your role as su ling in serangoon road? What sets Su Ling apart from the other characters is her upbringing and her wealth. The way she speaks says a lot more about her social status than anything else.

She is from an extremely wealthy Peranakan family and probably goes to school with all the expatriate kids, or has a private British tutor.

She also fits seamlessly into that upper class circle, so I wanted to give her something closer to a posh English accent, like how the extremely well-educated Hong Kong people of an earlier generation used to speak.

So, I watched a lot of Downton Abbey to try to get the accent down pat.

It also immediately gave the character a very Sixties feel!

wHat was it like working witH sucH an international cast? It was such a vibrant set that was full of creative energy. Every day, people came ready to play their role and they were not afraid to push the boundaries of the scene or their character, which really made everything come to life.

In addition, the set was beautiful; the lighting and cinematography were amazing!

did you find out anytHing surprising about your co-stars? Joan Chen has an amazing sense of humour. One day, we were talking about working out in between takes.

She was telling us how squats are the only exercise that work the whole body, and then proceeded to demonstrate it in her cheongsam and high heels. It was hilarious!

do you Have a dream role tHat you would love to play? I have always loved biopics and I am fascinated by Kwa Geok Choo (Minister Mentor Lee Kuan Yew’s late wife). She was such an important person in

the political history of Singapore but so little is known about her!

if you were living in tHe 1960s, wHo or wHat would you imagine yourself to be? I might be one of those student leaders in the protest! I think people were a lot more vocal about their love for their country back then, and they were more willing to fight for what they believed in!

wHat would you like to say to singaporeans about tHe sHow? Expect to see Singapore like you have never seen it before – dirty, gritty and very sexy! Serangoon Road premieres on Sep 22 at 9pm on HBO & HBO HD.

The Main aTTracTionA must-try is the French Free-Range Chicken with a side of mesclun salad and mashed potatoes (which comes in their two or three-course set lunch, $32 to $38). The chicken – from their in-house rotisserie – is meaty, tender and juicy. To say it was good would be an understatement.

Also from their lunch set, the Ravioles with wild mushrooms, shallot confit and aged gruyere is also worth a try.

DesserT TiMeChef Stephane has also incorporated his mother’s homemade Apple Pie ($12) recipe, with cinnamon crumble, topped with rum & raisin ice cream, into the menu.

The chunky apple slices were well-flavoured with the buttery cinnamon crumble and made a satisfying end to the meal.

We Work long and hard. In fact, Singaporeans and Hong Kongers ranked top two in the world with the longest working hours. However, unlike Hong Kongers, who may need to escape to the tropics to relax, we're already here.

It’s easy to understand why we don’t fully appreciate the benefits of seaside living. We live in one of the most urbanised countries in the world. However, if we take the time to look beyond the urban cave, we can see sand, beaches, sea, boats, and gulls. It’s all here in our sunny Singapore.

Dress-DoWn aMBienceWhen it’s time to relax from the gruelling work week, head to Changi. No, not for the next flight out, but to Bistro@Changi, located in the oldest coastal park in Singapore – Changi Beach Park.

This is an unassuming, laid-back, chill-out joint literally steps from the shore. Like many beachside restaurants in other countries, Bistro@Changi is welcoming, casual, with that “come-as-you-are” easiness. Their ambience reflects that attitude.

located at the corner of Amara Hotel, Bar-Roque serves everything from succulent roasted meat, tarte flambé to fresh seafood. Bring good company to go with the great food.

Chef Stephane Istel hails from Alsace, France, and he has brought his traditional French sensibilities to his cooking. It helps that he smashes the grumpy chef stereotype with his vivacious personality.

The décor of dark furnishings and a graffiti art Baroque style “painting” of a cherub on the wall adds to the arty ambience.

WheT YoUr aPPeTiTe When we were there for lunch, Chef Stephane enthusiastically explained the dishes to customers, and even brought out a whole fish to show them what exactly they were eating.

Our meal got off to a good start with The Classic ($12-$20) – a tarte flambé of bacon and onions. The thin crust “pizza” was paired well with the savoury bacon.

We also liked the New Zealand Little Neck Clams ($22 to $32)

When you Walk into The Black Swan, it almost seems as though you’ve been transported back to into the roaring 1920s.

The dimly lit restaurant carries a relaxed and chill-out vibe and is filled with executives unwinding after work, with Scotch in hand.

Formerly the Kwantung Provincial Bank in the 1930s, The Lo & Behold Group – brains behind White Rabbit and Tanjong Beach Club – has restored it to its original art-deco style, complete with modern furnishings.

