Layered Coconut Chocolate Cheesecakei n g r E d i E n t s

1 cup chocolate wafer cookie crumbs1 cup finely chopped pecans2 Tbsp. sugar1/4 cup margarine or butter, melted3 pkgs. (8 oz.) cream cheese,

Preheat oven to 300ºF. Combine first four ingredients; press firmly on bottom of 9-inch spring-form pan. In a large mixer bowl, beat cheese until fluffy. Add eggs and flour, beating until smooth. Gradually beat in cream of coconut. Reserve 11/2 cups cheese mixture; stir melted chocolate into reserved mixture and pour into prepared pan. Slowly top with remaining cheese mixture; swirl if desired. Bake 1 hour or until firm around edges and still soft in the center; turn off oven. Leave in oven 1 hour. Loosen top from edge of pan with knife tip. Cool. Chill thoroughly. Remove side of pan.

Garnish as desired. Refrigerate. Serves 12.

Cut beef diagonally into thin ribbon strips one inch wide. Thread onto skewers, allowing 1 – 2 ribbons of beef per skewer. Melt butter in a skillet over medium heat. As butter is melting, add the honey, lemon juice and Vegetable Magic®. Stir until butter is melted, then remove from heat until butter begins to thicken. Your Body’s Well-BeingCeliac Awareness

Celiac disease is a condition that damages the lining of the small intestine and prevents it from absorbing parts of food that are important for staying healthy. The damage is due to a reaction to eating gluten, which is found in wheat, barley, rye, and possibly oats.

The exact cause of celiac disease is unknown. When someone with celiac disease eats a food or uses a product that contains gluten, their immune system reacts by damaging the villi in the lining of the intestines, which help absorb nutrients. The subject becomes malnourished, no matter how much food he or she consumes. The disease can develop at any point in life, from infancy to late adulthood.

The only medically acceptable treatment for celiac disease is a 100% gluten free diet for life.*

Following a gluten free diet means avoiding foods that contain wheat (including spelt, triticale, and kamut), rye, barley, and possibly oats or, in other words, most grains, pasta, cereal and many processed foods. Despite these restrictions, those with celiac disease can eat a varied, well-balanced diet, including bread and pasta that have been correctly prepared. Instead of wheat flour as an ingredient, for example, potato, rice, soy or bean flour can be used in substitute. Gluten free bread, pasta and other products are available from specialty food companies. Preheat oven to 350ºF. In a bowl, combine 11/4 cup of the all purpose flour with the rice flour, oats, brown sugar, baking soda and salt. Cut in butter until crumbly. Set half aside for topping. Press remainder into a greased 13 x 9-inch baking pan. Bake for 15 minutes. Remove from oven. Sprinkle with chocolate chips. Whisk caramel sauce and remaining 1/4 cup flour until smooth. Drizzle over top. Sprinkle with reserved crumb mixture. Bake an additional 20 – 25 minutes, or until golden brown. Cool on a wire rack for at least 2 hours before cutting. Makes 32 servings.
