Domaine Jean-Marc Bernhard is located in the town of Katzenthal, right in the heart of the beautiful Alsatian wine country. This quaint little village is tucked away in a little valley surrounded by a sea of vineyards along the Alsatian Wine Route. The winery was bought by the Bernhard family in 1802 with buildings dating back to the 16th century. The cellars have always been devoted to winemaking. Wineck Schlossberg Very steep throughout, high in elevation and protected from the wind, this site is ideal for superbly refined, mineral-laden Riesling.

Mambourg Considered to be the warmest Grand Cru vineyard in Alsace. With its clay-calcareous soil and warm temperature, this vineyard excels in powerful and concentrated Gewürztraminer.

Kaefferkopf The newest Grand Cru in Alsace. With a multitude of various soil-types, this site was not recognized as being homogeneous enough to reach Grand Cru status. However, the Kaefferkopf always consistently produced wines of unfathomable complexity and was finally granted Grand Cru status in 2007. Pinot Gris and Gewurztraminer are the prized varietals from this prestigious vineyard.

Florimont A site comprised of calcareous, conglomerate and marly soils, the relatively flat vineyard is well known for floral scented and delicate Gewürztraminer.

Schlossberg Like the Wineck Schlossberg, this is another treacherously steep vineyard. So steep in fact, that much of this Grand Cru site is terraced. Also like the Wineck Schlossberg, the soil here is granite and high in minerals. Wines from the Schlossberg have tremendous refinement with an underpinning of power. Riesling excels here.

FurstentumThis site has a mixture of soil-types: brown calcareous, small pebbles and bedrock. Due to this, wines from the Furstentum vary from one parcel to another. However, one thing it has in common throughout is its steepness, which provides ideal sunlight throughout the growing season. Whether the wines are delicate or powerful, finesse and complexity can always be found here and Pinot Gris is the preferred varietal.

ViticultureWorking in harmony with nature is the Bernhard credo. The domaine’s philosophy is based on the respect of terroir and soil with as little human intervention as possible. Everything is done to favor the life of the soils, capturing the expression of each unique and individual terroir. Organic farming has been practiced at the estate since 1999.

WinemakingWinemaking is based on the same principle as the nurturing of vines: less is more. Long fermentation with natural yeast, no chemical treatments in the vinification process and as little handling of fruit as possible makes for a cleaner, more intensely flavored wine. The end results from this estate offer wines of brilliance and clarity without any oversaturated character of ripeness and obesity. Grace and elegance are the hallmarks of this superb producer. The art of winemaking is alive and well at Domaine Jean-Marc Bernhard, with wines that are in a class of its own, just as it has been for 9 generations.

THE KAVALAN STORY:By utilizing Taiwan’s unique natural resources and remarkable technological skills, aiming for the first whisky distillery in Taiwan, Kavalan distillery of King Car Group was founded.

King Car Group, with more than 2000 employees, was established in 1956 and runs businesses in several fields: beverages, food, biotechnology, and aquaculture, among others. It is particularly famous for its RTD coffee, Mr. Brown, which is also available in Europe.

Kavalan group held their initial hopes and would not give up, aiming to establish the solid foundation of the distillery. The effort goes into every drop of new make spirit and every seasoned cask they choose. Coupled with the mastery of the blender, they ensure the silky smoothness and distinctive flavors of Kavalan whisky. The first bottle of Kavalan was released in December 2008 and now it is the best-selling expression. The recipe of classic Kavalan is complex and contains different types of casks--fresh bourbon, fresh sherry and refill casks rendering the spirit a multi-layer of fruity and floral notes.

There is also an incredible visitor center on site that receives more than one million visitors a year! That’s about as much as all the visitors to all the whisky distilleries in Scotland combined! And many of their visitors will have seen more than one distillery…

So, it comes as no surprise that Whisky Magazine has named Kavalan distillery the 2011 World Icons of Whisky, “Whisky Visitor Attraction of the Year.”

UNIQUE WHISKY PRODUCTION:The warmer temperatures in Taiwan mean that spirits made here mature several times faster than those from cooler locales like Britain, Japan or American states like Kentucky. Rather than sitting in a barrel for 8, 12 or 18 years, Kavalan ages for 2 1/2 to 3 years before it is bottled.

Temperatures and humidity in Taiwan cause anywhere from 10 percent to 15 percent of the whisky to evaporate, compared with the 2 percent to 3 percent “angels’ share” allowed for in Scotland. This fact means that concentration happens in a much shorter time.

Therefore, Kavalan whiskies boast fruitier flavor profiles than their western cousins thanks to modifications such as stainless steel fermentation tanks, oil-based fuel instead of peat, and ex-sherry, port and bourbon barrels for aging; all Kavalan whiskies are cask strength, non-chill filtered and natural in color.