The dignified space can accommodate up to 200 guests with a mezzanine floor.

with Chilli and Konbu ($18), an absolutely rich treat with bite-sized beef marrow chunks seasoned with chopped chillies, shallots, chives and konbu (a type of Japanese kelp). Eat it with the accompanying crusty bread for a satisfying beginning to your meal.

Also try the Char-Grilled Beef Tartare ($26). If you are skittish about raw meat, don’t worry. The Black Swan’s version is flash-grilled for smokiness and combined with capers, garlic, parsley, toasted sesame seeds, fresh lemon and Tabasco sauce.

the Main MeatIf you’re hungry or looking to share, try the Stockyard Australia Ribeye Steak ($96), the 400-day grain-fed slab of beef is sliced and sprinkled with sea salt and comes with a grilled head of garlic, French fries and béarnaise dip.

The Fish of The Day ($34-$38) includes catches such as Barramundi, Red Snapper and New Zealand Grouper sitting on a bed of beetroot mixed with quinoa and bacon jam.

sweet & UniqUeWe recommend the Coconut Crème Caramel ($14) if you’re looking for something unique. It contains gula Melaka with candied citrus and ginger for a nice zing. Chocolate lovers would love their Dark Chocolate Dome ($16) made of Valrhona dark chocolate, no less.

Do not leave The Black Swan without trying their cocktails. The Moral Hazard ($19) is our favourite – 15-year-old bourbon, orange bitters, apricot liquor and Manuka honey – a refreshing twist on the standard Old Fashioned.

HEALTH & BEAUTY

Are you getting

Scurvy, a vitamin c deficiency diSeaSe, iS rare nowadayS but many doctorS Still believe that people are conSuming leSS vitamin c than they Should

Due to affluence and improvement in nutrition, scurvy, a severe Vitamin C deficiency

disease, is rare in today’s affluent society. However, many medical professionals still feel that we are still not getting as much Vitamin C as we need to achieve optimal health, possibly due to picky eating habits and overconsumption of processed food.

Fatigue, easy bruising and bleeding gums are early signs of Vitamin C deficiency, and one should take note to meet the recommended dietary allowance (RDA) to avoid related health problems.

What Does It Do?Vitamin C is probably best known for the functioning of the immune system and for the healing of wounds. Even though extensive research has shown that high doses of Vitamin C are ineffective in preventing colds, some studies show that it may reduce the duration and the severity of the symptoms of the common cold by up to 23 per cent.

Vitamin C is necessary for many other bodily functions, such as the production of collagen, an important protein and connective tissue that strengthens skin, tendons, ligaments, muscles, blood vessels and bones.

An intake of 400mg of Vitamin C daily for a few days before and

after intense exercise may improve athletic performance, reduce pain and speed up muscle recovery.

Where to Get ItBroccoli, bell peppers, currants, Brussels sprouts, parsley, citrus fruits and strawberries are some fruits and vegetables rich in Vitamin C. Vitamin C is sensitive to light, air and heat, so try to consume fruits and vegetables raw or slightly cooked to get the most out of them.

Experts say that freshly squeezed orange juice or fresh-frozen concentrate is a better choice than ready-to-drink orange juice, as it contains more active Vitamin C.

After reconstituting fresh-frozen orange juice from fruit juice concentrate, drink it within one week for maximum benefit. Purchase ready-made orange juice three to four weeks before its expiration date, and finish it within one week after opening.

supplements to ConsIDerTo avoid the hassle of checking dates, one can opt for Holland & Barrett’s Effervescent Vitamin C and Zinc (20 tablets) as effervescent tablets allow for fast absorption of nutrients into the bloodstream. Zinc plays a part in the immune system’s regular function and protects the cells from oxidative stress.

In Singapore, the RDA of Vitamin C is 105 mg for men

and 85 mg for women, according to Health Promotion Board guidelines. Those who don’t consume enough fruits and vegetables daily can consider boosting their Vitamin C intake with Holland & Barrett’s supplements which cater to different needs and preferences.

Taking Effervescent Vitamin C Tablets High Strength (1,000 mg) can ensure one has sufficient Vitamin C for gingival (gum) health, energy-yielding metabolism, functioning of the nervous system, and psychological function.

VItamIn C anD ZInC loZenGes Alternatively, take Holland & Barrett’s Vitamin C and Zinc Lozenges (60 lozenges) and enjoy the soothing effect as it slowly dissolves in your mouth. Vitamin C protects the A and E Vitamins, and fatty acids from oxidation since it is an antioxidant.

