ChampagneWine has been made in this north eastern region of France since Roman times, but the advent of the effervescence with which Champagne is synonymous was a relatively recent one and occurred in the mid 1600’s.
Quite who first came up with the idea of a second fermentation in bottle (the source of the bubbles) is unclear. It was definitely wasn’t that famous monk Dom Perignon (although he made enormous contributions in other areas) and there’s even a contentious theory concerning an Englishman called Dr Christopher Merrett who is said to have mastered the process some 30 years before the French announced the invention. Of course we’ll never know for sure but the unique expression of Champagne and the ingenuity behind it live on to this day – and that’s something we can all drink to!

ChampagneDID YOU KNOW?
An unopened bottle of champagne contains about three times the pressure of a car tyre.
According to 101 Crazy
Ways to Die by Matt Roper
you are more likely to be
killed by a freshly-popped
champagne cork than
a poisonous spider.
As well as the mainstays
of Pinot Noir, Pinot
Meunier and Chardonnay
there are four additional
varieties permitted in the
production of Champagne;
Arbanne, Petit Meslier,
Pinot Blanc and Pinot Gris.
The largest format is
called a Melchizedek
and contains 30litres of
Champagne,
or 40 bottles.

ArgentinaAlthough there’s a history of wine production in Argentina dating back four centuries it’s only in the last two decades that it has caught international attention – driven principally by the mighty, meat-friendly Malbec.
Bonarda is the second
most widely planted
red and makes a much
lighter, more frivolous
red. And don’t forget
Argentina’s signature
white, Torrontes – at
high altitude it can make
an aromatic, sensuous
white that’s brilliant with
spicy dishes.

AustraliaFrom a standing start in the early 1800’s Australia’s wine industry grew exponentially until 1875 when disaster struck in the form of phylloxera – a vine pest that had already decimated the European vineyard 15 years earlier.
It wasn’t until the 1960’s
that production regained
stature and traction, but
by the 1980’s the UK was
firmly acquainted with
buttery Chardonnays and
rich Shirazes from the likes
Jacob’s Creek and Penfolds
and a love affair was
established, which thrives
to this day.

ChileChile’s vineyards populate an 800 mile stretch of land from Atacama in the north to Bio-Bio in the south. With the Andes to the east and the Pacific to the west providing natural protection Chile is something of a winemaker’s dream, but it wasn’t until the 1980’s that foreign investment began to unlock the true potential.
Today Chile is the world’s
8th largest producer and
whilst the majority of the
wines that we consume
in the UK feature classic
varieties at the ‘value’ end
of the spectrum, interest
is now growing in the
experimental and artisanal
categories as well.

EnglandEnglish wine (not to be confused with British wine, which is made from imported grape concentrate) is getting rather serious these days.
Most notable is our
sparkling wine which
consistently tops the
medal table in blind
tastings, so much so that
the Champenoise have
invested in vineyards on the
south coast, recognising
that they share much of
the geology and climate of
their homeland. And there
are also some characterful
white wines, especially
those made using the
Bacchus variety, as well as
delightful roses and even
the occasional red. Cheers!

