This possibly shows the most typical Yarra Pinot character. Handled in a very similar fashion to the Woori Yallock Pinot Noir but made from a warmer vineyard, this is always the first vineyard we pick every year. PINOT NOIR 2006 Vineyard This wine is from the south westerly facing slope of Mt Mary in Coldstream. This sub-region of the Yarra Valley is warmer than Woori Yallock and thus ripens earlier. We usually pick this in late February to early March. Vintage Conditions 2006 was a hot and dry vintage which led to earlier than usual ripening dates but also very low disease pressures. As this vineyard is exposed to the afternoon sun, the window of opportunity for picking is quite small but we think we got it right. Winemaking True to our style, this fruit was picked early, hand plunged, foot-stomped and pressed without over-extraction. The fruit was 100% de-stemmed although the slight greenness to the seeds gives the wine a mid-palate texture that is similar to a wine made with stalks. The wine was matured for 16 months in French oak, 30% of which was new. Wine Analysis Alc/Vol : 13.5% Acidity : 7.1 g/L pH : 3.42 TASTING NOTES Colour : Pale brilliant strawberry and plum red. Nose : Attractive coolness on the nose of sour fruit with restraint, elegance and perfume. Lovely fruit lift with seamless integration. Oak caressing in the background. Palate : A surge of cherry and slightly undercooked rhubarb lifts and runs along the palate. Good depth and texture. Needs time to evolve and fill.
