    No-Bak e Cookies

    We grew up with Chocolate Haystacks and Rice Krispie Treats. Beyond that, we neverpaid much attention to no-bake cookies. Then when we stared taking our kids camping,we started looking for cookies that we could make at camp. That led us to revisit no-bake cookies.

    That was along time ago. Back then, we thought of no-bake cookies as kid cookies.Over the years, we experimented and tried new recipes and have made no-bake cookiesthat are definitely adult and good enough to serve to guests. No adult will to turn downWhite Chocolate Chip Cranberry Bar Cookies, a grown up version of Rice KrispieTreats. But of course, youll find no-bake cookies here that the kids will clamor for.

    We think you will enjoy these cookies. Theyre great cookies, not just great no-bakecookies.

    Whether you don't want to heat up the kitchen or the demands of getting the kids out thedoor are upon you, it's nice to have a few no-bake cookie recipes on hand. We thought

    we would share some of our favorites with you.

    Typ es o f No-Bake Coo kies

    There are three types of no-bake cookies: those that require no cooking, those that arecooked in the microwave, and those that are cooked on the stovetop. Generally, weprefer the latter.

    Some no-bake cookies require refrigeration or may become soft if left in a picnic basketor school lunch. That doesnt make them bad cookies; you just need to consider thecircumstances when choosing a recipe. In addition to cookies that may become soft,

    fragile cookies may not work well in your childs lunch bag.

    Kids love to help make cookies. Many no-bake cookies are very simple and quickfitting your childs attention span. Not only is there no chance for your child to burnhimself or herself, but your child doesnt have to wait for the cookies to come out of theoven to see the reward.

    Kids of all ages love fresh cookies. We used to take scout and youth groups hiking inthe mountains. We would bag up the ingredients for a batch of no-bake cookies. For amid-trail break, we would stop and make up a batch of cookies.

    No-Bak e Coo kie Recip es

    No-Bake Cookies: Bars

    Cranberry Coconut Bars

    Cranberry Coconut Bars are more of a big kidcookieit has too much fruit and too many nuts init to suit most youngsters. But it so scrumptiousand easy, we had to include it. If you are making alunch for a spouse or a teenager, we think this willbe a hit. Of course, it doesn't have to go in a lunchpail.

    This is a microwave cookie that can be mixed rightin the baking pan. How's that for convenience?

    If you are not fond of dried cranberries, consider substituting dates, raisins, or choppedapricot pieces in this recipe.

    Ingredients

    1/2 cup butter1/2 cup brown sugar1 1/2 cup quick rolled oats1/4 cup light corn syrup1/2 cup dried cranberries1/2 cup sweetened flaked coconut

    1/2 cup walnut pieces

    Directions

    1. Place butter in an 8-inch square, microwave-safe baking dish. Microwave untilthe butter is melted.

    2. Stir in the brown sugar until dissolved. Stir in the rest of the ingredients. Pressthe mixture firmly into the dish.

    3. Microwave for three to five minutes or until lightly browned. If your microwavedoes not have a rotating carousel, rotate the dish twice during cooking.

    4. Let the cookies cool and then cut them into bars with a sharp knife. Wrap themindividually to pack in a lunch.

    This recipe will make sixteen 2 x 2-inch squares.

    Rocky Road Bars

    Dad, anything with marshmallows and chocolatehas to be good. Katie was right; they are good.These interesting cookies are almost like candy

    barsa chewy confection with nuts and chocolate.

    These are very quick cookies. With all theingredients on the counter, it took us eight minutesto pop these cookies in the microwave. We madeseveral batches, tinkering with them to get them

    just right. Everyone declared them very good.