Distillery Feature: Kavalan Distillery

WHAT ARE PEOPLE SAYING? WHAT ARE THE EXPERTS SAYING? Kavalan has been winning whisky lovers the world over. It all started when Kavalan made it into Jim Murray’s Whisky Bible 2010, awarding the spirit with a Gold Award. But the world really took notice of Kavalan when it beat a trio of Scottish Blends during a blind tasting event organized by The Times at the famous Burns Night in Scotland. Soon after this, Kavalan won a top award at the World Whiskey Awards in London.

“That place gets my pulse racing because of the possibilities of what they’re doing there,” said Jim Murray, the author of Jim Murray’s Whisky Bible.

So, does this mean that the Kavalan whisky is better than some of Scotland’s purest Scotch whiskies? Absolutely not. A Scotch whisky comes from years of tradition, care and craftsmanship. Kavalan is a relatively young whisky. However, it is undoubtedly a great whisky in its own right employing a modern approach with spectacular results.

Kavalan was the earliest tribe to inhabit the area of Yilan, Taiwan, where the distillery is located. Those people were known to represents sincerity, honesty, and the spirit of step-by-step cultivation. The Kavalan distillery aims to continue that tradition of passionate commitment in creating their premium whisky and therefore bears the name of those people.

KING CAR CONDUCTOR SINGLE MALT WHISKYKing Car single malt whisky is one of their three latest releases. They like to make the flavor the fullest and most rounded possible. And this time, because they like to retain most of the flavors, the alcoholic strength is raised to 46% (ABV). This is the first expression launched in the name of King Car, which is the name of the Group. The Chairman of the Group, Mr. TT Lee, wanted to have a single malt whisky that would also represent the company and show the kind of diverse, multi-areas of business in which they operate. This King Car single malt (aka Conductor) truly represents the Group with its complex flavors, delicate aromas and multi-layers of background fruitiness!

Nose: A touch of papaya, banana and green apple; pleasantly floral. Palate: Sweet, rich, vanilla, banana, coconut, a slight bitterness to balance.

KAVALAN CLASSIC WHISKYThe first whisky produced by the distillery, Kavalan Single Malt expresses the quality and the character of the brand.

If water is essential to whisky production, it follows that the character of the water used can have a considerable influence on the profile of the spirit. The founder of the Kavalan distillery has spent years searching for the perfect site, with the ideal water supply. He chose Yilan as the site for its abundant supply of cold, spring water flowing through the Snow Mountain. Kavalan, the earliest tribe that inhabited Yilan, represents sincerity, honesty, and the spirit of step-by-step cultivation. Kavalan distillery continues the tradition of passionate commitment to creating premium whisky.

Nose: Clean, elegant, floral (pleasant and refreshing fragrance of the butterfly orchid), fruity and seductive; hints of honey, tropical fruits like mango, pear, vanilla, coconuts and suggestions of chocolate. Palate: A hint of sweet mango juice with that spicy complexity and gentle warmth on a medium, oily and citrus finish.

KAVALAN CONCERTMASTER SINGLE MALT WHISKYConcertmaster, a single malt whisky that stresses the singular character yet does not lose its comprehensive harmony. Using Portuguese ruby, tawny and vintage Port wine casks as the main flavor, combining Kavalan distillery’s Taiwanese whisky features to compose a harmonic symphony. It presents a natural colors without additives and its original flavor with a Port finish that is composed with layers of flavors and fragrances.

The air in Yilan, where Kavalan whisky is distilled, is considered to be pure and fresh in Taiwan. It is the fresh air that gives Kavalan whisky its smooth, creamy and refreshing character. Kavalan Concertmaster single malt whisky is first matured in specially selected American oak casks and then finished in Port barriques. Port, a fortified wine, is traditionally made in the Douro Valley in Portugal. The marrying in the barriques mellows the flavors and adds indefinable smoothness to the whisky. Kavalan Concertmaster single malt whisky was awarded silver medals at the San Francisco World Spirits Competition.