Alsace sits on the France’s north eastern frontier with Germany and Switzerland.
The Vosges mountains in the west provide shelter from the extremes of the central
European climate whilst the slopes orientate the vines towards the ripening sun.
Alsace’s specialties are; Riesling, Gewürztraminer, Muscat, Pinot Gris,
Pinot Blanc and Pinot Noir.
R H O N E
The Rhone is best known for its full-bodied reds, based on Grenache and Syrah, with truly
‘fine wines’ from Cote Rotie and Hermitage in the north to brooding Chateauneuf du Pape’s in the south, along with peppery Cotes du Rhone’s, peachy whites and
bombastic roses.
PROVENCE & LANGUEDOCROUSSILLON
The sun-drenched arc from Perpignan to Toulon takes in some of France’s
more accessible and innovative wine regions; Provence is the epicentre of the premium rose craze that’s been sweeping through the UK over the last 15 years, whilst the
Languedoc produces delectable, varietal wines that are just as easy to pronounce as they are to quaff. Also notable are established appellations
like Corbieres where the rose’s are less self-conscious and the reds and whites represent some of the
best values to be found anywhere.
L O I R E
The Loire Valley stretches 250 miles from Nantes on the Atlantic coast to Sancerre and
Pouilly-Fume in the east. White varieties reign supreme here; with bone dry Melon de Bourgogne (Muscadet), intense Chenin
Blanc (Vouvray) and of course minerally Sauvignon Blanc in a style that’s appreciably
more complex and nuanced than some of the more ‘tropical’ versions
found in the New World.
B E A U J O L A I S
Beaujolais sits below the mighty Burgundy region, and whilst it can’t compete with the ethereal Pinot Noir’s of its northerly
neighbour Beaujolais is unsurpassed as a source of vibrant, fruity reds
for pure drinking pleasure made from Gamay.
B U R G U N D Y
Whilst Burgundy inspires a somewhat obsessive devotion amongst its most hardcore
followers, it’s certainly undeniable that no other region in the world confers so much diversity and complexity on just two grape
varieties; Chardonnay and Pinot Noir. Burgundy exemplifies ‘terroir’, the concept that a wine’s characteristics are determined
by the topography, geology and microclimate of a particular vineyard. The resulting
wines are rarely cheap (!) but are unmatched for their captivating
flavours and resolute sense of place.
B O R D E A U X
Bordeaux is the largest wine producing region in France and arguably the most important and influential wine region in the world. Although 75 million cases are produced each year (approximately 1.5%
of total global production) only 3% of that comes from the Grandes Chateaux like
Lafite, Mouton-Rothschild and Latour with which the region has become synonymous. Cabernet Sauvignon, Merlot and Cabernet
Franc are the bedrock varieties here, but aromatic whites and sensuous dessert wines
based on Sauvignon Blanc and Semillon are also not to be missed.

Merlot is France’s most
planted variety, covering
112,400ha - that’s 14% of
France’s total vineyard, but
an incredible 42% of all the
Merlot planted across the
world.
Ugni Blanc sits firmly in
the No.2 slot with 82,000ha
under vine, centred mostly
around the Cognac region
– which is why you’ve
probably never heard of it!
Grenache Noir, the
workhorse of the Rhone,
is our final entry at No.3,
with 81,300ha planted.
ItalyFrom the snow-capped Alps in the North to the sun-drenched, volcanic slopes of Sicily, Italy is unmatched for sheer geological and climatic diversity. She also boasts the largest selection of unique, indigenous grape varieties of any country resulting in wines with distinct personalities that cry out for food.
The northerly regions of
Tuscany, Piedmont and
the Veneto are rightly
famous for iconic wines
like Brunello di Montalcino,
Barolo and Amarone, but
take a close look at the
South as well – here you’ll
find some astonishing
flavours that won’t

SpainThere’s more to Spain than Rioja – much more. A new generation of daring, young winemakers are challenging convention, rejuvenating ancient vineyards and pioneering long-forgotten regions. The result is an ever-growing collection of styles and flavours that are just as extraordinary as the often-anarchic labels that adorn them.
Look out for peachy
Verdejo’s that could pass
as a 1er Cru Chablis or
spice-laden Garnacha’s
that wouldn’t be out of

USAWe have a great deal to thank the 300 year old American industry for, not least because when the European vineyard was all but destroyed by phylloxera in the mid-1800’s it was disease resistant American rootstock that came to our rescue.
Apart from a slight
interruption during the
Prohibition era America’s
growth to become a vinous
super-power has been sure
and steady, today wine is
produced in all 50 states
although California is the
main driver with 89% of
the volume.

Best of the Rest
Climatic changes, cultural shifts and technological advances have resulted in a large number of unexpected countries branching out into wine production.
Mexico and Thailand
are certainly surprising
entrants, but you can also
enjoy local wine from
Kenya, Ethiopia, Tahiti,
Japan, Sweden and Hawaii.
One intrepid Scotsman
in Fife is also having a
crack but, perhaps not
surprisingly, weather has
so far hampered his efforts.

Dessert & Port
Dessert wines vary considerably in style but all share the fundamental characteristic of extraordinary concentration.
They are decadent,
sensuous, complex and
viscous wines; their
incredible sweetness
punctuated by filigree-
like veins of acidity, and
they accentuate even the
simplest pud or tiniest
morsel of cheese to round
off a meal like nothing else.
Put them on your dessert
menu (not just the wine
list) and pour small glasses
with a modest margin for
maximum effect.