    Ingredients

    1/2 cup butter1/2 cup brown sugar

    1 1/2 cup quick rolled oats1/4 cup light corn syrup1/2 cup dried semi-sweet chocolate chips2/3 cup miniature marshmallows1/2 cup walnut pieces

    Directions

    1. Place butter in an 8-inch square, microwave-safe baking dish. Microwave untilthe butter is melted.

    2. Stir in the brown sugar until dissolved. Stir in the rest of the ingredients. Pressthe mixture firmly into the dish.

    No-Bake Cookies: Drop Cookies

    Chocolate Peanut Butter Drops

    This recipe makes a great kid cookie. It's almost

    confection-like but is so packed with energy andhearty oats that you won't mind giving youryoungster a few. This cookie is best with a tallglass of milk.

    This is a range-top cookie. Because it is a no-baker and so full of energy, it makes a greatcamping cookie.

    Ingredients

    2 cups sugar

    1/2 cup milk1/4 cup butter1/3 cocoa2 1/2 cup quick oats1/2 cup peanut butter1/2 tablespoon vanilla extract

    Directions

    1. Combine sugar, milk, butter, and cocoa in a medium saucepan. Cook overmedium heat, stirring occasionally, until the mixture comes to a boil. Cook for twomore minutes stirring constantly and then remove the pan from the heat.

    2. Stir in the peanut butter and vanilla, then the oats.3. Let cool for several minutes and then drop spoonfuls onto waxed paper. Let the

    cookies cool completely before removing them from the waxed paper.

    Editors note:Patty from San Francisco made these and reported excellent results. Sheadded nuts to the recipe. Another baker, Peggy, reported adding miniaturemarshmallows successfully.

    Chocolate Chip Oat No-Bake Cookies

    This is one of those cookies that you make on thestovetop but it is quick and easy cookie. We

    made ours in less than ten minutes fromassembled ingredients to cookies on the sheet.

    Everyone likes a chocolate chip cookie. Theyoats make it a chewy chocolate chip cookie. Itsa wholesome cookie that you wont mindincluding in your childs lunch box.

    If you like chewy chocolate chip cookies, trythese.

    Ingredients

    1 cup brown sugar1/4 cup butter1/3 cup evaporated milk1/4 cup peanut butter1 cup quick rolled oats1/2 teaspoon vanilla extract1/2 cup chopped salted peanuts1 cup milk chocolate chips

    Directions

    1. In a saucepan, cook the brown sugar, evaporated milk, and butter to a heavysaucepan. Cook over medium heat, stirring continually, until the mixture comesto boil. Cook for one minute longer.

    2. Remove from heat, stir in peanut butter, quick oats, and vanilla. Let cool untiljust warm to the touch then stir in the peanuts and chocolate chips, stirring justuntil the chips and peanuts are dispersed.

    3. Drop the cookies by the spoonful onto a nonstick baking sheet or waxed paper.Cool completely in the refrigerator.

    Bakers note: If you stir the chocolate chips in before they have sufficiently cooled, they

    will melt. Thats not bad but you will have chocolate cookies instead of chocolate chip

    cookies.

    No-Bake Cookies: Rolled

    Snow Topped Mountains

    Those must be baked cookies. Actually, they are

    baked in the microwave but you cream the sugarand butter together just as if you were going tobake them in the oven.

    Ingredients

    1 3/4 cups all-purpose flour1/2 cup cocoadash of salt3/4 cup butter3/4 cup brown sugar1/2 teaspoon vanilla

    1 cup walnuts2-3 tablespoons waterpowdered sugar for dusting

    Directions

    1. Mix the flour, cocoa, and salt together in a medium bowl/2. Cream the butter and brown sugar together. Add the vanilla. Add the dry

    ingredients about one-third at a time. Add the nuts.3. Unless the butter has become too soft, the mixture will still be dry and granular.

    Add cold water one tablespoon at time beating after each addition, until themixture begins to clump together. Do not add more water than needed. Formwalnut-sized balls. As you form the balls, the dough should come together in asoft, clay-like consistency.

    4. Place the eight or ten balls on waxed paper placed on top of the carousel in themicrowave. Bake at high heat for about three or four minutes or until firm.Remove the waxed paper from the microwave to a wire rack. Let the cookiescool for four or five minutes and then remove them from the waxed paper. Dustthe tops with powdered sugar.

