New Orleans is well known forBourbon Street, Cajun cuisine, anddebauchery. After a recent visit, Ihave to admit that I was able topartake in all three categories. Asage has started to drain myendurance, however, I havebecome more interested in seekingout the local legendary restaurantsthan I am in being herded up anddown the Bourbon Street barscene.

I haven’t been to the Big Easy intwenty-five years and wasn’t surewhat to expect after the wrath ofKatrina, but was pleasantly

surprised to see it thriving. And yes, I did visit many fantastic restaurants,some of them world famous and all meeting expectations and living upto their billing.

On the way back to the Island, I couldn’t help but think of what agood time we had and how many great meals my family and I enjoyedtogether. Another thought hit me as well. Our hometown, little HiltonHead Island, measures up to anyplace in the country, even historic NewOrleans, for food aficionados.

Publishing a food and beverage magazine requires my spending a lotof time at a vast number of restaurants and lounges, both for work andfor pleasure. I know. Tough job, right? Anyway, spending this much timeon both sides of the F & B industry gives you quite a perspective on thequantity and quality of the restaurants and lounges on this 12 by 5 mileisland.

While I may be a little biased in my praise of the local restaurants forboth variety and taste, I think it is obvious to both locals and visitors thatour Island establishments can go toe to toe with any area of the countryand feel good about how they stack up.

So venture out this spring. Enjoy one of the 250 plus diningestablishments that dot this beautiful Island and experience a Taste ofHilton Head. Who knows? If this keeps up we may earn our ownnickname.

We have basically any kind ofseafood that you’d like – just about anytype of fish, and you can get it broiled,steamed, grilled, blackened or fried,”said Larson. “Crab legs and steam potsare great sellers for us.” The Crazy Crab’s steamed seafoodpot contains a seafood feast with one-half of a Maine lobster, shrimp, SnowCrab legs and oysters served with abaked potato and corn on the cob. The lunch and dinner menus offer awide variety of locally purveyed andseasonally available seafood including:flounder, crabs, scallops, shrimp,oysters, lobster and grouper cooked toyour preference. For seafood lovers yearning to trysomething new, The Crazy Crab’s menucontains a glossary of more than 20seasonally available fish that you reallydon’t see offered at other restaurantsthat includes: Redfish, Sea Trout,Swordfish, Sea Bass, Sheepshead,Cobia, Wahoo and much more. For value conscious diners eachlocation offers Early Dining and HappyHour specials from 4 to 6 p.m. daily.A recently pleased visitor quoted onTripAdvisor, “Our friends brought ushere while visiting Hilton Head. We wereseated by a window with a beautifulview. Our waitress was very friendly andknowledgeable about the items on themenu and did a great job answeringquestions we had. The seafood wasfresh and well prepared. Check out theirearly bird specials. Portions aregenerous and the prices are reasonable.The she crab soup was rich anddelicious! We are definitely returninghere the next time we visit. Thanks for agreat experience!” The Sea Pines location in the heartof Harbour Town offers diners theopportunity to be near shopping andentertainment happening throughoutthe summer and the pleasure of viewingthe boats moored in the harbor as well

as Harbour Town’s 18th hole and iconiclighthouse. Larson noted that spring andfall are great times to visit The CrazyCrab as yachts traversing the coast maketheir way into the harbor to enjoy HiltonHead hospitality. Each evening ishighlighted by a memorable sunset overthe beautiful Calibogue Sound. The Harbour Town restaurant’spinnacle annual event is the RBCHeritage Golf Tournament. The CrazyCrab offers the ideal location to relaxand refresh after following an excitingday of PGA golf. Larson added that ifyour timing was fortunate, you might beable to rub elbows with a tournamentcompetitor at their bar. The Jarvis Creek location featuresequally memorable sunsets and quietermore natural vistas over the marsh ofJarvis Creek. Bird watching is easy fromthe outdoor seating at the rear of therestaurant with views of Heron, Ospreyand occasionally Bald Eagles. Diners arealso treated to sightings of dolphinsswimming in the creek. The quiet serenity of theatmosphere at Jarvis Creek reveals notrace of the tragedy of a fire thatdestroyed the original building in 1995. But the partners agreed that adevastating loss can turn into a triumphwith optimism and perseverance. Thenew building that more than doubledthe restaurant’s seating capacity, with araised deck opening up the views andnow offers more outdoor seating alongthe quiet marsh views of Jarvis Creek. “We reopened with a bang inFebruary 1997. About 1000 peoplecame to our Open House party. Wehave been busy since then,” recalledKenneweg. Hours for both locations are 11:30a.m. to 10 p.m. 7 days a week. “So, where do the locals go?” This question is asked countlesstimes a day by visitors looking for thebest places to eat, drink and be merryon Hilton Head. Generally off the beaten path andfound by word-of-mouth, homegrownfavorites offer a place to unwind withgood food, cold drinks and an invitingatmosphere. It’s no accident that theDryDock Seafood, Grill & Spirits,tucked away in the Sapelo Building onOffice Park Road, has all of theseingredients.

