Rigatoni With Roasted Eggplant Alla PuttanescaI N G R E D I E N T S

1 lb. rigatoni pasta, cooked until al dente

2 medium eggplants, unpeeled

3 Tbsp. olive oil

3 cups Patsy’s Puttanesca Sauce

D I R E C T I O N S

Preheat oven to 350°F. Trim the eggplants and cut into ½-inch cubes. Grease the bottom of a baking dish with olive oil and add eggplant. Bake for 30 to 40 minutes (or until soft), turning occasionally to ensure even browning. In a large saucepan, bring the sauce to a boil. Add roasted eggplant, reduce heat, cover and simmer for 7 minutes. (You may have to add water if the sauce becomes too thick.) Serve over pasta. Serves 4.

6 large eggs, beaten

1½ cups heavy cream

Salt and pepper to taste

3 cups chopped fresh baby spinach, packed

8 strips of bacon, cooked and crumbled

Preheat oven to 375°F. Combine the eggs, cream, salt and pepper in a food processor or blender. Layer the spinach, bacon, ham, mushrooms and cheese in the bottom of the pie crust, then pour the egg mixture on top. Bake for 35 to 45 minutes until the egg mixture is set. Cut into 8 wedges and serve with a side salad. Serves 8.

Every year, when producing Campo Viejo, the winemaker tries to transmit the distinctive Rioja character. For this reason, the varieties which have given Rioja its typical flavor play a fundamental role in their wines: the Tempranillo, Rioja grape par excellance which imprints the character of the wines on the denomination; the Mazuelo variety, source of the acid balance in the wines and the Graciano which provides structure, amplitude and elegance to the wine yielding the Reserva and Gran Reserva. Campo Viejo wines are characterized because they benefit from the diversity offered by the different varieties, grown in the different areas of the Rioja Province (qualified designation of origin).

Chicken Salad in Half AvocadoI N G R E D I E N T S

2 lbs. boneless, skinless chicken breasts, cooked and cubbed

Juice of 3 lemons, divided

1 cup cucumbers, cubbed

1 cup green onions, chopped

½ cup fresh cilantro, chopped

2 tomatoes, cubbed

½ cup almonds, sliced

½ cups olive oil

Salt and pepper to taste

3 large avocados

½ cup Parmesan cheese, shredded

D I R E C T I O N S

Toss chicken with juice of 2 lemons in large bowl. Add cucumbers, onions, cilantro, tomatoes, almonds, olive oil, salt and pepper. Cover and refrigerate at least 30 minutes. When ready to assemble, cut the avocados in half and discard seed. Generously drizzle with juice of remaining lemon to prevent browning and to enhance flavor. Place avocado half-shells on a plate. Fill with chicken mixture. Garnish with cheese. Serves 6.