    Bakers note:Since microwave ovens vary significantly, you may need to experimentwith cooking times. In our test microwave, 3 1/2 minutes was just right. At three minutesthe starch was not quite cooked enough and at four minutes, they were just a little hard.

    Tip: Use a fine-mesh sieve to get a light, even dusting of powdered sugar on thecookies. Hold the sieve over the cookies and drop a spoonful of powdered sugar in thesieve. Shake or tap the sieve to create a fine flow of sugar.

    Tropical Orange and Coconut Balls

    If you love the buttery sweet texture of pecan sandies, trythese!

    These are sweet, tender cookies made with pecans andjust a touch of orange. They both taste and look great.Don't be afraid to bring these to the next party. Everyonewill be surprised to hear that these are no-bake cookies.

    Ingredients

    3 1/2 cups vanilla wafer cookie crumbs2 cups powdered sugar1 1/2 cups pecans, chopped1/3 cup frozen orange juice concentrate, thawed,undiluted

    1/2 cup butter, melted1 1/2 cups sweetened flaked coconut

    Directions

    1. In the mixing bowl of your stand-type mixer, combine the cookie crumbs,powdered sugar, and chopped pecans. Mix in the orange juice and meltedbutter. Mix for 1 to 2 minutes.

    2. Shape into one-inch balls and roll in the coconut.3. Place the cookies in the refrigerator to become firm.

    Peanut Butter No-Bake Cookie Recipe

    This is a chewy, peanut butter-rich cookie made withoats. Both kids and adults will like this.

    Again, this is a stovetop recipe. From ingredients tocookies on the sheet took us about ten minutes.

    Ingredients

    2 cups brown sugar1/2 cup evaporated milk1/2 cup butter1/2 teaspoon vanilla extract1 cups peanut butter3 cups quick rolled oats

    Directions

    1. Add the brown sugar, evaporated milk, and butter to a heavy saucepan. Cookover medium-high heat, stirring continually, until the mixture comes to boil.Cook for one minute longer.

    2. Remove from heat, stir in peanut butter, quick oats, and vanilla. Stir until themixture begins to cool.

    3. Drop the cookies by the spoonful onto a nonstick baking sheet or waxed paper.Cool completely in the refrigerator.

    How to Make Buckeyes

    Buckeyes are fun little candies. They are made

    with a simple, fudge-like peanut butter center anddipped in chocolate. The top of the peanut butterball is left uncovered making it look like abuckeye.

    (A buckeye is a tree that forms a little round fruitwith nut like seeds.)

    Ingredients

    1 cup peanut butter1/4 cup butter

    1 1/2 cups powdered sugar6 ounces of dark chocolate wafers or other coating chocolate

    Directions

    1. Mix the peanut butter, butter, and sugar together adding more powdered sugar ifnecessary to reach the desired consistency. Form little round balls the size of alarge marble. Refrigerate the balls until firm.

    2. Melt the chocolate. Dip the peanut butter balls in the chocolate using toothpicksas skewers to hold the balls. Cover all but the top portion of the balls. Set asideuntil the chocolate sets. Store leftover buckeyes in the refrigerator.

    Bakers note:This recipe was tested with 100% peanut butter, the kind that needs to berefrigerated after opening. If you use shelf stable peanut butter, the buckeyes may notneed to be refrigerated. We prefer the 100% peanut butter.

    No-Bake Cookies: Rice Krispes Treats

    Some time ago, we took a week and experimented with all kinds of Rice KrispieTreats. (Did you know that you can add a jar of jam for fruity treats?) We still have ourfavorites. White Chocolate Rice Krispie Treats are one of our favorites.

    Original Rice Krispies Treats Recipe

    The following recipe is based on Kelloggs original Rice Krispies Treats recipe. Weprefer this with vanilla extract which wasnt in the original recipe.