Born and raised in Philadelphia,owner Rob Arbogast began his longcareer in the hospitality industry at thetender age of 12. A family friend owned a boardwalkstand in Ocean City, New Jersey, andRob spent a summer bussing tablesand picking up recyclable bottles onthe beach. While a student at VillanovaUniversity, he was “The Cheese SteakGuy” at The Corner, a campussandwich shop and pizza placeaffectionately known as “The Crotch.” Later, he ran a TGI Friday’s in Fort

Lauderdale before heading up to HiltonHead Island in 1981 to open thePlayer’s Club Restaurant. Now a fitnesscenter, he met wife Vickie at this localhotspot in 1993, right before it closed. Hired to develop and manage theoriginal Boathouse and Marker 13 in1987, Rob also spent a decade runningfishing charters on his boat, The SassyLady. Tired of working for other people,he decided to open the DryDock in1994. “Hard to find, but worth it,” thisIsland institution moved to its current,

yet still well-hidden, location near ParkPlaza in 2009. Thanks to favorable online reviewsand an emphasis on “fresh seafood,cold drinks and good times,” theDryDock kept its strong local following,while attracting a new crowd eager totry something different. As business took off, Vickie left her25-year career in the mortgage industryto manage the restaurant. Overseeingthe longtime staff, the Charlestonnative now spends her days waitingtables, wrangling wayward children,taking reservations and to-go orders,booking groups and providingdirections. Open daily for lunch and dinner,patrons can enjoy reasonably priced,made-to-order dishes while seated on the outdoor deck, in the cozy,nautical-themed main dining room or in the private, 20-seat party room.Sports fans can claim a spot at thespacious indoor bar and lounge area to catch the game on one of several flat screen TVs or head to the outsidebar. A large aquarium, shuffleboardtable and assorted video gamesprovide plenty of entertainment for the kids before or after their meal. In the kitchen, Chef Al Howardstays busy preparing the extensivemenu of fresh seafood specialties andupscale tavern fare. Lucky 7 Lunch Combo Specials are available from 11:30 a.m.-2:30 p.m.with a selection of seven signaturesandwiches, such as smoked BBQ,Philly cheese steak or grilled chicken,as well as garden salads and seafoodbaskets accompanied by homemadedressings and sauces. Pattied by hand,the Certified Black Angus hamburgersare considered by many to be theIsland’s best, especially when toppedwith Rob’s own ketchup. From an array of appetizers, soupsand salads to sandwiches, pizzatoppings and entrees, seafood is thestar of the show at the DryDock. Starters include She Crab Soupand Lowcountry Fisherman’s Stew, plusHot Shot Shrimp, bacon-wrapped