If you have trouble swallowing capsules or tablets whole, take the Chewable Vitamin C with Rose Hips Tablets (1,000 mg) which comes in 90 tablets. Rose hips, harvested from rose bushes, are a rich source of Vitamin C.

non-aCIDIC ester C WIth BIoflaVonoIDs CapletsThe non-acidic Ester C with Bioflavonoids Caplets, which come in 500mg caplets of 90, is suitable for those who have problems

with taking the regular Vitamin C formula.

Its breakthrough patented formula called the non-acidic Ester-C contains naturally-occurring Vitamin C metabolites, and it is quickly absorbed. The unique manufacturing process neutralises pH, so it’s gentle on the digestive system.

Vitamin C is water-soluble, so any excess is passed out of the body through urine. As long as it is within 1,000 mg, there is no need to worry about excessive intake. Exceeding this limit may cause mild stomach upset, pain and flatulence in sensitive individuals.

Do You neeD more? There are people who require more Vitamin C, namely smokers, pregnant women and people who have suffered severe injury.

ViTAmin C?EnoUgH

More Vitamin C is needed for healing severe injuries, while smoking depletes Vitamin C levels in the body.

In addition, taking a Vitamin C supplement may benefit those with anaemia, as it increases iron absorption.

To ensure sufficient consumption of this important vitamin, head down to one of Holland & Barrett’s 23 outlets including at CityLink Mall, #B1-51; 313@Somerset, #B3-08; VivoCity, #B2-27A; or Wisma Atria, #B1-47, to get some Vitamin C supplements today. W

IndonesIa Is the largest archipelago in the world. This idyllic group of islands can be found straddling the equator, between the continents of Asia and Australia.

Semarang lies in the northern part of Central Java in Indonesia. It boasts a variety of cultural and historical attractions. Semarang was once a city of the spice trade, and is now one of Indonesia’s busiest regional port cities.

Delicious inDonesian cuisineHaving taken the inaugural SilkAir flight from Singapore to Semarang, the tour guide brought us to the Ikan Bakar Cianjur (IBC) chain for lunch. IBC is an Indonesian restaurant chain serving authentic Indonesian cuisine.

The food was excellent, especially the Gado Gado (Indonesian salad with peanut sauce), Ikan Bakar (barbecue fish) and Ikan Gurame (dry fried tilapia). The Ikan Gurame was seasoned with IBC’s special blend of spices before frying.

Lama (the old city), better known as the “Blenduk” or Dome Church.

The Dome Church was built by the Dutch colonials in 1753 and is the oldest church in Central Java. The church had been renovated once in 1984 but the interiors of the church are original and have yet to be restored.

Entering through its hallowed doors, one is immediately filled with a sense of peace. The quiet historic setting also evokes a feeling of nostalgia.

cHeng Ho’s legacyLeaving the old city, we visited Sam Poo Kong temple located in Simongan Village. We toured the temple and the Stone House, which is believed to be where Admiral Cheng Ho – also known as Sam Poo Tay Djien – anchored and set up his headquarters when he visited the Java Islands with his crew and soldiers.

Admiral Cheng Ho was China’s key ambassador and diplomat to Asia and Africa with a fleet of 200 ships and a 2,700-strong crew.

The temple is called Gedung Batu (Stone House) because there is a big stone cave. This stone cave was where Admiral Cheng Ho meditated and prayed while he waited for his crew to prepare for

the next journey. While he was residing in

the village, he taught the villagers agricultural and moral knowledge. When he left the village, the villagers glorified and worshipped him for the goodness he had shown to them.

more culture & sitesAfter visiting the temple, we went back to the hotel to prepare for the inaugural SilkAir flight dinner celebrations.

The next morning, we set off early and went on a road trip to Gedong Songo. The temple there is located in a Hindu cultural site on Mount Ungaran, Bandungan district.

While the name suggests nine temples, only five are still standing. The others are in ruins.

The site was originally built during the Sanjaya Dynasty, which controlled Central Java in the 8th and 9th Centuries. The temple was first discovered by Sir Stamford Raffles in 1804. It predates the famous Borobudur and Prambanan temple monuments, and is the oldest Hindu structure in Java.

The temple is flanked by lush natural surroundings. Hiking up-hill to the five temples

on the highlands requires a lot of physical effort. Charter horse rides are available for comfortable sightseeing.