Nose: Tropical fruitiness with honey, vanilla, coconut and cotton candy. Palate: Rich bodied with natural sweetness and complexity.

founded in 1823 and now led by Alois Lageder in the families 5th generation of ownership. These amazing wines come from sustainable, holistic methods of production in both the vineyards and cellars from what may be one of the most amazing landscapes we have ever seen grapes grow; Magre, Alto Adige. Their wines, primarily white, are made partly from grapes that grow in Lageder’s own biodynamic vineyards, as well as grapes purchased from the best micro-climates and only from long-termed contracted growers who follow their criteria of quality and sustainable viticulture. Lageder’s goal is to produce authentic wines while preserving nature for future generations to come. They practice “quality rather than quantity.” The Alto Adige region is ideal for growing exceptional grapes with slopes that range from gentle to extremely steep. It benefits from being situated between the Alps and the Mediterranean allowing for sunny hot days followed by cool nights. This is the best combination for making elegant, well balanced wines. The grapevines sink their roots into soils of the Dolomites which is a mixture of limestone, quartz, porphyry clay and sandstone. The key is to know the right plot for the right grape which one gets to over 191 years of family work. In 1995, Lageder constructed their new winery at the historic Lowengang estate. This sustainable architecture, using organic building materials and renewable energy sources has proven that this way of design is the way of the future.

What makes Big Gin different is that it is distilled from 100% corn, which is a bit unusual in the gin world, where a lot of the distillate uses wheat, rye, or barley. Captive Spirits aims for the most neutral flavor profile possible with the corn grain to help showcase the botanicals.

Launched in the U.S. in late 2013, Carpano Bianco is a colorless sweet vermouth. It is an exquisite Italian vermouth expertly handcrafted in small batches from the finest ingredients. Similar to their “Antica Formula,” the Bianco is also made from the same 30 mountain herbs. However, the base hillside wine is made from extra matured grapes and no caramel or color was added. Little less in alcohol compared to the “Antica Formula,” the Bianco is crisp and complex. Made with a white wine base (using Trebbiano, Chardonnay and Cortese grapes), Carpano Bianco is fortified and then flavored with ginger, cloves, chamomile, hyssop, and what they're calling 'artemisia' (the artemisia genus includes several hundred species including wormwood, sagebrush, and mugwort). On the nose Carpano Bianco has notes of herbs such as sage and fennel backed by fresh citrus, vanilla, baking spice, dried apricot, raisin, date and orange peel. On the palate it displays candied violet, candied ginger, and floral sweetness. It’s rich and velvety with smooth vanilla notes and a subtle tinge of bitterness on the finish. Drink on the rocks like the Italians do as an aperitif, with soda or Prosecco on a hot day, or make a white Manhattan with High West Silver Rye and a dash of orange bitters.

a picture is worth a thousand words. Numanthia has brought the Toro region global attention and produces remarkable wines from an extreme environment. The winery is named after the 2,000 year old Spanish legend about the town and people of Numanthia who heroically resisted Roman invasion for twenty years, eventually choosing death over surrendering. Toro is one of the few regions in Europe to have resisted Phylloxera for the past 140 years. They officially received their D.O. (Donominacion de Origen) in 1987. The 5,500 hectares planted are shared amongst 1,200 growers which shows a lot of tiny parcel ownerships.

June is the month to grab this terrific wine. Although not yet rated, Termes has a great track record. Both Wine Spectator & The Wine Advocate have awarded this wine 92 points on average over the past 10 years. Wine Spectator ranked Termes #2 in the Top 100 in 2009.

The Wines:

The Grape:Toro wines are made from the grape Tinta de Toro, specific to Toro. This grape is from the Tempranillo family but differs as the berries are very small with high skin to juice ratio, producing wines with extremely deep color and rich tannins.

The Vineyards:Almost half their vineyards range from 70-100 years of age along with a very special 4.8 hectare lot that was planted over 120 years ago. The old bush vines are planted 9 feet apart, head pruned and dry farmed. This low density is crucial to survive in a non-irrigated environment. Toro only receives 6-8 inches of rainfall annually. Thermol variations here can vary as much as 68 degrees from hot daytime to cool nighttime temperatures. The roots work their way up to 20 feet in order to find the necessary moisture and nutrition (retained by the clay) needed to survive.

The Soil:The soils have been the key to survival here. The sandy, gravelly surface has resisted Phylloxera for 140 years. The terroir found here produces world class wines. Vines growing in soils containing higher clay content will have greater fruit intensity while vines growing in gravelly/sandy soils provide the body and structure to support these intense wines.

fidencio spirits founders, Amy Hardy and Arik Torren, met ten years ago tending the bar of one of NYC’s great restaurants. They shared a passion for wine and food and became fast friends. A few years later, Amy was traveling through Puerto Escondido, Oaxaca, and came across Villas Carrizalillo, a beachside hotel that was in disrepair. Since then Amy and her partner, Edward Mitchell, have transformed “The Villas” into one of the finest hotels on the Oaxacan Coast.