blackened scallops, fried calamari andgarden or Caesar salads topped withgrilled, seared, fried or blackened ahituna, shrimp, grouper, scallops, mahimahi or chicken. The Fish & Chips basket with hand-breaded grouper is always a top selleror try a shrimp, oyster or clam Po’ Boyserved on a hoagie roll with a side oftartar sauce. For heartier appetites, the DryDockSteampot includes a cluster of snowcrab legs, two Jonah crab claws,mussels, clams, shrimp, smokedsausage, corn on the cob and coleslawfor less than $25. Make it a double andshare the platter for under $45. Can’t decide? The Fin Fish andShellfish Dinner offers a choice ofgrouper, mahi mahi, yellowfin tuna,shrimp, oysters or scallops preparedbroiled, grilled, seared, blackened,Caribbean jerk or fried. On the otherhand, the DryDock Fried SeafoodPlatter includes shrimp, scallops,oysters, clams and grouper served withcoleslaw, hushpuppies and French fries. Bar pizzas, Grover’s Fries topped withblue and feta cheese, crumbled baconand balsamic reduction, StockyardDinners of smoked BBQ baby-back ribsand hand-cut NY strip steaks round outthe diverse menu offerings. “Hilton Head’s Home” for the

University of Michigan Wolverines(thanks to Turtle, the bartender), as wellas the Miami Dolphins, the PhiladelphiaPhillies and the New York Yankees, Robis quick to note that if you’re spendingmoney in his place, he’ll find the gameyou want to see. Every Friday night for the past 8years, Ritchie Dryer and Steve Richardhave been rocking The Big BambooCafe with Beatles tunes. They playBeatles and only Beatles to a crowd ofall ages that relishes every note ofthese timeless classics.

Both Ritchie D and Steve wereplaying in other bands years back whenTristan O’Grady, owner of The BigBamboo Cafe, came up with thebrainstorm of having a Beatles night.They dropped the "t" and added a "g"and thus the Beagles (also named afterRitchie's beagle) were born.

It’s not hard to see why Tristanchose Beatles music, as the foursomeare arguably the most commerciallysuccessful and critically acclaimed bandin the history of music. Everyone knowsthe words to their unforgettable tuneslike “I Want to Hold Your Hand”, “EightDays a Week”, and “She Loves You”just to name a few. Ritchie says thatwhile the kids love when they play“Yellow Submarine” (albeit not themusicians’ favorite one to play), some

other popular requests are "While MyGuitar Gently Weeps” and “NorwegianWood”. When the crowd wants to sing,they like “You’ve Got to Hide Your LoveAway” and when they want to dancethey prefer the earlier, faster tunes like“When I Saw her Standing There." He attributes the success of the Beatlesto many things: "They wrote andcreated great music that pushed theboundaries of popular music in manydirections that had not been donebefore. They were also good musiciansand showmen and came along at theright time."

When the Beagles started up,Ritchie and Steve knew most of themusic so transitioned into a Beatlesband with ease. They take up the rolesof John, Paul, George, and Ringoadmirably. Both musicians sing and playacoustic guitars and they occasionallybring in a drummer and bass player toadd to the mix.

Like the Beatles, the Beagles playeverything from ballads to psychedelicrock. “We usually start the evening off

with mellower songs as the crowdtends to be families and early birders.As we transition into night, we will playthe faster, older songs like SergeantPepper,” explained Ritchie. "We tendto play more early Beatles probablybecause those songs are more easilyreproduced using only two vocals andtwo guitars."

Like most musicians on the Island,Ritchie and Steve have played with anumber of other bands over timeincluding White Liquor, a local RollingStones band. When not playing theroles of John, Paul, Ringo, and George,they like to listen to and play mostlyrock, but also jazz, country, blues, andclassical. When they are notentertaining, they both have “dayjobs”. “Friday night is really our nightto go out and have some fun.Otherwise we may be home on thecouch,” laughs Ritchie.

On a cold and rainy winterafternoon, Tina Chestnut-Wingo satwith me by the fire at the KingfisherRestaurant and talked about her lifeand her job. “I joined the Kingfisher 7years ago as a bartender, but I wearmany hats here – bartending, serving,tending to the plants and flowers, andtaking care of my ‘family’ here at thebar,” she said with a smile. She is aperson who never meets a stranger.

Tina came to Hilton Head 28 yearsago from Bloomington, Indiana. “Igrew up surrounded by farmland, andwe rode motorcycles, dune buggies,and horses.” When she was 21, sheand her sister Kim decided that it wastime to see the world, and with only afew dollars between them, they setout in her red and white Chevy Vegafor Hilton Head where they knewseveral people. “We arrived with only

$20 to our name and were fortunateto get hired immediately with acleaning service, where we worked 10hour days, at times, 7 days a week.”

