The Product starts congealing immediate!y after this comes in contact with Cold Rotating Drum. After completion of every revolution of Drum, completely congealed Layer of Product is scraped from the surface of Drum with Knife. The size & form of Flakes totally depend upon the nature of Product & also on Process parameters. The molten product is picked up .hy the applicator roll from the tray and applied to thedrum.