During the summer of 2007, Amy and Arik took a trip to Oaxaca City to taste and learn more about

mezcal. During this incredible experience, they were bitten by the mezcal bug. Through friends of Amy, they had the good fortune to be introduced to Enrique Jimenez who was building a new distillery. Enrique is the son of Fidencio Jiménez, the namesake for Fidencio Mezcal, who started making mezcal over 100 years ago when he moved to Santiago Matatlán, Oaxaca.

Amy and Arik knew that this was the right fit and decided to pursue a partnership with Enrique before the first drop of Fidencio was made. So, with a hunch and a handshake, Fidencio Spirits was born.

Enrique, always the innovator, dreamed of a mezcal that was the purest expression of Espadín. Back in 2006, Enrique branched out on his own and began construction of a new distillery and a dream. This new distillery was designed from top to bottom by Enrique and incorporates all the features found in traditional mezcal palenques, all except for one, the radiant heat oven. This oven is the first of its kind in Oaxaca and is the defining force behind the creation of Fidencio Mezcal.

Mezcal differs from tequila in several ways, but most notably two ways. It is produced on Mexico’s eastern coast in Oaxaca and is made from a variety of agave called Espadín.

The split agave Espadín piñas for the Fidencio Sin Humo are placed in a Radiant Heat Oven (as opposed to the traditional open, in ground, pit roasting) and roasted for three days. Enrique designed and built this unique oven to produce a mezcal that is a pure expression of Espadín, without the influence of smoke that is typically found in other mezcals produced in the traditional method. Sin Humo is also fermented without the agave fibers. This gives Fidencio a lighter and more delicate mezcal. Sin Humo is distilled in a custom, wood fired, Alembic pot still. There are additional chambers in this still that recirculates the mezcal. This gently softens the intensity and is another contributor to the elegance of the mezcal. It is distilled twice, the minimum allowed for export. Well water is then added to finish the spirit which is bottled at 40% ABV.

The agave for the Clásico and Pechuga are roasted in the traditional method. The oven is a stone lined, earthen pit. A fire of Encino, the local black oak, is lit in the pit, which heats up the stones. When the fire goes out and the stones are hot, the agave is piled in the pit and buried. After three days the smoky maguey (roasted agave piñas) is ready for distillation.

Fidencio Clásico is distilled twice in a traditional, wood fired, simple Alembic still. This still is very similar to the stills used in Cognac. After the second distillation a touch of water is added, and it is bottled at 44% ABV.

Fidencio Pechuga starts as Clasico but then gets put back in the still for a third distillation. From here the distillation process for Pechuga is quite different from the other mezcals. Along with the mezcal returning to the still for a third run they add a traditional mixture of fruit: quince, apples, bananas, pineapple and guava. The really unique part is the whole chicken breast that goes in the still too. The breast is skinned and washed to remove all the fat and it is hung from the cap of the still. It is believed by the Oaxacan people that the chicken breast softens the intensity of the spirit and rounds out the flavor of the mezcal. Pechuga is cut with the same well water and bottled at 45% ABV.

The Fidencio Madrecuixe is a whole different animal. Made from 100% Agave Madrecuixe which is a wild mountain agave with a very low yield. These agave are not cultivated and grow only in the Oaxacan mountains. They are harvested by hand and walked down the mountain on mule back. The piñas are harvested after 12-15 years then roasted in the traditional method for 5 days to highly concentrate the sugars and rested for two weeks before being crushed then distilled two times. The Madrecuixe is bottled at 49% ABV.

estabLished by henry Lindeman in 1843, an English doctor who graduated from St. Bartholomew’s Hospital Medical College and set voyage with his wife to start their new life on the other side of the world in Australia. He planted the first vines in Hunter Valley and soon began

selling wine locally. As word grew of his great wines so, too, did the demand. Lindeman started to explore the best areas to source grapes from. This allowed Dr. Lindeman

to practice cross-regional sourcing which would ensure high-quality wines, consistently. These regions included Hunter Valley, Barossa Valley, Coonawarra, Pathaway and Clare Valley. Today, Lindeman’s has a rich history of crafting quality wines for everyday enjoyment. It is with great pleasure that we are introducing our new Sancerre label called “Les Baronnes” which is replacing “Les Bonnes Bouches” in the United States, starting with the 2013 vintage. It is exactly the same wine, only the name changes!

30 years ago we developed distinctive labels for different importers around the world. Since then, depending on the market, we have had two different labels in circulation, even though the wine in the bottle was exactly the same. Recently we decided to simplify this by transitioning to just one label throughout the world (outside Asia). It is a great way to cut down on paperwork and at the same time to avoid packaging errors that sometimes can happen!

The design and colors of the Les Baronnes label are very similar to Les Bonnes Bouches so there is very little difference visually. We hope you will enjoy our Les Baronnes Sancerre!