Since those days, Tina hasbartended and served at some wellknown places – Jim’s Paradise, theQuarterdeck, and Wingo’s, to name afew. “What I like best about my job istalking to people who come in, somefor the season and others at aroundthe same time each year,” Tina said.“Every day is different, and it’s a closeatmosphere.”

“My parents, Glenda and LarryChestnut, come down to the island forthe winter months - January, February,and March - and have been doing sofor years,” Tina said. “They come intothe Kingfisher in the evenings whenI’m working and visit with friends theyhave made over the years who also

visit in the winter.” “To be successful at my job, I have

to be a quick thinker and a goodlistener. I truly love talking to peopleand hearing their stories. And I have afew that I share with them as well!”

When she’s not working, Tinaspends time with her family's pets - 6 dogs and 8 cats. “Obviously I loveanimals!” Tina said. “I love to gardenand spend a lot of time doing it. And Ilove golf and other outdoor sports!”

When asked what job she’d wantif she could have any job in the world,Tina replied without hesitation, “This isit; I love what I do!” And she does itwell.

Herb Britton, ExecutiveChef at the Salty Dog, startedin the restaurant business as a dishwasher at the age of 15 with the Chart HouseRestaurant in Annapolis,Maryland. He worked his way up to the kitchen, and was promoted to kitchenmanager. That experienceconfirmed that he wanted to be a chef.

Herb graduated fromBaltimore International CulinaryCollege. “I worked with somegreat chef instructors,” he said,“I grew up on the water, andfound through experience thatpreparing seafood is my strongpoint. But I love cookinganything and everything!”

“I came to the island in2001 to work with SteamerSeafood, spent a little time at211 Park, and soon found myway to the South Seaport Café,which later became the Wreckof the Salty Dog. I’ve been here for 11years.”

“My favorite dishes,” Herb said,“are seafood-related and regional. Ihave to brag that my crab cakes andmy shrimp and grits are the best!” Herbhas won the chili cook-off more thanonce, so it’s obvious that he isexceptional at preparing dishes otherthan seafood!

“I do all the cooking at home, andmy wife Melanie and 9-year-old sonCole are my best recipe testers,” Herbsaid, “and we keep the recipes prettysimple. I like to cook using my smokerto prepare dishes that take more time,like pulled pork.”

“In the warmer months, you canusually find me, with my family, in thepool or at the beach. I love to golf, fish,

and take my son crabbing.” “What I like best about being

a chef is seeing people enjoysomething that I have created.Talking to guests and meetingpeople through the food youhave made is a great feeling.”Herb loves living in this areabecause of the proximity to thebeach. “Working on the island,right on the water is the bestoffice I could think of!”

Herb agreed to share anuncomfortable or frustratingexperience he’s had in his career.After thinking, he relayed thefollowing. “When I was the grillcook for a restaurant back home, Ihad a gentleman that would comein every week and ask me to cuthis New York strip steak right infront of him, grill it to medium,and make sure that it rested 10minutes before serving it to him.A lot of times he would insist thatI be at his table when he cut intoit, to make sure it was cooked to

perfection! I wanted to strangle thisguy! In retrospect, I think that thisexperience actually made me a bettercook because I never wanted the steakto be sent back.”

Ah the spring. It is the season thateveryone welcomes with open arms.As the warmer weather blows in, thetulips begin blossoming and the birdsbreak into song. As we open ourwindows and embrace the sounds andscents of spring, the farmers are alsoexcited as they can start to harvesttheir beautiful bounty of fruits andvegetables. It is market time and weare blessed that we have two fabulousones in our Hilton Head and Blufftonbackyards to visit every week. Thatthey are both organized and run likewell oiled machines is another featherin our cap. While they don't sell pigs orhogs like the Nursery Rhyme of old,their tables are laden with plenty toentice you. Farmer’s markets are one of theoldest forms of direct marketing by