    Ingredients

    4 tablespoons (1/2 stick) butter4 cups miniature marshmallows1 teaspoon vanilla extract (optional)6 cups Kelloggs Rice Krispies cereal or equal

    Directions

    Butter a 9 x 13-inch baking pan.

    1. In a large pan on the stovetop, melt the butter over low heat. Add themarshmallows. Stir until the mixture is melted and smooth. Add the optionalvanilla.

    2. Add the rice cereal. Stir until the cereal is uniformly combined with themarshmallow mixture.

    3. Remove the mixture to the buttered pan. Evenly distribute the mixture and pressit down into the pan with buttered fingers, a piece of waxed paper, or a spatula.Let cool and cut into squares.

    Bakers notes: If you use a large enough pan, you can mix the treats right in the pan,not in a bowl. The hot pan makes it a little easier to stir the mixture together and there isless clean-up.

    Rice Krispies Treats are best eaten the same day.

    Grandma Maloneys Peanut Butter Rice Krispies Treats Recipe

    This is a recipe that uses corn syrup, notmarshmallows. Grandma Maloney would bring

    these to family parties where they are quicklyconsumed.

    Ingredients

    1 cup granulated sugar1 cup corn syrup1 1/2 cups peanut butter5 cups Kelloggs Rice Krispies cereal or equal

    Directions

    Butter a 9 x 13-inch baking pan.

    1. In a large pan on the stovetop, bring the corn syrup and sugar to a boil. Stir inthe peanut butter.

    2. Add the rice cereal. Stir until the cereal is uniformly combined with the candymixture.

    3. Remove the mixture to the buttered pan. Evenly distribute the mixture and pressit down into the pan with buttered fingers, a piece of waxed paper, or a spatula.Let cool and cut into squares.

    Bakers notes: Rice Krispies Treats are best eaten the same day.

    Cranberry White Chocolate Rice Krispies Treats Recipe

    This is simply Rice Krispies Treats with addedwhite chocolate chips and dry cranberries. The

    white chocolate melts into the marshmallowmixture and makes for a much richer and veryattractive bar. This is very suitable for guests. Itis nearly as simple as the original recipe.

    Look for white chocolate chips made with cocoabutter instead of vegetable or coconut oil.

    Ingredients

    4 tablespoons butter4 cups miniature marshmallows1/2 tablespoon good quality vanilla

    1 1/2 cup white chocolate chips6 cups Kelloggs Rice Krispies cereal or equal3/4 cup dry cranberries

    Directions

    Butter a 9 x 13-inch baking pan.

    1. In a large pan on the stovetop, melt the butter over low heat. Add themarshmallows. Stir until the mixture is melted, hot, and smooth. Add the vanilla.

    2. Add the white chocolate chips, rice cereal, and cranberries. Stir until the cerealis uniformly combined with the marshmallow mixture.

    3. Remove the mixture to the buttered pan. Evenly distribute the mixture and press

    it down into the pan with buttered fingers, a piece of waxed paper, or a spatula.Let cool and cut into squares.

    Bakers notes: The white chocolate chips will melt in the hot marshmallow mixture.

    Strawberry Jam Rice Krispies Treats Recipe

    Once you have made these treats with jam, youllnever go back to the plain variety. The jam adds

    sweetness and flavor to the cereal. (At one cup,its fairly subtle but we thought, just right.)

    Of course, you can use jams other thanstrawberry.

    Ingredients

    4 tablespoons butter4 cups miniature marshmallows1 cup strawberry jam6 cups Kelloggs Rice Krispies cereal or equal

    Directions

    Butter a 9 x 13-inch baking pan.

    1. In a large pan on the stovetop, melt the butter over low heat. Add themarshmallows. Stir until the mixture is melted and smooth. Add the jam and stir.

    2. Add the rice cereal. Stir until the cereal is uniformly combined with themarshmallow mixture.

    3. Remove the mixture to the buttered pan. Evenly distribute the mixture and pressit down into the pan with buttered fingers, a piece of waxed paper, or a spatula.Let cool and cut into squares.
