If you think soup is only a cold-weather seller, you’re missing out on a huge opportunity. Soup should be part of your menu year-round, especially when paired with premium sandwiches or salads. With its ability to position itself as both comfort food and a wholesome option, soup truly is a hot trend.

Research from Technomic Inc. shows Canadian consumers have a growing appetite for soups while dining out—and not just as a starter or side. Diners today see soup as a main meal option for lunch or dinner more than they did just a few years ago. Soup is a great canvas for local ingredients and is a great complement to salads and sandwiches.

A strategic assortment of soups will help you satisfy a variety of diners. Consumers expect to see three to four varieties of soup on the menu. Preparation InstructionsPrepare the Mai Pham Pho broth per package instructions. Place in a soup pot and add a slice of fresh ginger. Simmer the broth for 5–10 minutes to infuse with fl avour. Remove ginger before serving. In a 32 oz (908 ml) serving bowl, place the mushrooms, shrimp, bean sprouts, snow peas, red pepper, and green onion. Ladle 2 cups of hot broth over the top of the mixture in the bowl. Garnish with cilantro and Thai basil. Serve with fresh lime wedges.

CHOWDERA thick soup, similar to New England clam chowder. It’s usually cream- or milk-based, with chunks of vegetables and/or fi sh. Originally, it was a fi shermen’s stew made with seafood, but today, vegetable chowders, such as corn chowder and potato chowder, are common.

Creamy chicken and charred corn chowder with diced onion, celery, red pepper, and potatoes. Garnished with fresh thyme and hot sauce.

Preparation Instructions

Place the butter in a sauté pan and add the corn, onions, celery, red pepper, and potatoes. Sauté until the potatoes start to brown. In a large pot, add the chicken stock and bring to a boil. Add the sautéed vegetables, milk, and fresh thyme and season with salt and pepper. Reduce heat and simmer for 15 minutes. When potatoes are fork tender, add smoked chicken, and fresh cream. Bring back to a boil and adjust seasoning. Place the soup in a bowl and garnish with hot sauce fl oating on top.

Note: Substitute corn on the cob when in season. Char-grill, then cut kernels off cob and reserve.

Retro salads are enjoying a resurgence, especially when marketed as an appetizer or shared plate.

Here are just a few opportunities for creating crave-worthy salads with signature fl avours:

{ CHOPPED SALAD }

Simply toss to order any variety of lettuce with fresh vegetables, such as beets, avocados, apples, pears, celery,

onion, or peppers, with a light vinaigrette. Top with cheese or bacon for a touch of indulgence.

{ WEDGE SALAD }

A classic that’s typically composed of a quarter head of lettuce, blue cheese dressing, and chunks of blue cheese

and bacon. Substitute pancetta for bacon and top with crispy fried shallots.

Place the romaine lettuce on a serving plate and top with watercress, fennel and pomegranate seeds. Char-grill the chicken breast to desired doneness. Let stand two minutes and slice into strips and place on top of the salad. Garnish with Parmesan cheese and croutons. Drizzle with Caesar dressing.

CAESAR SALADSSince its creation, the Caesar salad has outlasted other salad trends by appearing on 59% of national menus, tracked by Mintel's Menu Insights. However, many newer modifi cations to the Caesar salad can be found. The most popular variation to the Caesar salad is the addition of protein. Roasted beets served with grilled green onions and autumn coleslaw tossed in Asian dressing. Garnish with pickled ginger, sesame seeds, and pea sprouts.

Preparation Instructions

Toss the onions with a little olive oil and season with salt and pepper. Lightly grill. Place onto a platter or plate. Steam or boil the beets until just cooked. Allow to cool, then peel and slice into ¼" slices. Arrange next to the grilled scallions. Toss the coleslaw with the Asian dressing and place on top of the beets. Top coleslaw with pickled ginger. Garnish with sesame seeds and pea sprouts.

Fresh tomato wedges, thinly sliced sweet onion, and crumbled feta dressed simply with oil and vinegar makes the simplest salad possible.

Preparation Instructions

Cut all tomatoes into halves or quarters. Slice the onion into julienne and put into cold water with a couple of ice cubes to crisp. Mix olive oil and vinegar. Add a splash of lemon juice, garlic to taste, salt, pepper, and oregano. Mix well and adjust seasoning, if necessary. Drain onions and place in a mixing bowl with tomatoes. Add dressing and toss to combine. Place the tomato mixture on serving plates and top with crumbled feta.

Root vegetables (shaved paper-thin on a mandoline) are showing

up more frequently on salad menus, paired with hearty grains.

Grilled or roasted root vegetables are a natural accompaniment to

grains and legumes. Tossed together with a light dressing, they can

create a show-stopping composed dish.

ROOT-VEGETABLE SALADS

This beautiful, easy-to-share salad—with sliced tomatoes, fresh

mozzarella, fresh herbs, and a drizzle of balsamic vinegar—makes a

Hand-pulled, smoked pulled pork slathered in homemade barbecue sauce with melted jalapeño Jack cheese and topped with sliced jalapeños.

Preparation Instructions

Heat a non-stick frying pan on high heat. Add onions and sauté until they start to become translucent. Turn the heat to low, add brown sugar and continue to sauté, stirring frequently. When completely caramelized, add the cider vinegar and set aside. In a bowl, mix the barbecue sauce and hot sauce and add the pulled pork. Place in a pan and cook until heated through. Butter the baguette and toast on the grill. Arrange onions on the open-faced baguette and pile high with the pork. Cover with slices of jalapeño Jack cheese and broil in the oven to melt the cheese. Serve with pickled jalapeños.

years, and the trend shows no signs of slowing. Pulled pork sandwiches,

according to Technomics MenuMonitor, have grown 35.8% on Canadian menus

in the fi rst quarter of 2013. Although Canadians report that chicken and beef

remain their top entrées, pork has gained menu incidence through its traditional

HAM & APPLE MONTE CRISTO

A fried ham, apple, and cheese sandwich, a variation of the French croque-monsieur, dipped in egg and pan fried until golden-brown. This is a great sandwich to serve as part of a breakfast or brunch menu.

Sandwich Consumer Trend Report, consumers think they're worth the wait.Nearly half of consumers (42%) strongly

Preparation InstructionsCoat both sides of the steak evenly with steak seasoning. Grill on high heat to form a crust on both sides of the steak, turning once. Grill an additional 4–5 minutes on each side to desired doneness. Remove from grill and let stand 2 minutes. Cut across the grain into ¼" thick slices. Spread the bread slices evenly with mustard. Cover one bread slice with shredded cheese, steak, blue cheese, and an additional 1 Tbsp (15 ml) of shredded cheese. Top with second bread slice. Brush the outside of the sandwich evenly with butter.