small farmers. Their origins can betraced back 5,000 years to Egyptwhere farmers along the Nile broughttheir fresh produce to be sold. Nowthey are everywhere from thetraditional “mercados” in the PeruvianAndes to the unique street markets inAsia. The largest market today can befound in Tokyo where there are 1,700stalls. In America, informal marketshave been around since the earlysettlers in Jamestown. The popularity of farmer’s marketshas taken hold and researchers projecta steady increase in numbers at 10% ayear. What is driving this surge inpopularity and can it sustain itself andthe farmers? To use the old cliché thatfamer’s markets are a win-win is quiteapropos here. Benefits are seen by all:farmers, consumers, the environment,

communities, and local economies. Bycutting out the middleman, farmerssee higher revenues and get directfeedback from customers. Theconsumer benefits by learning how thevegetables are grown or the meatproduced and they have an improveddiet through nutrition from fresh foods.The environment wins too as there isless packaging, fewer road miles, andwith the emphasis on organic, the landfights fewer pesticides. The communityand economy find an influx in numberson market days and the money remainslocal. Best of all, farmer’s markets are asocial haven which is food for yourbrain and they are kid friendly which isa great way to get your childrenexcited about all the fun (and healthy)things they can eat. Calhoun Street, in downtownBluffton, will be transformed everyThursday into a bustle of boothsbrimming with our lowcountry’s yield.Area farmers will proudly sell theirharvest and vendors will sell sweetsand tasty treats. Kim Viljac, who runsthe Bluffton show, said, “Whatever islocal is welcome.” She described theBluffton market as focused onagricultural and edible. “We don’t getinto the arts and crafts because thestreets of downtown Bluffton are linedwith galleries and shops.” The Bluffton market got startedwhen a number of people cametogether and wanted to create a local,non-profit organization that wouldbenefit the community by bringinghealthy and local to Bluffton. Asidefrom the food, the Bluffton market haslive entertainment and every week theypair with a different local non-profitorganization ranging from petadoption to Alzheimer’s to Pink. Theyhave tents with healthy outreachprograms that cover the gamutincluding health screenings, how tochoose organic vegetables, how toshuck oysters, and how to prepare andconsume the products sold at themarket. They also have children’sactivities on select dates for the “LittleGrowers”. The Bluffton market famersrepresent three different soilcategories: organic, naturally grown(organic but not certified), andtraditional. Feel free to ask them abouttheir growing practices as you feastyour eyes on their red beets andradishes, the leafy greens, collards,cilantro, and onions. As it gets warmerand later into spring, the beans,peaches, blueberries, broccoli, corn,squash, tomatoes, and zucchini will besold. Other agricultural productsavailable besides fruits and vegetablesinclude honey, eggs, and grass-fedbeef. For those whose stomachs havebeen tempted, local vendors will sellseasonal delicacies like blue crab,

gumbo, she-crab soup, andshrimp. Kim suggests that first time market-goers stop by the welcome tent to learn the lay out, find out aboutspecials and events, and buymarket merchandise like ashopping bag if needed. Finally,she added that it helps if youdo research and ask questions of thefarmers: “How do I know when mytomato is ripe? Does this freeze? Mycollards are bitter; what can I do?” When you wake up Friday morningfeeling all refreshed and healthy fromthe good food you ate from theBluffton market, you can venture off tothe Farmer’s Market Hilton Head Islandat Honey Horn to put more fresh andlocal on the dinner menu. Spend themorning at the beautiful venue ofHoney Horn Plantation where you canbrowse, chat, sample, and becomeeducated. In its 3rd year, the Hilton Headmarket was the brain child of PamelaOvens and a friend. “We wanted to start a farmers market for ourcommunity that did not take moniesfrom grants or the town.” Pamela and her husband set up the tables atthe wee hours on Friday mornings inanticipation of the arrival of the famersand vendors with their flowers,preserves, breads, pies, seafood, and produce. Pamela said that most of the same vendors from past yearsincluding the farmers, artisans, andeven local authors will be returning and there will be some new kids on the block including Blondie the pastrychef and a woman who sells GreekOlive Oil. Their focus at the Hilton Headmarket this year is on organic foods.Most of their farmers are naturally

