appiesHeat skillet or large fry pan over medium heat. Add olive oil. When olive oil is hot, add ground beef. Season with salt and freshy ground pepper. Cook until meat starts to brown, about 5 minutes. Add jalapenos, garlic, oregano and cumin, and cook until veggies are soft, about 3 minutes. Add tomato sauce and cook for 1 minute. Add tequila, lime zest and juice and stir. Add beans and cook for 5 min until they are heated through and pan is dry. Preheat oven to broil. Layer tortilla chips, meat mixture, shredded cheese, tomatoes, onions, onions and peppers on baking sheet or pizza pan. Broil until cheese melts. Garnish with cilantro. Serve with sour cream and salsa.

Gut pumpkins from the bottom. Rinse seeds well in cool water. Put into a lided container. Fill with cool water, add 1/8 cup sea salt. Leave on counter overnight. Drain seeds (do not rinse). Pour onto a baking sheet. Sprinkle with salt. Preheat oven to 350oF. Bake in middle rack for 10 mins. Remove from oven, stir well, re-spread, add another light sprinkle of salt. Bake 15 min. Remove from oven, stir, continue roasting ad additional 10 mins if any dampness is visible.

Soften cream cheese at room temperature for 2 hours. Set up a stand up mixer with the paddle attachment and add cream cheese to the bowl. Turn the mixer on low and mix cream cheese. Add spiced rum, and wait until fully incorporated before adding the eggs. Add the eggs one at a time, making sure that it is completely mixed in before adding the next egg. Add the nutmeg, cinnamon and vanilla. Slowly add in sugar. It’s up to you how much sugar you want to put in, depending on how sweet you would like your cheesecake. Once the mixture has completely combined, strain the mixture through a fi ne mesh strainer. Preheat your oven at this point to 300ºF. Pour mixture into mason jars, and place into a casserole dish, or another dish that has walls. You will be baking the cheesecakes in a water bath. Pour hot water into the casserole dish until the water reaches halfway up the mason jar. Place cheesecakes in the oven and bake for 25 minutes, or until the cheesecakes have set. To check if the cheesecakes are done, simply shake the pan. The cheesecakes should not be molten in the middle. Cool cheesecakes completely before serving. Serve with graham crumb and whipped cream.

Arrange cucumber slices in a bowl in layers salting between layers. Let stand 2 hours. Stand bowl under faucet and let cool water run through gently until no salt remains. Drain well. Add sugar and oil. Mix and add onion, vinegar and water. Add more sugar or vinegar if not sweet or sour enough. Relish should stand a few hours before serving. Great with steak or chicken – hot or cold.

Add all ingredients to large pan except the raisins. Bring to a boil over medium heat stirring occasionally for 50 min. to an hour until most of the liquids are evaporated. Take off the heat and add raisins. Seal in jars or keep in fridge.

In a bowl, beat together eggs, sugar and salt. In a saucepan, heat 2 cups Creamo over medium-low heat just until hot. Slowly whisk this into egg mixture. Return egg-Creamo mixture to saucepan. Cook mixture over low heat, stirring constantly for 15 min. or until slightly thickened. Remove from heat. Stir in remaining 1 cup of Creamo and vanilla. Transfer to clean bowl. Cover and refrigerate overnight. Just before serving, beat whipped cream until soft peaks form. Transfer eggnog to punch bowl. With wire whisk, stir in rum or extract, then fold in whipped cream. Garnish with nutmeg.

Whip first two ingredients together when at room temperature and beat in tabasco. Slowly add flour. Add rice krispies. Roll into small balls (3 cm) and flatten with the bottom of a drinking glass that you’ve dipped in flour. Bake in a 350°F for 15 min.

Place onions, green peppers, garlic

and tomatoes in food processor and

mince. Place into heated skillet with

butter and sauté. Season with salt and

pepper. Add chili powder and cumin.

Cook until thickened. Then spread

mixture into a shallow baking dish.

Make 6 holes, evenly spaced, in the

mixture and break one egg into each

hole. Cover entire surface, including

eggs with shredded cheese. Bake in

425ºF oven for 8 minutes.

Rinse the rice and cook .Fluff  and set

to side to cool. Blanche the onions

and leeks in wok or skillet. Brown

the meat. Sprinkle a little flour while

browning. Soak the spices in a ½ cup

of boiling water   about ten minutes.

Put the 4 ingredients in large wok

or skillet and mix thoroughly  while

reheating. Scramble the eggs and add

to the mix.

