The Bakery was named 38 years ago, touting the benefits of buying local. The deeply held principals of conservation and local involvement have guided the shop ever since. For decades B-i-T has used Colorado Organic whole wheat flour. summer Fruits, vegetables and sweet corn are brought from Olathe’s devries produce. Colorado grown greens grace the bakeries salads all summer. green river (utah) melons are made into fruit beverages. Organic Barley malt syrup is a crucial ingredient in traditional boiled and baked bagels, and consciously grown and produced palm oil for frying donuts, and organic starch for our fruit pies. Honey is wild! Constant energy evaluation reduces power bills annually. in politics owner Jerry greene serves on the Open space Commission, which oversees management of Telluride’s most significant green effort, the 570 acres of undeveloped Valley Floor.

Chief Bagel Jerry Greene

no one on Jerry’s staff went to Culinary school, but they all share a love of bakeries and good, home-style food. Jerry started baking with

his mom as they prepared for family birthday celebrations. nearby his newark, nJ childhood home was Watson Bagel, where the family would go saturday night to buy bagels for sunday Brunch. The next morning it was double

parking on Hawthorne avenue at silver’s bakery for bakery treats and the adjacent Tabatchnick’s deli for the cream cheese, lox and smoked whitefish.

Hardly a week goes by without an innovation from Jerry and his staff. gluten free savory and sweet is ever-expanding.

standards are high: Custom picked pastrami cuts, the finest deli sandwich meats, and Tel-luride’s only made-on-premise spaghetti, fettuc-cini and penne. mexican food features Torts of Telluride organic tortillas. in summer Jerry works with local farmers and in his own backyard garden for fresh produce.