grown, organic, or learning to beorganic. Jamie Vidich from Bear IslandFarm has spent some time interning onan organic farm in Georgia this pastyear and Della and Sol Campbell whoown the roadside stand on SpanishWells Drive are now selling organictoo. The process that a farm has toundergo to be declared organic ispainstaking but worth the effort. Thekey is the soil which cannot be treatedwith pesticides. Pamela recalled the e-coli breakout a few years ago and saidthat was all caused because farmerswere watering their crops from taintedriver water. "That never would havehappened with an organic farm," shesaid. Pamela offers some advice tomarket goers. "Number one is: don'toverbuy. Everything looks so good thatit is easy to take home more than youwill use. Bring a basket or a bag tocarry everything home in." Sheexplained that all of the farmers aroundhere are small scale and they all comethemselves to the market. Ask themquestions about their produce andideas of how to use it on your dinnertable. Don't be surprised if you rubelbows with some of our local chefs asmany of them bolster their weekendmenus with fresh fruits and veggiesfrom the market. Both Kim and Pamela will tell youthat one of the most unique aspects ofattending a farmer’s market is the

opportunity to get to know the farmersand vendors who have rolled up theirsleeves and worked their hearts out tobring to you the freshest and mostdelicious they have to offer. All of ourlocal farmers accompany their produceto the markets. They are passionateabout what they do and each has aunique story tell. Mary Connor, one of thetriumvirates from Three Sisters Farm,described the process that a farm hasto go through to be certified organic.First off, it takes three years before youget your actual certification. Duringthat time, you have to demonstratethat you have not used any syntheticpesticides, herbicides, or fertilizers. Youalso cannot use any treated orgenetically modified seed. “You haveto keep precise records of everythingyou do, plant, and use, includingdates,” said Mary. Your paperworkmust be detailed and impeccable andwill be reviewed before an inspectorcomes out and looks over everythingfrom the soil to the water. Mary saidthe whole process makes farming morework and it is at a steeper price. Thenwhy do it? “For us it is a viability issue.People who buy from us cannot cometo our farm as we are not open to thepublic. Being certified organic givesour customers the certainty that theyare buying what we say they are.” Aside from their spring assortmentof lettuces, broccoli, greens, Englishpeas, potatoes, onions, collards, kale,turnips, mustards, arugula, and squash,Three Sisters Farm has 10 acres ofdaffodils which they bring to market inearly spring. The day before they go tomarket, the sisters are up at daybreakpicking, washing, and refrigeratingwhat they can. On market day, they areup at dawn again picking their flowersand then packing the truck. It certainlydoes not sound easy and in fact canget harder. “Sometimes you wake upin the morning on market day and abug ate your food. Your whole marketinventory is then off.” No one ever said that farming waseasy. Pamela recalls that last year was a

tough one for farmers. “One of ourfarmers just pulled up in their truck oneday and showed us how raccoons hadtaken a bite out of every one of theirvegetables. The raccoons couldn’t justpick a few and get their fill, they had toruin the whole crop,” said Pamela. Susan Brant, owner of Brant FamilyFarm with husband Don, can tell youmany stories about the trials andtribulations of farming. After toilingover the soil for 6 years, The Brantshave seen the ill effects of the weather,insects, animals, and weeds. "It can betreacherous," said Susan "We are onour 3rd type of fencing to keep thedeer out and hopefully this will be theright one. We tend to believe it is inthe Lord's hands. We chuckle everytime we see something come out ofthe ground. We can plant the seed, butit takes the Lord's will for it to grow." The Brant's farm is certifiednaturally grown which means theyfollow the same practices as thecertified organic, but do not have theUSDA sticker. She expressed, "Whatwe put in our bodies has a tremendous