Mix first 6 ingredients and place in loaf pan.Mix other ingredients in bowl and pour over meat loaf. Bake in 375ºf oven for 45min. serve with potato pancakes.

cook and rinse the noodles. Blanche the onions and leeks in wok or skillet. Brown the chicken, the same as the nasi. soak the Bahmi spices in ½ cup of boiling water for 10 mins. When  ready mix everything and reheat. scramble the eggs and add to the mix

place 1” chunks of beef in large saucepan, heat oil over high, brown meat in 2 batches, 2 min per batch. saute onions & garlic for 3 min. stir in chili powder, cook for 30 sec. add peppers, tomatoes, salt & ½ cup of water. cover & simmer for 20 min, uncover & over med heat stir in squash & kidney beans. cover & cook until squash is almost tender (5 min). add corn and cook for 3 min.

Whisk buttermilk with garlic, table salt, sugar, paprika and freshly ground black pepper in a bowl. place chicken parts in a gallon-sized freezer bag and pour buttermilk until covered. refrigerate for at least 2 hours.  preheat oven to 425ºf. arrange chicken in dish. drizzle olive oil, paprika and sea salt to taste. roast for 30 minutes (until brown and a bit scorched in spots). add salt.

Mix stuffing package (regular, 6 oz/ 120 gr) according to thebox instructions.Melt butter and mix with half of stuffing mix.  add to squash and onion.  out in 13x9 baking dish. Mix together and pour over squash mixture.  top with remaining stiffing mix. Bake 50 minutes at 350 f.

Preheat oven to 350 F, wash the endive leaves & cut stem end. Place in pan with 1” of water & salt, cover & cook on medium for 20 min, drain, heat the butter in a sauce pan. Gradually stir in flour, cook 30 sec, stirring to make a smooth roux. Stir in milk, salt & pepper, continue to cook and stir until you have a thickened sauce. Stir in the 2 cups of grated cheese until melted. Roll each endive in a slice of ham & place in shallow casserole. Pour sauce over top. Combine the bread crumbs, grated cheese & melted butter, sprinkle over top. Bake for 15 minutes or until brown & bubbly.

In a large bowl, whisk together sugar, vinegar and oil. Stir in chopped celery, green pepper, red onion & pimento. Pour the green beans, wax beans, chick peas & kidney beans into a colander and rinse with cold water, let drain then add to the bowl with the rest of the salad, refrigerate for 1 day to marinade, stirring every few hours, keeps for up to 1 week. by Miranda Rice

Cut floweret’s from cauliflower. Layer thru rest. Lastly, pour on dressing and put in fridge overnight. Mix the next day.

Pour 2-3 tbsp oil into heavy pan and warm to medium/high. Sautée onion, ginger, garlic and chili for 15 minutes until the onions are translucent and have begun to break down. Add 1 cup of the veggie stock. Grind the remaining spices; cloves, peppercorns, cardamom, cinnamon, cumin and coriander (coffee grinder will do it). Add to pot, cover and cook on medium, stirring occasionally until a nice paste has formed Add remaining vegetable stock and simmer soup for approximately 30 minutes. Using a hand blender, puree all of the soup while still hot and in the pot. Add cream and milk, bring up to temperature and serve. Best served with a dollop of sour cream on top and a fresh Buttermilk biscuit on the side.

Mix all of the casserole ingredients together until smooth and spread into a greased one 1/2 quart pyrex casserole dish. Prepare topping. Mix topping ingredients together and sprinkle over the top of the potatoes. Bake in 350ºF.

preheat oven to 350of. place the first six ingredients in a bowl and whisk. Mix in the cranberries and nuts.  place pumpkin, sugar, apple sauce, oil and eggs in a second bowl and whisk to combine.  Mix the dry ingredients into the wet until just combined.  grease two, 4 1/2-x8-1/2-inch non-stick loaf pans with vegetable oil spray. divide the batter between the two pans. Bake for 60 min, or until the loaf springs back when touched in the very centre. set the loaves on a baking rack.  While still warm, divide and brush the top of each loaf with maple syrup.  When cooled to room temperature, unmould loaves.  Wrap and store at cool room temperature until ready to slice and serve.

in large bowl, beat butter with sugar until light and fluffy. Beat in egg, vanilla and rum extract. combine flour, baking powder, nutmeg, cinnamon and salt. stir into butter mixture in 3 additions. divide in half; flatten each slightly. Bake in top and bottom thirds of 375°f oven, rotating and switching pans halfway through, for about 10 min. decorate with icing.

No Bake Pumpkin Pie

Easy Nut Brittle

In a medium mixing bowl, whip the cream cheese until it is fluffy. Slowly add in pumpkin pie filling and mix until blended. Mix in cinnamon. Slowly fold in Cool Whip until just blended. Pour into pie crust. Chill for at least 2 hours before serving. Top with whipped cream when serving.