effect on our health. With so manyfoods now being genetically modified,it really makes people think and pushesthe scales toward buying organic." Likethe Three Sisters, when the Brants setup shop at the local farmers marketsthey sell only what came out of theirground. The couple will harvest theirproduce the day before market to givethem time to wash, prepare, andpackage everything. On market day,they are up at 5 a.m. to start loadingthe truck. "We look forward to marketdays and really enjoy the people," saidSusan. She advises market-goers tolook for cleanliness and freshness. "Ifyou see something limp and tired,don't buy it. Also, if you see somethingthat you think is out of season, askwhere it came from." One visit to our farmer's marketsand you will be hooked. You just can'tbeat the flavors and freshness and the camaraderie of the crowd isintoxicating. Pamela summed it up:"When you walk into the grocery storeyou have no idea how long those fruitsand vegetables have been on the shelf.We are so lucky, because when you goto our market, you know everythingwas picked that morning. You can'tbeat that! Marinate chicken overnight, dredge in seasoned flour, fryin 350 degree oil until internal temperature of 165 degrees.

Changing the way you eat canoften seem like an insurmountableordeal. However, as human beingscontinue to prove over and over again,nothing is insurmountable given thecorrect amount of time, method andapplication. What’s the key to successwhen changing a diet for the long term?Patience.

Small, incremental steps are mucheasier to manage than that “big leap”for most people. Baby steps aren’t assexy as going “all in”, but they add upover time, and usually a lot sooner thanwe think. It’s like Abraham Lincoln oncesaid, “I might walk slowly, but I neverwalk backwards.” Life is stressfulenough without putting so muchpressure on yourself to turn life 180degrees immediately and expect it tostick forever. You’re not being fair toyourself.

So where should we start?

Start with a food journal. Most of ushave no idea what we are putting intoour body on a daily basis. Keep a foodjournal for one week writing downeverything that you put into your ol’belly, including what you drink. Themore you document, the more powerfulthe observation becomes.

Here are some quick tips:

1. Be Honest. Write everything down. Everything. That’s the point. Who cares if you had pizza, ice cream, and a bottle of wine in one sitting? This is not a tool with which to you (or anybody else) will be using to judge you, this is only to assist you in making better diet decisions in the future. Be truthful or you are wasting your time.

2. Be detailed. You do not have to measure anything or weigh anything, but a “a fist sized portion of sliced oven roasted chicken on whole wheat bread with sprouts, avocado, extra mayo, and spicy mustard” paints a much different picture than just “chicken sandwich”. Drink out of water bottles and record ounces. Note amounts like “3 spoonfuls of Ben & Jerry’s New York Super Fudge Chunk,” or “2 handfuls of almonds.”

3. Note eating times. Record the time of day that you eat as well. Again, be detailed. “11:45 p.m.” paints a much clearer picture than “afternoon” when you look back on your journal aweek later.

What do you do after a week?

Well, look it over. What can you cutback on? Then, simplify the questionfurther, what is the ONE THING you feelyou should cut back on immediately.Then, cut back on that ONE THING. Donot eliminate it, just cut back on it.Maybe eat or drink it twice a weekinstead of four. That’s it. Make it small,manageable and just outside yourcomfort zone.

Keep your food log going foranother week, note your successes aftera second week as passed. Write themdown! Recognize your achievements!Maybe you can take out your one thinganother day AND cut back on some-thing else the third week. Add in wholefoods to replace items you cut back on.Do these small, measured steps for 6weeks. (That’s just a month and a half!)Then look back on your progress. The annual Hilton Head Island Seafood Festival, April 5-6, sponsored by the David M. Carmines Memorial Foundation,helps raise money for the American Cancer Society, MDAnderson Cancer Research Center, and the Island RecreationScholarship Fund. The festival kicks off on Friday, April 5, from 5–8 p.m. with live entertainment, and it continues on Saturdayfrom 11 a.m.–5 p.m. at the Shelter Cove Community Park withlocal restaurants serving their seafood specialties. "The Hilton Head Island Seafood Fest has raised over$225,000 for M.D. Anderson Cancer Research Center, theHilton Head Island Recreation Center and the American CancerSociety. Westarted with our barrel aged semi-dry sherry. Then we infused thesherry with smoky chipotle and habenero peppers for severalweeks to give it a little extra kick. Finally, we bottled it with a coupleof pequin peppers to keep true to the original. And just to give itthat special spice which Low Country cooking is famous for, weadded some of the same Caribbean spices that were once traded inthe ports of Charleston and Savannah centuries ago.