Lightly grease cookie sheet. In 2 qt. pan, heat butter, sugar, corn syrup & water over med. heat to boiling. Stir constantly. Stir often until 300o F on candy thermometer or hard crack stage. Remove from heat. Stir in nuts. Pour mixture into greased pan. Cool brittle completely on wire rack. Break into chunks. If desired, you can sprinkle ½ to ¾ cup chocolate chips in pan before pouring hot mixture into pan

Chop 300g. chocolate chips until you can see 3 distinct grades from powder to coarse. Add 4 tbsp cookie crumbles & 4 tbsp cocoa powder, (all ingredients available at Cooper’s Foods Bulk Food section). Put into a bowl; add 100 g butter and rum. Kneed into an almost solid paste. If too soft, add some cookie crumbles or put in a cool place until you can make this cute, little, tasty Rum ball. Roll in chocolate (not sugar) sprinkles while they are still warm from your hands.

Old Fashioned Blueberry Muffins

Whisk eggs, sugar and oil together. Fold in the dry ingredients until smooth. Add pineapple, carrots and dates and place by large spoonfuls into greased muffin pans. Bake at 375oF for 30 minutes or until done. Leave to cool in pans for 10 minutes. by Wendy Pearson

Cook a can of biscuits according to directions and let cool. Lay out two large pieces of wax paper. Butter soft side of biscuits. Pour bottle of Golden Syrup into frying pan and cook on medium until foamy and caramel colored and soft ball stage. This takes about 40 minutes on med. heat. Drop prepared biscuits into reduced syrup and turn over a couple of times, lift out and place on wax paper. If you have left over syrup, spoon onto top of biscuits and let cool.

In a large bowl combine flour, sugar, baking powder & salt. Stir in blueberries until coated with flour. In a separate bowl mix eggs, milk & oil. Whisk until blended. Make a well in centre of flour mixture & pour in milk mixture. With large spatula fold dry ingredients into wet ingredients, just until moistened. Spoon into 12 greased muffin tins (batter should be heaped about 1” above surface of pan) Bake at 400oF for 30 min. or until tops are firm to the touch.

Lemon Coconut Bars

Cut a square of parchment paper to fit an 8” sq baking pan. Sprinkle 2 tbsp of ground almonds on the papers. Place all ingredients into a food processor, reserving 2 tbsp of coconut. Process until well combined and mixture clumps together. Coat your hands in butter or vegetable oil and press the mixture evenly into the pan. Dust with reserved coconut. Chill 3 hours. Cut into squares and serve.

Preheat oven to 350oF. In large bowl, mix together cake mix, chopped pecans, 1/3 cup evaporated milk and melted butter. Stir until combined. Press half the mixture into well greased 9” x 9” pan. Bake for 10 min. Remove pan, set aside. In a double boiler, melt caramels with additional ½ cup evaporated milk. When melted and combined, pour over brownie base. Sprinkle chocolate chips evenly over caramel layer. Turn out remaining brownie dough on work surface. Use your hand to press it into a large square a little smaller than the pan. Use a spatula to remove it from the surface, then set it on top of the caramel and chocolate chips. Bake 25 min. Remove from oven. Cool on room temp then cover and refrigerate for several hours. Add powered sugar over surface.

Melt ½ cup butter in 9”x9” pan. Cover with: 1 cup graham wafer crumbs, 1 6oz pkg chocolate chips, ½ cup coconut, 1 6oz pkg butterscotch chips & 2 cups chopped walnuts. Pour 1 can condensed milk evenly over above. Bake for 30 min at 350oF. Serve chilled. by Margaret High

Chow Mein Cookies

Christmas Almond Biscotti

Melt chocolate in double boiler. Keep warm and set aside. Mix noodles, chopped almonds, mangos and cayenne pepper in a large bowl. Add chocolate and mix until coated. Line baking sheet with parchment paper. Using a small ice cream scoop, or 2 spoons, put mound on sheet. Let set at room temp for 2 hours.

Preheat oven to 325°F. Line 2 baking sheets with parchment paper. In a large bowl, sift the flour, baking powder and salt. Set aside. In another bowl, beat eggs just until blended. Gradually beat in sugar and continue to beat about 2 min. Beat in more slowly the oil, extracts and zests. At low speed, add the flour mixture until combined. Beat in the almonds with a spoon. Let the dough stand at room temperature for about 10 min. Turn the dough out into a work surface and divide into quarters. Place each quarter onto a baking sheet, forming a long strip about 9” long and 2.5” wide. Sprinkle with coloured sugar. Bake the loaves for 35 minutes, switching the position of the baking sheets halfway through. Remove from the oven and reduce the oven temperature to 300°F. Transfer the warm loaves to a cutting board and, cut crosswise into 1/2” slices. Line the baking sheets with new parchment paper. Arrange the slices (cut side down) on the cookie sheets and bake for another 18 - 22 minutes, again switching the sheets’ position about halfway through. They should be a light golden colour when removed to cool on a rack.

Add peppermint extract to

taste. Tint with green food

colouring.

powder and salt. Melt

butter in a large saucepan.

Remove from heat and

stir in cocoa. Blend in

sugar, eggs, vanilla and
